    Bolognese with lamb was on point

    Our server was great. Very attentive, very educated on the menu, and made us feel very welcome. I like the upscale yet down to earth menu items. Gourmet yet still digestible. The pastas were great, the salad was on point, and they also had some great drinks. This is a definite winner for Dillon, CO. Don't miss this spot for a good Happy Hour or Dinner.

    We were welcome with a warm smile, a place to hang our coats and a lovely space for dinner. We were seated at an odd booth/table. I was facing a four top with diners. Awkward set up. The view is of the stores in the shopping area. We requested a new table and they quickly obliged. Ahhh much better, I can see my fabulous husband. The smells of the place were odd. Burnt something (maybes the smoke for the whiskey) and pine sol. The wait staff were lovely, attentive , and helpful. We loved Dalton! The chef prepared our dinners with care and the flavors were wonderful. It's pricey for the view. I do appreciate a great meal prepared and served with care. The location is not matching the price point. The food does but the smells create an oddity. I would give it 4 stars except they charge extra for anchovies in the Caesar Salad. So....its a faux Caesar. Not a fan of up charging for chefs to use the actual ingredients of a dish. Will we return. Probably. We enjoy good food and thoughtfully prepared drinks and dishes.

    A fun and welcoming bistro with a good wine list and unique cocktails (try the cocktail with the Campari ice cubes - the drink will change over the course of your enjoyment). This was my second time in, and I kept it basic with a Caesar and lamb bourguignon pappardelle. The Caesar was cold and crisp, plenty of cheese and don't forget the white anchovies (a must)! Everyone at the table got the same entree, all were devoured. Good al dente pasta, rich sauce, and flavorful lamb. I will make it a staple on my extended stays in Summit county.

    This was a pleasant surprise to discover during our time in Colorado; it is indeed a "chic dining spot with farm to table dishes", as Yelp suggests. Upon entering, we were warmly welcomed by the host/ess and invited to check our coats. The ambiance is cozy, inviting and chic. The food menu was small yet carefully selected and the service was attentive and evenly spaced out. We enjoyed our experience so much the first time, that we had to come back for Christmas dinner; ordering something different to test out their offerings; crispy Tiger Shrimp to start, Black & Bleu Salad, Manhattan Strip, Lamb Bourguinon Pappardelle (a favorite!), Scottish Salmon, Bacon Potato soup, the kids steak & fries, and their homemade mint chocolate ice cream sandwich.     Wonderful experience! We had the salad (great dressing, fresh lettuce. I would have waved more avocado and tomatoes), the scallops (replacing seabass. Very good dish, though small), and the famous short ribs (wow!). Cocktails were met, but did the job ;)

    Food (5/5): Everything was delicious. I loved the vinaigrette for the salad, very light and vibrant. Sea bass was very tender and the squash puree compliments it perfectly. I believe the star of the night was definitely the pork chop. This was their special pork chop for the night, not the sakura pork chop that you would see on the menu. But the pork itself was cooked to perfection. Juicy, tender, delicious. It was topped with a berry reduction which helped lighten the dish. They fried a whole batch of oyster mushrooms which was PACKED with flavor. Definitely get it if they still serve it. Ambience (5/5): Nice upscale environment. Interior decor was nice. Perfect place to go on a date. Service (5/5): Standard great service that you would expect from a high end restaurant. They offer to take your coat upon entry. Also very attentive - my water cup was constantly full. Overall, I would highly recommend!

    The easiest 5 stars I've ever given! This place is exceptional. The quality of food is superior, the service is great, and they've got great views. I'm looking forward to patio lunches in the summertime! A couple final noteworthy mentions 1) others in our group got the burger, and they were so impressed with the size and quality and 2) when we arrived they had live music.

    What a beautiful restaurant with a relaxing bar, lounge and patio. The dining room is huge, but has these cozy little booths and there are windows with views all over. Bistro North is located in the shopping area near the highway in Dillon, but you don't notice that at all once you walk inside. It feels light and airy and modern- yet relaxed. Great service from David. We had escargot with blue cheese for our starter, plus bison short ribs and salmon for our mains and crème brulè for dessert. The entrees are pricey, but the quality is excellent and it is totally worth it. We had a lovely memorable night with our friends.

    Bistro North went above and beyond for our dining experience while visiting Dillon. It is the sister restaurant to Breckenridge's Blue River Bistro. We were celebrating a late birthday and the staff provided a hand written card signed by everyone which I thought was a nice touch. They have incredible cocktail creations that are a must try. I tried the crime of passion which was delicious. Food was incredible. For starters we had the escargot and calamari. I had the short rib for my entree which was tender and so filling. The outside may be a bit deceiving but I can assure you this place does not disappoint. The inside is chic and emulated a fine dining experience.

    Brought our daughter here for her birthday dinner. We love this place, but they went up a notch with their lovely birthday card for her, excellent service from Benjamin, and the amazing food and drink! Worth visiting over and over!

    Lamb bourguignon

    10 out of 10 would come here over and over again if we lived here. We treated ourselves to a nice dinner after 5 hours of skiing. Everything about this place was perfect. From the second we walked in, the hostess was super friendly, the ambience was nice and quiet inside, well decorated and the table settings were quality. Our server was Billy, he was really attentive and friendly, he made several recommendations, he recommended the cauliflower appetizer which was phenomenal and the short ribs with an Indian twist, also a really special dish. We also ordered the focaccia which was pillow-soft, the skirt steak spinach salad, the lamb bourguignon, the risotto, and the hazelnut-chocolate dessert. Everything exceeded our expectations, it was the decadence I needed to treat myself after a long day of skiing. We don't drink alcohol, so I can't comment on the drinks, although Billy did mention they had mocktails and they could also make anything on the drink menu without alcohol. We came with our five year old, they had a great kids menu and the hostess even gave my daughter a little drawing tablet to play with while we dined. The manager came by a couple times and asked if everything was to our liking. We will definitely remember this place next time we come to ski.... Ask for Billy, he was great!!

There was no chili, no pork, nothing -- just basic mac and cheese that tasted like it came straight out of a box. My friend ordered a burger that was supposed to come with lettuce, blue cheese, and the works. Instead, it arrived with just chicken and bread. That was it. No toppings at all. The water we were given was also incredibly dirty -- it literally looked grey. Service somehow managed to be both overwhelming and nonexistent. While we were eating, the waiter came back to the table every couple of seconds so we couldn't even have a conversation. But when we were actually ready for the check, suddenly there was no waiter anywhere and we fwaited about 15 minutes. On top of that, every request got mixed up. I asked for blue cheese and after about 10 minutes the waiter came back with ranch. Then I asked for lemon vinaigrette (which the meal was supposed to come with) and instead got honey mustard. After explaining again, she came back with... even more honey mustard. We also paid $10 for fries with green chili and received about 15 fries. And one more thing when paying they did NOT bring my card back for about 20 minutes. It was also extremely dark where we were sitting all of the surrounding lights were off but everywhere else in the resteraunt was perfectly fine Overall the food quality, service, and attention to orders were extremely disappointing. Definitely not an experience I'd repeat don't waste your money here.

For context, I'm a professional chef with over 17 years in the industry, having worked as a server, line cook, chef, and restaurant owner. The atmosphere itself is decent. The building is nice, though the tables are a bit small depending on where you're seated. We were greeted and seated without issue--but that's where the positives ended. Prices are high, but it's Summit County, so that's expected. That said, I live in Aspen and have had better food for less. I understand catering to the Vail Resorts crowd, but quality still matters. Before even walking in, we watched one of the cooks step outside near the freezer and take drugs from someone sitting in a car. While this may not shock anyone familiar with the area, it's still not something you want to see before a meal. We chose to ignore it and went inside. My husband ordered the fish and chips ($24), and I ordered the Italian pizza. Starting with the fish and chips: it was terrible. The portion of fish was tiny--smaller than my hand--and poorly cooked, with no seasoning whatsoever. It was bland, ragged, and buried beneath an excessive amount of fries that were both dry and soggy, as if they'd been sitting under a heat lamp for far too long. The hush puppies included were equally mediocre. While I understand their Southern origins, fish and chips is a British dish. If you're adding hush puppies to inflate the price, it should be marketed differently. Three hush puppies buried under fries do not justify a $24 plate, especially when the fish itself is subpar. To make matters worse, we weren't given condiments and had to grab a table caddy ourselves from the bar across the room. Both meals arrived in about seven minutes, which strongly suggests they were pre-cooked and reheated rather than made fresh--especially considering one was a pizza and the other a fried fish entrée. As for my pizza, it was fine. Nothing special, nothing awful. For the price and location, it was average, and I won't complain much about it. The biggest issue, however, was the service. The server was pleasant at first, but about 15 minutes into our meal she began pushing us to leave. I still had half a margarita in front of me, and my husband was actively eating with more than half his beer left. Instead of checking in appropriately, she immediately asked if I wanted a box. Anyone with industry experience knows that's not how you approach a table--especially when guests are clearly not finished. It's rude and makes customers feel unwelcome. Fifteen minutes later, after I reluctantly accepted a box, she returned again while my husband was still eating and drinking and asked if we were "all set." At that point, we'd been there for about 30 minutes, spent over $60, and were being rushed out. Meanwhile, the rest of the restaurant was filled with people lingering over drinks during happy hour--some on laptops, some just chatting--most without food at all. Whether this was intentional or just poor service, it reflects a lack of training and care. Burnout is real in this industry, but that doesn't excuse making guests feel unwelcome. If you don't want to do the job properly, find another one. Overall, this is a two-star experience solely because the happy hour drinks are worth it. For food or genuinely good service, go to Dillon Dam across the street--they're cheaper and the food is far better. This restaurant needs a complete overhaul of both kitchen and front-of-house staff, along with serious retraining. You can't charge $25 for mediocre food, provide poor service, and still expect solid tips. Unfortunately, this place exemplifies many of the problems currently plaguing the restaurant industry.
