I've been coming to Jackson Hole for over 20 years, and The Wild Sage is now my favorite restaurant in town. Taking advice from a local, we decided to try something new and were so impressed that halfway through our first meal, we promptly booked a second night. The atmosphere is chic but warm, with personable staff and an ambitious chef and team. Our server Chris took excellent care of us both nights, remembering us, demonstrating a deep knowledge of the menu, and offering thoughtful suggestions. Over the course of two evenings, we also met Chef Hugo and Matt, the General Manager. The French-leaning menu is driven by local ingredients with an emphasis on quality and sourcing. The cocktails are innovative, and we appreciated the sommelier's advice on wine pairings. For entrees, we especially enjoyed the bison and venison that showcased the wild game with creative but restrained accompaniments. For smaller plates, we also recommend the quail, beef tartare, red cabbage, and parsnip soup. All the elements on the plate -- proteins, grains, produce, and sauces -- were deliberate and properly cooked and seasoned. Several dishes would feel at home on the menus of critically acclaimed restaurants. We're impressed by what Chef Hugo and his team are creating and will look forward to returning when we come back through town. read more

Went out to Jackson hole for a quick winter getaway. I've been there several times in the summer, but not in the winter. Took a special friend and stayed at the Rusty Paratte Lodge and spa, which by the way was spectacular! Made a reservation for the first night at wild Sage thinking it was easy spot and looked pretty good. It was also our first night with a late afternoon arrival and an hour and a half Massage so I wasn't in the mood to be walking around town in the cold. Boy were we impressed. From the initial pallet cleanser, to the appetizers, to the pre-meal, to the mail, to the dessert essentially every bite was incredible. Only negative comment would' be that the Seabass came out a little bit dry from the kitchen. Looked incredible but tasted dry. The service was spectacular. Wonderful gentleman who helped make our evening memorable. And their wine smaller was equally as personable. Turns out they had a seven course tasting dinner two nights later for Valentine's Day. We immediately canceled our existing reservation and rebooked for Wild Sage. Two nights later, during their tasting event, which came with wine pairings for each of the seven courses, we had the Chef stop by our table several times. Good looking young 40-year-old chef who knew his menu and the ingredients backwards and forwards. He had hand selected and sourced every ingredient from sustainable sourced resources. He had really gone out of his way to make it a special meal for everybody, all seven courses. When in Jackson hole, if you're looking for best class environment, food and service the wild sage is your best choice. Hands-down. Excellent dinner with a reservation on Sunday night but there were plenty of seats available. Service was warm, friendly, professional, informed about the menu. Restaurant itself was beautiful with an open kitchen concept, home feel with a fireplace and if you're here with daylight out, they have a good view of the mountain. Started with a red wine grenache blend which was good. 1. Amouse Bouche - Small bite with apple butter. Nice savory and smooth. 2. Endive and sablefish - Fresh, full of flavor, complex with slight bitterness in the fennel. 3. Boar - Perfect size, not big. Cooked perfectly medium, tender, soft, not really gamey. Came with artichoke and a potato puree that almost seems like there is cheese in it texture-wise but there is not. 4. Fruit crumble with vanilla ice cream - Came in a cast iron. Had this with a macchiato. Fruit of the night was apple and it was very aromatic. Too excited for this one, forgot to take a picture. 5. Small bite dessert as a send off - Cookie and fruit candy Overall, a somewhat surprising dinner that I would enjoy it this much. At long last, a very good, by any standard, sophisticated/creative cuisine restaurant in Jackson, shedding the usual label of: it's good for Jackson". We have dined there 5 or so times since the opening and each time the dishes have improved (at first they had a good base but flavoring wasn't entirely balanced and/or not quite enough salt was used, and/or slightly too much pepper, etc..) but in our last visit each dish really came together... balanced with your mouth always searching for the juxtaposition of flavors, which is the cornerstone of well prepared fair - you look forward to each bite versus become bored with the meal. The staff is friendly, the bartender, stocking of the bar, and cocktails are exceptional. The wine list is good - the recognizable trophy A+ bottles are overpriced, and there could be more mid-range priced bottles that are recognizable but exceptional (3rd & 4th growth Bordeaux for example) There are some interesting bottles of lesser known items - a sommelier should go around and guide people a little more effectively. They have all the correct stemware.. They do not rush you and thank God, do not commit the Cardinal sin of beginning to clear the table when some people are finished and some people are still eating... they clearly want you to enjoy the meal and the experience of being there. The monopoly, and attitude of being the only game in town that some of the other restaurants here have had is finally over ... Western towns aren't normally known for haute cuisine, but that's exactly what you'll find at Wild Sage at the Rusty Parrot Lodge in the center of Jackson. You enter the restaurant, which serves breakfast and dinner either through the cozy bar which faces the street or the grand hotel lobby, complete with antler chandeliers. Several things grab your attention right away - the open kitchen run by French-trained Chef Hugo Goodwin and the floor-to-ceiling windows with a stunning view of East Gros Ventre Butte. If the weather permits, you can sit outside in the shadow of this gorgeous landscape. The wall dividing the restaurant and the bar features glass cases showcasing the restaurants exceptional wine collection. The menu is also exceptional and changes with the seasons and the availability of sustainable and local ingredients whenever possible. Jeff Goodwin's cuisine can be described as French sensibility meeting the Rocky Mountain West, celebrating place and palate and putting a modern spin on classic dishes. We began our dining experience at wild sage with an amuse bouche of duck pâté from the chef, who also made the rounds speaking to diners. Then it was on to the delicious first course of summer fluke carpaccio, dressed with tomato ponzu and garnished with cherry tomatoes and charred garlic scape. The cucumber soup was a refreshing surprise on a warm summer night. We expected it to be cream-based, but it was simply cucumbers blended with cilantro and other herbs in a deep green sea of freshness. Our main course was the rack of lamb, cooked to absolute perfection medium rare. Yes, we did make room for dessert because the choices were so tempting and settled on the light and airy hazelnut cake, topped with several large candied hazelnuts. We had reservations for dinner at Wild sage and upon walking in the ambiance and location of the restaurant is beautiful and our server was great. I liked that we got started with an amuse bouche which was delicious. My husband and I shared everything--we got the duck deviled eggs and pea soup, both were done very well and delicious. For our entrees we got the bison streak and trout. The sides of both entrees were done well, but unfortunately our bison was very tough and the trout itself lacked some flavor. We ended our evening with the chocolate bomb which was basically their take on a dubai chocolate dessert which I enjoyed but nothing that really wowed us. I think their vegetable dishes were very good and worth trying, but maybe skip their bison and dessert. For a similar price, the bison steak is a larger portion and incredibly more tender at the White Buffalo a few doors down. read more

Wow what an incredible experience. First this started with a mix up in reservations. Patrick was quick to help us and cancel our other reservation and accommodate us at Wild Sage. We had a wonderful seat near the kitchen, the atmosphere was excellent, great vibes, nice aesthetic, amazing service all around, especially our server Hannah. We ordered blue cheese stuffed olive martinis. Unfortunately they were out of blue cheese, but someone went to the store to grab blue cheese!! Talk about service. The martinis were EXCELLENTLY prepared by Duck. He's an amazing mixologist. Appetizers- Garlic soup, stop what you are doing and order this now. Brussels sprout leaves- I wasn't expecting what came out, but it was delicious. It was more of a salad with a light vinaigrette and candied walnuts. Very refreshing. Focaccia bread- delicious, crispy top, soft center, awesome. Pork Chop- cooked perfectly, large serving of meat, great flavor. Ribeye- another perfectly cooked entree. Great sear and great flavor, fun potato with delicious sauce. Duck 3 ways- not gamey, fun way to explore different ways to prepare. It was great. Smoked creme brulee- what a fun presentation for dessert! This was a highlight, amazing cook and creaminess. Additional highlights: The wine list. We had our best meal in Jackson Hole on our 1st night here at Wild Sage. We dined at the bar with Duck, who was an excellent bartender and gave great recommendations for our meal. We had the vegetable salad, fluke carpaccio, Mt Lasson trout and Heirloom Rice. Everything was absolutely outstanding and unique and inspired. The kitchen was on it tonight and everything we ate was delicious. Bread with truffle butter and salmon amuse bouche started things off well. Beet salad and crab cake for our apps. The crab cake was all meat and even had a poached piece of king crab atop it. Had a so so experience a few years ago and was reluctant to come again but the locals really talking the place up and fellow Yelpers love Wild Sage so tried again tonight with another couple. ALL I can say is, "wow." We we're seated at a table that would easily hold 8. We sat across from each other and got to feel like we were in our own private dining room yet still in the restaurant. Wonderful. Our waiter, Jason (and I don't use that term loosely because he really knew is stuff) was fantastic. Knew everything and helped us make decisions. The menu is limited in that there are 5-6 items in each category and a few specials. Another situation of having trouble picking because there were so many options. Started with the amuse Bouche -- lovely --see photo. Next came the Salad Greens which everyone had but me. Nothing but raves. Freshness and terrific salad dressing. I choose the onion bisque and was pleasantly surprised. Sometimes these soups can be very consommé type--typically thin. Not so here. Slightly thicker with cream and very tasty. BISON short ribs were a big hit and surprisingly tender. Very rich. Presented in two ways-the ribs themselves and a strudel that was filled with everything on the plate. So ribs, kale, butternut squash in the strudel. Crazy good. Incidentally the wine list was excellent and we had a Paul Hobbs Pinot. Slightly pricy but no more than Snake River Grill which is a totally different restaurant but just as lovely. Don't hesitate. Go. Make a reservation. read more

Firstly, Kudos to the chefs at the Wild Sage for the outstanding Yelp reviews regarding the delicious culinary creations that have garnered this restaurant 4.5 stars. It is because of these recommendations that we made reservation for four on Saturday, June 8. The Wild Sage Restaurant is located inside The Rusty Parrot Lodge. They have a very small, handsome, cozy bar with a nice liquor selection. Additionally, you can peruse a 24 page cocktail book for whatever liquor, beer or wine selection suites your fancy! The dining room is lovely, has an open kitchen to watch the chefs at work, a large fireplace and is quite small with approximately 7 tables. Candles flickered on each table, and a large antler chandelier was lit to the max. We arrived a bit early, about 30 minutes, for our 8:15 reservation. Marcus, the host, pointed us across the hall to their lovely bar to have a cocktail while we waited, but no bartender was available. We found the cocktail menu ourselves, and quickly chose the Broadway and Jackson Manhattan (Willet Bourbon, Sweet Vermouth, Grand Marnier and Angostura bitters) and one Expresso Martini. After about 10 minutes, my nephew returned to Marcus, the host, and requested a bartender. Marcus informed my nephew that he needed to "finish folding napkins", and he would be with us shortly. Marcus finished his napkin folding, put on his bartender hat, and made our delicious cocktails! Thank you, Marcus! With cocktails in hand, we were seated at our appointed 8:15 time. Wayne was our waiter. From the beginning, Wayne was dismissive, unhelpful and seemed as if we were a bother. It was obvious to all of us that Wayne had rather be somewhere else than waiting on tables on this snowy, early June evening. When we asked a second time for further explanation to the evening menu add on, and other menu items, there was eye rolling. When spending between $29 to $53 on entrees, then wine, appetizer and possibly dessert, one would think the waiter would be attentive, engaged, and cordial. Perhaps Wayne was unfamiliar with the menu? And, didn't know the answer to our questions? Perhaps there's not enough wait staff for this small dining room? No excuse for inhospitable, omnipotent behavior from a waiter. Needless to say, we didn't order entrees and left Wild Sage when it was obvious to us that service this evening was going to be seriously lacking. My family and I had dinner on a Sunday night. Place came highly recommended and we were able to get a table on the early side. Place was full. Starters included potato gnocchi as well as a salad. Both were well thought out dishes with lots of delicate features. All were good. Mains were wagyu strip sirloin, a meaty white sturgeon fish and a full order of the potato gnocchi. They also brought out some nice homemade bread with butter which we eagerly devoured. Nice wine list we got a bottle of Louis Jadot Pinot noir which went over well. Wild sage is a small cozy dinning restaurant..but that is one of the reasons it's perfect! We got a tip from one of our guides to get the special, because it's always unique. I am so glad we did - that night we started with the Beet Salad- soooo good!! Oh, here do not turn away the bread basket..it's delicious- rubbed ever so lighlty with olive oil and salt!! We came here on our recent trip to Jackson Hole as a party of 11 by recommendation from a friend. You almost pass by it on the road, and when you enter it's this cozy, beautiful dark wood chalet-style hotel and restaurant...SO so pretty! The dining room is very small, probably accommodating a maximum of 50 guests and they only have one seating per night. All tables have a great view of the open kitchen and chefs working their magic, and let me tell you it is mesmerizing watching them! We sat at a long dark wood table by the fireplace, perfect location and the service was impeccable all night long. Dinner began perfectly with hot bread with salted truffle butter and our wine. For an app I got the special: a pesto and lamb bolognese homemade spaghetti dish which was to DIE for! The salads, soups, and jumbo lump crab cake (ALL crab) that came out as well all looked great and our plates were spotless at the end of that round. For dinner, I opted for the lamb shank with winter squash and lentils, cooked phenomenally to fall-off-the-bone tenderness. Other incredible dishes around the table included the gnocchi with ham and brussels, the waygu beef strip, and the fish specials. Everyone in our party thoroughly enjoyed their meal, and it was one of the few places on our trip that both the service and food were top notch. We didn't have any room for dessert, but I'm sure those would have been just as good. Every dish that came out was picture perfect, and I'd absolutely return here next time we are in Jackson Hole! A quick Google search for Wild Sage tells you it's the only restaurant in Jackson to receive the AAA Four Diamond award. I have no idea what that is, but it's the kind of thing you can tell to impress people at cocktail parties, like how it wasn't until "Friday the 13th: Part III" that Jason got his signature hockey mask. Granted, the outstanding accolades for the restaurant probably carry more weight than slasher movie trivia, but the point remains both are impressive. And Wild Sage definitely delivers on a memorable experience that you cannot find anywhere else in town, nor most other places. Wild Sage is actually the resident restaurant in the Rusty Parrot Lodge, a fantastic place to stay that I wrote way too much about on TripAdvisor (yes, that was a shameless plug to encourage you to check that out and give me the attention I so desperately crave). Being that we booked two rooms here, we enjoyed a few meals here, from breakfast to cocktails late at night. This review will focus on the Friday night dinner we experienced, though that is not to take away from the terrific breakfasts we had. The first thing to keep in mind is that reservations are pretty much mandatory here. The dining room is relatively small, but it's deceiving because while there are quite a few tables, they are spaced out so you're not sitting atop one another. And that right there is worth the five-star rating, if you ask me. Don't get me wrong: I need to make more friends, but I don't want to do it by sitting so close to you during dinner that we may legally be married in 27 states by the time the entree arrives. The dining room is gorgeous, opulent in the decor and inviting. An open kitchen area sits to the left and if the windows are not blocked, you can see traffic and people pass by on the street. A fireplace is along the right wall, and I imagine the table in front of that is prime seating in the winter months. When we walked in, we were greeted at the desk by a charming dude, and I honestly do not remember any of the names of the people helping us out. I guess I can say if you come here on a Friday night, the dinner staff is top-notch, and will make sure your Wild Sage experience is nothing short of exceptional. The chef provided a complimentary mini plate of... something. They were delicious, and set the stage for the appetizers we each polished off in no time. I make no exaggerations when I say my crab cake may have been the best I have ever tasted, but that was nothing compared to the mushroom tart special. I'm already weird because I like mushrooms, but this pastry concoction flanked with radishes was otherworldly. I'm not sure what the chef was thinking when they came up with that, but bravo to you, sir. Or madam. Entrees were just as wonderful, with the halibut being very flavorful and my lamb loin being prepared to perfection. But everything you have read about the bison short ribs is accurate, and yes, they are proof that whatever deity you believe in wants us to be happy. By the time desserts were offered, I opted for a martini thinking my stomach may rupture, though I will say the strawberry cobbler was a hit with the table. (Even the sour cream ice cream, which was not as questionable as it may sound.) We made our way to the lounge across the hall for a nightcap, and I'm pretty sure it was then that I realized I ate too much, drank even more and would struggle to will myself up the stairs to my room on the third floor. Nonetheless, I would do it all again in a heartbeat. Wild Sage's reputation is well-earned, and one reservation here will be enough to convince you why. read more

They seem to have resolved the service issue I had last time I dined here. The Wild Sage deserves its AAA four stars - it does everything perfectly! My husband and I ate there on our last night staying at the Rusty Parrot. We tried many restaurants in Jackson and Jackson Hole, a few of which were big disappointments. But the Wild Sage far exceeded our expectations! The menu, fortunately, is not extensive. They focus on producing exquisite plates, which began with the chef's complimentary amuse bouche with heirloom tomatoes, fresh shaved parmesan and balsamic reduction. We wanted to begin with a shared salad, but our preference came with pork belly. Instead of having to leave it out of the salad entirely, our waiter had the kitchen prepare separate plates, and kept the pork belly on my husband's salad. My entree was the Halibut with Wild Mushrooms, Chickpeas and Snap Peas. The fish was poached in a delicate but flavorful broth. It had an amazing flavor and texture. My husband had the Elk with blue cheese grits that he thoroughly enjoyed. Dessert was a trio of pot de creme- white chocolate, milk chocolate and dark chocolate. All were delicious but I would have preferred the option of having all dark chocolate. Yes, it is expensive, but it is well worth it. Food and staff went above and beyond! Always made sure we were OK and if we needed anything. Unfortunately I was very sick due to the weather, but went since my friend made reservations and it was her birthday. She had the Pumpkin soup which I tried, and I am not a big fan of pumpkin but the soup was well balanced and delicious! I had the salmon which was phenomenal! The flavors really did an amazing job of blending in well together. I forgot our waiter's name but did an amazing job explaining everything in each dish and answering questions we had. Clearly an exquisite chef. Dinner was very well prepared. We enjoyed a salad, the strip, halibut, crab cakes, and gnocchi. Everything was very good but not over the top. The crab was excellent. The halibut also high on the list. The service was lacking especially for a restaurant of this caliber. There were three tables in the restaurant and the waiter "team" struggled to give us first-class attention. The restaurant is very small (8 tables total). No need to arrive early. There is no bar. There is a "lounge" as they call it which is a conference room with a butler bar for the restaurant and two tables. read more

We had a wonderful dinner here, celebrating my birthday. We had a table by the fire which we had requested. The food was wonderful. I wanted a light fruity wine and our server picked it for me, it was one of her favorites....I wish I could remember it's name so I could enjoy it here at home. We shared an appetizer of fresh pasta with pompadour sauce, delicious. Then we had bison short ribs! We finished off our dinner with a slice of ginger cake. They wrote Happy Birthday on the edge of the plate and attached a candle. Dinner was a perfect ending to our day. I am hoping Wild Sage will send me the name of the wine..... read more
