Reviews were looking good for a lunch stop here so we came by. Parking is a bit of a challenge so hopefully you can find street parking nearby. As someone who finds it difficult to finish a whole sandwich and side I appreciated the option to order a half sandwich. I had the cheesesteak and it was very good - with a heaping pile of meat and a soft hoagie roll. The housemade chips are tasty as well and they give you plenty of those to snack on. Then you walk inside and suddenly it looks like you've stepped into a butcher shop where people are buying steaks and fresh fish. At this point you're wondering if you're in the right place for lunch. This place may confuse you at the door, but it will completely win you over at the table. Because the moment the food arrives, the confusion disappears and one thing becomes crystal clear. Proper Meats + Provisions understands flavor. They're famous for their ten day pastrami, and now I understand why. This isn't just good pastrami. This is smoky, tender, deeply seasoned meat that practically melts while you're chewing it. It has that perfect crust on the outside and that rich savory depth that tells you someone here takes the craft of curing meat very seriously. These folks know meat. But here's the surprise plot twist. The soup. We ordered the tomato basil thinking it would be a supporting act to the sandwich. Instead it showed up tasting like something that wandered out of a Michelin level kitchen and landed in Flagstaff by accident. Creamy. Velvety. Bright tomato flavor with that perfect basil finish. Housemade pastrami? Corned beef? Porchetta? Yes please! Proper Meats + Provisions seemed like the best place in town to eat a sandwich lunch between NPS site visits around Flagstaff. We popped in on a Monday morning hoping to score some great grub and we certainly found some! Cubano ($20.95) - Starting with the bread - it's really fluffy, not toasted or pressed as with usual cubanos. Unfortunately, it's probably a little too light for the sandwich because some parts get mushy from being soaked in all the dijonnaise. The dijonnaise is very sweet, creamy with a mustardy zing. I think they add a bit too much, making the sandwich more fatty and messy to eat than I like (not to mention what I stated before about it soaking into the bread). The meat is fantastic. Both porchetta and ham are griddled on the flat top, giving them a developed and concentrated edge. The ham is to the point of being like country ham, while the porchetta still has great seasoned porky flavor. I believe they griddle the swiss cheese alongside the meat. It melts and crisps up into a cheese skirt, adding a fantastic texture to the sandwich. There's a lot of crinkle cut pickles underneath the meat, but it's not enough acid to cut through all that fat. Sandwiches come with a side of house chips. They are fried until a darker golden brown color, but aren't burnt. This gives a great kettle chip-like crunch. Even with different sized chips, they are very evenly fried with all chips being the same texture. They are salted the perfect amount. (4/5) Aleppo Pepper Pastrami sub Tomato Soup ($22.75) - This place is famous for their pastrami, and I can tell the quality. It's cooked on the griddle until it develops crisp edges. It's fatty, but the fat is rendered so there are no chewy and leathery parts. The meat is extremely tender and thinly sliced. It's honestly almost like bacon in texture, but the taste is completely different, with the exterior spices and pepper making a huge impact along with the rich concentrated meatiness inside. The bread is a nice toasted sourdough, not strongly sour in flavor, but definitely noticeable. The bottom slice is slathered with plenty of nopales studded cream cheese. It's added in a large amount and is an extremely creamy and fatty substance yet somehow doesn't overwhelm the sandwich. It's warm but not melty. The nopales are clearly there but I didn't find it to contribute much. The pastrami is layered on top of that followed by a ton of sweet brown caramelized onions that are very tender. An entire green chile, roasted and super smoky, is above that. Finally, aleppo mustard is spread on the top slice of bread. Between the green chile and the aleppo, there's a slight warmth that tinges the sandwich. It's nothing too spicy. Instead of chips, we opted to sub the Tomato Soup (no fee). It's very homestyle, full of tomato richness in a thick blend. It has a strong tangy tomato essence. There's basil oil drizzled on top for a boost of freshness. The soup is unfortunately quite a bit too acidic for my tastes, but that's only by itself! While very acidic, the soup is actually great as a balance to the sandwich (along with the pickle of course) since there's so much richness and fat coming in between the bread. We were considering visiting again for our 2 full days in Flagstaff, but weren't able to make it because they close so early at 6! Really disappointing experience. We were really looking forward to trying this place, but unfortunately the sandwich was one of the worst we've had, especially considering how expensive it was. The bread was not good, and the sandwich itself had almost no flavor. Everything just tasted bland and underwhelming. We also ordered the tomato soup, which tasted more like canned tomato paste than a homemade soup, and there was a noticeable amount of oil poured over the top. Found this hole I. The wall while searching Yelp for a good sandwich place in Flagstaff. The pastrami was highly rated so my husband and I decided on splitting one between the two of us. We got lucky because they only have two small tables out along the sidewalk and one was available when we got there... Yay!!! Anyway, let's get to the food and it's amazing taste! The pastrami was fantastic and there was plenty in each half. It was very lean and sliced thicker than what you'd expect from a pastrami, but it was delicious. It's served on rye with grilled onions, pickles, and mustard.. The mustard may have been the only thing that lacked perfection in the sandwich. I was expecting a deli mustard, but instead it was a sweet (honey?)-tasting mustard. Not much of a sweet mustard person, but it worked after I got over the shock! It was definitely something I'd be more aware of next time I'm in flagstaff and yearning for a sandwich. I will remember to ask for regular mustard! Warm Aleppo peppered pastrami served with homemade potato chips. The sandwich is average size definitely enough for one person and possibly enough for two to share. It was OK. It was a good sandwich, but nothing spectacular no definitive case it was on the blasé side, even though it came with cream cheese and a green chili. You can't taste the green chile and it's not hot. It was OK if I were to come again I would try a different sandwich and considering the cost out-of-pocket without drink was $26 I think I would find a different sandwich shop. It's not every day you eat a sandwich that changes your life, but that's exactly what happened to me when I ate at Proper Meats last weekend. My sister and I split the pastrami and the chicken blt. Let's start with the pastrami. It was fantastic but it felt like the obvious choice. It was melty and delicious. We got extra pickles on it (highly recommend) like any sane person would. Also loved the homemade kettle chips it comes with was the perfect addition of crunch. Ok now to the STAR of the show. The chicken BLT. I can now only describe my life as before I ate this sandwich and after. It was insane. 10000/10. I didn't even take a good photo to do it justice. Looks like no one on here has a good photo of it -- probably because we're all just inhaling it immediately upon arrival. Somehow the roasted chicken, herb mayo, pickled onions, tomato, and lettuce made the most perfect bite I could have ever imagined. No I lied. It was better than I could have imagined.
