I had measured expectations about Tolon, giving how much writing I encountered about it being the first restaurant of its kind in the area. After eating there, however, I'd gladly go back and would recommend it to anyone who wants good food and a good experience. We got a reservation on a busy Friday on the same day just by asking to be informed if someone else canceled. The interior space is well-appointed and not too loud. Our server was eager to explain the structure of the menu and talk about the farms sourcing the restaurant's ingredients. We started with the chips and cheese, toasted focaccia points with a brie fondue. it was simple and straightforward, but still a tasty way to start. We also had the bone marrow, which other reviewers have noted as delicious and a must-have. Our server said few people try it, which is a shame: the bone marrow is rich and silky, and the pickled onions and gremolata cut through its fattiness perfectly. I had the kale caesar, which was also tasty if a bit underdressed (a rarity in most restaurants). The dressing tastes more like ranch than caesar, but it's just creamy enough to off-set the sometimes bitter, raw taste of kale. For entrees, I had the scallops and my date had the pork belly pappardelle. She was very happy with the taste of her dish, but did feel the noodles were a bit large to eat easily. I thought the pasta was cooked perfectly, and the tomato sauce had a nice natural sweetness and just the right richness from the pork. My scallops were among the best I've ever had. It's very rare to get scallops seared enough to genuinely have a "crust," and the brown butter alongside them was a perfect accompaniment. My only complaint about the dish was that the bacon alongside the cauliflower puree and brussels was abundant but quite salty, and could overwhelm the other more delicate flavors. We ended with the pot de creme, which was an almost perfect custard cup. We ordered it because of the accompanying popcorn brittle, but that element of the dish was totally overshadowed by the pot de creme itself. I was unsure of it because the smoked salt seemed very strong, but once I assembled a full bite everything came together perfectly: creamy, sweet, salty, and just a little tart. I hope every dinner I have in Fort Wayne is as memorable and delicious as my first one at Tolon. It's definitely worth it. read more

This is now the best restaurant in Fort Wayne we have had the privilege of eating at. My wife ordered the Tolon bacon cheeseburger with butterkäse cheese, bacon jam, and basil mayo. She said it was by far the best burger she has ever eaten in her entire life... I dined on the crispy duck leg confit with duck fat fried rice, duck sausage, and a sweet chili garlic sauce. Never eaten duck before, was very impressed at the layers of flavor. The way this was presented was beautiful, full of flavor, duck will be on the menu for me now. We ordered a mixed drinks called a "whisky smash" holy cow was that really something that was above and beyond our expectations.. Wow.. What a delightful different awesome mixed drink I've never heard of. From now on we're planning every adult birthday celebration here at Tolon.. Our reservation was for 5 pm and we are glad that we arrived so early, this place was filling up quickly and by 6:30 and all the tables were taken. This place was amazing. My co-workers and I came in to Fort Wayne for work from the west coast. And after a tough day of work we were super pleased to have a colleague introduce us to this restaurant. The roasted bone marrow is amazingly delicious. Our waiter Randall and the owners were also so sweet and kind and welcoming. The first night we went (last night), we had almost everything on the menu. Roasted bone marrow, deviled eggs, pork belly, salads, the scallops, the bone in ribeye, the chocolate cake, and the it-remind-me-of-crème-brulee dessert. Fantastic, five star experience. I have been waiting for Fort Wayne to get something like this, and I am so happy it has lived up to all of the hype. For those of you familiar with Joseph Decuis, this is like that, but more affordable, slightly more casual, and in Fort Wayne! The atmosphere is rustic and modern, but still comfortable. You get the feeling that you can bring a date and cozy into one of the corner spots, or celebrate a big event with the family. For food, their pork belly is on point. We had the appetizer and then I had some in my pasta dish's sauce. Crispy on the outside, succulent and fatty, melt-in-your-mouth deliciousness on the inside, beautifully seasoned. The pasta portion was huge - like two people could share that portion! My fiance had the duck two ways - sausage and breast; the breast was cooked to a perfect medium rare, and the white beans it sat ontop of were amazing. Whipped cauliflower side is also a winner. We were way too stuffed to order dessert, but we did it anyways - the deconstructed pecan pie thing in the mason jar is sweet with a hint of savory, and you get a little bit of cold from the ice cream and a little bit of crunch from the brittle. The staff is knowledgeable, patient, informative and relaxed. My only issue was that our table was behind the hostess stand and when it's 30 degrees out, that is VERY cold air hitting you as people walk in! read more

Wow. The first person we run into is a waiter who is smiling, happy to be there and glad to see us. Which is refreshing for the service industry. The food was very good. Apparently (and I was educated on this fact) everything we order was locally sourced. How cool is this!? It's a nice, small place where you don't feel like you are just trying to compete for attention. This is the perfect place for a table for four or six. Cozy, quiet and calm. The owner came by to ask us what we thought of the food and was genuinely eager to hear our response. I got the feeling even if the feedback wasn't great the owner wanted to know. This is a place I know I will come back to with my wife again and bring good friends. It's nice to see Fort Wayne get such a fantastic establishment. We went to this restaurant not knowing we needed a reservation to eat there. (My fault) When we walked in, the hostess asked us if we had one and I said I was sorry, we don't. She seemed annoyed, told us we had to have a reservation and then said we could sit out on the patio if there was a spot open. She then walked away. We walked out and sat outside. My husband and I came here on a Tuesday night. We had called earlier to see if reservations were necessary since we were eating early, at 6:00. The host recommended we make them and we were glad we did. The restaurant filled up quickly that evening. We were seated in a side room, so it was nice and quiet to enjoy conversation. We started with the bone marrow - it was excellent! The pesto and pickled onions complimented it really well. For our entrees, my husband had the pork chop and really enjoyed it. The mustard seed was not overpowering and I enjoyed the taste I stole from his plate. I had the rabbit and gnocchi. It was fantastic and very filling! For dessert, we had the rhubarb cake with goat cheese and pistachio ice cream. The rhubarb cake alone was delicious, but the flavor of the ice cream paired very well with it! Biscuit with miso butter, pulled pork( very spicy), crab pork belly omelet( that's I had) My Asian preference, pork belly doesn't go with egg. The meat basically fell part in my mouth and the flavors, spicy, tangy, and smokey, exploded. It was very satisfying. My husband ordered pork chops and I had duck. Tolon is very trendy and new age. There is a very unique vibe and something you do not find in Fort Wayne every day. The prices are a little bit high but this is a place you take a girl for a date night. They have a great selection of drink options from wine to cocktails to beer. Be sure to try out a couple different drinks and ask your waiter/waitress to assist you. The menu is concise/small and features such things as duck. We arrived at Tolon on a week night with no reservations around 6:30pm. They were very accomodating, and found us a table. The waitress for our section was occupied with two large parties, but other staff helped take care of us, and we never felt neglected. We ordered the pork chop and ribeye. Both were outstanding, and comparable to restaurants we've eaten at in Chicago. The cocktails were good, and the bananas foster cake dessert wit bourban ice cream was exceptional. My 4 star rating instead of 5 relates to atmosphere. It was VERY warm in the restaurant, so much so that the hostess opened the front door several times to cool off. A couple of gracious friends gave us a $30 gift certificate for this place, and that is why we gave it a try. My wife and I think this is a horrible place to eat. Our waitress was just ok, but I still tipped her over 20%. The food was just way below avarage. Starting with my room temperature Coors light. We had the bone marrow as an appetizer which was warm and not tasty. My wife had the salmon and I had the veal rib chop. Again, neither meal was hot, just warm. The salmon was dry, and the bed of stuff they plated it on was nasty. The veal rib chop was cooked ok, but didn't taste good. It also contained more fat than other veal chops that I've had. VEGANS AND HEALTHY EATERS STAY AWAY! If you are tired of living and are ready for that heart-attack feel free to ignore this review. I visited Tolon a year ago while visiting Ft Wayne. It was reported to be farm-to-table and vegan-friendly on the local PBS station. I actually found a vegan dish on the menu. It was good, but not outstanding. Another recent visit to Ft Wayne and I was hoping for another good whole food plant-based dinner. This time there was nothing on the menu that was vegan or even easily modified to be vegan. Bad sign. The waitress said the 'chef' could make a vegan dish, but she had to go to the kitchen to find out what it was. Bad sign. She came back and said he could make fried rice and fried vegetables. Most everything else on the menu was fried in duck fat. Bad sign x2. I told the waitress I would have the Brussel sprouts and scallops, but wanted it dairy-free. When it arrived the Brussel sprouts had been cooked in some kind of fat, maybe butter, maybe duck fat. Bad sign. The scallops came on a bed of creamed cauliflower. No idea what was in the creamed part of that dish, but likely dairy or possibly duck fat. Bad sign. A chef who only knows how add flavor by using animal fats is no chef. I wound up getting sick. The worst sign. Maybe Tolon has a new owner or a new cook, regardless, lesson learned for those who want to eat healthy: STAY AWAY! read more

Wowsa! I loved this place! First time in Fort Wayne, and Yelpers didn't let me down! They had like 8 things I wanted to try, but I stuck to the Pork Rinds (my companions got the duck fat fries too - which had a basil & duck egg aioli - pretty good), the Pumpkin Bisque, then the Pork Belly with a side of Brie Polenta. My table did try the whipped cauliflower as well (my least favorite thing, but it's so creamy!). The Pork Rinds are served hot with powered cheese and I was so happy! The pumpkin bisque was amazing! Hot soup poured over a cold cream with diced apples and pumpkin seeds - I'll be thinking about it for a long time.
