From the minute that we walked in, we felt very welcomed. I made a reservation the day before for 5 for 7:15. We got there a little bit early but they had our table ready. I already knew that they had a special with shrimp and pasta. I asked if they still had the shrimp dish and they said 'yes', so they put me down for that. Everything that we had was delicious. No complaints. I do wish that they had a little bit more variety. The restaurant is small but they make you feel like you are in a bigger space. The staff was great. Our waitress was Victoria and she attended to us very well. There was a party of 16 there and she told us to put our orders in right away. We will definitely go back again. read more

Had a wonderful dinner last night. Cocktails (tequila/beet forget the name and Weird Uncle Collin) were so well balanced and refreshing. Chicken thigh bun was great (slaw is killer) and the foie gras was fantastic (considered repeating it for dessert). Flanken cut ribs so well seasoned with a fantastic set and the haddock with mushrooms and grilled asparagus in a miso dashi broth was so good. Fish was fresh and tasty, again a very well-balanced dish. Mint curry ice cream (I know, right?) was fabulous. Sweet, spicy difficult to describe but get it. Rhubarb, berry crumble was great. Wow. This restaurant became an instant favorite for a variety of reasons. One being the venue. The moment you walk in, there are clean lines, modern light fixtures, a quaint bar, and a semi-open kitchen concept in the back. It's bright, with some rustic touches such as white painted yard and gardening tools on an expansive wall, and old school floral prints. The restaurant is small, but the unique touches and creative design of the tables and bar make it so that the restaurant can seat a decent amount of people. They also have quite a bit of outdoor seating. Another amazing highlight of Stalk is the menu. Though small, the menu packs dishes that are elevated and thoughtfully crafted. They have about 5 small appetizers, 4 salads, 6 entrees, and 2 desserts. The dishes range from Americanized small plates with inspiration from Spanish, Asian, and French dishes. They also have an extensive wine list with some local draft beers and a small, but unique craft cocktail list. I ended up coming on a Saturday afternoon with my partner after we had driven by it numerous times. It was a spur of the moment decision, and we were lucky that we could make a reservation at the bar within 45 minutes. When we walked in, we were quickly greeted by the staff and seated at the bar, which has a flair of metallic, yet rustic, features. I ended up ordering the Blueberry Margarita with champagne, and it was great! My partner ended up ordering a lavender vodka cocktail that was also extremely flavorful. We then decided on getting a couple of appetizers. We ordered the daily chef ceviche which featured flounder and was garnished with dehydrated carrots, mezcal pineapple vinaigrette, chives, and corn. It was incredibly fresh, flavorful, and looked beautiful. We also ordered the carnitas queso, which was AMAZING. It came with crostinis, and was made with a black bean and corn salsa. We could have each eaten a whole serving of this! Lastly, the staff was truly amazing. The two bartenders/servers that were working were fun to talk to, gave us some recommendations, and made our experience even more enjoyable. What to Say? 1- Its definitely not dos amigos anymore (even though I love Dos!) 2- Its Bright and Vibrant! 3- The Menu is FUN. 4- The Service was fantastic As a former Dover-ite I have seen so many changes as of late in downtown, Stalk is included in that change and the result is phenomenal. Ive been past this old burrito bar a handful of times since Stalk moved in and finally got the chance to check it out, and it impressed before walking in. The patio space they have set up is perfect for the sidewalk dining we all are looking for now. The subtle signage outside and the bright window frames a cozy but bright interior. Walking in, woah, what a change. Clean, elegant, fun, and vibrant are just some of the initial thoughts I had. From the Wall colors to the art to the repurposed farm tools hanging, everything jelled. The slightly open kitchen feel was an inviting touch. We had reservations (I would recommend this!), sitting at the bar- take a look at my pic- it is classy and stylish but fun. An array of bottles I recognize and some things that elevate the palate! The vibe of the bar certainly gave me the idea that they know how to cocktail, and they definitely do! Cocktails ranged in inspiration but provided pure delight- clean, crisp, flavorful. On to the food. Creativity was certainly at work here. The first page highlighted starters and salads all under $12 but don't be fooled or disappointed, that price is not an exchange for flavor and experience! The daily ceviche was a creative take on sauce, protein and garnish with corn husk vinaigrette, pineapple mezcal and roasted bell pepper, fish and dried carrot. We got ahead of the class, trying out the newly added queso dip which redefined how I view a favorite of mine. Looking around at everything coming out of the kitchen, I could have stayed and ate all night- everything was mouth watering. Having not been in before, I found the service to be light, fun and attentive. Talking to both bartender/servers was fantastic getting a little history on Stalk and what they were up to during COVID. We came in last night as a party of 4 with a reservation and were seated right away. Our server was fantastic, kind and tolerated having to talk to my dad beautifully- I didn't catch his name but he just moved back to Dover from Spain. Please give him our thanks!! We substituted a bunch of things, but everything came out perfect even with all the swaps. I have gastritis and have had a really difficult time eating at a restaurant since I got the diagnosis- it was amazing eating delicious food someone else had prepared for a change! Our favorite dish was probably the beef bourguignon, all of the vegetables were tender crisp while the beef was melt in your mouth tender. The beet and orange ice cream and white chocolate mousse with corn cookies were stellar, so unique without any of the flavors clashing or being too strange to enjoy. The only complaint I have is that it was a little warm inside- even after shedding some layers we felt a little uncomfortable. read more

We've been curious about trying Stalk - a few friends have tried it and had interesting experiences. We sat at the bar on a Thursday evening and had an excellent time. We had the sweet potato ginger bisque, crispy cauliflower, and mushroom steamed bun - and were pleased across the board. Tried Stalk for the first time last night. The food and service were excellent. I found the environment, however, overall noisy. Why don't these business owners do anything to improve the space? We shared a table near the front and it was hard to hear each other, above the din. The menu is quite advanced. Friend had the duck appetizer and reported it delicious. I had the Caesar salad and found it good, if a little under-dressed. My medium pork chop was a little less than medium. Dessert was good. Try the mousse. read more

My husband and I had a fabulous meal last night at Stalk! The place is small and was mostly full but not too loud which made it easy to have a conversation. The vibe and "stalk" theme is great. Our food was terrific! For apps we had the mussels which were a special that night, and the Huli Huli Buns. Then had monkfish and halibut for entrees. Everything was prepared well with great presentation. The only tiny nit I had was we were seated for a bit too long before we were greeted by a server or even given water. What a fantastic find in Dover, NH while driving back to Boston from Maine. Stalk is a wonderful small new American bistro in downtown Dover. Everything we had was fresh and wonderfully prepared. We started out with two pork buns and shared a Caesar salad, both were very good. The slaw with the pork buns was tasty and had a nice level of spice. For entrees we had the roasted monkfish with beluga lentils, spiced cauliflower, and spiced yogurt and the wild mushroom fettuccine dish with carrot purée Cacio e Pepe sauce. The carrots added a great and unique flavor to the pasta dish. Both dishes were fantastic. For dessert we had the deconstructed vanilla bean cheesecake with milk crumb crust crumble, halved cherries, and matcha. The cheesecake was very good and uniquely plated. Service was very friendly and attentive. The workers know the menu well and give great recommendations. I highly recommend Stalk if you are in the Dover/Portsmouth area looking for a reasonably priced fine dining experience. read more

We had a great double date sitting outside at Stalk a few weekends ago. Made the reservation same day. I definitely recommend making a reservation though- it's a small establishment and larger parties may have trouble being accommodated without one. Great drink selection with local brews and plenty of wine to choose from. The dishes were all excellent with the steamed buns being the favorite at the table. I had the Burmese tofu and it was delicious! We didn't make it to dessert but will definitely try it later. Parking can always be a little hectic in Dover so give yourself time to find a spot. One of the best dinners I've had in awhile! Great atmosphere. I was amazed at the presentation and taste of all three courses. I ate all of my Baba Ghanoush Dip, had to stop eating the New England Baked Cod so I would have room for dessert- and was definitely in a bad place by the end because I could not stop eating the Lavender Panna Cotta! Great food and menu selection. The service knocks it out of the park. The one and only downside is that it's very loud inside.

What's good: pretty good localvore, farm-to-table style food. What's okay: some of the flavor combinations are a little too experimental, and miss the mark a bit. But points are earned for at least being interesting. For example, tarragon infused water is unique, but it has the strange side-effect of numbing the tongue (look it up). What's bad: the service. Is it supposed to be as slow as it is? We watched the clock, and it was an hour and ten minutes from when we sat down until our food arrived. If it's a slow-food place, some warning would be nice... or some bread to nibble on. We felt like we had been forgotten, as we sat there sipping our water, and contemplated leaving. I actually said, out loud, "If our food doesn't arrive by 8:30, we'll have to leave." And right at 8:29, our food finally arrived. Half of my party had gone out for a walk to stretch their legs at this point, and we had to call them back. Slow food may be part of the experience, but our waitress was pretty much AWOL the whole time, and never checked in on us with a status update about our food, or apologized for the wait, or anything. And after our food arrived, she was mostly AWOL again (she did stop to ask if the food was okay one time), and then we sat and sat there, staring at our empty plates, until we finally had to track her down and ask for the check. And even after asking for it, we sat and waited some more. We were sitting outside, and near the far end of the outdoor area. Out of sight, out of mind, I guess. I get the feeling that Stalk added the outdoor street seating during COVID, when they couldn't have indoor dining, but then re-opened the inside restaurant post-COVID, but then kept the outdoor seating too, for double their old capacity. But they didn't double the kitchen, nor double the wait staff. I think there were two waitresses for the entire place, and it just wasn't enough. I didn't look in the kitchen, but I'm guessing they don't have enough cooking capacity for... what? 12 outdoor tables and 12 indoor tables? It might be time to rein things back down to size and refocus. read more

I've seen so many positive reviews of Stalk here and on Seacoast Eats. I would love to have joined the party, but future diners be warned. When we arrived for our confirmed reservation, management refused to seat us. They said "sorry, we had a mix up" and said there was nothing they could do. I showed them the automated text confirmations from that same evening and they just blamed a new person and turned us away. They had many empty tables but due to "other reservations" (as though ours - made through their website - didn't count), we couldn't be seated. Poor service from the very top. They acknowledged we were booked and that they made a mistake but didn't try to make it right. I hope others enjoy better. read more

We just wish the chefs had more confidence in their ingredients and didn't feel compelled to dress, for example, a beautiful piece of tuna and fresh vegetables in pesto sauce. However, after having stumbled upon Stalk on a drive home from Maine I had to give this place a review. My wife and I have dined in hundreds of restaurants over the years, and this was one of the best experiences we have ever had. It was fine dining at a good price. We split the thrice baked potato and the beet salad. Both were excellent. I had the Crispy Salmon, and it was out of this world. My wife had a Shrimp dish, and was equally impressed.
