Conveniently (for me at least) set right next to the central bar, Shingen is a great place for a quick take out to eat bar side and watch the Sunday NFL games. Service is quick and very friendly. The server gave her suggestions with enthusiasm and delivered it to the bar while we were cheering for the Eagles. She helped us spread out our order and suggested which sauces she preferred, and cheered alongside us for the next two plays before returning to Shingen. The food is excellent. Been hearing about this place for a while now, from my friends. Staff is super awesome! I want to call her "Momo", but I am not too sure of our server's name, was very friendly and answered all of our questions. Food was tasty and quality was unsurpassed. 15% discount is an great thing that they offer, however, if you're a drinker, their sake prices are quite expensive. This place is so expensive compared to Marugame Udon, but then again most of the restaurants in the Stix Food Hall are pricey. This is my second time coming to Shingen though because the waitress is soo nice and the ambiance is cute and relaxing especially on off popular times. The different noodle options are awesome, can choose between soba, moringa, and ube udon. I love getting either the moringa or ube knowing they're healthier options and not easy to find in the mainland. The lunch special or special combo is great as you can choose which noodle you like, whether it's cold or hot, and choice between tempura bowl, beef bowl, poke bowl, curry bowl, or natto mix bowl. I usually get the ube udon, hot, with the tempura bowl. The tempura comes in a mix of red pepper, shrimp, onion, asparagus and it's delicious! We were the only customer but server brought us the wrong order and didn't bother to come by later to ask if everything was ok. Food: -Natto mix: so refreshing and flavorful. My mom used to eat this in Japan and she says it's the exact flavor she had back then and reminded her of her youthful summer days in Japan. -Natto with yam: same as above :) -Agedashi Tofu: delicious crispy on the outside soft on the inside tofu in sauce with green onion -Shrimp tempura with regular soba: tempura is of excellent quality and not too breaded with just the right amount of crispy. Honestly - two words utterly describe this place: Pleasant Surprise We came to STIX to get take out from Tempura Kiki but they were short staffed and couldn't accommodate take out (surprising since only 1/4 of their seats were taken...?) so we pivoted to Shingen next door and what was initially a split second decision turned into a "pleasant surprise" Tsukimi Tororo with Ube Noodles - noodles are definitely the highlight, soft, chewy, delicate consistency and dipping sauce not overbearing but yet still flavorful with each dip. Shrimp Tempura with Ube Noodles - tempura was also surprisingly delicious, perhaps I just had high hopes for some tempura after getting denied from Tempura Kiki next door but this place lived up to the expectations. Probably the most interesting of Japanese / Korean noodle places I've been to. Features cold soba and ube udon noodles combined with curry and other dipping sauces. The soba buckwheat noodles were perfect. Ambiance is similar to rest of stix and outside of a whiskey bar. Oddly the owners choose to hide what why sell by using a flip chart menu on the front table while other places use the brightly lit led screens. It was totally random that I happened upon this place. There was minimal research done beforehand, the first impression looked good. EXPERIENCE We walked in as a party of 4 at peak dinner time on a Wednesday night and were seated immediately. The waitress told us the regular buckwheat and the green moringa taste and feel the same, but the green ones were healthier for you, while the ube noodles are chewier with a similar feel to ramen. We were served our food pretty quickly and seamlessly. Nothing bad or special with respect to the service. But BEWARE, they have an included 3% tip, so make sure to factor that in when tipping at the end! FOOD (2/5) Beef Tongue - The flavor was good but the meat was really tough and chewy. I struggled when trying to take a bite. The wasabi on the side was real wasabi, not horse radish, but it was extra salty. (4/5) Beef Tsuke with Ube Noodles - First of all, the colors of this meal were highly aesthetically pleasing. The noodles did have a more ramen-like texture, has more chew than traditional soba. I picked this restaurant because I have a 10% off coupon that I found in one of those coupon book in the stands near by. It was pretty noisy because of the crowd. I ordered the combo with HOT soba and beef bowl. This is my issue with their food, when I ordered hot soda, I expecting HOT soba, not WARM soba. The soup base is just warm and make my entire bowl of soba not right. The beef bowl was just OK, not much to it, I was going to ask the staff to redo my hot soba but I decided not to do so because I waiting almost 1/2 hours for my food in this busy nights. So happy they opened up close to me. I used to dine with them at their original location in Mccully. This place is small but fills up! Located in the Stix asian food hall. The quality just SLAPS. You know it's fresh and homemade noodles. You eat it and feel so alive and healthy. You can do the cold or hot noodles. A lot of the broth is HOT especially the amazing duck and you get cold noodles. We got the ube soba sets that came with your choice of a small donburi. - the Gyu-Don was really good according to my friend and it even came with a soft boiled egg - the curry don was just curry over rice, if you're looking for a simple curry bowl as a side to your soba, this is it! The flavor was really good! - the tempura don was my favorite since it came with 2 string bean, 1 red pepper, 1 potato, and 1 shrimp tempura! It was really yummy and paired well with the soba. I got the ube soba and it was so yummy! The texture was more bouncy than normal soba noodles. It didn't really have an ube flavor but it sure was super pretty to look at! For appetizers, we got - -Shingen Poke was okay. I got their special dinner combo ($20.80) and opted for the hot ube soba with tempura don. I enjoyed the ube soba but expected the texture to have slight more chewy. I want to try the cold soba next time so I can compare textures. Tempura don was tasty and had a good variety of tempura. Among noodles, soba is a very healthy choice. Soba is mostly made with buckwheat flour, which is not only gluten-free, but packed with healthy proteins, vitamins, and minerals. It's lower in carbohydrates and calories as well. After you're done eating the servers bring out a broth for you to add to your sauce so that it becomes more of a soup. We also got the gizzard appetizer. It's a cold gizzard with a sourish spread on the side(optional to eat it with the spread). It was very unique and chewy. If you are looking to try something new definitely try the gizzard. This place is located in an underground food court with a whole bunch of other Asian restaurants. Tempura was good but not great. A little too much batter. A little heavier and more fried tasting than higher end tempura I've had. Also, some of the tempura vegetables were dry. Another indication to me that something is off here. Partner thought the broth flavor was very good but had similar somewhat above average reaction to the meal.
