It was about a 40 min drive from Denver, and when we arrived, we found plenty of parking in their free lot. The space itself is so beautiful. There are gorgeous views of the mountains, the gardens, the farm, etc everywhere you look. The food was fantastic!! They sat us in a private little greenhouse, which had a fan and windows to control the temperature a little. Every single course they brought out was so well thought-out and executed. I consider myself a fair reviewer, and will do my best to provide constructive criticism in hopes the management will take some steps to educate their staff. My husband, daughter and I spent the night at the Boulderado on the evening of 4/23. In the morning -4/24 -while they finished packing I went down to the restaurant first to get a table as we only had about 50 minutes to go back to our room to get our belongings and check out. The restaurant was not very busy, and I thought to myself, "Great!" The hostess picked up 3 menus, then paused, sighed, and said she wanted to give the server a bit more time to catch up, and she asked me to sit on a bench, though there were multiple open tables where I would have gladly waited. My husband and daughter joined me shortly thereafter and the hostess finally seated us, saying there was only one server working. She handed us 2 breakfast menus when there were clearly 3 of us, and my husband had to get up and go to the host stand to get another one. Our server came by after some time and took our order. Oddly, we saw a different server with another table so she was not the only server working after all. She brought my husby's coffee, but no spoon. Well, at least there was a knife because several servers passed our table without even a glance. He was never asked if he wanted a refill, even when he asked for a spoon and his cup was nearly empty. She didn't even give him enough time to ask for more. The kicker was the manager, pony tail guy- standing outside the restaurant in front of the coffee bar with our server and two other young ladies, laughing it up while we were sitting there completely surrounded by no coffee. Not one person asked if they could bring us anything else throughout the entirety of our meal. We literally had to wave them down for the spoon, then nothing. Time was running out so I sent my grumpy husband and frustrated daughter back to the room to get our luggage and said I'd wait for the server to pay. I sat there another 5 minutes holding my credit card up, and even caught the eye of pony tail guy across the bar, but eventually had to just go to the bartender to ask for the bill. I likely could have just walked out without paying and no one would have even noticed! I will say the food was fine. Hubby had the Denver omelette, which he said was flavorful, and our daughter and I each had the Avocado toast which was very nice. Loved the seedy bread. However, the service-or lack thereof- left a bad taste in our mouths. We love the Boulderado and will be back, but unless there is some training of their young waitstaff we aren't likely to return to Spruce. Overall, the restaurant staff seemed completely disinterested in the customers and couldn't be bothered to even offer a friendly smile. For a hotel like the Boulderado with the reputation of a historic gem, we expect much more from their restaurant. We have dined there previously, most recently last year when we had a lovely server, a much more mature and professional lady who was lively and joked with us. It was a very busy morning and she made sure we felt taken care of even when things took longer. We left with a smile on our faces. A few final words of wisdom- 1) even if things are busy, stop by a new table to offer a pleasant word and let customers know someone will be with them shortly, even if it's not your table 2) when you bring coffee be sure you provide a spoon, and at least one check in about a refill 3) stop by to ask if your customers need anything else, and get them their check in a timely manner 4) if you are a manager, don't stand around gabbing with your staff in plain sight of your customers, while said customers are being ignored, and 5) a smile goes a long way. The only smile we got was from the bartender who at one point seemed to be the only person running the show.

We started with a few appetizers: carrots which were slow roasted until they were tender and served on a bed of fluffy, whipped feta, crispy cauliflower which was fried until the exterior was nice and crunchy and served alongside tender carrots and a sweet tamarind chutney. My husband ordered a rigatoni which doused in a fresh bolognese, slices of parmesan, and fragrant herbs. We also had scallops as per the waiter's recommendation, but we were disappointed when only two scallops came out. It would have been nice if the waiter had mentioned that there would only be two scallops served, especially knowing that our party had 7 people. We also had crab fried rice, which I wasn't much of a fan of due to the saltiness of the dish. I ended up ordering the trout, which seemed to be a favorite around the table because of the crispiness of the skin. The sweetness of the candied pine nut crumble contrasted so nicely with the fish and the creaminess of the dashi yogurt paired well with everything. We also ordered a few meat dishes: pork belly which was incredibly fatty and tender and had a sweetness due to the brown sugar curing, espresso-rubbed wagyu skirt steak which ended up being fairly disappointing to everyone (the marbling of the wagyu steak wasn't quite as rich and fatty as I'd expect for a wagyu), and a double-cut pork chop, which was also incredibly tender and delicious. We also ordered a side of fries and everyone was so surprised by how large and thick the fries were, although it wasn't too different from other fries you could order elsewhere. It took a while for us to get the check or to flag down staff to inquire about the menu. We walked in without reservations on a Saturday evening and was lucky to have the option of dining inside or out. We were seated in the corner, which was fine except for the flies that would get trapped against the window and buzz right around us. There weren't really any other tables in the middle of the restaurant available, so we sucked it up. During the day, it was very brightly lit. But once the sun goes down, it doesn't become very dark. We were given menus by the hostess, but there was a slight delay with water service and what not. Eventually, our waiter did come by to talk a bit more about the menu. (I should note that the table was only set for a party of two and we were a party of four. So, it wasn't until our first dish arrived did they notice that we were missing tableware and plates for the rest of our party.) We mentioned that we'll be sharing a bunch of things, so this is what we ordered: The food came quickly and we did have to make room immediately. I do wish they would have paced it a bit better though. * Beet Salad $15 - They were kind enough to split this in two plates right off the get go. Since it's called a Beet Salad, I did expect a bit more beets than what was given. 3/5 * Roasted Bone Marrow $16 - This was a gorgeous presentation with three bone marrow halves topped with a little red trout roe. The accompanying buttered crusty bread was just wonderful. The Little Gal pretty much planted that in front of her so she could just focus on that. He then asked if they had missed something, so I reluctantly told him that they did. The Husband did mention to the two waiters that we were celebrating a birthday, so he had told the staff. I thought that maybe because the peach cobbler took a bit longer, maybe it was forgotten. He apologized profusely and offered to send us with an order of beignets. We were pretty full and had a drive back, but he insisted and said it would only take a moment or so. So we agreed and I waited for it. The order came with 10 little freshly fried doughnut holes, lemon curd, raspberry gelee, and strawberries. We headed to the car and I enjoyed a few there. They were just okay though, nothing really special. 3/5 Overall, there were some really great highs and a couple of lows. It was spiced at what I'd call a medium level, and quite yummy. My friend then ordered their vegan chocolate pudding, which we shared. Yummy and light. My one big criticism is that they charge $4 for iced tea. I questioned it and the cashier was kind of snippy about it, but the customer behind me approached after I dispensed my tea and said she agreed it's too expensive. The meal was appropriately priced and there is plenty of food, but the drinks? C'mon. It's worth maybe $2.50. They really should reevaluate that. It's the main reason that I gave the place 4 stars instead of 5. The other people who work there were nice and helpful. I didn't grab a fork but the server who brought my bowl cheerfully went and got me a fork and napkin. Very nice.
