We knew we'd be missing and craving Asian food during our trip, and we had low expectations for Shan, but we were pleasantly surprised! We had a large group, so we ended up booking the mid-tier set menu. Note that if you're a cilantro hater...almost every dish on this set menu contained cilantro, except for maybe 1-2 dishes and obviously the desserts. It's not explicitly stated in the ingredients for each dish, so we didn't initially think it would be an issue for the member of our party that didn't like cilantro. But as each dish came out, we saw that they LOVE to use cilantro here. Just something to be aware of. If you hate cilantro maybe you should ask them to leave it out of whatever you order. Highlights from this set menu for me were the Sichuanese Beef Salad and the Lazi-Ji Chicken Wings. The chicken wings had a nice spicy kick! Everything on the menu was decent, although the curries were a bit underwhelming and watery. The Coconut and Pandan 'Tres Leches' Cake was good too, although I didn't taste the pandan flavor at all. I enjoyed the lamb skewers, but I know not everyone likes lamb, so it's interesting that they have it on the mid and upper tier set menus. We were visiting Bozeman as part of our Bachelorette Party and found Shan as an option for a dinner spot. They had set menus for larger parties and we figured it would be easier on everyone to not have to pick their own entrees and also get a taste of everything. - PARKING - Large lot in the back that leads to the entrance door! - SERVICE/ENVIRONMENT - We checked in and got seated promptly as we had a reservation. It's dimly lit but the tables are brightened by small lamps. Since we had the set menu, we didn't need to order anything outside of drinks. They kept the dishes coming, until about the last entree and dessert courses. For some reason everything came to a standstill, so we sat there waiting a bit. Then when we were trying to check out, their system died so we had to wait longer for that to get rebooted. - FOOD - We had a HUGE list of food, and wow we were stuffed by the end! I did have a pretty big gripe with the fact almost all the appetizers and a few of the entrees had the same exact topping of cilantro, scallions, peanuts and sesame seeds - it got old after 3 in a row had the same garnish. I went here last week and had a great meal. We were running 10 mins late and I called ahead - the person couldn't have been nicer about us running behind (childcare woes). When we arrived we apologized for being late - the guy who seated us informed us as he hustled us to our seats, that we'd need to move fast because they still have another seating after us as we were seated at the bar in the back. (We had not planned to spend a lot of time at dinner) but with the pressure on, we ordered within 3 mins of sitting down. The food came out fast, so fast that the kitchen brought out double of what we ordered at least 3x and we had to tell them each time we had already gotten our dishes. Delicious Chinese and Thai fusion restaurant that would be comparable to California and New York standards. I highly recommend ordering rice because the foods can be a bit salty. Quality ingredients, but as mentioned a tad salty and heavy on the mala numbing spice. Parking was easy in the shared lot, and we were able to get bar seating at opening. Came here for a celebratory NYE dinner. I'm actually still here...which should signal either two things: this place is awful or great. It's great. Had my doubts about an Asian fusion restaurant in Montana. But everything has been authentic and on par with what I expect from an authentic Asian restaurant. We ordered the $75 set menu and it was mooore than plenty. The food were diverse from curry, dumplings, steak, egg plants, duck soup, mapo tofu, etc (clearly the chef knew his Asian culture) The staff were amazing and kind. I actually don't want to write this review as it is already a busy place. We live half the year in Orange County, California and Las Vegas, Nevada, where there is excellent Asian food in both. We literally crave Shan when we're not in not in Montana. The menu has some variation overtime and the staples are excellent. This is not water down Americanized Asian food. This is authentic some dishes are spicy just the way they should be. If you're looking for elevated P.F. Chang's, this is not this is great fresh authentic Thai fusion cuisine. I recommend getting to know the owner and Chef and asking about his story. We drive 90 minutes and put our name on the waiting list to eat here. Highly recommended Shan was a delight. We sat at the bar as soon as it opened and Ryan was our bartender/server. He was very responsive when I told him I can't handle spicy food. We started out with the lamb dumplings which were heavenly and melted in our mouths. We then had refreshing cucumber salad. Up next sticky ribs, a bit messy but had a wonderful smoked taste with a peppery spice. We finally had the ribeye sliced which my husband enjoyed but wasn't for me. What a great restaurant. We arrived at 8 for our reservation and were seated within 5 minutes. Every table was full. We sat at the kitchen bar (there are two bar areas) and noticed how chill the kitchen staff were moving around and working for such a packed house. Amazing Asian food, accurate tastes. Albeit expensive. We ordered braised pork belly, mapo tofu, Thai noodles, 3 treasures, Dan Dan Noodle. They were all very tasty. My favorite is Dan Dan Noodle, it was spicy and the sauce was rich, and noodle was tender. Mapo was right on the spot, exactly as it should taste. The pork belly was great, a bit hard on the lean meat but the fat melted right away. The only thing I didn't enjoy as much was the chicken noodle. We just had to go back to Shan. We wanted to try more dishes and revisit our faves from our last experience here. The service was as excellent as before. Hubby had the lamb skewers which was a special and said they were super tender and bursting with flavor. They had been braised and then grilled. We shared the Changsha Cold Noodle dish. Shan is often busy but that's because there isn't that many quality Asian cuisine in Bozeman. The restaurant serves Chinese food from different regions, not just the usual Cantonese dishes. This makes the menu fun and a little different from other places within an hour from here. The food looks and taste well prepared but I have always feel odd about it, as if the flavors are not always exactly right. It feels like something is missing. It's almost like one small ingredient is not there, so the dish is not quite the same as the real version. They also experiment with new dishes which is a huge plus, so expect a different menu every so often. read more

This place is DA BOMB!! It's basically a mixture of Asian fusion/Thai/Chinese goodness with the concept of tapas but just larger portions that are meant to be shared. Everything we got was so delicious!! Tamarind ribs - delicious! Tender and smoky and amazing flavor Bison Tofu - herbaceous and the Szechuan peppercorns added a nice flavor and kick to it. I finally made it to Shan and it was as good as the reviews say. There's a dearth of asian restaurants in Bozeman and finding a good one is nearly impossible. I wish we had even one good Americanized chinese place but that seems to not be in the cards. I finally got my good asian food fix at Shan. The food is not Americanized, so if you're looking for chow mein or General Tso's chicken, keep looking. But if you're looking for authentic asian flavors (especially with spice levels), you have found your restaurant. The only knock is that their website doesn't work, so we didn't know what was on the menu, but that's a minor issue. read more

It is nice to see that Bozeman has a Chinese option now, even if it is a modern take on some classic Asian dishes. Shan is located inside an industrial type building with other restuarants/bars inside. We arrived just after 5pm on a Wednesday with no reservation and were able to get seated at the bar with no wait. I was surprised that we got in as it was the day before July 4 and the town was busy. I would definitely recommend getting a reservation here as it does get busy. We started off with the cucumber salad. I loved the addition of the cilantro and chili oil with the large slices of cucumber. It was perfect for the warmer weather. I do feel like there was a bit too much salt on this dish. Next up was the Cumin Lamb Noodles. Again, I appreciated the adition of cilantro here as lamb noodles can get a bit heavy. I do feel like most dishes were on the saltier side and I was reaching for my glass of water after most bites. The noodles were perfectly al dente and chewy with a nice spring to them. We also got the pork wing soup and a lamb special dish. The soup had a very strong taste of lemongrass I believe. I don't personally like lemon grass so this was a pass for me. However, my husband loved this dish and said he wished it was cooler so that he could enjoy the soup properly. It would also be good with a bowl of rice. The lamb dish had pieces of meat that were super soft and you didn't even really need to bite it for it to dissolve in your mouth. It was very seasoned but again, would have been great with some rice. I really enjoyed the open kitchen concept and that the chef stopped by to chat. Now that I've had about everything on this menu, a review is in order. My experiences at Shan have been great. The place is a Bozeman standout, a first-class awesome Asian fusion place worthy of a much bigger market. The ambience is lovely: elegantly wood paneled, tasteful furnishings and art all around. It can be a little on the noisy side (it's always been full when I've visited), but if you're hard of hearing there are a couple of nooks that make conversation easier. Service is snappily professional and friendly. Servers know what they are serving and offer helpful descriptions. Although it's always jammed, service time is quick and well paced. And the food, oh Lordy, the food. Sumptuous tamarind pork ribs, silky broths, curries full of character, delicately stewed meats, awesome vegetables. Plenty of wonderful flavors new to my palate. There are no fillers--it's like every component has a specific purpose. It is fun to order a variety and share family style. The tropical tres leches is not to be missed if you're up for dessert. This kitchen is firing on all cylinders! You're going to pay a good bit for a meal at Shan, but I've never found myself questioning the price for the quality (or quantity). I was in town for one day. I was looking for a good Thai place, and this place came up. The restaurant is inside an office building looking place. I walked in and was seated at the bar quicky. No waiting. Nice. The waitress was nice and helpful. She gave me some ideas and helped me pick some great plates. I started with the soup of the day. Man, that was some awesome soup. Great flavor. This review is long overdue and isn't just for my last time eating there (2 nights ago) but for the 6-8 times we've been there since they opened. First off, I read both of the 1 star reviews, neither have anything to do with the food and both sound like the typical problems you get trying to keep a Bozeman restaurant staffed when cost of living in the area is so high and you struggle to get committed long term staff. Secondly, I don't need to read any of the 5 star reviews because they are all spot on as far as I'm concerned. Bozeman couldn't be more lucky as a town to have had a chef like Jarett happen to stop and invest here. This is far and away the best restaurant this town has ever had. Third, you need to put in 2 orders of the lamb dumplings WHEN YOU SIT DOWN. I don't care if your reservation is at 5 when they open. We've tried to order them at 5:30 and they've only had 1 left. This is my only complaint about this restaurant. MORE LAMB PLEASE OK THX. The wings are spicy and the shit. The salads are all delicious you can't go wrong with any of them. The green curry is better than any Thai in 3 states and I've tried them all. The Bison Mapo Tofu is delicious, ESPECIALLY left over, and I hate tofu anywhere else I've had it. It's a weird thing to say in Montana that a freaking skirt steak is the best cooked beef I've had here, but this steak beats the prime rib and ribeyes at Stacey's, Land of Magic, and Chico's fancy dining room IMHO. It's totally different than a steak at any of those, which are all great, but it's so good that I can only imagine they give it a 2 day butter bath before cooking it - tender AF. The tamarind ribs are the best ribs in town, I'm glad they've survived the menu changes. If they have the Chang Mai sausage special you'll want to get that too. It's a carbon copy of the same sausage I've had at Kalare Night Bazaar in CM itself. The Dan Dan Noodles will burn your rookie tongue off and they're also my third favorite thing on the menu after the lamb dumplings and the below. Arright hear me out cause this is a sleeper on the menu and most of BZN and the world is MISSING OUT. Veggie section. Earth's Three Treasures. You will never think about Eggplant, Peppers and Potato the same way again after you have it. Wife used to live in a rural area of China outside of Beijing. Di San Xian (Earth's Three Treasures) was a staple in the tiny little street restaurants there. But she could never get it in the fancier restaurants in Beijing, and when we moved back to the states, she searched high and low for it in the authentic Chinese restaurants in places like SF, LA, NYC, you name it. The standard response she got, even while inquiring about it in Mandarin, was "We don't make peasent food here," with a scoff. For about a decade after her years in China she fruitlessly sought after this dish (and a couple of the other peasent food options from her village). But her efforts were not rewarded. Until one year a random, amazing wonderful chef put ETT on the menu of his new little endeavor in my wife's hometown. This dish will warm your tummy and soul. read more

While we were waiting on our table to be set up, someone came by and asked if we had been helped. We asked if there was a bar area we could sit at and were told - they will need to check as there may be reservations. As we walked to the community table, 75% of bar seating was empty... We sat down and ordered our food. And asked them few moments to decide on the wine. Our food came by pretty quickly, after we were almost done eating the server came back asking if we wanted any drinks. We decided to pass. We ordered the Dan Dan noodles and the pork belly. I was in Bozeman for a week snowboarding and this was definitely a highlight, but had its drawbacks. The restaurant had a good vibe, but they played the music incredibly loud, we couldn't hear the server telling us the specials and had to talk very loudly to converse. The food was great. I was with a group and we tried several dishes, all of us had a different favorite so hard to say which stood out to our group. The duck rice was surprisingly our least favorite, the cucumber salad was surprisingly very delicious. Unfortunately they were out of the tamarind ribs and lamb dumplings, but our res was for 830pm so I can't hold that 100% against them. I can't name everything we had but all were unique and very flavorful. One thing that left a bad taste in my mouth wasn't the food, but the fact that my friend ordered a beer and they brought out the last half beer from the keg. Typically when this happens, the last half beer of the keg is on the house. We were surprised to see they charged for half the price of a beer to our bill. That's just bad business. But overall I would go back here while visiting Bozeman, but would go a little earlier, hope they turn the music down a bit, and hopefully they don't continue charging for half beers. read more

The food and service were absolutely amazing. Unfortunately, tonight was a completely different experience. The host was incredibly rude from the start, telling me to "have a seat, and we'll try to fit you in" with no warmth or hospitality. When he finally did seat me at the community table, his attitude was just as unwelcoming. I didn't mind sitting between two big groups--I enjoy chatting with people--but I was completely forgotten. I sat there for a long time with no acknowledgment from the staff. After waiting far too long without so much as a greeting, I just left. Not sure if it was only the dishes we chose, but the spicy dishes are not for the faint of heart.
