First of all, others in our party loved it. I'm not a fan of "family style" and was not aware this was their thing. Portions were small, although affordably priced. I wanted steak, but on general principle won't pay $65 unless at a fine dining restaurant. It took 5 orders to feed 4 people. Music was too loud. Wait staff was really good. Finally visited Shan on a date night. After living in Shanghai, China, I never thought I would taste such authentic Asian Cuisine again. The Dan-Dan noodles are EXCELLENT! We had a wonderful time eating at Shan. Everything we ordered was wonderful and only the Dandan noodles had some spice. We never discussed spice levels with our waiter but everything came out at a great level (around a 2/5). Our favorite was the Dandan noodles, followed closely by the bison Mapo tofu and the earths three treasures. We also got a special of the night - pork belly - also delicious. Second time dining here since their expansion. Im a local and dine at many Bozeman restaurants. My only complaint here is with the receptionist (long dark hair) who greeted us very rude and impolite. It really put a bad taste in our mouth which really isn't pleasant right before dinner. Everyone and everything else was really good! Great food and service :) read more

Must dine at when you come to Bozeman! Atmosphere was great. Small cozy place that was modern and everything was meticulously placed, in the dining room and kitchen. Just a little touch I always like. The food was incredible, each dish better than the next. Prices were great, definitely paying for quality without breaking the bank. We ordered quite a few dishes and it was all excellent. The kind of bites of food that make you day-dream about the next time you'll be coming back. The staff were very friendly, knowledgeable and sharp through and through. A very well oiled machine both front and back of house. The owner Jared was there slingin' out food but also made his presence felt in the dining room by talking in detail about the food and his story. I really enjoyed his conversations and hospitality. I have, on few occasions in my travels come upon places that I have enjoyed so much that I've second guessed leaving them the stellar review they deserve; this has always come from a selfish side of me. I mean, why would I want to share a hidden gem with anyone, I want it all for myself, sharing it will undoubtedly lead to more people going there and limiting my access to it. Be that as it may, Jarrett and staff at Shan deserve the 5-star review I give them. I thoroughly, and I mean thoroughly enjoyed the pale ale on tap, the lamb dumplings starter followed by the Chicken Khag Soi so much I could not help myself from sharing my delight with all of you. After reading some good reviews. My girlfriend and I decided to give Shan a try. We were pretty disappointed with the service as well as the food. Some of the things we had were ok. There was not much flavor. They seem to be trying to mask the lack of flavor with chili oil, garlic and cilantro. Most things had a very similar flavor profile. The dumplings tasted good. Unfortunately the wonton wrapper was so over done they fell apart when touched. The lamb skewers were burnt not charred. The service was very lackluster. We felt as if we were bothering the hostess by just being there. I really wish we had a better experience. I doubt we will give it another try. read more

Definitely make a reservation. We tried to walk in on a Thursday and no joy. So we booked a table for Friday night. The place was bustling. Food comes out "family style", ie whenever it's ready, so my entree arrived before my app. No big deal, but be aware. I'm a sucker for sichuan peppercorns, so ordered the wings as well as mapo tofu. The wings rocked my world - dry rubbed and bigly tingly. The tofu needed way more heat, but had a nice authentic flavor. We really wanted to try this restaurant. We arrived somewhat early on the weekend but were told they were booked for the entire night. I'm giving it 2 stars, but hope to update my review one day after having a meal, because we were surprised we couldn't be seated even with an long wait for instance and especially because the music was so loud in there we could hardly hear the hostess speaking and couldn't imagine trying to have a conversation while eating our dinner or having a more relaxed time there. we were a party of five on the Saturday after Thanksgiving, with a rez at 4:30 - the time they open. Once they unlocked the door, we were seated in the newer expanded area, toward the back, at a table with a lazy susan, great for passing and sharing dishes. The rock/pop/oldies music in the space was very loud, so when the server came to talk about the specials, it was difficult to hear her from across the table. We ordered drinks, and started with the lamb dumplings. They were tasty, but as others have noted, the wrappers were overcooked and a bit lifeless. And it was hard to distinguish a lamb flavor. Chili oil helped. The ribs were very tasty, not fatty at all and everyone (except the vegetarian) enjoyed them. Speaking of, there were very few options for her, but the veggie Penang curry she chose was the hit of the evening. Great depth of flavor, delicious over rice. A bit too much heat for some. The cucumber salad was fresh and crunchy but way too much fish sauce. ;-( The lamb noodle dish was good/not great, but we did take home leftovers. The place has a hipster somewhat aloof vibe and the service follows suit in that it lacked warmth friendliness. Food was dropped at the table as it became ready, so there were a few different 'servers'. They were out of one wine and one beer that we were interested in. We did not order dessert. Finally, an authentic Asian restaurant in Bozeman. We have been going to Shan for about six months and every time we are delighted with the variety of appetizers, entrees and specials. Jarrett is an incredible cook and his team is talented, fantastic and professional including the entire kitche - casual and friendly. We have sampled most of the menu and are always surprised and excited about the "specials". The atmosphere is casual and somewhat Japanese and (thank you) not loud and noisy. Shan is a new Asian restaurant in Bozeman, MT, that opened one year ago. Its dishes are influenced by the owners' 20 years experience in the restaurant business in Bangkok and Hong Kong, though the cuisine isn't explicitly Thai or authentically Chinese. The business model is based on traditional family-style Asian service. Everything is à la carte. The menu features six sharable snacks suitable for two and fifteen main items served in large bowls sharable by three to four. The main items are: (1) curries, stews & soups, (2) BBQ, (3) wok, and (4) noodles. Prices for the snacks range from $12-$18 and the main items range from $16-$25. This restaurant is small with a seven-seat counter and about five two-place and five four-place tables. Its size does not support the family-style business model very well. One main menu item at a two-place table means the patrons must agree to eat the same thing. One purpose of going out, especially to a new restaurant, is to sample the menu, get the lay of the land, and to decide whether to come back. A family-style business model at two-place tables frustrates this. While two-place tables can select more than one item, one main item is usually sufficient to satiate two guests. Selecting more to better enjoy and diversify the experience results in half the food being left or carried home, which is false economy because left-overs from last night's restaurant are always enjoyed less the next day. Shan has an extensive wine list from all over the world (Australia, Argentina, Chili, Corsica, France, Austria, Spain, Greece, Italy, Lebanon, California, Washington, Oregon, and Wyoming). It offers 6 sakes, 12 bubblies, 14 whites, 3 oranges, 3 roses, and 32 reds. One wonders why a small Asian restaurant that offers 6 snack and 15 main dishes needs 70 wines, and how American and European wines are supposed to pair with dishes from countries that did not have significant wine cultures until the 1990s? Perhaps the list is intended to convey that Shan is a high-end dining experience. But this doesn't work when the wines haven't evolved with the cuisine and there's no way of knowing how anything on the list would fit with any dish. Two of us has the following dishes at a two-place table: Hand-Chopped Beef Larb (one of the snacks), Cumin Lamb Noodle and Sticky Tamarind Ribs (two main items), and two pilsners. There was no bread or any other accompaniment with the dishes. The Larb was a make-at-the-table lettuce-wrap of finely chopped beef in sauce with leafy herbs on the side. The herbs included fresh cilantro and other things. Unfortunately, the cilantro was 6-inches long and impossible to cut or eat in the wrap, and many of the other herbs were wilted limp or dried out. While the aroma and flavor of the Larb was good, the meat was chewy and full of gristle that had to be spit out with nearly every bite. The Lamb Noodle was lamb pieces in a slightly spicy sauce with interesting noodles. The meat was favorable, succulent, and tender, and the noodles were al dente just right. The dish was good. However, huge stems of raw cilantro were mixed and wilted into the dish making it impossible to get a bite without dragging out a 6-inch-long tangled mass of herb with the noodles. Eating it was a chewy mess. The Sticky Tamarind Ribs were lightly smoked and modestly glazed with a tamarind sauce. The tamarind was an interesting and unique flavor for pork ribs and was wonderful. There were about three ribs per person. It was the best dish. The beer was good. Shan Restaurant aims to be an upscale, trendy eatery. To succeed, it must achieve quality-control on every dish. Serving chewy, gristly meat is not acceptable at any level. Throwing long stems of raw cilantro on a dish that require botanical dismembering by customers at the table may be traditional in some cuisines, but not here. A little attention to plating and presentation will go a long way. The restaurant's business model is not well suited to its space because family-style dining requires large groups that can order numerous items to enjoy the menu's diversity and share the cost equitably. Couples can't do this. Our meal cost $80 plus tip for a snack, two main items, and a couple of beers. At any other restaurant, this price would have got different entrees for two people with at least two different sides and bread and butter. Its food for thought. read more

Do NOT make a reservation past 8:00 PM with this restaurant. I made a Thursday night reservation for 5 people at 8:30 PM, arrived at 8:15 PM, and was told at that point the table won't be free for 30 minutes. I waited until 8:30 which was reservation time, and nothing. My party left. At 8:47 I get a text from Shan that the table is now ready. The freaking restaurant closes at 9:00 PM. Yeah, I want to sit and enjoy a meal while the whole staff watches me, rushes me, and makes us all uncomfortable enough that we leave so they can go home. Whoever is running the overall management of this restaurant needs to relearn the job. Teach the staff to move guests along so you can maintain reservation integrity or don't take reservations so closely. This restaurant is run by amateurs (how about a personal text saying you screwed up and offer to make it right?). If you want to experience frustration, go right ahead and reserve this restaurant. I wouldn't recommend doing so. read more
