    Let's get one thing straight, folks: pho dac biet has tendon AND tripe in it. You need those. It's a texture thing- you need that buttery-soft tendon to go with the fatty brisket, and the chewy crunch of tripe to go with the bean sprouts and the rare steak. You don't have those, you don't get to call your bowl a "pho dac biet". Well... this place doesn't call it "pho dac biet", but they do pho dac biet better than nearly any other spot this side of the 101. Everything that I've had here has been fantastic, and their pho is honestly the best that I've had in our area. A big surprise was how good their beef curry was- it really has a big flavor that I wasn't expecting- almost like a Japanese curry and a Thai curry had a really pleasant baby together. I guess this place is brand new- we spoke with the manager yesterday and she said that they're only about a month old in replacing PT Pho. I really have high hopes for this spot, I hope they're able to get both good people to work for them and good customers to appreciate their food. We'll be stopping by more than a little, and probably Grubhubbin' from them as well. This isn't the absolute best Vietnamese food that you're going to find in Arizona, but for our little pocket of the west valley it certainly is.

The menu makes me feel like a kid in a candy store... except sometimes the candy is not what you thought it was. As a Filipino, I was thrilled when I first tried their halo-halo--it tasted exactly like the real deal from the Philippines. Now? If you squint sideways and use your imagination, it kinda looks like halo-halo, but every time I order it, it's a surprise remix. Ingredients get swapped out like it's a Build-Your-Own-Mystery experience, and they never tell you until it's already in your hands. "Oh, we ran out of ube ice cream, so we threw in... a different ice cream. And also, no flan today. Hope that's okay!" The flavors are generally good, but consistency? Never met her. One day your drink is amazing, the next day it tastes like a cousin of what you ordered but with a different personality. The only thing that stays the same are the milk and flavored teas, which, honestly, feel like the safe zone in this adventure. For the price, it's a bit of a risk, especially when the taste lottery doesn't always go in your favor. But if you like surprises and don't mind rolling the dice with your order, it's always an interesting experience. 3 stars--because while it's not amazing, it is entertaining.
