Saving grace... their noodles. Their noodles seem to be one of the few now in town that you can actually taste is homemade because it's not perfect in shape but absolutely chewy. Soup dumplings... super disappointing they have taken the lazy road with mashing the ginger now instead of slicing the ginger. Takes away the traditional touch of ginger with soup dumplings. Additionally, stuffing is very dry with attempts to make it moist with a multitude of gelatinized soup. Props to actually mixing crab with the pork in the crab one instead of just the outside as a decoration. Skin is very thick on top and not thin throughout (easy holes on the bottom, but I give them grace because it ain't easy folding!). Potstickers.... DO NOT RECOMMEND! Super disappointing. I have no idea what people are talking about with the magical turning point of sesame seeds on the bottom--it's not complimenting nor crispy nor tasty. Inside is basically like the standard soup dumplings... very very very dry pork filling. Again disappointed with the paper plates, shortcuts, etc. Servers are not attentive. I basically had to walk to them for everything. Slow but once food comes... all food comes. Located in the 99 Ranch market next to Mary's bakery and a bunch of hair salons. I'll only come back for the noodles.

Came here for lunch on a weekend. Was seated immediately and handed the menu to order. Ordered the dan dan noodles, spicy beef noodles, and chili oil wontons. They were all pretty good. And the noodles were very delicious. The chili oil wontons were ok, some of them felt not cooked and a bit cold inside.

XLB cravings were satisfied today. I heard a lot of good things about this spot over the years, and decided it could be a cute and chill date night. Though our dumplings were good, I was mostly impressed with their noodle options! Sooo good! For the two of us, we shared the below: + Spicy Beef Noodles Soup (5/5): No complaints. Noodles were perfectly chewy and the beef was soooo tender. The soup actually wasn't spicy though... but very flavorful still! + Crab & Pork Xiao Long Bao (4/5): Not the best XLB I've had, but still pretty top notch. They were HUGE and filled with lots of soup. The crab variety was less salty than the regular pork ones. + Spicy Wontons (5/5): Chili oil is yum! They put a lot of shrimp and pork in these. Good portion for the price too. Perfectly soft wontons. + Dan Dan Noodles (5/5): LOVED THIS. QQ Noodles and lots of ground pork. The sauce could was really flavorful/savory and coated the noodles well. If it had peanuts, it would have been even better.

An update as it's been a while since we haven't been since a Thanksgiving back in 2019. L O C A T I O N Bing's Dumpling is located in the same plaza as the first 99 Ranch in Fremont. It's on the corner of Alvarado Blvd and Paseo Padre Parkway. Parking can be difficult. There are a lot of smaller stores as well as the market to compete with parking. I N S I D E There are several tables that can seat a number of people. Luckily we came and there were tables free so we didn't have to wait. There were more folks who came in when we were close to finishing and they had to wait a bit. M E N U They had a variety of items to choose from from dumplings to noodles both wet and dry. The menu was basically dim sum style where it's plastic and you can write down/mark up which you want and how many. We were a little shocked with the prices of their dumplings. But I do like that you can do half portions on some of them so if you have a smaller group you can get more items and not have to commit to a whole plate of things. We opted to get the xiaolong bao (4 pieces), potstickers (3 pieces), Shrimp pork and chive dumplings (10), shrimp and pork wonton in chili oil (10) and noodle with pork soybean sauce. ~ Potstickers ~ It was nice and crisp on the bottom with sesame seeds. Not bad but pretty hefty. ~ Shrimp & Pork Wonton in Chili Oil ~ I like the flavor of their chili oil which had this hint of peanut or maybe I created it in my head. Nicely wrapped wonton. The added shrimp in the wonton gave it more flavor. But that chili oil...I ended up dunking my potsticker in it. It was a nice spiciness to it with this umami flavor. ~ Noodle with Pork in Soybean Paste Sauce ~ VERY long noodles so if you need birthday noodles it's quite long! The pork was ground and though flavorful, it was quite salty though I'm sure it's because of the soybean paste. The noodles were quite chewy so if you're not into super chewy noodles, then these may not be for you. But I do like a chew in my noodles but felt like I was definitely chewing for a while. ~ Shrimp, Pork, & Chive Dumplings ~ Chunky dumplings! We got them boiled. Lots of soup in them and quite flavorful from the shrimp and chives. I did like these a bunch. ~ Xiaolong Bao (Pork Soup Dumplings) ~ Quite soupy and a bit big. The meat was a bit more minced/grounded for my liking. S E R V I C E Very attentive to the point where when we had a chopstick wrapper, they immediately grabbed it when they were passing. Or if we had a plate that was empty, they grabbed it right away. I don't know how I feel about disposable plates and paper cups but I guess it's a bit more sanitary that way. We did have a situation where we asked to have half of our dumplings be packed away and get the check. They grabbed the plate to pack it themself. Well we got the check and we kindly asked where our dumplings were and I think they accidentally packed and gave it to another table. I was a bit bummed but they were quite apologetic as they were scrambling trying to serve folks as well as figure out what to do with our situation. They ended up giving us that particular dish half off as we had half the order left on the plate. It did take quite some time to get the bill during this situation as I think their 2 servers were kind of behind in serving and doing everything. I think they need maybe one more person to help out as the kitchen was pushing out dishes faster than they can handle. Also wish they could just give us the container to pack away the food so these kinds of issues wouldn't happen. O V E R A L L I would come back for their dumplings and wontons in chili oil for sure. I don't think I'd go back for their pork soup dumplings. They were a bit all over the place for service, but they were very very apologetic when things went awry. Overall not a bad spot of a healthy amount of food with very little wait for a table even when we arrived after noon.

Came back and tried their chili oil seared noodle with pork soybean paste sauce and tomato egg sauce--not something I'd usually go for, but I'm so glad I did. The dish was absolutely delicious. The three sauces blended together beautifully: the sweetness of the tomato egg, the savoriness of the soybean paste, and a subtle kick from the chili oil - all nicely coated the homemade chewy noodles. The only thing I would've liked was a bit more heat, but they did have chili oil on the table, so you can adjust to your liking. I'd 100% order this again.

This was super delicious! The dough is freshly made and chewy and loved how soft my soup dumplings were. The noodle soup is also good. We also had chili oil wonton which were pretty good, but okay, didn't have as much of a chew as the other dishes. Make sure to get in early especially on the weekend as it was bustling as soon as it opened. This is a very casual spot with even paper plates.

I came here just before 2 PM before they close for lunch on the weekend and it wasn't very busy so I was doubtful but after I took a bite of their food, I knew I made the right choice for lunch. Food: 10/10 I never had potstickers with sesame seeds on it before and it was a game changer! Their pork xiao long bao is huge, the size of a soup spoon. But the skin is thin and the taste of the filling is good. I suggest picking up the dumpling at the top of it so it doesn't tear. We also got the dry spicy and sour noodles and we asked them to make it more spicy and sour, which had good flavor. The portions are huge and the price is quite affordable. Ambiance: 10/10 Plenty of parking in the shopping center and lots of tables to dine in. You can see the workers wrapping dumplings there when you enter. There is also a restroom too. The server is very friendly and was very accommodating. They also have a restroom here too. You use a pen to write in how many of each item you would like to order. I already can't wait for my next visit!:)

My husband and I checked out Bing's Dumpling after hiking at Coyote Hills. Really enjoyed everything- Xiao long bao was nice and juicy( good size), cucumber very crisp, the noodle chewy. They were pretty busy. Service nice , little slow in the beginning.

Stopped in and had a half order if the pork soup dumplings and a bowl of their stewed beef noodle soup. I woulr say flavor/seasoning is a bit more on the salty side, instead of umami. Service was fast and attentive though. Located in the same shopping plaza as the 99 Ranch Market grocery store next to Mary's Bakery.

Who doesn't love hand-pulled noodles?! My co-workers have been talking about this place back in the day. I have been going here with my family for over 7 years now and took many friends here as well. This location has changed from many different places and Bings's seems to have stayed over seven years now! Good sign! I like their open space dining set up where the kitchen is open and you can see them make their dumplings and noodles...ooo lala!! Their menu is very simple and everything is now below $19. Price inflation but some dent. Go figure! Very good portions though. You can taste the difference. Had their spicy and regular beef braised noodle soup. Meat was tender and the noodles are soft! You can tell the noodles are made fresh. Also, I like their wonton noodle soup. All broth soups are very good. Spicy was not really spicy to me though so I had to added more spice! Haha Their Hot Oil-Seared (dry) Noodles with minced pork is also very good. Their wonton in Chili Oil is good as well. I also get their pork soup dumplings. Everything they make are pretty good! The dumpling wrap is not too thick and lots of meat inside. You need to learn to eat with chop sticks and soup spoon to drink the soup from the dumplings! Also, you have to make the right sauce to dip this in. They don't offer free tea anymore. It's 50 cents but it's good. My fave place when I am craving spicy dry noodles or beef braised noodle soup. I just wish they added more bok choy for more veggies for a balance. Very surprising their service is still pretty good, friendly and attentive. Seems they are a family business. They speak pretty good English, too. We are regulars here! So this means I totally recommend this place! [73R,2025]

Got take out for dinner. Items were packaged well. Soup dumplings tastes good for take out (i bet they wouldve tasted better hot and fresh!). The noodles tasted fresh and the flavors of the spicy oil, pork, cucumber and noodles blended very well together. Price is fair.

This place was recommended to us by my husband's coworker so we thought we were in for a treat...big disappointment. The food we ordered was not good. The service was just ok for many reasons and the price was not good for what we were getting. My husband got the rice with beef brisket and it had so much fat and tasted so weird that he couldn't finish it and was sick of his stomach the rest of the day. The green onions pancake were just like store bought but 4x the price. My noodle with beef was just ok. The noodles were good but the beef wasn't that good and the bok choy was still undercooked and hard.

Oh man this was way better in the memories. I came here once within the past year, and once more now and things have totally gone downhill since I last remembered. Both the crab + pork and pork XLB did not have the broth flavors I was expecting. A good XLB has a distinct rich flavor in the broth that I did not find here. Even though the skin was on the thicker side too, a few of the dumplings managed to rip at the bottom when lifting it up from the basket and I lost some broth. We also ordered a beef brisket noodle soup that just tasted completely bland and the noodles were on the softer/overcooked side too. Very disappointing overall and we probably won't be returning.

What's the best way to cook your frozen XLB? Should I take them out of the freezer to defrost at all before steaming? And how many minutes should I steam them for?

After water is boiled, put XLB in steamer, don't defrost, steam for 10 minutes. Put parchment paper or vegetable leaves underneath XLB to prevent it from sticking to steamer.

Are they open for takeout during the pandemic?

Do they have vegetarian options? PS: I see the vegetable dumplings and buns on the menu but at many places vegetable does not equal vegetarian.

Yes and the vegetarian dumplings are delicious.

Do they really take reservations?

Michael M., if a clipboard sign in sheet is considered a "reservation", then yes, Bing's Dumplings takes reservations. Personally, I consider their sign in sheet a "waitlist", a more accurate description. Hope this helps!

Is there a way to get on the waitlist before we arrive?

No, only when you arrive. There's a list where you put your name and how many people are in your party.

Are the XLB and steamed custard buns ok for kids with peanut allergies?

Yes. We don't use any peanut product.

Yes! I see people place orders in the store and wait, and pick up orders to go.

Can we bring a bottle of wine? It it byob?

I am not sure. But for me, it is more like a quick-eats type of restaurant: go in, eat, and leave. Not really a fancy type of restaurant where I enjoy a glass of wine and chit chat for a long time. Call them and ask them if they charge a corkage fee.

Yelp says closed on Monday- I've been on mondays before so checking to see if this is accurate?

Once we were seated, everything moved rather quickly. We were given a menu to order -- we ordered and within 10-15 minutes, everything was brought out to us. No wait time for the food, it was very fast. The food was decent but nothing memorable. Overpriced dim sum, overpriced food. As much I love Chinese food, I don't see myself coming back to this location because the wait times are crazy even if you come early. And second, the two women at the front counter are very rude, provided very poor customer service. Very annoyed and disappointing experience, wouldn't recommend to anyone.

We're nor sure why this place is so empty, but we enjoyed it.

Came here for dinner on a Friday evening to celebrate my brother's upcoming wedding. Not sure why…read moremy mom picked this place, probably because its really close to her house, but our dining experience was a let down. They only had two people working and there were about 5 tables of diners. These two servers were running around non-stop and you had to flag them down every time. They didn't have time to refill our tea pot so they just left a big jug of hot water at our table to refill it ourselves. The restaurant is large, but feels very old and dated. Some chairs were taller than others, carpet needs to be replaced, its in desperate need of a deep cleaning, refresh and remodel. The food was just OK. Some stuff was overcooked and our fish dish and some of the crab was a little under cooked, while some dishes were swimming in oil. Between 8 adults and 2 kids, we had about 9-10 dishes with lots of leftovers (noodles) to take home. Since my mom picked one of the preset menu options, our bill was over $500 for mediocre Chinese food!!! Let's just say, I have no intention of ever coming back.
