This is, without a doubt, my favorite Chongqing hot pot restaurant in the entire Bay Area. Honestly, the food and the broth here are pretty standard. Hot pot is hot pot, and most places are fairly similar. But what truly sets this restaurant apart is their service. Every time I come for lunch, there's a gentleman who is absolutely incredible. He's constantly running around taking care of everything by himself, yet he never makes you feel ignored or rushed. He is incredibly patient, attentive, and genuinely friendly. I've been to so many Chinese restaurants, and I can honestly say that he provides some of the best service I've ever experienced at a Chinese restaurant. Unfortunately, at many Chinese restaurants, the servers receive a generous tip but still act like they couldn't care less about you. That makes the experience so different. This one particular server is honestly a huge reason why I love coming here. His attitude and service make such a big impression that I'll definitely keep coming back. A fantastic meal with a fantastic dining experience! Chengdu Memory Hotpot is an a la carte style hot pot experience that has a fun array of items throw into your choice of broth. We ordered the classic spicy brother at a medium spicy level and the bone broth. We were a bit too excited to try something new and immediately knew we should have gone for the mild spicy! But, both broths were delicious nonetheless. When they seated us, they explained that the sauce and sides bar is $2.99/per person and everything at the bar is included! There were tons of ingredients to build your dipping sauce and they even have sauce recipes as the backsplash for the sauce bar. There were a few cold dishes such as pig trotters, chicken feet, cucumber salad, beer snacks, and three different cold dessert soups. My favorite was the white fungus with goji berry soup. Super refreshing and delicious. To eat with our hotpot, we ordered the ring of lean beef and lamb shoulder. It comes with a very hefty serving of each cut and wow are they delicious! It really adds to the experience when you get the ring of meat. It makes it a very memorable and unique hotpot experience. We came pretty late so some items were running low, but as soon as I mentioned it to the staff, they quickly refilled everything. You pick your broth first and then order proteins, carbs, veggies, and everything else through the iPad. Their famous meat wheel is definitely impressive, but honestly ALL the portions here are huge. We ordered one baby corn and I swear they brought out an entire can worth of baby corn lol. Everything we ordered tasted fresh and the presentation was on point. They also have some interesting items that I haven't seen at other hot pot places, which makes me want to come back and explore the menu more. I was really excited to try this place since it's fairly new and I LOVE hot pot! The menu was very impressive with a huge selection of meats, seafood, and other hot pot ingredients. I mainly came for the meat ring, and I think it was worth ordering. It's definitely enough to share between two people. The restaurant itself is clean with traditional Chinese decor. The ventilation was superb. I left without smelling like hot pot, which is always a plus. Even with every table cooking, the dining room never felt smoky or stuffy. Service and timing could use some work. Our soup base had been boiling for over 10 minutes before any of our ingredients arrived. I could tell the staff was busy, but it's hard not to get impatient watching the broth boil with nothing to cook. The sauce bar was disappointing. About half of the sauce ingredients were empty, and all of the snacks and side dishes were gone. I saw multiple tables, including ours, checking back several times hoping they would be restocked, but no luck. As for the food, it was just okay. The soup base wasn't as flavorful as I had hoped and some of the meat was a bit tough. I've been to other hot pot spots where the broth is so good that you barely need dipping sauce but that wasn't the case here. Overall, it wasn't a bad meal but I don't think it lived up to the hype. The parking situation still gets pretty full here during rush hour so come prepared. Seems most of the parking is split half and half, half for Chengdu Memory, half for Ping's Bistro. One party of 2 was before us 2, and the waiter asked if they wanted to share a table. They said no. For some reason, he didnt ask us if we wanted to share. He just led us to the same table and said we are sharing. I declined and pondered why the other group was asked while we were told... weird.. We were promised certain tables but it ended up getting mixed. I think they should just keep to letting patrons know how long the wait is, dont promise tables that go to others later. We got the spicy beef oil, tomato, and a pork bone stew. The soups individually didn't really wow me. In the midst of Happy Lamb, LiuYiShou, and HaidiLau, Chengdu memory's flavor seems a little lacking. What I ended up doing, was mixing a bowl of all 3 flavors and got a really delicious mix. I think separated, Spicy is just really spicy, Pork Bone is bland but creamy, Tomato was sour but more like vinegar. A bit disappointing, but maybe will try again, especially since we did not get a chance to try one of their specialties the Fish Maw Meats are thin and delicious. I've been hearing so much about this place in Seattle especially from kelseyloves pho on tiktok that i wanted to try it my next visit to Seattle, but im so glad they had opened one here in the Bay Area. First walking in, we were warmly greeted by the staff and they asked if we have ever dined with them before. He showed us the amenities before seating, in which i took a hair tie to prepare for my feast. The leaner cut was tougher than the belly, and you can tell the quality is just okay on the meats. They also have a small dessert bar which was nice as well. Sides: we got enoki mushroom and greens and some noodles. No matter how much I age, I fear that I'll never be able to let go of hot pot because it's a part of me. Traditional Chinese Sichuan-style hot pot is my favorite, and Chengdu did not fall short. To give you a better idea, I would say that Chengdu's dining experience is similar to our beloved Haidilao, but without the $$$ price tag. Chengdu is like Haidilao's little sister -- but better -- and they even give you aprons. The staff was very friendly and helpful since it was our first time dining there. We ordered the half-and-half broth with bone broth and spicy Sichuan-style broth. The meats were good quality, and we even got a free plate of meat by accident, but they let us keep it. I felt super bad because we came in right at last call from the kitchen, so we had to make our decisions quickly. I love the sauce bar, which allows you to customize your dipping sauce exactly the way you like it. My go-to combination is sesame sauce with a little bit of ponzu, lots of green onions, cilantro, and garlic. After stuffing our stomachs, it was time for dessert. We ordered the mango bingsoo, which looked and sounded good. HOWEVER, this was the only thing I wouldn't recommend ordering. The flavor tasted too artificial, and it ended up tasting like watered-down mango syrup with no fresh mangoes. The only thing I really enjoyed from the bingsoo was the popsicle it came with. After we got seated at our table, there was zero communication from anyone about how to order. There was a locked ipad on the cart that we had to rummage through to find the ordering platform. Also, not sure if it was correct, but the golden fish and chicken soup base was listed as $88 to get as a singular broth and over $50 as a secondary.. kind of absurd for just a soup base. Thus, we opted for the sichuan beef tallow + pork bone broth. The sichuan broth was good; no complaints. I wouldn't recommend getting the pork bone broth though as it tasted unusually porky -- like overboard. I noticed the same with the pork belly slices as well. I love taro so we decided to try the braised taro dish and did not like it. It just tasted like straight up mush with nonexistent taro flavor; we didn't finish it nor wanted to take it home. The meat platter ring does come with a good amount of meat at a fair value, but ultimately the quality does reflect the cost. Overall, I'd rather go elsewhere to get Sichuan hotpot. They open at 12 pm, but I dropped my boyfriend off at the restaurant about 10-15 mins before opening while I picked up my friend nearby, as we worried about the lunch rush. When we came back just before 12 pm, there was already a sizeable crowd inside with no clear line formation. Fortunately, an employee did ask "Who arrived first?" and proceeded to seat people in a first come, first serve fashion. Ordering was done off the iPad on the table. We got a variety of meats, veggies, and noodles to share. The combo meat ring platters were reasonably priced & plenty of meat available to share! We're weak with spice, so we got the pork bone broth to share, which was really flavorful! Everything came out relatively quickly, and there was plenty of space to store extra plates, between the cart next to your table and the 2-tier stand on the table. The only key negative was the sauce bar. When everyone arrives & seats at roughly the same time, everyone will subsequently flock to the sauce bar at about the same time. As we were seated by the sauces, we easily saw the line creep up, eventually extending all the way to one of the walls of the shop. The sauce bar layout didn't allow multiple people to get sauce simultaneously, and people were standing in line for up to 10 mins just to get some sauce! We were offput by the line and thought it would die down in maybe 30 mins - this line perhaps stayed this long for almost hour since opening! Eeesh. The line did die down eventually, but at that point, we were pretty much done eating. Otherwise, the quality of the meats and veggies were very good. Definitely worth the money and the quality seemed as good as Haidilao, but at a fraction of the price! read more

Chengdu Memory, so good so fun and can't wait to go back. Late lunch and the family decided on hotpot. Seated immediately at the largest table they got and man what a pretty restaurant. Beautifully decorated and lots of complementary items, I grabbed a hair tie, hairs up and ready to feast. We ordered so many dishes and thanks to their side tables, we slowly devoured everything. We got their famous fish maw chicken soup, it was a hit and everyone loved it. Us big backs ordered 2 meat circles without knowing, oops. Trendy new hotpot spot in Fremont!! Be prepared for a wait, but it's SO worth it. You can order items off the menu for a set portion of each--portion sizes are fairly generous. They even have a lean beef and lamb selection, which is perfect if you're looking to save a few calories. The presentation of some items is really impressive, like the meatball tower, raw fish, and skewers. I would also recommend the sweet potato glass noodles, fish tofu, and napa. Great selection of complimentary side dishes, like pork trotters and cucumber salad, as well as snack freebies in the waiting area. This is the most impressive hot pot restaurant I've been to!!
