This Japanese noodle spot is located in the STIX food court in Waikiki. We came here without much expectations but was definitely pleasantly surprised. The duck soup dipping noodles was lovely. The udon noodles didn't have ube flavor but the texture is definitely different than soba. It was chewy and soft and still very tasty. We returned to Stix Asia for another draw: cold soba from Shingen. We ordered both the original cold soba and the moringa cold soba in combo sets that came with some other side dishes. The soba is the best thing to get here, cold and toothsome. Some of the accompanying dishes are a bit of an overthought, such as the cold tofu salad, tempura and the slightly tough braised beef with daikon. read more

Located in the Asia Stix food hall, Shingen was a nice surprise to see a specialty soba shop in Hawaii. After initially going around the different Asian restaurants to see their menu, the wife and I decided on Shingen, since they were offering special soba including "ube" and "moringa." We started off with an appetizer of kaki fry (or deep fried oysters), which came with four oysters and some greens with a little dressing. These were a great way to start the meal - crispy on the outside and juicy oysters in the middle. For the mains, both of us decided on a soba set that included a mini donburi - I had moringa soba with the ahi poke donburi. They say that moringa is a plant that provides rich nutrients, which they blend into the buckwheat to make their soba. To me, I thought it tasted like a slightly stronger soba, a bit more bitter and wheat-y, but still delicious, and chewy texture. Since it's typically warm in Hawaii, eating the soba while dipping it into the sauce was a nostalgic experience to when I used to live in Japan. The ahi poke was very flavorful (almost too salty for me), but the rice was fantastic - probably best rice I have had in Hawaii! Overall, the service was wonderful, and glad that we could get a chance to visit this soba shop while around Waikiki! read more

First time discovering STIX Hawaii and I was thrilled to see an Asian-themed food court. My partner LOVES soba, and the last time we were in Oahu he wasn't able to make it to I-NABA so wanted to fulfill his wish of trying a soba spot on the island. We eat early so we came in around 5-5:30 and the place was empty. However, this gave us an opportunity to pick the brain of a local -- Nicholas. He gave us a bunch of Asian food recs on the island and proudly touted that Shingen is the best soba LOL! As they specialize in it. I had never been a soba fan until now. I got a beef soba soup, my partner got the red spicy, and we shared an agedashi tofu. Everything was yum but of course expensive for what it is, being in Oahu. We've been to other Shingen locations and were pleasantly surprised to see Shingen opened a storefront in the new Stix food hall. We ordered 1 combo of cold soba with an ahi poke bowl and 1 combo of cold soba with a tempura bowl. Service was okay (a bit rushed and absentee) but the soba was very al dente and had great texture, though the food did take a while to come out and Shingen was basically empty. Prices are steep in my opinion, so I don't think Shingen is a particularly great value, but the soba is solid. read more

The weather here in Hawaii is exactly as I remembered it; warm and humid! So my wife decided to treat us to a cold and refreshing meal here at Shingen. First off Shingen is one of many asian restaurants located at Stix Asia, an Asian food hall in Waikiki. There is a parking lot, and if you spend $35+, you can get 2 hours of parking validation. We arrived shortly after everything opened up at 11am so we were one of the first parties seated. It's a cozy dining space sandwiched between two other eateries. After looking at their menu, we both decided to order from their Special Combo portion of their Lunch Menu. My wife ordered Cold Ube Udon with an Ahi Poke Bowl. I ordered the same thing with a Tempura Bowl. We didn't wait long until our food arrived beautifully presented! The noodles were cold, refreshing and had the right amount of chewiness to them. The broth was light, but still very flavorful. The tempura was crispy and the sauce was slightly sweet. Having green onions and wasabi added a bit of texture and kick to every bite. Towards the end of our meal, our waitress brought over a wooden kettle with hot water and mentioned to us that by pouring the hot water into the broth, it would make a nice tea. This was such a perfect way to end the meal as the broth still had flavor with the added hot water. And to top things off, they have a 5% Kama'aina discount! Having recently moved back to Hawaii, it's always exciting to try and see new restaurants. Especially with this hot weather, having a delicious and refreshing meal is a no brainer. My wife and I didn't know what to expect with Shingen, but I can say it left a positive impression on us. Relocated from Old Stadium Square in Moiliili area you can find them in the heart of Waikiki Shopping Plaza lower level..."Stix Asia". They are known to kick up the flavor of their soba which is imported from Hokkaido by adding Moringa giving it a lovely green shade and sneaking this superfood is a great addition to the healthy benefits of soba. Took mom here and wanted to give her a bit of cheer as it's been too long since our last visit, we did arrive early which made it a perfect opportunity to grab a choice of seat as this cozy restaurant filled up fast, Mom likes to graze on various dishes while I usually get the "Special Combo" but decided to try a new dish from their Shingen Summer Special Menu..."Genovese Style Seiro" a CiaoSoba twist...as this cool soba dish is topped with a peso sauce versus the standard tsuyu dipping sauce garnished with tomato wedges, basil, nori and julienne chili almost a salad type of dish was truly refreshing and loved how they made it work. Mom the grazer as everything sounds like a dream got the "Plain Soba" along with "Deep Fried Oyster" and "Stewed Beef Daikon" and it was the stewed beef daikon that was her favorite though the translation of it doesn't quite describe the dish...beef was tendon and the broth it's simmered in along with chunks of daikon was the comfort dish that brought her down do a child. She savored each bite and loved it thoroughly along with the perfectly cooked soba, and at almost the end of our meal is when they bring the "Sobayu" which is the hot water the noodles was boiled in. What you do is add some sobayu to the dipping sauce and you drink it like a after dinner tea. As I didn't have dipping sauce I poured mine into the basil sauce and finished it...so yummy! Lots of traditional was of preparation that aren't familiar with the tradition is done here which is a great comfort to the tourists that are craving that far away from home is found here and is greatly appreciated. One of the best noodle places we tried was at Shingen for their ube udon. The noodles were perfectly chewy and so delicious paired with a cold dipping sauce. There are three noodles to choose from: soba noodles, moringa soba noodles, ube udon noodles. I decided on the ube noodles with cold dipping sauce and mini tempura bowl combo. It was perfect for me. Noodles were perfectly cooked. The cold noodles were perfect for a hot day. My husband got the soba noodles with duck and negi dipping broth. There were pieces of duck in the soup. This is my go to soba place whenever I'm in Waikiki for vacation. Shingen used to have its own storefront before the pandemic but they have moved to this new location now, in the Stix Asia food hall on the bottom floor of the Waikiki shopping plaza. It's easy to spot and the place is much smaller now compared to its original location but it still gives off the quaint traditional Japanese soba restaurant feel. Service was quick, once we sat down, the waitress took our order and the food arrived shortly. The prices have gone up since my last visit before the pandemic. It's consider pricey given that it's located inside a food hall but they have a very good dinner special that can't be missed. $20.95 for their handmade soba along with a rice dish. I opted for the cold buckwheat soba along with the tem-don. You can also get the hot version and there's multiple rice dishes for you to pick from. The portions are very generous and the food was just as I remembered each time I visit. Too bad my trip this time was limited to 2 full days. I will be back next year! The place gets packed quickly during dinner time and we saw all the tables were filled with people while we were there so if you are ever craving for handmade soba, this is the place to go. Oh yeah, minus 1 star because of the 3% kitchen service charge on the check which was not given a heads up on the menu. This is on top of an expected tip. It's a restaurant style sit down place, but got it to-go because we wanted to sit at the community area with our food ordered from other restaurant. I got the Croquette Kake seaweed soba and hubby ordered the sweet stew beef on rice. Our friend got the ube soba. Croquette Kake soba - the soba and food is neatly packed separate from the broth. I love how the broth is nice and hot. The ube soba was definitely a good item to try. It came with a dipping broth and the color is so beautiful. Hubby is not into soba but was glad his rice bowl is tasty. First time trying Shingen which is located in Stix Food Hall. They offer validated parking with purchase of $35 or more which is great for locals who want to venture into waikiki. We made a reservation but it was also pretty empty so we got seated easily. A lot of us were excited to try the moringa noodles but unfortunately they sold out for the day. They make their noodles in house and they also have ube "udon" which is a mix of soba and udon textures due to the starch in the ube. Since they were out of moringa, I decided to try the ube duck dipping soba which comes with a hot dipping broth with duck meat. For a "craft" soba spot, I was surprised at how good the noodles were. It was definitely very bouncy and chewy. Something different than your average soba noodle! There menu is big and they have something for everyone which is nice. I will say the broth was a bit salty so it's hard to drink at the end but overall a really good meal worth trying! The duck in my dish was tender and it came with a few pieces - not super plentiful but not on the skimpy side either. They also have soba meal sets where you can get a rice bowl on the side and lots of other toppings and sides to choose from. read more

Good to see this place reopened back in their roots of Waikiki - Stix Asia. This was our favorite soba place back when it was located on the backside of Beachwalk. We also did take out from them also during the pandemic but eating it fresh in the restaurant is the best experience. We both got the Dinner Special. I got the Hot Udon (ube) with Tem Don and my wife got cold soba with Tem Don. My Ube udon didnt have an over bearing ube taste, it was just subtle enough to tell what it was. My wife's soba had a nice chewy texture. We really enjoyed the food and will surely be back. We were not sure where the parking is for Stix Asia so we just parked at Royal Hawaiian. You can get 3-hour parking with $10 purchase which we picked up our dessert from Kulukulu. read more

Been hearing about this place for a while now, from my friends. Staff is super awesome! I want to call her "Momo", but I am not too sure of our server's name, was very friendly and answered all of our questions. Food was tasty and quality was unsurpassed. 15% discount is an great thing that they offer, however, if you're a drinker, their sake prices are quite expensive. We probably would have stayed there longer, but went somewhere else to drink (and eat more). Despite that, we will be definitely be coming back here again. Do the tofu (even though it's served only at dinner! You won't regret it! It was very nostalgic to he encouraged to drink the soba water at the end of the meal for health purposes. Soba and Tempura are good but pricey for portion size. It is smaller than most Soba restaurants and price is about 30% higher. The service is meh' at best. We were the only customer but server brought us the wrong order and didn't bother to come by later to ask if everything was ok. You can hear the loud employees in the kitchen which is next to the seating area, cussing and using vulgar language in Japanese..which we can understand! This place is so expensive compared to Marugame Udon, but then again most of the restaurants in the Stix Food Hall are pricey. This is my second time coming to Shingen though because the waitress is soo nice and the ambiance is cute and relaxing especially on off popular times. The different noodle options are awesome, can choose between soba, moringa, and ube udon. I love getting either the moringa or ube knowing they're healthier options and not easy to find in the mainland. The lunch special or special combo is great as you can choose which noodle you like, whether it's cold or hot, and choice between tempura bowl, beef bowl, poke bowl, curry bowl, or natto mix bowl. I usually get the ube udon, hot, with the tempura bowl. The tempura comes in a mix of red pepper, shrimp, onion, asparagus and it's delicious! There are a lot of other options on the menu but I keep coming back to the combo as it's a great deal. Always look forward to a meal and Shingen when I'm in town. read more

Conveniently (for me at least) set right next to the central bar, Shingen is a great place for a quick take out to eat bar side and watch the Sunday NFL games. Service is quick and very friendly. The server gave her suggestions with enthusiasm and delivered it to the bar while we were cheering for the Eagles. She helped us spread out our order and suggested which sauces she preferred, and cheered alongside us for the next two plays before returning to Shingen. The food is excellent. A plus for us - since the closing of Yamagen, we havent found a low key soba eatery that appealed to us at this level till now. read more

Do not sleep on Shingen!!! This place is so excellent and authentic! My mother and I happened across it while walking around STIX and we liked it so much, we went again during our short stay. Food: -Natto mix: so refreshing and flavorful. My mom used to eat this in Japan and she says it's the exact flavor she had back then and reminded her of her youthful summer days in Japan. -Natto with yam: same as above :) -Agedashi Tofu: delicious crispy on the outside soft on the inside tofu in sauce with green onion -Shrimp tempura with regular soba: tempura is of excellent quality and not too breaded with just the right amount of crispy. Soba is excellent quality. I love that they give you the water they cooked the soba in after; very refreshing. Service: Incredibly friendly. A lot of them speak Japanese and English. Honestly - two words utterly describe this place: Pleasant Surprise We came to STIX to get take out from Tempura Kiki but they were short staffed and couldn't accommodate take out (surprising since only 1/4 of their seats were taken...?) so we pivoted to Shingen next door and what was initially a split second decision turned into a "pleasant surprise" Tsukimi Tororo with Ube Noodles - noodles are definitely the highlight, soft, chewy, delicate consistency and dipping sauce not overbearing but yet still flavorful with each dip. Shrimp Tempura with Ube Noodles - tempura was also surprisingly delicious, perhaps I just had high hopes for some tempura after getting denied from Tempura Kiki next door but this place lived up to the expectations.
