Ok so I am definitely updating my review. I had to keep giving this place a chance cause I want this relationship to work! (Only Vietnamese place close to work) I had ordered their bun bo hue and bun rieu here and it was mediocre. I was really disappointed but those are speciality dishes... So I decided to look over their menu and see what I can get. I ended up ordering their banh xeo (Vietnamese crepe) and their chicken curry with vermicelli. I was very impressed with the banh xeo! The crunch on it was sooooo good! They did include allot of herbs which gave them the extra star! I order level 5 spice (1-10) and it was perfect for me. They did include extra chili (that I took off cause it was too spicy). Overall, I am glad I gave them another (two more times) chance. One day (maybe on a rainy day) I will try their pho and see how that compares. read more

Ordered takeout: vegetarian pho with tofu and build your own vegetarian broth with fishcakes. Sadly got home and no fishcakes just plain broth. We live 15-20mins away so wasn't worth the trip back. Just disappointed. Maybe double check your take out order. (Receipt says fishcakes) read more

It's been a while since I ordered here and i was blown away by the to-go Pho Tai I ordered. It comes in this container where the broth is in the bottom and it has a separate compartment that holds the veggies, onions, noodles and meat. I highly recommend tossing the meat in the broth and putting it in the microwave for a few extra minutes. The broth isn't hot enough to cook the meat as a to-go order. Then throw in the rest of the stuff and heat again for another 2 minutes. It was perfect after that. Squeezed the lemon on top, added some chili and it hit the spot for a cold chilly day. The egg rolls were great but the meat of the Banh mi was tough. Definitely will be back for the pho! read more

What a treat! A low key diner vibe restaurant with INCREDIBLE food. Clean interior, friendly service, comfortable seating. I have not stopped thinking about the banh mi sandwich since we ate here. I ordered via Uber eats. Packaging was really very neat and organized. I ordered a banh mi, spring roll/egg roll combo and beef pho (BYO). Banh mi - the bbq tasted great however they gave very few pickled vegetables and way too much spread which didn't taste like the usual pate. I think they may have mixed the pate with mayo? I did however like how they added to extra slices of jalapeño but it was touching the bread which made that portion soggy. What I look for in a good banh mi is that fluffy flaky bread which I did not get. It was dense and tasted more like a hoagie roll. I give this a 2/5. Spring roll/Egg roll combo - I only got the spring rolls as they forgot to add the egg rolls. I hope the egg rolls are better than the spring rolls. It's a very BASIC spring roll. Thinly sliced shrimp, rice noodles, bean sprouts and lettuce. Usually a spring roll comes with thinly sliced pork, and herbs (mint, chive, cilantro or Thai basil) which helps give the spring roll flavor. They definitely missed the mark in this. I give this a 1/5. Peanut sauce- this comes with the spring roll. Let's just say it was inedible. Cloying sweet with a hint of peanut flavor. I wouldn't add it for an extra $1. I give this a 0/5 Pho- I opted to build my own pho. Beef broth, brisket, rare steak and tripe. I wasn't a fan that you could only choose hoisin or sriracha. I use both but I was lucky that I have sriracha at home. It comes with the usual chopped onion/cilantro, bean sprouts, Thai basil and sliced jalapeños.... Usually pho restaurants are generous with the herbs and the jalapeños. I only got five small Thai basil leaves with two of them being very wilted and two small slices of jalapeño. The noddle portion size was half of what I would usually get at a pho restaurant in OC or southern SD. Broth was better than some restaurants I'm glad that they didn't go heavy on the cinnamon or fish sauce. I just wish it had more of a beefy flavor - maybe needed a longer time to cook in order to get that nice richly beef flavor. If they gave more herbs I think it definitely would have helped with the flavor. Overall I'd give this dish 3/5. I don't think I'd come back. I only say that because I haven't tried any other pho spots out in north country yet. Who knows if this is the best one out here. I just don't think I'd come often. A bowl of pho is $20+ you would think it'd be the best pho I've ever had with that price range. read more

Extremely impressed with their to-go packaging! I usually only like to dine-in for Pho buuuut! With all the changes due to COVID, a hearty bowl of pho at home is amazing! My husband likes his broth piping hot, so he reheated his in the microwave when we got home. I, on the other hand, found the temperature to be perfect. Unlike him, I like keeping my taste buds! c(: It came with all the fixings: hoisin, chili paste, basil, siracha, sprouts, & lime. They made sure to add napkins and recyclable utensils. I always appreciate an easy clean up! :) I also must add, the meat was so fresh and delicious!! They really do make sure to add good quality cuts. Beer wasn't cold. Smelled like they didn't clean their taps. Wings and pho aren't as tasty as they used to be. The worst part of the meal was how tough their meet was to chew. We literally couldn't eat the pho and left it. My poor wife forced herself to eat at least some of the noodles because she has to start her work shift soon. It's a real bummer because this use to be our favorite spot in Encinitas to get pho. It has really gone down hill. I felt horrible paying for the meal and bad for the employees working there. At one time this place had the best chicken wings, then the owner decided that cost cutting was a better move then excellent food. The wings became tiny and over-cooked. I pointed this out to the owner and he said he had a bad cook and had the problem solved. Next time I went in, the same horrible quality and the same assurance that he had the problem solved. These days it seems that more often than not takeout orders are substandard. It seems like restaurants are counting on customers to not want to bring back to-go orders that are incorrect. Tonight we got two orders of Bun with chicken and egg rolls totaling $36. This dish in general was pretty good, could have used more mint and acid. But the chicken was undercooked, rubbery, and had an odd taste. We've experienced this before here with Bun and Bahn Mi. Being hungry and tired, we opted to not take it back, finish the Bun but skip the chicken. I know the restaurant business is tough, but with a lot off them charging more and delivering less it's frustrating as a consumer. Just fantastic! My wife and I love the filet mignon pho. And that's what we order every time we're there and we do the Yelp check-in and we get a free drink. Unfortunately, this last time, I didn't realize it at the time. Because I tipped really well because I would never want to be a service worker so after tipping 25% I realized after I left, I was actually charged for my free drink. Which I found a little annoying. so I'm gonna bring it up next time I'm there or something. But the food, always good. The customer service, always good. Everything's always wonderful except for the last time where I got overcharged by four bucks, but that's not gonna kill me. What would kill me is never going there again. I've been a patron on and off for almost as long as Pho Ever has been open. The reason is simple: it's the closest Vietnamese restaurant to me. In addition to pho, they do other popular Vietnamese dishes, including bánh mì sandwiches. And the food is all right. It's a far cry from the Vietnamese food you can get in the OC or the San Francisco Bay Area or even Kearny Mesa. But given the options, it's reasonable enough to get when you have an urge for pho or a bo nuong or spring rolls. The food is 3-3.5 stars. The problem comes, as many point out here, in the service. Dishes are poorly coordinated. Sometimes orders are mistaken or forgotten. Items on the menu are sold out with just a bit too much regularity. It's gotten to a point where we only order out; dining in is too haphazard. Given the fact that others have made these comments, I'm guessing management is aware of these shortcomings and has failed to rectify the situation. That's really an indictment of the owners more than the staff. read more

I've been coming to Pho Ever for a while now and have never had a bad meal. Pho is always tasty and served very hot. Unfortunately, when I ate here recently, I found short black hair imbedded into a piece of tendon in my pho. I had already eaten almost all of my pho at this point. To justify the price, there should certainly not be any hair in my food, let alone the amount I found stuck to the tendon piece. read more

Came here last night for dinner. There are not many Vietnamese food options where we live so we thought to give this a shot. Pho-ever actually turned into pho-never for us. SERVICE - When we walked in, we were greeted and they said pick a table anywhere. They were nice. However, after that, no one came around. When we were done with our meal, the girl slapped the check on the table and walked away. She did not even ask if we wanted to order anything else. What if we wanted dessert? FOOD Coming from a Vietnamese family and eating the food all of my life, I hate to say it but the food here was terrible. Nem Nuong Rolls - They were missing the wonton wrappers in the middle to give it the crunch. They even advertised it on their menu. The nem itself was small and did not even fill the entire spring roll. Banh Xeo - The crepe had no flavor and it was so crunchy. I love crunchy but this was overly crunchy where it felt like you were eating chips. Rice with Pork & Vietnamese Meatloaf - The pork was incredibly salty. The seasoning on it was okay but man, it was as if the meat bathed in salt. The meatloaf on the other hand was very VERY dry. I had to soak it in fish sauce and it was still dry. DRINKS - Thai tea with boba. The tea itself had a good flavor. The boba though, was hard and tasted very old. Needless to say, we were very disappointed with our meal and would not recommend this to anyone. You should make the drive down to Mira Mesa to find some decent Vietnamese food instead. I appreciate that this place has lots of veggie choices, but my food was not very good. I got the vegetarian pho didn't have a ton of taste, and the soft rice noodle stirfry with tofu. The second dish was pretty greasy and the tofu was fried and didn't have much taste. I would like trying different places but I will order from elsewhere next time. We are never disappointed with our meals at Pho Ever, quality is super fresh and the potions are amazing especially for the price. They currently are doing outside dining and it was so lovely to come and sit outside and gave such great service. They make ordering super easy and the food comes out timely and with table service! All the staff is following covid protocol. Do yourself a favor and enjoy the best north county Vietnamese food!!! Thoroughly surprised by the positive reviews. My guess is all their friends. Took a friend to lunch here today. My day old egg roll on vermicelli noodle was was barely edible. Egg roll was cold and chewy, the meat inside was rubber. The bbq pork chop was coated with a pink color coating and not bbq'd. Maybe it was day old meat. Ordered their version of bun Bo que once. Had pho meat instead of the proper pork and beef. This isn't really Vietnamese food. It really deserves negative stars. Because i know good Vietnamese cooking from my mom, people will often ask me for a recommendation on a good Vietnamese restaurant. I most definitely do not recommend eating here. Stay away. Sometimes it is hard because you are hankering for some hot pho. There are some locations in Carlsbad that's worth the drive. read more

I can't believe it's taken so long to write this review, we have been going here for years now whether it's your first or hundredth time going you have to try the lemon chicken wings. They are amazing the owner and staff go above and beyond getting to know their customers and I love that. What? I never reviewed Pho Ever? This is a long due review then... So I now live in Solana Beach, North San Diego County and there are not so many Vietnamese restaurant around here, especially by the coast. So I had to try them all and I must say that Pho Ever is the most decent one I have found. First, the staff: young friendly, dynamic and fun! Therefore you'll always get good and fast service. Foodwise, I have my habits and usually get: - Seafood pho with extra veggies (under $10): light broth, flavorful and delicate. Fresh veggies. Perfect for a quick lunch (add $1.5 during lunch and get a fresh spring roll or 2 egg rolls. Nice). - Fried rice veggie noodles: first place I went that actually offers this dish. even though it's vegetarian, they still manage to make it super tasty. - My favorite dish: the combination Stir Fried (Com Chao Thap Cam, I think...), I just love the fresh veggies, meat and seafood combined together along with rice and a lot of fresh chili! The Bun Rieu is good, but it's not necessarily the place I'd recommend for this particular dish. They also have Happy hours with discounted draft beers (nice selection for a Vietnamese restaurant by the way!!), wines and appetizers. Recommended! read more

Is this place under new management or new chef? I ordered chicken lo mein. The lo mein had a thick layer of pepper on the top making it too spicy to eat for my toddler and it's extremely salty. Went to this pho restaurant a few times before the pandemic, the phos were okay but not great. Just re-visited it recently, the quality of the phos has improved a lot! First of all, the menu has changed. You can choose between beef, chicken and vegetarian broth, 4 different types of noodle, and 3 out of 8 different protein. The broth is now very hot, which is very important to cook the bean sprout, basil and green pepper. The beef broth is delicious! It's saturated but not salty at all, didnt taste like it has MSG in it! The proteins are also very good and quite big in portion, particularly the tendons, which is quite unusual!
