Maybe I've gotten spoiled by some of the great Vegas steakhouses like Bavette's, where the food and service are consistently fantastic, but tonight's experience at Old Brea felt a little off. We were seated against the wall with a great view of the dining room and bar, and the first thing I noticed was the lighting over the bar. The large, round tube-style fixtures really took away from the atmosphere. The light was much cooler and harsher than the warm, sultry lighting throughout the rest of the restaurant and honestly reminded me a little of fluorescent convenience-store lighting. It sounds minor, but from where I was sitting, it was surprisingly distracting. Service was also a little clunky. We started with one server and then, midway through dinner, another server seemed to take over. I'm used to steakhouses where servers work as a team, but usually that's communicated from the beginning. Here, the transition seemed unexpected and resulted in a few communication misses. Two of the three people at our table were celebrating birthdays, for example, but our second server had no idea. Not a huge deal on its own, but those little service touches matter--especially at a higher-end restaurant and when you're celebrating something. To her credit, once I mentioned the two birthdays, she graciously took care of our ice cream and birthday dessert without hesitation. I appreciated that, although the overall experience still felt a little disjointed and took some of the air out of the celebration. As for the food, there were definitely some highlights. The bread basket was delicious, and waters came out immediately. We started with the clams, which were a special appetizer that evening. I love steamers and order them pretty often, but unfortunately I didn't care for this preparation. The sherry made the broth sweeter than I prefer, rather than bright and crisp, and the clams themselves were tiny, with quite a few missing from their shells. When steamers are really good, I usually want to soak up every last bit of broth with the bread. I didn't have that urge here. The Braised Short Ribs, however, were a completely different story. Hearty, flavorful, and falling right off the bone. Absolutely no notes--10/10. I also tried the Center Cut Ribeye. The inside was cooked to the requested medium, so no complaints about temperature, but the exterior was overly charred and tasted burnt in spots. The steak had good flavor but was also a little chewy and fibrous, which was disappointing. The broccolini and sautéed spinach were both prepared well and complemented the entrées nicely. The sea bass was another standout--soft, buttery, flaky, and perfectly prepared. Unfortunately, the steak and clams ended up being the two most underwhelming dishes of the evening. One other small service suggestion: when a table is celebrating a birthday, it would be nice for the server to explain what the complimentary birthday dessert is when dropping off the dessert menu. Aside from simply knowing what's coming, someone could have an allergy or dietary restriction. That said, the chocolate birthday dessert was very good and beautifully presented, with a soft, creamy center that reminded me of whipped ganache. Of the ice creams and sorbets, the passion fruit/pineapple was easily my favorite. I'm normally a lemon sorbet girl, but this one was much too tart for me. Overall, there were some excellent dishes--the short ribs and sea bass especially--and I appreciated how our second server handled the birthday desserts once she knew we were celebrating. But between the inconsistent service, atmosphere details, and disappointing steak and clams, the evening didn't quite have the polished feel I remembered from Old Brea Chop House.
