We popped in on a Monday morning hoping to score some great grub and we certainly found some! Cubano ($20.95) - Starting with the bread - it's really fluffy, not toasted or pressed as with usual cubanos. Unfortunately, it's probably a little too light for the sandwich because some parts get mushy from being soaked in all the dijonnaise. The dijonnaise is very sweet, creamy with a mustardy zing. I think they add a bit too much, making the sandwich more fatty and messy to eat than I like (not to mention what I stated before about it soaking into the bread). The meat is fantastic. Both porchetta and ham are griddled on the flat top, giving them a developed and concentrated edge. The ham is to the point of being like country ham, while the porchetta still has great seasoned porky flavor. I believe they griddle the swiss cheese alongside the meat. It melts and crisps up into a cheese skirt, adding a fantastic texture to the sandwich. There's a lot of crinkle cut pickles underneath the meat, but it's not enough acid to cut through all that fat. Sandwiches come with a side of house chips. They are fried until a darker golden brown color, but aren't burnt. This gives a great kettle chip-like crunch. Even with different sized chips, they are very evenly fried with all chips being the same texture. They are salted the perfect amount. (4/5) Aleppo Pepper Pastrami sub Tomato Soup ($22.75) - This place is famous for their pastrami, and I can tell the quality. It's cooked on the griddle until it develops crisp edges. It's fatty, but the fat is rendered so there are no chewy and leathery parts. The meat is extremely tender and thinly sliced. It's honestly almost like bacon in texture, but the taste is completely different, with the exterior spices and pepper making a huge impact along with the rich concentrated meatiness inside. The bread is a nice toasted sourdough, not strongly sour in flavor, but definitely noticeable. The bottom slice is slathered with plenty of nopales studded cream cheese. It's added in a large amount and is an extremely creamy and fatty substance yet somehow doesn't overwhelm the sandwich. It's warm but not melty. The nopales are clearly there but I didn't find it to contribute much. The pastrami is layered on top of that followed by a ton of sweet brown caramelized onions that are very tender. An entire green chile, roasted and super smoky, is above that. Finally, aleppo mustard is spread on the top slice of bread. Between the green chile and the aleppo, there's a slight warmth that tinges the sandwich. It's nothing too spicy. Instead of chips, we opted to sub the Tomato Soup (no fee). It's very homestyle, full of tomato richness in a thick blend. It has a strong tangy tomato essence. There's basil oil drizzled on top for a boost of freshness. The soup is unfortunately quite a bit too acidic for my tastes, but that's only by itself! While very acidic, the soup is actually great as a balance to the sandwich (along with the pickle of course) since there's so much richness and fat coming in between the bread. (5/5) Proper Meats + Provisions definitely serves some great sandwiches. We were considering visiting again for our 2 full days in Flagstaff, but weren't able to make it because they close so early at 6!     Rarely 5 stars..always room for improvement…read more That said...once you find this place it's a gem it's hidden in a marketplace with crappy signage and directions from Siri sucked. But, when we found it...parking is ample and the entry is loud and proud. Bright interior colors and lots of Mexican pastries and other items before the order desk. The menu is ample and service is friendly...they acknowledged the poor directions ‍ I had the rolled taco special which came with rice beans and a drink (the horchata is AMAZING!). My friend had a huge breakfast burrito. In small places like this a salsa bar usually is a huge indicator of good food for me. The salsa bar was beyond impressive. All made in house...and do NOT bypass the pickled carrots and jalapeños. OH MY The interior is huge and it is definite a local take out place. I will be back to try more!

The staff was very attentive and offered exceptional service. There is a cold bar with salsas and toppings in the seating area. My food was good - but some complaints. The carne asada taco was excellent and tender and the beans were exactly as expected. The carnitas taco had a strong nutmeg or allspice flavor that overpowered the taco and the rice was dry.

So much so, they have been craving it and cannot find another place that tastes the same. I ordered their two fish taco special which was different than any other fish taco I've had, but very good! We also tried their corn and shrimp chowder which was amaaaaaazing! My son ordered the hurricane drink and said it was strong but very tasty. This place seemed like a little gem to the locals. Their customers seem very happy to be there and the guys running it are very nice and helpful. I would definitely recommend coming in if you're in the area. They have something for everyone. It's basically a sandwich that looked at a side order and said, "Hop on, we're going together." Then Scott, the owner, came by. Turns out he's a former white-tablecloth restaurant guy who decided to bring his culinary wizardry to a laid-back grill. And you can feel it immediately. The guy doesn't just run the place, he hosts it. Now let's talk surprises. The hidden gem of the night was the ratatouille. Yes... ratatouille. At a grill known for burgers. And it was the best ratatouille I've had in 25 years. Somewhere in Provence a French grandmother just nodded approvingly. The onion rings? Fried perfection. Crispy, golden, and exactly what onion rings aspire to be when they grow up. The burgers themselves were a bit overcooked for my taste, which is the only reason this lands at four stars instead of five. But Scott's presence at the restaurant more than made up for it. The guy genuinely cares about his guests, checks in, chats, and makes the whole place feel welcoming. So here's the official scorecard: Food: Four Stars Onion rings: 5 Stars Ratatouille: 5 Stars Scott just being Scott: 6 stars (if Yelp allowed) Bottom line: go for the onion rings, stay for the ratatouille, and enjoy meeting Scott.
