    Torn Cabbage
    Randall S.

Look, I've been seeing this place get pooped on since they reopened. I differ from the harsher reviews... Keep in mind, this place is in a soft opening phase. They just reopened. The staff and I think the kitchen is different now, and the food is different. The kid serving us seemed like the owners son. This place looked staffed by the owner and spouse, and our server looked about 16 and clearly wanted to be elsewhere. OK, maybe he doesn't know his stuff, and maybe he's got work to do. Maybe he's never seen great customer service, but this place got a little busy before we left, and honestly, they looked in the weeds, and acted like it. My first day as a server way back in whenever, I was at On the Border in Milpitas and I spilled a tray full of cokes on a dude. I tend to give a lot of leeway. No, this is not the Bings Dumplings we knew. I posted a snap of the Beef Noodle soup. The wife didn't love the noodles; they had too much sogginess and no really texture to them. The broth seemed rushed and there wasn't much depth of flavor. I've had worse. The torn cabbage was pretty good. The new chefs are putting some numbing spicy into the dishes so there was a nice heat that I enjoyed. For me though this dish is always better with some chopped up pork belly which holds a bit of sweet and sourness, and really adds to the dish. I actually enjoyed the cabbage salad and it had good flavor and depth, just not a lot of heat. I loved Mingles Mangos version, but they closed. The Zhajiangmian (looked it up), seemed to be up to my kids' standards, so no complaints. Look, give them time to grow. Give them time to establish their menu and I think they'll be a perfectly repeatable restaurant. I don't know if they'll ever achieve the status of the original, and I'm really sad it's gone now. But this place wasn't bad; we'll go back in a month or so to see how they are doing and how the food has progressed.

Wow. Very much a family run business. Lots of delicious hand made dumplings. Had to get pork and chive because it reminds me of home. I really love the egg custard baos here. Inside of this thing is just shiny!

    Shrimp fried rice, xlb

I was a big fan of Bing's dumplings under the previous ownership and was sad when they closed. I was so excited when it seemed like it was being resurrected under new ownership. I understand they are under a soft opening still but unfortunately it is not the same! I feel like it is misleading to keep the same name because people expect the old Bing's taste and quality. We ordered the beef roll, chili oil shrimp dumpling, potstickers, braised beef noodle, shrimp fried rice, and xlb. It was off to a very sad start when we got the beef pancake rolls. Usually these should be wrapped in chinese scallion pancake but it was rolled in what looked to be a tortilla and it was served cold. Usually the scallion pancake is fried so it is hot. Also usually some hoisin sauce is used inside the roll but this one had no sauce. There was a dipping sauce that looked like some sort of bean based sauce on the side with oil separated but it just made me wonder if they even know what is authentic for the dish. The braised beef noodle was expected to have more soup but the owner explained that it is a braised beef noodle and if they had added the word soup in the name it would have had more soup in it. Not sure I agree with explanation because there was soup in the bowl just not a lot of it. The noodles were not the same handmade ones that the old Bing's used to serve and the flavor was pretty bland. The xlb were okay but not the same either. Something seems to be missing and was also bland. Usually the chili oil wontons have a little peanut flavor to them in the sauce but this one did not and also tasted bland. I think there was supposed to be pork in there too but there wasn't much pork and 1 shrimp inside each wonton. The shrimp fried rice was fine. My kids liked it but it is hard to mess that up tbh. I think it was just disappointing because we expected the old Bing's experience because the name is the same but our experience this time was not that at all. The people there seemed to be open to the feedback and we shared all this feedback with them in person as well.

From the moment we walked in, the staff made us feel genuinely welcome. Across the board, the food leaned toward a lighter, cleaner profile, which was a really refreshing approach. Our Eats Included: Xiao Long Bao (5/5): Easily some of the best XLB in the Bay Area. The wrappers were perfectly thin yet held a generous amount of meat and a piping-hot burst of flavorful soup. Noodle with Pork Soybean Sauce (5/5): Fantastic texture on the springy noodles that made every slurp satisfying, with fresh cucumbers providing a crisp crunch. Chili Wonton (4/5): Delicious wontons packed with juicy pork, though the chili oil itself was a bit straightforward compared to the rest of the meal.

I'm not sure what some items were exactly; they were all decently good. You can't go wrong with the dumplings. Service was okay, they were busy and only have one server so it was granted. The pumpkin lamb dumplings was what I came for. I was not disappointed. I would say this is definitely a better dumpling places from what I've tried. The filling to wrap ratio is great, and my family really enjoyed their soup dumplings. The soy paste noodles were also a hit; it was perfect balance of sauce, meat, and veggies I was surprised how much I enjoyed it. The food is a solid dumpling Chinese place, I'd definitely come back. The service could use some work in being more attentive, but the owner (i believe) was super kind and accommodated well. I'm glad to have come across this place on yelp! Even with the paper plates the food lives up to the expectations I expected. Parking was kinda difficult on a Sunday with it being next to ranch 99 and the other storefronts.

I randomly stopped here late at night on my drive home for a quick dinner. I'm so glad I did. The dumplings are very good. The service was warm and friendly. I liked the variety of dumpling flavors you don't usually see at other dumpling spots. I tried the lamb and pumpkin dumplings, pork soup dumplings, pork and soybean sauce noodles, and cucumber appetizer. Everything was delicious. The lamb and pumpkin dumplings were my favorite. This place is a casual sit down restaurant, but the food is good and worth the stop. They also sell bags of frozen dumplings so you can enjoy them at home!

I know they reopened but this is not the bings I remembered. I believe it's a different owner. I came for lunchtime and got xlb and potstickers. The xlb's were prefrozen, barely any soup and it kept falling apart. Potstickers are lumpia style now hardly any filling... they HAD one of the best stickers and xlbs. Quality went way down im sad i won't be back

Saving grace... their noodles. Their noodles seem to be one of the few now in town that you can actually taste is homemade because it's not perfect in shape but absolutely chewy. Soup dumplings... super disappointing they have taken the lazy road with mashing the ginger now instead of slicing the ginger. Takes away the traditional touch of ginger with soup dumplings. Additionally, stuffing is very dry with attempts to make it moist with a multitude of gelatinized soup. Props to actually mixing crab with the pork in the crab one instead of just the outside as a decoration. Skin is very thick on top and not thin throughout (easy holes on the bottom, but I give them grace because it ain't easy folding!). Potstickers.... DO NOT RECOMMEND! Super disappointing. I have no idea what people are talking about with the magical turning point of sesame seeds on the bottom--it's not complimenting nor crispy nor tasty. Inside is basically like the standard soup dumplings... very very very dry pork filling. Again disappointed with the paper plates, shortcuts, etc. Servers are not attentive. I basically had to walk to them for everything. Slow but once food comes... all food comes. Located in the 99 Ranch market next to Mary's bakery and a bunch of hair salons. I'll only come back for the noodles.

Came here for lunch on a weekend. Was seated immediately and handed the menu to order. Ordered the dan dan noodles, spicy beef noodles, and chili oil wontons. They were all pretty good. And the noodles were very delicious. The chili oil wontons were ok, some of them felt not cooked and a bit cold inside.

XLB cravings were satisfied today. I heard a lot of good things about this spot over the years, and decided it could be a cute and chill date night. Though our dumplings were good, I was mostly impressed with their noodle options! Sooo good! For the two of us, we shared the below: + Spicy Beef Noodles Soup (5/5): No complaints. Noodles were perfectly chewy and the beef was soooo tender. The soup actually wasn't spicy though... but very flavorful still! + Crab & Pork Xiao Long Bao (4/5): Not the best XLB I've had, but still pretty top notch. They were HUGE and filled with lots of soup. The crab variety was less salty than the regular pork ones. + Spicy Wontons (5/5): Chili oil is yum! They put a lot of shrimp and pork in these. Good portion for the price too. Perfectly soft wontons. + Dan Dan Noodles (5/5): LOVED THIS. QQ Noodles and lots of ground pork. The sauce could was really flavorful/savory and coated the noodles well. If it had peanuts, it would have been even better.

An update as it's been a while since we haven't been since a Thanksgiving back in 2019. L O C A T I O N Bing's Dumpling is located in the same plaza as the first 99 Ranch in Fremont. It's on the corner of Alvarado Blvd and Paseo Padre Parkway. Parking can be difficult. There are a lot of smaller stores as well as the market to compete with parking. I N S I D E There are several tables that can seat a number of people. Luckily we came and there were tables free so we didn't have to wait. There were more folks who came in when we were close to finishing and they had to wait a bit. M E N U They had a variety of items to choose from from dumplings to noodles both wet and dry. The menu was basically dim sum style where it's plastic and you can write down/mark up which you want and how many. We were a little shocked with the prices of their dumplings. But I do like that you can do half portions on some of them so if you have a smaller group you can get more items and not have to commit to a whole plate of things. We opted to get the xiaolong bao (4 pieces), potstickers (3 pieces), Shrimp pork and chive dumplings (10), shrimp and pork wonton in chili oil (10) and noodle with pork soybean sauce. ~ Potstickers ~ It was nice and crisp on the bottom with sesame seeds. Not bad but pretty hefty. ~ Shrimp & Pork Wonton in Chili Oil ~ I like the flavor of their chili oil which had this hint of peanut or maybe I created it in my head. Nicely wrapped wonton. The added shrimp in the wonton gave it more flavor. But that chili oil...I ended up dunking my potsticker in it. It was a nice spiciness to it with this umami flavor. ~ Noodle with Pork in Soybean Paste Sauce ~ VERY long noodles so if you need birthday noodles it's quite long! The pork was ground and though flavorful, it was quite salty though I'm sure it's because of the soybean paste. The noodles were quite chewy so if you're not into super chewy noodles, then these may not be for you. But I do like a chew in my noodles but felt like I was definitely chewing for a while. ~ Shrimp, Pork, & Chive Dumplings ~ Chunky dumplings! We got them boiled. Lots of soup in them and quite flavorful from the shrimp and chives. I did like these a bunch. ~ Xiaolong Bao (Pork Soup Dumplings) ~ Quite soupy and a bit big. The meat was a bit more minced/grounded for my liking. S E R V I C E Very attentive to the point where when we had a chopstick wrapper, they immediately grabbed it when they were passing. Or if we had a plate that was empty, they grabbed it right away. I don't know how I feel about disposable plates and paper cups but I guess it's a bit more sanitary that way. We did have a situation where we asked to have half of our dumplings be packed away and get the check. They grabbed the plate to pack it themself. Well we got the check and we kindly asked where our dumplings were and I think they accidentally packed and gave it to another table. I was a bit bummed but they were quite apologetic as they were scrambling trying to serve folks as well as figure out what to do with our situation. They ended up giving us that particular dish half off as we had half the order left on the plate. It did take quite some time to get the bill during this situation as I think their 2 servers were kind of behind in serving and doing everything. I think they need maybe one more person to help out as the kitchen was pushing out dishes faster than they can handle. Also wish they could just give us the container to pack away the food so these kinds of issues wouldn't happen. O V E R A L L I would come back for their dumplings and wontons in chili oil for sure. I don't think I'd go back for their pork soup dumplings. They were a bit all over the place for service, but they were very very apologetic when things went awry. Overall not a bad spot of a healthy amount of food with very little wait for a table even when we arrived after noon.

chili oil seared noodle with pork soybean paste sauce and tomato egg sauce
    Jessica Z.

Came back and tried their chili oil seared noodle with pork soybean paste sauce and tomato egg sauce--not something I'd usually go for, but I'm so glad I did. The dish was absolutely delicious. The three sauces blended together beautifully: the sweetness of the tomato egg, the savoriness of the soybean paste, and a subtle kick from the chili oil - all nicely coated the homemade chewy noodles. The only thing I would've liked was a bit more heat, but they did have chili oil on the table, so you can adjust to your liking. I'd 100% order this again.

Ask the Community - Bing's Dumpling

Is this place open for dine in?

    Yes.

Are frozen dumplings still available for purchase as of Nov 2022?

Yes, they're placed in a refrigerator near the entrance and exit door!

Is the restaurant open for indoor dining?

    yes!

    Are frozen dumplings still available?

    yes, thank you!

Will Bing's be available to order on Doordash again (the menu has been closed for awhile now)?

Due to staffing shortages, we're not able to do Doordash, but we will if we have new team members to help us, thank you!

Does the vegetarian food come in contact with meat or fish?

    No. Thank you!

    Is bings closed?

    Nope

Do they sell their chili oil?

    Yes. 16 oz for $5.

What's the best way to cook your frozen XLB? Should I take them out of the freezer to defrost at all before steaming? And how many minutes should I steam them for?

After water is boiled, put XLB in steamer, don't defrost, steam for 10 minutes. Put parchment paper or vegetable leaves underneath XLB to prevent it from sticking to steamer.

Are they open for takeout during the pandemic?

Frozen Dumplings are available. Please call David at 408-8064881. Thanks.

Do they have vegetarian options? PS: I see the vegetable dumplings and buns on the menu but at many places vegetable does not equal vegetarian.

Yes and the vegetarian dumplings are delicious.

    Do they really take reservations?

Michael M., if a clipboard sign in sheet is considered a "reservation", then yes, Bing's Dumplings takes reservations. Personally, I consider their sign in sheet a "waitlist", a more accurate description. Hope this helps!

Is there a way to get on the waitlist before we arrive?

No, only when you arrive. There's a list where you put your name and how many people are in your party.

Are the XLB and steamed custard buns ok for kids with peanut allergies?

Yes. We don't use any peanut product.

Do they have fresh dim sum carts that come to the tables or do you have to order from a menu?

    Order from a menu, thanks

Can i order for takeout in store?

Yes! I see people place orders in the store and wait, and pick up orders to go.

Can we bring a bottle of wine? It it byob?

I am not sure. But for me, it is more like a quick-eats type of restaurant: go in, eat, and leave. Not really a fancy type of restaurant where I enjoy a glass of wine and chit chat for a long time. Call them and ask them if they charge a corkage fee.

Yelp says closed on Monday- I've been on mondays before so checking to see if this is accurate?

We are open on Mondays, closed on Wednesdays. Thanks

Do they open at Saturday at 11 am (per Yelp) or 11:30 am (per their menu and website)?

We open at 11am on Saturday, thanks

They have a hot deal weekday special that's $488 for a table of 10-12, and it was a lot of food. I think they limit it to a few tables a night. Service was not bad - they refilled ice water multiple times, which was surprising for a Chinese restaurant. That said, it would have been nice if they had actually announced what dishes we were getting. The menu included: - Chicken soup - Stir fried beef with vegetables - Cold marinated chicken and geoduck - Fish maw with pea sprouts and shiitakes - Fried egg tofu - Steamed fish - Twin lobsters with vermicelli - Suckling pig with steamed buns - Fried rice The highlight was the fish roe fried rice: great texture and flavor. Other things were variable in flavor. For example, the lobster was good, but the vermicelli texture and flavor were lacking. The banquet menu we got was good value and was more than enough food. I am definitely interested in trying their weekend dim sum.

We ordered Steamed BBQ Spareribs in Black Bean Sauce, Baked BBQ Pork Buns, Soy Sauce Chow Fun, Chinese Broccoli in Oyster Sauce, Salt & Pepper Fish Filet, Har Gow (Steamed Shrimp Dumplings), Steamed BBQ Pork Buns, Beef Rice Noodle Roll, Pork & Shrimp Siu Mai and Shrimp Rice Noodle Roll. We enjoyed all our dishes. They were hot and fresh. All the dishes were very good, but the Salt & Pepper Fish Filet was our fave. It had a crispy exterior and the fish inside was tender. In addition, the Baked BBQ Pork Buns were very similar to the ones they serve at Tim Ho Wan in Waikiki. The sugar coating on top is amazing. Our dishes came-out quickly. The staff were efficient, friendly and quick. The only downside was the noise level inside the restaurant. It was quite loud. Between the customers lively discussions, the staff helping the customers and the sheer liveliness inside, made it hard to have a quiet conversation. There's no greeting or even a simple "Are you picking up an order?" I'm always the one who has to speak up and let them know I'm picking up. I can literally see my food sitting there, and sometimes I feel like I could just grab it myself. And unfortunately, this isn't a one-time experience--it happens every single time I come in. I had been here before, a few years back and I was glad to be back. We went on a Friday afternoon and the place was almost full at 12pm, they seem to be short staffed so it took a few minutes to place our order but the food came out really quickly. We ordered a variety of Dim Sum as well as chicken fried rice. The Dim Sum was hot and tasty, you could tell how fresh it was because the individual items were sticking to the wrapper they came in. The buns were flavorful and the skin was not too thick, in fact it was a good as the filing. The presentation is beautiful as well. The rice is a bit expensive at $18:95 but they serve a very large plate of it. They serve tea as well which is $1/person, it's hot and steaming and pairs just right with the food. They also have a variety of packaged items for sale - oranges, dried meat etc. The place is located in large outdoor mall area with plenty of parking but I can see how parking will get difficult during the weekend, especially since it is next to a Japanese grocery store. We were seated at a large round table and others were seated with us as well. You just have to share the space. Its loud and noisy but not obnoxious. Lots of families and locals. I would highly recommend this place!

Desert was actual dessert sweet water with fiji berries, eggs, and more, not just the red bean usual. Veggies were good. Abalone and tender greens were sweet and crunchy, beef was stir fried well. Cooked dishes as part of the 10 person set meal bring it down a lot. Hainan chicken was soft like an inorganic chicken (went mostly untouched), lobster was not fresh, and e fu noodles were inedible mush. Sea bass was alright, oil it was fried in tasted a little old.

For the price, the portions are generous and definitely worth it. It's a great option if you're craving dim sum but don't want the full sit-down restaurant experience. The only downside was that my takeout order didn't include the usual condiments like soy sauce or chili oil. I think those would have enhanced the flavors and made the dim sum even more enjoyable. Overall, it's still a solid spot, and I'd come back again.

Simple self-ordering system using either a QR code at your table or the kiosk near the entrance. Service is surprisingly efficient considering a single waitress runs the entire restaurant from taking care of guests to bringing out dishes. Restaurant is clean. We ordered: 1. Mushroom Pork & Shrimp Siu Mai - Large, generously filled siu mai that were juicy, flavorful, and one of the better versions I've had. 2. Pan Chives & Shrimp Pan-Fried Dumplings - The best item on the menu with an incredibly crispy exterior and a juicy, flavorful filling. 3. Golden Shrimp Balls - Wonderfully crunchy on the outside, although the shrimp filling was a little bland and definitely benefited from dipping them in soy sauce and vinegar. 4. Green Dry-Fried String Beans - Fresh, crisp, and nicely cooked without feeling overly greasy despite being fried. 5. Shrimp Chow Mein - Just okay and fairly generic, with a texture and flavor similar to Panda Express chow mein. 6. Steamed Bean Curd Rolls - Very large portions but a bit underseasoned and could have used more flavor. 7. Shrimp Ha Gao - Excellent dumplings with huge, plump shrimp inside and a delicious, well-seasoned filling. Overall, I'd definitely be back. Prices are very fair and cost about $60 for everything which fed 3 people + a ton of leftovers. We over ordered by a lot. Lots of parking outside. Waitress was super nice and good came fairly quickly.

After getting seated, you're greeted by a small portion of seasoned cabbage, a gratis and appreciated addition. We shared the twisty cucumber, beef noodle soup, shrimp and loofah dumplings, and pork XLB along with a bean curd salad. Every dish was pretty good and what one would expect from an esteemed Bay Area dumpling house. Would I venture to say that this rivals Din Tai Fung? Yes insofar as price and quality are considered. Price aside, Din Tai Fung still bests Din Ding in taste/quality.

My partner was especially excited to try the fried rice. He put some on his plate and ate about half of it before I asked to try some. As soon as I picked some up, I noticed the rice was extremely sticky, gooey, and even stringy--something I have never experienced with fried rice before. I immediately became concerned and looked it up, then smelled the rice and noticed a very sour, unpleasant smell. Unfortunately, my partner ended up feeling sick afterward, which made the experience even more concerning. The XLB was still good, and I did enjoy that. However, the spicy wontons were disappointing. The wonton wrappers seemed to have absorbed a lot of the oil from the spicy sauce, making them taste very starchy, heavy, and oily rather than flavorful. It's disappointing because I really enjoyed my first visit and was looking forward to becoming a returning customer. Unfortunately, after the experience with the rice and my partner getting sick, I don't feel comfortable returning. The smell and texture of the rice are something I honestly cannot get out of my head.

They have plenty of seating, but I'd recommend joining the waitlist ahead of time if you're coming during peak lunch hours. The quality of their XLB is really good. I'd say they're on par with Din Tai Fung in terms of flavor and juiciness, but the dumplings here are bigger. We usually go for the pork and crab XLB, which are flavorful, juicy, and explode in your mouth with soup. I also tried the pork belly burger this time. The pork belly itself was good, but it didn't really stand out to me and probably isn't something I'd order again when there are so many other things to get. Service is decent and gets the job done. Nothing particularly memorable, but our needs were taken care of, and I appreciated that they consistently kept my water filled. Overall, solid place for XLB

Chicken feet came out first, this is my mom's go-to, however, I actually quite enjoyed this. Seasoned nicely, and the texture was JUST right, not too soft nor chewy, would order again Next was the Har gow and shrimp rice rolls. These 2 are my usuals and I thoroughly enjoyed both. The dough of both dishes were steamed nicely and the portion of the rice rolls were very impressive (6 shrimps per portion). Now the fried shrimp beancurd rolls were surprisingly extremely underrated. They were crispy on the outside yet the shrimp filling was bountiful and delicious, 100% worth ordering. In either case - if you're looking for solid chinese food...would still recommend this place. Food was 5/5, Service was 2/5.

They only had two people working and there were about 5 tables of diners. These two servers were running around non-stop and you had to flag them down every time. They didn't have time to refill our tea pot so they just left a big jug of hot water at our table to refill it ourselves. The restaurant is large, but feels very old and dated. Some chairs were taller than others, carpet needs to be replaced, its in desperate need of a deep cleaning, refresh and remodel. The food was just OK. Some stuff was overcooked and our fish dish and some of the crab was a little under cooked, while some dishes were swimming in oil. Between 8 adults and 2 kids, we had about 9-10 dishes with lots of leftovers (noodles) to take home. Since my mom picked one of the preset menu options, our bill was over $500 for mediocre Chinese food!!! Let's just say, I have no intention of ever coming back.
