One of the very few places that specialize in Soba noodles on the island! This was the perfect lunch - light, cool and refreshing, and doesn't leave you feeling heavy because it's soba! We had the lunch combo, one with curry and the other with tempura rice bowl. It's a very good portion and it reminds me of the soba noodles I had in Japan. It tastes the same! This place is a hidden gem in the food court of Waikiki Shopping Plaza. My wife and I were just walking around after our day at North Shore. I wanted something light to eat and something cold and we found Shingen. The waiter Kayin was very friendly and very helpful. I had the cold soba and my wife had a mini beef bowl. I also had the grilled beef tongue and pork belly skewers. All the food were amazing and Kayin even gave me a special tea you make with some of the soba water with the left over soba sauce. At first I thought it was a weird idea but it turned out to be the perfect ending for a cold soba meal. Excellent customer service from Kayin. Styx in general has a lunch special until 3pm on weekends. The special varies from place to place and at Shingen is a soba and don combo. I wasn't feeling hungry enough to get both, so I just got the beef tsuke. The store only had one server, since it was a Sunday and also a small location. So things may take a little time to cook. The store markets itself on health benefits. It has a special moringa noodle option, but I played it safe with the regular noodles. (The "healthy" food aspect also seems to up the price compared to some other restaurants in Styx.) The portion felt small for 21, but I am not the target demographic, so I do not know how it compares to other health conscious places. The meat is lightly warmed but went well with the soba. It had a spicy kick at the end, and when dipped in the sauce, it got a jerky like depth added to the flavor. They did not offer the sobayu, so I think you need to specifically ask for it. It was great to try, and has a very authentic experience, but for the price, it is better to save it for a special event. read more

After our workout, we were trying to keep it light--so soba sounded like a solid idea. I've been to Shingen before, and their soba is the bomb dot com, so we headed there without hesitation. Did we keep it light? Ehh... not really. We accidentally also ordered the takoyaki and the ribeye skewer. No regrets on the takoyaki--it was crispy, creamy, and downright delectable. Wow, wow, wow... the soba here is on another level. Both the classic and the spirulina noodles were beautifully made, with that perfect bite, and the broth was so flavorful without being heavy. The skewers are juicy and tender, extra good with the dipping paste, called "yuzu kosho", which adds layers of flavors. Kayin is a very sweet and helpful server. I've been looking for opportunities to dine here, after going to their Stadium Square location in Moiliili. Noodles, especially soba noodles, are my krytonite. We ordered the special combo featuring choice of noodle with mini donburi. It was a warm evening so I chose cold moringa soba with tendon. My dining companions chose hot ube udon with ahi poke bowl and hot moringa soba with tendon. Ask for kamaaina discount when ordering. Gracious service especially considering it's located in a food hall and it was an especially busy evening (Spam Jam food festival). We happened upon Shingen by chance while looking for a dinner spot near our hotel. The restaurant is located inside the STIX Asia Food Hall and we're so glad we happened upon a gem upon so many other options. The option for cold noodles was what sold us, since the weather was warm and we wanted something to cool us down. We ordered the Seiro (plain cold noodle with dipping sauce) - one order with ube udon and one order with moringa soba. I loveddddd the ube udon while my husband really enjoyed the moringa soba. The ube udon has a mild flavor with a chewy texture, perfectly soaking up the dipping sauce. The moringa soba has an earthy flavor and is less chewy, but also pairs well with the dipping sauce. I highly recommend trying out the cold noodles if you're looking for something light and refreshing. I enjoyed it so much that I came back twice, and each time was as good as the last. read more

We came upon Shingen and what caught our eye was the cold soba noodles with imported buckwheat from Hokkaido! We love cold soba noodles and it looked delicious so we decided to try it out. Just our luck they have a lunch special that lasts until 3pm. We just made it, it was our lucky day!!! It did take awhile for our meals to arrive even though there was only one other couple in the restaurant at that dead period between 2-4pm when people have already eaten lunch. There was only one waitress and she was great. There was a good amount of buckwheat soba, dipping sauce, wasabi, and a bowl with rice topped with a piece of shrimp tempura and assorted vegetables tempura (asparagus, bean, pepper, sweet potato and onion). The tempura was crispy and flavorful. The rice had some sort of shoyu flavor to it and tasted great! If you're looking for a great soba meal, this is the place! You might want to take advantage of the discounted lunch menu to save yourself a few dollars. They also give a kamaaina discount with your Hawai'i driver's license. I got the lunch combo that also includes a choice of rice dish (I chose curry rice) and also ordered additional thin sliced beef on the side. The soba noodles have a satisfying texture, striking between slightly firm and slightly chewy. The standard dipping sauce is refreshing and the goma dare dipping sauce has a sweet and sesame flavor and sticks to the noodles well to make a more flavorful bite. The curry rice is really good too, like it warms the soul with its rich flavor and soft rice. The thin slice beef was a welcome addition to both the noodles and the curry rice. FYI this place adds a 4% kitchen fee without advertisement. Tip accordingly. Thought this place was really good but was disappointed to find out from my receipt and other reviewers that they charge a 4% kitchen fee (BEFORE tax, so you pay TAX on the kitchen fee) on top of a very expensive meal. They don't give you a receipt at your table, they shove an electronic tablet at you that shows the total and asks you to tip on a number where you see no breakdown of the price. It's a very rushed experience, so you have exactly 3 seconds to decide your tip before they quickly wisk it away. I was wondering why this meal was almost 80 dollars (I get that Waikiki is expensive) but I never had the opportunity to see this so I paid like a 24% tip without my knowledge. Meal was fine, but ultimately not worth the price or the feeling of being manipulated into paying this much unknowingly. Would have been fine if they at least told me the situation. -- PS it's not posted anywhere I saw in the restaurant (you can verify this with the photos on Yelp).
