I have been trying my best to not overindulge in this place and kill its charm, but I'm not sure that would even be possible. A flakey toasted turkey croissant out on Bien Cuit's tiny, overgrown, vibrantly green patio filled with aromas of freshly baked bread drifting in from the inside is my personal idea of a perfect light lunch or breakfast on a lazy weekend. Part of me honestly doesn't even want to write this review and give away this little gem. Great selection of pastries, a long list of fruity iced teas, freshly baked loads of bread, and a decent coffee menu can be found on the menu. Also, I can't come in and leave without taking a $5 half loaf of bread home with me - campagne and sunflower/rye are both great. I say if you are going to load up on carbs, you might as well do it right, but be sure to get here in the first half of the day because the cafe runs out of some of the customers' favorite treats quick. read more

This croissant's got the kind of flakey that I'm more than okay with. Bien Cuit is the kind of bakery that reminds me how much of baking it truly a craft and how much I settle fore in my coffeeshop croissants. Rewind to earlier this year when I had my first artisanal croissant across the country in SF and realized what I had been eating before was absolutely nothing like what a croissant could be. Since then I've been seeking that kind of out of body baked good experience in NYC and a little googling and walking around the area led me to Bien Cuit, a place that takes flour and transforms it into something else entirely. When you step into the store, you instantly know that this is a place that takes baked goods seriously. From the breads that look like someone photoshopped on on their glorious crevices and spots to the pastries so well done you can see their texture to the slimmed down coffee and tea selection such that you know what the focus of this place is. The first time I came here I had the chocolate croissant and twas a treat. Just the perfect few bits of chocolate in a flakey and chewy pastry. So good that I came back next week and got the croissant, my first pastry love and what drives my weekend mornings. The bakery on the weekend is bustling, but not too busy with places to sit throughout the store. It's not necessarily a sit and work vibe, but rather a chat with friends or journal for a bit kind of space. I'm plotting my next picnic already as an excuse to try some of these Bien Cuit's breads. When you step inside of Bien Cuit on Smith Street you can't help but breath in the most delicious aromas of the baked breads that are constantly being removed from their ovens. The feelings are hypnotic and no matter how much they say their breads cost, you can't leave without taking a sampling of their rolls and desserts home with you! We were in their bakery recently and on the advice of my seasoned bakery friend, who insisted that I had to buy at least one of their almond croissants, I opted to buy two! They had one with chocolate and one with just almonds, but both were the most delicious desserts I've had the pleasure of eating since the pandemic began about 6 months ago. Why am I only giving them 4 Stars? I also bought a $9 sun dried tomato bread and while it looked beautiful, it had no discernible taste. Behind a non-descript storefront on a non-descript commercial strip (one-way street) in Carroll Gardens, you will find this very French bakery that was sent from heaven. Just a subway ride away. Holy mother of Pepe Le Pieu, this is seriously good. I had the apple cardamom danish. It had crackily ends and was subtly satisfying. My wife had the spinach quiche. Now that's what I'm talkin' 'bout. Rich, delicious and immensely wonderful, with a bit of a crispness in the crust that adds the bit of texture that makes it just about perfect. Sacre bleu. The coffee is strong and good. A "large" is in name only, though. Not only was the food presented beautifully and look absolutely breathtaking, but the young lady serving wasn't too shabby either. Merci. We took home a baguette in all its crispy crunchy goodness. All of the breads on display looked phenomenally good. Bien Cuit literally means "cooked well done" as in a steak. Treated myself to a croissant this morning and wow. This is the bakery I've been looking for. I got a chocolate croissant and a cinnamon bun (like a cinnamon croissant) to go, threw them in the oven to heat them up, and was blown away. The chocolate croissant was perfectly soft and flaky with dark chocolate. The cinnamon bun smelled like fried dough from the town fair of my childhood but with a layered croissant interior. All that is to say- today is the best Wednesday ever. They have sandwiches in addition to pastries and coffee. You can order ahead to pick up as well as get delivery. read more

Was in the neighborhood today and scouted around for a bakery to pick up a french baguette for my little one to nibble on. I walked in and saw a vast display of baked goods: croissants, almond croissants, CHOCOLATE almond croissants, oh my! Completely forgetting about the baguette, I picked up 2 almond croissants, which were served to me from a fresh tray out of the oven! Nom nom! When it finally clicked to me why I was there in the first place, I asked the friendly gentleman behind the counter for a french baguette ... which were sold out at the time, sadly. Thankfully, they sell miniature versions for $2, which was soft in the interior and satisfactory to my child. However, the crust was a bit tough for my other half and I. Bien Cuit topped my search results for best croissant in Brooklyn, so I had a high expectation when I came here. I ordered a hot Americano($3) and a plain croissant ($4.25), and sat down to study. This place was small and cozy, most seats were occupied when I was there, from 9 to 11 am. The staffs were baking fresh breads the entire time I was there, so I was studying in a very aromatic, love smelled environment. However, the croissants did not meet my high hopes. The plain croissant crust was kinda burnt and not flaky; I think they intentionally baked it like so but it's just not my type. The burnt crust gave an unpleasant aftertaste to me. It was also not very buttery nor creamy. Both the inside and outside layers tasted bland as if I was eating plain bread. It was mediocre and made me wonder why people raved about this bakery so much! So after a while, I ordered the chocolate almond croissant($5.95) since this was the most ordered pastry when I was there. Well, the chocolate almond croissant made up for the plain croissant, although it wasn't the best I had. I liked the almond paste since it was only lightly sweetened. Most almond croissants I had were always too sweet. The chocolate filing was interesting as it was bitter and salty instead of sweet, which I think was smart because the almond paste was already sweet enough. But I'd want to have more chocolate in my croissant (look at my photo, the chocolate was so little :( )! The croissant had good balance of sweetness/saltiness. However, it still lacked the buttery flavor, just like the plain one, and was a bit dense to my liking. For service and ambiance, I'd give 4/5 since the workers were friendly but the place could be noisy from all the baking done in house. For food, I'd give 4/5 to the chocolate almond croissant and 2/5 to the plain croissant. Both pastries are expensive but I'm willing to pay more for artisan, local bakery. I feel let down. This place was recommended by Bon Appétit personality Chris Morocco (a super taster!) for having "really great bread." There has been countless food articles written about Bien Cuit for igniting the NYC bread culture. Needless to say, expectations were high. Croissant - 3/5 - I like my croissants tasting of butter. This one did not. It was especially disappointing because walking into the shop, I was engulfed in this fragrant, buttery smell of baked goods. While the croissant was flaky and crispy on the outside, it lacked the creamy, umami flavor I live for in my puff pastries. Pain de mie - 4/5 - I got half a loaf for the subway ride back home and the smell was strong- someone even commented. The loaf has a crunchy hard crust with crumbly, sweet soft interior. Bien Cuit was one of my go-to coffee shops when I lived in Brooklyn. It's in a great, accessible area and offers a nice selection of fresh baked goods. I recently returned there to meet up with friends on a trip to Brooklyn and it was just a great as I remember it! I grabbed a hot chocolate and a ham & brie croissant. The hot chocolate was delicious and creamy without being overly sweet. The croissant was flaky and very tasty, though it could have used a bit more filling. I haven't ever tried their bread selections, as I typically bake my own, but I have heard really great things about pretty much everything they offer. read more

I love Bien Cuit. I usually come here for coffee (they serve Joe Coffee, which is one of my favorites) but whenever I have people over/want to make special meals/want to treat myself, I make sure to grab one of their beautiful loaves (they have halves too in case you don't need so much bread). I love their Campagne and Miche (and their flavor variations). The bread is always fresh and you can confirm if you walk by in the evening, the bread scent is fantastic. I also enjoy browsing their "market" part with different selections of cheese, jam, charcuterie etc which pair great with the amazing bread. The best sourdough miche for the times you can't make it to She Wolf at the farmers' market. Once I learned how real bread is made from Michael Pollan's book "Cooked," there was no way I could go back to eating bread that wasn't the result of a days-long monastic effort. I'm convinced Bien Cuit is one of the better options in the city for real bread. Bien Cuit is serious about their breads and their whole-wheat sourdough is slow fermented with no added leaveners or preservatives. You can smell the fresh bread being made outside! I'm from jersey and stayed in Brooklyn for the weekend. Not that it matters but the bakery's in jersey don't smell this good. The manager even gave me a free croissant to settle my worries about never having been to Bein Cuit. After I ordered a turkey and Swiss sandwich on a croissant and it was delicious! This relates mostly to Bien Cuit's presence at Farmer's Markets and specifically to June 2019. They used to be one of the top producers in NYC. Both at the Brooklyn location and also at farmer's markets. They are expensive, yes, but the quality kept me coming back again and again and I've been a customer for years. Two weeks ago, I bought my usual Olive loaf and an Apple Cardamom danish. I've always had a great experience and didn't check until I got home -- that they had given me the wrong danish. I couldn't eat it and thought, oh well, everyone makes a mistake here and there. I went back and told them and they didn't credit me, didn't offer a new one/replacement, didn't even say they were sorry. The woman just said "yeah, I'm a little spacy sometimes." Not a very customer service oriented way to behave. So I bought the same thing. And then I got the bread and tasted it. This time, the Olive loaf is a little "underbaked" inside. Just a tad moist, but -- really there is zero excuse for a "boutique" breadmaker to be making bad bread. I think Bien Cuit is slipping. And you can have a bad day if you charge normal prices, but to have multiple bad days and charge top dollar -- these guys aren't going to last. They are asleep at the wheel. I really wanted this to be my Arcade Bakery substitute. But alas i was let down. The movie Ratatoullie said it best, "How do you tell a good bread without tasting it? Not the smell, not the look, but the sound of the crust... a symphony of crackle. Only great bread sound this way." Both crusts on the baguette and walnut bread were really thick. I wouldn't be able to hear a crackle on the baguette without using a vice, it was near rock hard. I tried lightly toasting the bread but even that couldn't get me a nice crunchy crust i expect from a baguette. I can't believe I'm only rating this 3 stars. The truth is, I was a tad disappointed. I wanted so much to love it, but alas...it left me hoping for more. When we arrived (between 11 and 12 on a Monday), their display case was practically empty. All the breads and pastries they boasted on the website were nowhere to be seen. Thankfully, the sandwich I wanted (squash and white bean) was available. I must say, I didn't have a STRONG desire for that sandwich, but as it was the only vegetarian option, I was just glad it was there for me. It was edible, but nothing special. It might have been better if it were pressed, toasted, or at least heated up. My latte came in a to-go cup. They didn't even ask me if I were staying or not, but I saw other people around me with cute mugs. I thought the espresso was decent, but a little harsh. Maybe bakeries just aren't my thing. I'm just so sad to have looked forward to this for so long, only to be let down by my experience. My friend was cooking me dinner that night and I can never go empty-handed. So I asked the girl at the counter for suggestions (she was very helpful) and I ended up deciding on three pastries: -Huckleberry Danish with Yuzu Curd, Huckleberry Jam: Flaky, tart and very flavorful. Those berries certainly packed a punch. This was my wildcard if you will. It's hard to describe if you haven't had this fruit before, so take a chance on it. It's good. -Apple Cardamom Danish with Pureed Apple and Cardamom Strudel: Second favorite of the night. I'm a HUGE fan of apple desserts so this was a win-win. The unique pairing of flavors certainly works. -(The true star of Bien Cuit) Chocolate Almond Croissant/Twice-baked with Brandy: If you have to pick an item, CHOOSE THIS. You can thank me later. I first encountered this place when I stayed at a hotel on Smith St. in Brooklyn. I ventured down the street and wanted coffee. As I entered, I saw the display of croissants and how flakey they were so I ordered a Chocolate one and a Kielbasa for breakfast. You can literally see each layer of dough in these croissants. Very crispy on the outside and soft on the inside, just how a croissant should be and boy was my chocolate croissant delicious. My second time at Bien Cuit was recently when I took my dad there for breakfast. We bought a bunch of baked goods to take back to Hawaii and we also grabbed some bites at the cafe for breakfast. Food: - Quiche Lorraine - Very soft eggs with pieces of bacon? or pancetta? mixed in. Crust is very flakey and buttery and most of all, delicious! - Spring Onion Quiche - Again, very soft eggs with spring onion. QUite flavorful with a flakey, crunchy crust. - Kielbasa - The winner! This was such a good pastry and both my dad and I were fighting for the last bite haha. Basically it is two slices of bread with kielbasa sausage stuffed in between with a mustard seed sauce. This was then topped with cheese and a poached egg. It is also heated when you order it. Very delicious and highly recommend it. Service was great. Been here a few times. Even though the pastries are baked fresh daily, they don't actually taste that fresh. Not sure why, maybe it's the humidity control, but the croissants are the slightest bit stale. Also, the chocolate one has very unevenly distributed chocolate. Runner & Stone's pastries are far better. Also, they have rotating coffee beans. However, the last time I went, I asked for a coffee, and they said they don't do brewed coffee anymore despite it being on their chalkboard menu (not sure if they meant they were out for that day? that week? forever? It was only 2pm so who knows...). Ended up getting an Americano (which is also unhelpfully not listed on the menu as an option, even though the barista said it's a common alternative to the brewed coffee). Just confusing overall.
