LOVED this little hole in the wall on our recent trip to beaver creek. We actually had to stop here twice! Parking is easy but restaurant is small and the staff are SO NICE and friendly. Despite restaurant being small I did not have difficulty finding two open seats for brunch. The menu is extensive! It can be pretty hard to pick just one sandwich. Their house potato chips were absolutely delicious, I tried the Maui onion flavor and had to look this up to see about buying for my own home. My favorite cafe in Eagle! I loved the snickers latte with oat milk - extra sweet for that extra snickery taste is the way to go if you like your coffee on the sweeter side. I got a breakfast sandwich with all the meats and it was incredible... my only regret was not getting extra butter on it but that's the TX in me showing. A great place to try if you're nearby. Not only does Red Canyon Cafe make the greatest--and have the BEST selection of sandwiches in Eagle, they are the best in both categories in the entirety of Vail Valley! I come to Red Canyon Cafe frequently, as I did recently, while on my way to or from EGE Airport. You cannot get to the airport from up-valley without driving right by it--although it's hard to spot from Hwy 6 coming from the east unless you crane your head about 100 degrees left. RCC's sandwiches, both hot and cold, are prepared to order, so be patient! Perfection takes a few minutes. Although they're efficient, if they're backed up with to-go orders or there's a line at the counter, it may take 10-15 minutes, so best to go when you're not in a rush and enjoy the zen on their side deck while you wait for deliciousness. RCC also makes excellent coffee drinks and MOST of the time, you get a freshly baked chocolate chip cookie without asking and without being charged while supplies last. Unfortunately, that wasn't the case on my recent visit--they probably ran out. The cookie is not the reason to try RCC--the sandwiches are, so consider the cookies a bonus when you get them. My favorite sandwich is the Italian on Ciabbata. Traditional Italian cold cuts (I like mine cold), always hits the spot, most recently with a hot cup of Americano. Really love this place!! Pro tip: When we pick up friends and family from EGE Airport, and think our guests haven't eaten, we usually phone in an order on the way to the airport and pick up sandwiches to serve right when we get home--best to get cold sandwiches for this operation. read more

My local living sister and I decided to hit this place up for lunch. She had never been here either but we wanted sandwiches so this looked promising and we were not disappointed. First of all, they have both in door and out door seating which in the summer months is great. We were greeted by very friendly staff and didn't have to wait long for our sandwiches. She ordered the Frenchie (Brie, grilled chicken, avocado, tomato, pesto mayo) and I tried the Spelunk (chevre, brie, grilled chicken, spinach, onion, sun dried tomato spread). Both of us enjoyed our sandwiches. The chicken was moist. Veggies were fresh. I wish mine had more spread on it. The bread was ok but I might get something less heavy next time. They have an extensive sandwich menu and I will definitely be back to try something else! I figured it was time to update my review. Nothing new to report since my last review 9 years ago. I mean that in the best way. They are consistently amazing. Every time I go in, for YEARSSSSS. I was back in my hometown hanging with my nephews for the week and we dropped by. The Turkey brie on whole wheat French baguette with sliced pear is still as delicious as it always is. My nephew got a rice crispy treat, and a breakfast sandwich, and they threw in a couple of delicious homemade chocolate chip cookies for free with our order, which was a lovely gesture. It's the small things that this place does that just sets them apart. I highly recommend the sandwiches, coffee and cookies here. Nothings ever disappoints for me here. I highly recommend. read more

And the prices were very fair for the quality. We loved the quirky atmosphere. You can dine inside or outside. The staff were so friendly. They even shared their tea brand - loved their unsweetened tea but next time I'll try the sweet tea after hearing it has an even bigger minty taste. Complaining about having to open your restaurant at 6 am doesn't translate well to the customer, especially whining about HAVING to make 20 breakfast burritos when you first open. Guess what, thats your bread and butter, you just paid for your electricity that day!. I suggest also you treat non-locals like all of your local friends, (a local gentleman waited for 20 min for a pour of coffee while the little hippie chick served her friends first) You can definitely tell the ownership has changed (my condolences to Ryan's wife) as they seem behind the 8 ball every time I've been in. As a former restaurateur of 30 years, I don't know if I can support this once great establishment, all I hear is excuses and whining from the operators.
