It's a great little setup with big covered picnic tables and plenty of space to hang out. Trek also lets you use their bathroom, which is actually really convenient, just head inside and all the way to the back. The food here feels genuinely nourishing. It's vegan and very vegetable forward in a way that doesn't feel preachy, just fresh and intentional. The tacos are especially unique. The tortillas are made from spelt and garbanzo flour, and they remind me a bit of the tangy, pancake-like bread you get with Ethiopian food. It gives the tacos this unexpected flavor and texture that works surprisingly well. The toppings tasted fresh every time, and the tempeh has a smoky flavor, so if you're into that, you'll be happy. I didn't realize at first how customizable the menu is, but you can add all kinds of toppings and extras. They also do full coffee service plus a big smoothie lineup. The smoothies come with sea moss, which I wasn't familiar with before, but they're clearly big believers in it as a nutritional boost. Service was friendly both times. Once they even brought my food out to me! Either way, they were kind and attentive. You can also ask for water even though they don't have self-serve jugs out. When I returned, the napkin was neatly folded and my silverware had been replaced. It was so shocking that I almost wanted to test it again. How many times would they fold it? Beyond the exceptional care by the staff, the food was absolutely divine. You can tell the chef planned every course with care and a knowledge of food I could only dream of obtaining. I had never been to a restaurant where you're served multiple small dishes over the course of two hours. I was honestly worried I'd leave still feeling hungry. I was wrong. So wrong. The last time I felt this full was Thanksgiving 2004 when my aunt accidentally made too many mashed potatoes. I was lucky enough to snag a table for three during Fabrik's earlier timeslot (5:45 p.m.) on a Friday night. I've been dreaming of visiting Fabrik since it first opened in 2023, so when I received an email about the opening of Fabrik's new Tarrytown location, I knew this was my chance. Fabrik's tasting menu costs $105 a person, with an extra optional wine pairing for $65. We opted to purchase a bottle of bubbles instead of the wine pairing, as the pairing includes approximately three glasses of wine (too much for us). Each course is a special expression of in season produce and other ingredients. Fabrik tries to use local ingredients whenever possible. Fabrik's friendly staff explain the details of each course to your table as they're serving. My favorite savory dish is "black and yellow" which features shiitake mushroom cappelletti in a corn cream reminiscent of corn chowder, served alongside corn madeleines (the first savory expression of a madeleine I've ever seen). Another favorite is the "verdant" featuring scalloped potatoes with homemade cabbage and topped with an aromatic lemongrass hollandaise tableside. After telling friends about our visit to Fabrik, multiple people asked if I was full after a fully vegan meal. A resounding yes. Each plate is on the smaller end, which is necessary because there are eight courses. The last three courses are sweet, which is a delight for those of us with a sweet tooth. My favorite sweet course is the "open sesame" with banana miso mousse and roasted banana compote, served alongside a crunchy black sesame sable. This dish is topped with an extremely realistic "leaf" made solely of banana and sugar, showing the true artistry of this restaurant. Our meal ended with a delicate yuzu macaron topped with a butterfly, which was the perfect citrusy end to an otherwise equally superb meal. Each member of my group left with bellies full and dreams of our favorite courses. After visiting this unique spot, it's easy to see why Fabrik is Michelin recommended. This was maybe my favorite meal I've ever had in Austin. Fabrik's tasting menu changes seasonally, so we tried their "Summer" menu during our August visit. I hope to return for their winter dishes. I special order them whole with no sauce or pickles so I can put a couple in the fridge to save for the rest of the week. I was impressed with their packaging. As you can see in picture, veggies and noodles box was on top and soup at bottom. The only thing I didn't like how noodles became very sticky because of how tight they were packed. So I got it as cold (because I live 30 mins away) and sticky. Ramen came with all the veggies like grilled Chinese broccoli, tofu, sweet corn, marinated shiitake mushrooms, red onions and negi. Yakisoba noodles had the Stir-fried noodles tossed with cabbage, scallion, carrot, marinated shiitake mushrooms, and fragrant negi in a savory house sauce. It was good if you like this type of noodles. Austin roll had Smoked tempeh, tempura tofu, jalapeño, pickles. And on the to Avocado, roasted garlic oil, tempura flakes, smoked paprika, teriyaki. Volcano roll was a deep fried roll which had spinach, avocado, sweet potato. On top: spicy mayo, sweet soy sauce, chili sauce, Caviart and tempura onion.
