Front Entrance to Chili's in Castle Rock

First time visiting this Chili's location in Castle Rock. Haven't been to a Chili's in a while! As I entered the restaurant it brought back memories. The last time I dined at a Chili's was probably back in 2019. This location is clean, attentive and has friendly staff along with decent food. I liked my waitress. She made sure my food was cooked to order and that I had everything I needed. I ordered a side salad with ranch dressing and the Double Old Timer Burger with Cheese. The burger came to my table near picture perfect. My only suggestion is to offer a bit more fries. If you like a nice "grease burger" this is the one for you! I recommend ordering it. I liked that the bun was fresh and didn't completely fall apart after a few bites. Food was decent and VERY reasonably priced. For the side salad, burger with fries and soda, the bill was very reasonable. Kudos to Chili's for not raising prices to make up for loss of profits. I was very pleased with my total bill of sale. I will probably return here at a later date but I'm in no hurry as there are so many restaurant options these days along with new ones to try. Check out this Chili's location as it's not far from the Meadows Pkwy and I-25 exit. Hope you have a good experience!

Stopped at Chili's after the Renaissance Festival. Sat at the bar, service was great. My bf and I split the SmokeHouse Platter w/ribs. Chicken Crisper wasn't very good, dry for my taste, but ribs and fries were good. Signed up for rewards and got free chips and salsa, but you have the option for a free drink instead of chips.I was told you get free chips and salsa every time you go to Chili's. Restaurant wasn't too busy around 3 pm. Overall restaurant was clean except bathroom could've used a little work.

Dry and brown corn on the cob.

Ordered takeout, it's was absolutely terrible. I am pretty sure we were served left overs. The white queso was disgusting, it had curly noodles and was like water. The guacamole was brown. The salsa had a weird taste and looked like ketchup was added. The corn on the cob was brown and dry. The top of my bun on my Old Timer was missing a chunk of crust and looked something happened to it. I called to let someone know, so another customer wouldn't have this experience. They told me a manager will call me. Never received a call. I never leave reviews on yelp, but this was so disappointing after spending over $38.00 plus tip, I couldn't even eat it. We usually get Chili's once a month, never again. Chech out the pictures of the queso and corn.

During a lunch rush they thought it'd be a great time to close down half of the restaurant. There were plenty of booths in the bar area and we asked to be seated in a booth, well we were given dirty looks by the hostess, and then even dirtier looks by what seemed like the manager because we didn't want to sit at a normal table with our child who cannot sit still. Food took awhile to come out, which was expected since it was packed. But I didn't think any of our food would come out cold. I hated everything about my mushroom burger. My daughter wouldn't even touch her cold chicken pasta. My husbands steak however he said was good he just wished it was cook correctly but it was fine for him.

Hefty portions but ask for check early! Our machine was broke and our waitress was covering a lot of real estate! Food was great! Staff friendly just a long wait to be in our way and we were needing to get other things done .

We ordered two large combo plates and paid the upcharge to make one of the burritos a steak burrito and the other one a chicken and rice burrito. It was $46. We ordered no beans, extra rice and that was not what we got. We ordered mild salsa and got a lot of hot salsa. The tostada is a store bought flat shell with a glop of beans with a ton of lettuce and a couple bits of tomato. Sad. They smother their burritos so we asked for one to come with the green chili on the side and they did oblige. I kinda get why so many places in Colorado smother everything in green chili. It's because whats under the green chili is mediocre quality. It was literally some steak with rice (there would have beans if I hadn't requested there not be) but no lettuce, sour cream, cheese, nothing. Its not a burrito: thats an upside down soft shell taco. I wish these places would stop calling them burritos. Burritos have all the toppings and cheese and meat inside. What is that!? The tamale was actually inedible. Not sure if those come from a factory or what, but they should not be selling the tamales. I genuinely mean this: it tasted like dog food. Those should not be on the menu. Lastly, the taco was adorable and totally looked like a Mexican version of a Taco Bell taco and I have to admit: Taco Bell's tastes better. Please understand, I'm not trying to tear this place apart. I'm Mexican. I grew up making these things at home with my grandparents and our family makes thousands of tamales once a year for my entire life and then some. I just am so saddened that the people in our community have places like this to choose from. I feel bad for them because I'm sure they work hard but the dining room was pretty messy and I probably should have walked in to order instead of ordering and going to pick up. I don't think that we would have eaten from here today if I had walked in first. They need to do better and stop using store bought taco shells for their food. That just totally put me off when I opened the container. Almost as much as the dirty plates and mess in the dining area.

A couple things worth mentioning: the kids meal portions are quite small, and the chile rellenos don't always have cheese inside. At this price point, I'd expect those details to be consistent every single visit. Overall though, it's still one of our family's go-to spots for Mexican food! Service is typically fast & the restaurant has gorgeous 360 views of Castle Rock which is nice!

I was distracted by the person behind glass making the wonderful fresh tortillas. As homebrewers, my husband and I were interested in what their brew set up looked like. It was behind glass and visible from where we were seated. Always neat to see how a brewery is set up, no two are the same. Dulce took care of us. We started with chips and salsa. The chips were warm and the salsa was fresh with a nice kick. He got a taco plate with ground beef tacos, rice and beans. He paired that with the LDP IPA. He enjoyed his meal. I love Chile Rellenos, so that is what I chose for my lunch. It came smothered with their green chili and with some of those wonderful warm tortillas on the side. I paired mine with their Aqua Fresca, a slightly altered base of their Mexican Lager with the addition of Prickly Pear purée and Key Lime. It was refreshing and tasted like summer. I had half of my lunch to bring home with me. The view from where we sat was beautiful. I would come back.
