The spring rolls wrapped in rice paper are light and crisp, and I love that you can customize your pho exactly how you like it. Staff are super friendly and the place has a nice, casual local vibe. long time regulars at the PHO-EVER in Vista. we were in Encinitas for an event and excited about finally giving this location a try. very disappointing experience. really one-and-a-half stars generously rounded up to two. it was Wild Card Weekend and the Rams-Panthers game was playing on the TVs. couldn't help but wonder if that was always the plan or if PHO-EVER inherited the space and kept the sports bar feel. that and the two guys running the front of the house were the two pluses. the kitchen was definitely on the way downhill side of the experience. don't usually count so heavily on the photos to tell the story, but in this case the pictures really are worth a thousand words. the Nước Chấm was the sorriest excuse for a dipping sauce I've ever had in a restaurant. all that's best about Vietnamese cuisine, the bright, fresh, balanced flavors was AWOL. sweet, spicy, tangy, salty, and umami were all absent. would you guess the sad little veggie strands were carrots and daikon? the orange color's the only hint. the Chả Giò (egg rolls "filled" with ground pork, carrots, jicama, and taro) were under stuffed and undercooked. the wraps were mostly hollow inside and the wrappers soggy in the middle like they were fried in old oil that was too hot and when the ends were done, the centers were not. the BANH MI (baguette sandwich with grilled pork, cucumbers, pickled carrots. daikon, cilantro, jalapeños, and pâté aioli) described as "loaded" on the menu, would be more accurately characterized as skimpy. the grilled pork had the flavorless taste, texture, and appearance of being lightly poached in water. the PHO GA (chicken breast meat in chicken bone broth) was the most disappointing dish of all. the "soup" part (described as a rich chicken bone broth on the menu) had less complexity or richness than dish water. the "chicken breast" had the flavor and texture of a congealed and formed rolls of chicken in a deli case. sad. sad. sad. ps: the "leftover" pho was on the kitchen island when our nineteen-year-old got home from work. he finished it after adding a heaping spoonful of Better Than Bullion chicken base without either of his parents saying anything. yeah, it needed that much help ... read more

Good taste however the chef dumped cold precooked noodles into our soup. We could tell because the soup was warm instead of hot and the noodles were all clumped together. Please don't do that! I ordered a rice vermicelli bowl with barbecue pork and barbecue shrimp for dinner tonight. There were only two shrimp, and the barbecue pork looked like a single slice of bologna cut into multiple pieces with scissors. The fish sauce somehow spilled all over the bag. I'm glad I ordered the spring rolls because without them, I'd still be hungry. The total cost was $49.99, and I tipped $5. Okay It took me less than 10 minutes to finish everything, but I still feel annoyed. Anyway, at least the club soda lemonade is good. Maybe it's because I'm still irritated about getting only two shrimps and what looked like a slice of lunch meat Wait, i'm looking closer at the bottom of the receipt it's says a 3 percent charge is added to all checks and that the charge is not a gratuity but a service fee to support staff wages and benefits. Pho Ever, this ordering experience sucks. I have no problem paying any amount, I have no issues with tipping or paying any fees that supports the service workers. We've dined at this place periodically over the years and it's never disappointed. It's a quaint restaurant located in a strip mall. Quality dishes and good customer service keeps us coming back for authentic pho. We almost always order the rare steak or make your own bowl with various options and meat. But the pho with tofu and vegetables is exceptionally delicious. It's made with vegetable broth and is full flavored. No extra sauces or seasonings needed whatsoever. It's the only Vietnamese restaurant that I've been to that makes their vegetable pho this way. We highly recommend this place! read more

Except it's really frustrating when Vietnamese restaurants add in a crispy roll inside a fresh spring roll... not only is it not traditional, but it makes something that is supposed to be gluten free, no longer gluten free. And it's especially frustrating when they do not disclose this addition. Otherwise, I love how they package the takeout pho, it's probably the most functional and sensible way to have pho as takeout and they're the first restaurant I've had that does this. It's really disappointing because we've been coming here or ordering from here for several years, at least twice each month. The food is slipping, hard. The Bun Bo Hue broth has been totally flavorless the last couple of times. The lettuce wraps for the egg rolls have also been limp and partially brown the last few times. Vegans, not much here but there are a few; 2 options of their menu: Tofu Spring rolls or Pho vegetables bowl. Vegetarian had the additional option of eggrolls but that's it. Place is modern clean plenty of seating, a small bar with stools facing a large flat screen. Ordered the tofu spring rolls of peanut sauce two large spring rolls came with next year rice paper wrap that was very gummy chewy and flavorless. The inside had 2 pieces of lightly seasoned tofu, curly lettuce, some unflavored rice noodles and a small container of delicious peanut sauce, which gave the bland rolls some flavor. I ate the first roll as served and dipping the sausage in each time, but didn't like the chewing of the exterior rice paper, so I removed it from the second wrap and reconfigured it, using the lettuce like a soft taco shell cradling the noodles in the tofu and dumped the remaining peanut sauce on top which was more palatable. I prefer my spring rolls with an additional vegetables like shredded carrot, fresh mint leaves and avocado. Please advise or we're just lacking especially for the $10 price. I was going to order a Thai tea, but they had caffeinated only and I needed decaf, so I passed on that. If you're going for low calorie heart/cardio healthy option, these Tofu Spring rolls are a good one to fill you without leaving you full and weight down. Nice fast service, easy parking. read more

Out of the way place in an out of the at strip mall. But.... So worth it to find it. The food is delish. The staff is amazing. The atmos is average at best. Clean and all that, just nothing to look at. The Bhan Mi sandwich (beef) was amazing. Bursting with flavor I could taste every ingredient. I ordered the chicken pho with veggies to go- was told that it was the same as the regular Pho Ga, which I love. My order was prepared quickly-- ready to go in about 5 minutes, neatly packed with separated veggies (the mixed-in veggies were in a tray with the noodles, the onion and cilantro were in a bag, and the beansprouts, lime, jalapeno & basil in a separate bag. All the veggies were very fresh, either raw or lightly steamed (baby bok choy) I mixed them into the broth which was very light with a slight hint of 5 spice. I enjoyed everything together except for the chicken. Sadly, it was very boring, bland, sliced white chicken breast. It felt like flavorless, dry rounds. I was disappointed because I was expecting to have shreds of juicy dark meat with the favor of the chicken fat.. I would not order the chicken again. Perhaps the traditional beef pho utilizes the native fat, which is key to a good flavor. Hoping the other options may prove better. The service was great. read more

However, I was very unhappy about the undisclosed 4% surcharge for employee benefits and another 3% surcharge for using a credit card for payment and a $1 split order charge. All three of these charges showed up on the bill after electronic payment was processed. These type charges should be made very clear at the time customers sit down before ordering and before paying so customers know what to expect. This is hands down my go to pho place. The staff is incredibly friendly and always quick to ensure our dining experience is a good one. This time around I finally remember to check in. I always order the Pho Tai (Rare fillet). The portion is plentiful and their bean sprouts, jalapeños and limes are always fresh. The broth itself is rich with flavor and some of the absolute best in the San Diego area. The meat itself is served in a large portion and is very tender. Tonight my teenaged daughters and Mother and I ate at Pho-Ever in Encinitas. I had the Phō with beef, beef tripe, and veggies. My Mom had the Chicken Phō, and my daughters shared the crispy noodles with fried tofu. We also had shrimp rolls in rice paper, which came with a peanut sauce. We asked for sweet and sour sauce as well. My mom cannot have dairy or anything with Gluten, which was no problem! It was all 100% delicious, fresh, perfectly prepared, and the service was fast, welcoming, and excellent. The food and service was excellent, came fast, and very welcoming and friendly. I will eat there again, and I give it my highest recommendation. (some have commented on the sparse decor, you wont notice once the delicious food arrives). This place is excellent! What a shame. This Encinitas location used to be so good. They were packed everyday at lunchtime. I have been supporting Pho-Ever Vista and Encinitas for about 10 years. Specifically, the Encinitas location, has gone downhill badly. Today I paid $17 for filet and brisket. The noodles were over done for the second time in a row. The filet was filled with streaks of fat, and it was not tender. The brisket was also very tough. The broth was just okay, not really filled with that umami flavor of the past. And, really, $17 for the small bowl. I would rather drive to Pho-Ever-Vista where Huan Pham who I have known for 10 years will insure everthing is perfect. Sorry Encinitas will no longer be a Pho place I will visit. Additionally, I was the only customer in the restaurant and my table was dirty. I wiped it and the bench with napkins. read more

This was my third attempt with PhoEver over 8 years and I really wish there was a better outcome. I'll say that for service, it was friendly if not short-handed. One person working the entire front of restaurant, so was taking care of register and all of the tables. The best thing I've ever received from their kitchen is the French baquette roll for their Banh Mi, which I'm pretty sure they source and then neglect to cut in half when specifically promised. The accouterment is tragic, liver globs/ not spread, veg is sparse and not really that pickled. And they leave all of the seeds/pits in their peppers and cut them really thick so just be mindful of that. Both the chicken and pork in the Bahn mi was dry, rock hard and all fat, tendons and cartilage. As far as the pho is concerned, the regular size for $19 is a joke and waste of money. As many people have mentioned in their reviews, the pho broth is bland and the chicken was dry. Unfortunately, I'm calling it quits after 3 attempts and won't be going back. I could never recommend so sadly have to rate 1 star, (would be zero if possible). Not the place to go when craving Vietnamese food. Wish Kim's was still open. :( read more
