I don't even know where to start bc this place was so amazing. We chose to celebrate our 38th Anniversary here while on vacation and Bistro North was the perfect place to do that. From the minute we walked in we knew we'd pick the right place. They greeted us with happy anniversary, a card then we were brought a complimentary champagne toast. So nice. Our server was Cody ( he was fantastic) and he helped with menu selections especially when what I wanted was out. He recommended the salmon said it was the best he'd ever had. I hesitated bc I cook salmon at home every week. But Cody was right best salmon ever. Each bite I took melted in my mouth. My husband got the chicken/shrimp pappardelle pasta and the flavors and freshness were on point as well. My husband also enjoyed a nice hazy iPa and I had the Cakebread Chardonnay. We topped off the night with melt in your mouth chocolate truffles that had Baileys in them surrounded by whip cream. We were pleasantly full and beyond happy with our restaurant choice. Overall a pleasant experience. We were sent there by their sister restaurant as they had to close abruptly. It was our anniversary dinner so we were hoping for a special dinner. The service was solid but our server really could explain the dishes. My shrimp pasta was excellent, my husband's bison short ribs were average at best. Desserts were hit and miss as well. The cheesecake was almost too rich and the truffles with baileys were horrible. Not worth the price overall. read more

I was heading down to Denver and looking for a new fun place to stop at, and Bistro North certainly delivered nicely. I ordered the Berry Nojito and a Pineapple Express. Preferred the pineapple mocktail, but would certainly enjoy both again. Wonderful and knowledgeable Ashley steered me to a lunch special sandwich and paired nicely it with potatoes, when I got stuck deciding between so many great options. Deliciously finished my driving stop off with a decadent Chocolate Mousse. Everything fit together so nicely flavor-wise and everything on the actual menu had much appeal. Really, the only thing to do is to return when possible and go for even more luxuriousness! read more

After a day on the slopes, we were wondering where to have dinner and asked our hotel receptionist. She suggested we try Bistro North that had opened recently in Dillon. We were lucky to get a reservation last minute on a Saturday night and once we arrived, I don't know what I expected, but this was a nice surprise. The atmosphere is upscale and contemporary but relaxed enough with a cool bar and tables along the windows that offer a view of the mountains. The food is locally sourced, on the expensive side (entrees average $30) but it feels justified as the plates are presented beautifully and the cuisine fairly refined. I had the day's special fish, grouper served with couscous and it was perfect. The four of us were glad we got that recommendation and certainly plan on going back next time we go skiing! read more

Good selection of wines. We began with the bao and the tacos starters . I liked the unexpected fusion aspect of it, i.e., the bao included Mexican flavors and the tacos included Asian flavors. Both were good. My husband had the salmon which was perfectly cooked and seasoned. I had the keema, a curry with forbidden rice which was delicious and fresh--flavorful but not too salty. We were too full for dessert. Quick and friendly service as well. We sat on the patio which was lovely. This will definitely be on our list when we return to the area. read more

We really enjoyed this meal. Great service and high-end cuisine. Beef short ribs were probably the best I've had during what has been a fairly long mountain journey. Escargot with blue cheese was borderline for me, not a fan of that combo. Paella needs a little work. Too salty and not much of a wow factor. Other thing was that the remodel, at least in the center seating area: the contractor responsible for this should be reprimanded. Our table wasn't level and it didn't look like the others around us were, either. The booths for 4 were extremely tight. We're thin people and it was humorously cramped. read more

This was a great restaurant for a nice dinner while on our ski trip. We got the honey and cashew brie and both got the chicken marsala. This was the best chicken marsala I've ever had. The mushrooms were so unique and really soaked up the flavor. The portion sizes were larger than I would expect for a place like this. The chocolate mousse cake was different than I expected as well, but it was excellent. read more

Fantastic restaurant! Husband and I went for dinner. Sat in the bar area at a high top. Great ambience. Wines were delicious, had the flatbread, grilled calamari and Thai steak salad. All the food was fantastic but the Thai steak salad was our personal favorite! Jess, the manager came over and was super personable! I've been here a few times and each time I go back it gets progressively worse. I tried the Chilean Sea Bass and it was not edible. The food overall was so mediocre that the table had to order 4 fried shrimp appetizers to feel full. If you're just visiting I would recommend looking into other places before coming here. read more

If you're looking for an exciting brunch that knocks all the other local restaurants out of the park. This is the place. As a party of three we were sat quickly and immediately given water and a heads up on the specials. Ben our waiter was top notch and attentive to our every need. He was humorous and cool like an old friend. The food was spectacular. Two of us had the waygu Benedict and another in our party had the pancakes. The food came out at a reasonable time and everything was cooking perfectly. From the crispy layer on the pancakes to the awesome chipotle hollandaise sauce on the benny, I was giddy from the meal we had. The food was the star of the show. Once again we enjoyed a wonderful dining experience at Bistro North.Both my son and I had the Buffalo short ribs which never disappoint, my wife opted for the scallop special which was succulent and delicious. Abigail our server was a delight. Attentive but not hovering. We always have enjoyed dinner at the Bistro, but last nights desserts of the Brioche and the truffles were over the top. In the past have experienced nothing but superior service and cuisine. Unfortunately, last night was the opposite of that. One of the hostesses was incredibly rude and blatantly disrespectful and essentially ruined the dining experience. The food was acceptable but not great as it usually is. We were told the staff had not experienced as busy a night as this so that was the reason for delays, lack of service, etc. Super bummed because this has been a favorite spot but likely won't return any time soon. read more

We liked this place and collectively agreed that they made the best pork chop the three of us has ever had. It has a cute vibe but was very crowded. All of the food was really tasty but sometimes the balance was off. We gave them a hard job of ordering fan favorites of what we like to make at home. Escargot was tasty but the blue cheese and bread overpowered it. The carpaccio was good but the sweet potatoes and bread overpowered it. Very innovative menu, but sometimes it just didn't work. We also felt a bit rushed. They are still relatively new so we hope to be back sometime. read more
