    The bullet hole

    First off, great salsa! Perfect heat level for the whole family. Was a little taken aback by what appeared to be a bullet hole in the window but it was from the outside and not the inside so who knows. The place is pricey for the quality of food but the portions were large so I guess if I can make two meals out of it then I guess it's not so bad. Glad I finally had a chance to try this place, I would not drive from Denver just for it but if I'm close (and I am a lot thanks to 105 brewery) I would come here again.

    I'm writing this review for my parents in their 80s who aren't exactly 'computer literate'. My parents had dinner at Guadalajara on Oct. 10th, and my parents, who are on a fixed retirement income and only eat out as a 'treat', paid for the meal, $67.55 using a credit card (receipt attached). They also, as they always do, left a $20 cash tip on the table for the server as they are 'old school' and believe that 'cash is king' and that servers prefer cash to credit card tips to avoid credit card charges, etc. My father always writes "Tip on table", and the amount for the meal, less tip, on the total line of the credit card charge slip. A month later, when reviewing their back statement, the charge processed and posted by the bank on Oct. 13th was in the amount of $87.55. So not only did they get a $20.00 cash tip but also ran $20.00 on the credit card, which was posted. While Guadalajara has always had good food and service and a family-friendly atmosphere, it's not worthy of a nearly 60% tip. Unfortunately, they cannot dispute the charge because the bank needs the restaurant's credit card charge slip and they obviously do not have it. So enjoy good food at Guadalajara, and the food is highly recommended, but I strongly suggest not tipping in cash and leaving it on your card in order to avoid double charged tips. My parents hate to do it but they view it as having 'pre-paid' a tip for their next visit and, despite the fact that the server will end up being 'shorted', they feel as if they unknowingly and without authorization double-tipped the previous server.

    So disappointed. I got an order of chicken flautas to go and when I made the short drive home they were so incredibly soggy. They were $19 and I had half of one before throwing it all away. I don't understand why you'd package up flautas on top of wet lettuce with guacamole on top. There was no crisp to them and they were completely inedible. Can't believe I wasted $20 on it.

    After church lunch with 10 friends. I normally have their Tortilla Soup which is the best I've ever had. But today I tried the Chef's Choice Enchiladas Culichi. Ground beef in corn tortillas with a green poblano and spinach cream sauce. Actually really tasty but I still prefer the Tortilla Soup! And because I'd previously raved over the soup 2 of our lunch companions tried it and they LOVED IT! Antonio presided over our meal and provided stellar service! Miguel, keep doing what you're doing because it's working! Great food ... great service.

    Excellent service quick greeting, quick refills of chips and water and friendly. Standard Mexican style restaurant theme. For the food I got a beef chimichanga with queso covered 8/10 for a chimichanga fried right crisp and loaded. Beans 7/10 rice 7/10. Salsa good 6/10 but spicy all in all it was an excellent for a Mexican restaurant in Colorado and the best I've had in the Castle rock area.

    Delicious food and a great place for a family dinner! We were seated within 10 or less minutes and had great service. Everyone in my family loved their food. I had the nachos which were especially tasty! We came here after the star lighting last year. Looking forward to going back!

    Food was excellent, service was friendly, highly recommended. Could use a refresh, but decor is authentic. Very happy with our experience.

    I ordered a vegetarian burrito and it came with ground beef...... it all tasted canned or prepackaged...even the guac.

    It was good, delicious, but maybe because they know how to make a damn good drink it only took one. Bartender knows how to bartend.

The spice did not overwhelm the flavor and was a delicious addition to the food as well. The chili relleno was absolute perfection. Crunchy coating, thick poblano peppers absolutely full of delicious, melty cheese. The addition of the green chili was a beautiful accompaniment. The borracha beans had a little too much cinnamon in them and it took away from the beans themselves. The chili rice was mediocre, the chili was not pronounced and there was not enough flavor to warrant ordering it as a side in the future. My husband's burrito was another place where there seemed to be an abundance of cinnamon that did not seem to belong. I think it had the same beans in the burrito which made the flavors not well-balanced and somewhat off-putting. The relleno was the star of the show and definitely something that we would come back for though! Overall, this was a good choice and a welcome addition to the Mexican food options in Castle Rock!
