5 stars for the cold gluten salad and the flatbreads, 4 or 5 stars for the noodle soup. I'm rounding up to 5 because, well, maybe I ordered wrong. The cold gluten salad is a true highlight here, with an impeccable springy texture and an absolutely perfect mix of chili oil and sesame in the seasoning. The flatbread was also a standout, being perfectly crunchy and flavorful alongside a cumin lamb with a good punch. I was less impressed by the hand-pulled noodles. The soup itself was fine, as were the lamb intestines (though I really prefer them grilled). However, for hand-stretched noodles, the noodles were just lacking and missing something. Went here by myself for dinner on a weekday around 6pm, and honestly, the whole experience was pretty strange. The restaurant was almost completely empty, but the waitress started rushing me to order before I'd even had a minute to look at the menu. I told her I was still looking, but she came back shortly after asking me to order again, and eventually brought her iPad over and continued rushing me. I'm not sure what the hurry was when there were barely any customers. I ordered the biang biang noodles with lamb, and unfortunately, they were pretty disappointing. The noodle thickness was really inconsistent, so some parts were overcooked while others seemed undercooked. The flavor was okay, but nothing special. To make things even more awkward, the waitress brought out a lamb burger that I never ordered and insisted that it was on my order when she showed me the receipt. She eventually took it off, but it was frustrating to have to explain that I hadn't ordered something that she had entered herself. I didn't like lamb intestine soup as much, there are a lot of different organs in there (liver, intestine, tripe, stomach, etc.) and I'm not a huge organ fan. The best thing I can say .. is it wasn't for me and the dishes I had weren't bad at all but more or an acquired taste. My only real complaint is that the lamb flatbread was salty. I didn't know what I was ordering when I ordered the cold thin sliced tofu. But I also wanted traditional flavors but it wasn't for me. I didn't get the hand stretched beef noodle and the beef was okay I'm not sure what kind of cut vise it seemed to be sliced from a roll. I love the vegetables which cut out some of the gaminess and oiliness of the lamb. I went to Xi'an Cuisine over the weekend and had their Cumin Lamb Flatbread sandwich. It was delicious and the meat was well-prepared, not underdone nor dry/overcooked. The spice level of the sandwich wasn't as high as I wanted, so I added chili oil on my own to make it a bit spicier (to suit my own tastes). However, if you're not a fan of spice then the regular version was mild (to me, anyway). The restaurant itself is small but very clean and organized. The food service was fast and the staff was very kind. Their milk bubble tea was also very delicious. Sometimes, bubble tea shops add a lot of sugar to mask the poor taste of their drinks. That wasn't the case here. The bubble tea here was delicious but not so sweet that it gave me a headache. It also went well with the spice of my Cumin Lamb Flatbread. This place is a really affordable establishment. They has hand pulled noodles of thick, thin and standard size. They have a variety of noodles dishes, sides and also the famous pancake/Flatbread. For the flat bread, they have different options to choose from such as cumin lamb, minced pork, beef, or vegetarian. Then you chose chrispy or not. I choose Chrispy or not. For the chrispy version it's like a spiral dough and the non chrispy version was more dough and bread. The cumin lamb was salty. The noodle I chose was #60 which comes with thick noodles, beef stew and tomateo and minced pork. They also have dry stir fry noodles and wet noodles. We got the Cumin Lamb flatbread, Zhajiang (thin) noodles, and the Biang Biang noodles with lamb. The staff was super nice. The flatbread was very good. The lamb meat was decent, but the bread was perfectly crispy and steaming hot. Both noodle dishes were excellent. Full of savory sauce that coats every noodle. The lamb chunks in the biang biang noodles were perfectly tender; this dish was the star of the night. We weren't very hungry to begin with and there were so much food, but we ended up finishing everything. Spice level wise, I'm not the most spice tolerant, but I felt that the dishes weren't very spicy. You will always enjoy a hearty meal when you come to Xi'an Cuisine. It's an unassuming storefront on Cermak avenue, but inside you will find food with TONS of flavor. It's not fancy nor flashy, but it's functional. Each table has a bottle of black vinegar and a jar of house made chili oil with a little spoon. If you're looking for white table cloths, you will not find that here. But if you're looking for a Chinese talent show to be playing on the TV at the back of the restaurant, bingo. There is one woman running the show, taking overs, cleaning tables, serving tea/water, and packing to-go deliveries. She works hard and is multi-tasking so you may need to be a little patient, but the food shines. I came here the first time for biang biang noodles with my partner. We each had a bowl and also shared a cucumber salad and a roujiamo flatbread. We were blown away by the hand-pulled noodles. I came back again with my family (party of 6) and this would be the biggest party they could comfortably fit around a table. Our table was made of 3 square tables pushed together with three of us on each side. It was cozy but it worked! This time, across the group, we had: biang biang noodles Won ton soup Hand pulled noodles with lamb Chewy noodles with pork elbow "Roujiamo" flatbreads: cumin lamb and pork belly Stir fried baby bok choy Pan-fried beef dumplings (we were notified of a 20 min wait time since this was made to order) Sliced marinated beef My favorite dish was the pan-fried beef dumplings. It came with a crispy, crunchy "skirt" that comes with the bottom layer of being pan-fried (yum!). My parents, sister, and BIL also got to try the biang biang noodles here and I think they were impressed! When we came there was no wait to be seated, but there was a little wait for our food and to get water and tea. If you're patient, you will not mind :) But it will help to have that expectation going in: that they are a small operation doing everything in-house and making everything from scratch, so wait times will be longer. They have a location in Naperville and it looks like a recently opened location in the West Loop. This makes me happy, as xi'an flavors are becoming more accessible across the city. The restaurant is a nice small, mom and pop shop type place that serves Xi'an type food. They serve a plethora of other standard Chinese dishes that most western cultures are used to but the star entree on their menu is the Biang Biang noodles. Overall I loved the authenticity and atmosphere of this place, price-wise I think you are paying a little too much for some of the food here especially considering some of the cheapest alternatives in the area.
