Luckily, we quickly got seated, and our orders got taken. I asked for extra cilantro, and they perfectly accomplished that. Pho is mid and has been for a while now. Soup is watery and you could tell the meat was days old. Mostly crunchy fat. And portioning is diabolical. I have come many times over the years and the servers dont go out of their way to be nice. Thats fine, since pho restaurants usually have that vibe of just coming in for your food. But the last time i went, they did go out of their way; unfortunately to be RUDE instead. My friends and i came in at 8:30; we knew they closed at 9, but we had our orders ready, and they sat us without an issue (as it seemed). They then gave us attitude and rushed us the entire time. My friend asked the girl server with glasses for extra veggies. The server visibly hesitated, said yes, but then tried to explain the veggies were to portion. We said we understood that but simply wanted more. She agreed, but then proceeded to ignore us for the rest of the time. She ignored us when we said thank you, and stood behind our booth without saying anything; waiting for us to get up and leave. The other server (asian guy, about 20s, with a mask) who had sat us, stood and watched us eating the entire time. When he brought us the first two bowls of pho, he said it was x item, then randomly waved his hand at me to tell me it was y item (my order). It wasnt lol. When he rang us up, he basically threw us our reciepts to sign. In the past, it once took this same server my entire meal to refill my water and in the end he never did it. I didnt think coming in at 8:30 was crazy, especially when most of the restaurant was filled when we pulled up and we knew we could finish up by 9 (which we did). If youre going to ruin our meal AND experience because we came in at the last hour then dont bother seating us at all. And if youre going to have this much resentment at the end of your shift for giving customers extra veggies then learn how to say no. I as well as my two friends each have worked in customer service for a long time. We know its annoying to have late customers, and i dont know what kind of day they had. Its still unreasonable to behave like this at their grown working age. Like i said; learn how to say no, maybe your shift wont be so miserable. And dont take it out on your customers; its a terrible business look. Ive tolerated the small things like them not being the most friendly or forgetting to fill my water; ive once overlooked them giving me the wrong order before. The worst pho I've had was at a pho store in suburbs of Chicago. Pho Ever in Bellevue is a close second. I ordered a large special at Pho Ever, and there were just so many cardinal sins with the bowl. The meat was not only paltry (I ordered a large by the way), but it was so tough and tasted old and rubbery. The noodles were clumped together like it was carelessly thrown in, mangled in a messy knot. And the noodles were not great either. The biggest sin was the broth. I took a sip and winced, thinking it was just my imagination. Another sip of the broth clarified that it wasn't my imagination, but it was simply just so bad. It tasted soapy, like it was mixed with soapy dishwater or something. And it was so diluted too - such a disappointment on a cold day. I couldn't even finish my bowl at the end, as I was just turned off by the taste. I love pho. And it doesn't take much to impress me. I'm not Vietnamese, but sometimes I joke with my wife that all pho places are delicious, and that it's hard to screw up a bowl of pho. Well, my point was proven wrong today. read more

- popular lunch spot - This is our to-go place for pho since it's the closest to our place. They are usually packed for lunch, but dinner is okay. Tons of people who work around here eat lunch here regularly. My husband usually gets the super bowl with all sorts of random parts from the cow (tripe, tendon, you name it), and I usually get the house special bun (vermicelli salad). Today I got a rice dish #61 (beef short rib, a shrimp skewers with 3 shrimps, and an egg roll). It comes with some pickled radish and carrots that you usually see in the Vietnamese sandwich, two pieces of raw cucumber and a lettuce salad with creamy dressing. Their grilled meat usually tastes good, but the portion has been decreasing over the years due to inflation. Both the super bowl and my rice dish was $18.95, so after tip it's almost $50 for 2 for lunch, which is quite a bit. One thing I really dislike about this place is the seating. If you sit on either side of the restaurant in the booth-like chairs, you'll end up sharing the back of your seat with a stranger. Many people are unaware and make large movements, which you can feel even if you're not leaning against the seat. This creates a lot of unnecessary discomfort, especially since the seats are quite old and move easily. I'd recommend sitting in the middle instead, where there are individual chairs. PS. The Vietnamese coffee is good here, but they give you tons of ice like other places. We also stopped buying it after they raised from price from $3.5 or $4 (medium cup) to $6.5 (large cup) due to the inflation. read more

First day of the year deserves noodle soup, and the pho broth from "Pho Ever" was some of the best, most balanced beef broth I've had: maybe it's because it's the new year, or because it is just so wet and chilly here in the Seattle area that a good broth suddenly becomes legendary (at least in my mind). My daughter, her husband, and I came for a meal during dinner, and it was fairly crowded (always a good sign even on a holiday). We got seated right away with tap water, and each of us got a laminated book with a lot of classic Vietnamese choices. Each of chose a different variation of beef noodle soup. I like mine with all the meats, and they did have a version called 'Special Noodle Soup" consisting of steak, brisket, flank, tendon, tripe, and meat ball. It came in two sizes: Small ($15.95) and Large ($16.95)...for that price difference, of course, I got the large...but in reality they are very similar in size. All the soups are the same price (except for Ox Tail which is more). This is on the higher end for pho, so my expectations immediately were elevated. The accompaniments came first, and consisted just of raw bean sprouts, a fresh sprig of Thai basil, lime wedge, and a couple of jalapeno slices. Nothing too fancy, but very fresh. The soup came next, so dunked the basil and bean sprouts and waited a bit. They use red onion instead of the usual white. The soup wasn't served hot enough: the basil didn't wilt/curdle and the raw eye of round steak stayed very rare for quite a long time. But this was a good thing in that it stayed very tender, though folks who like their beef well-done wouldn't have liked it. It also did come with quite a lot of other meat, including thin chunks of tripe and large cuts of tendon. Just one sliver of meatball, and it was good, though wish there were more. Service was OK, and the prices are higher than others. But what really made the bowl (and the visit) was the broth. Just enough fat and gelatin from the beef bone and connective tissues, for a really good mouth feel, but still keeping the broth very clean (in appearance and taste), but at the same time, having enough flavor for me to drink it straight from the bowl even after I had fished out all the noodles and proteins. Going inside, it has a bit of a sports bar feel and yes indeed strong Seahawk vibes here. Go Hawks! The food here is legit, especially the grilled meat dishes for rice plates or rice noodles (bun). Chicken breast comes in a while piece and was super moist and flavorful. Lemongrass grilled pork were presented on skewers. This way you get nice smoky, seared flavors and the meat cooks more evenly without drying out I think. We usually stay in Bellevue when visiting Seattle, so we will definitely bookmark Pho Ever. They do have excellent Vietnamese places near Seattle Chinatown but the parking is harder and neighborhoods have gotten a bit sketchy over the years. read more

The base price was $18.99, or just over $25 with gratuity, for the grilled chicken breast. I know I'm the exception, but as a middle-aged diner, if I'm eating food that's blackened by fire or high heat, I really want a generous serving of antioxidant-rich vegetables--something like steamed broccoli--to go with it. It took about half an hour, but they did eventually replace my large chicken skewer so it wasn't charred. For younger folks or anyone with a hearty appetite, this is an easy spot to enjoy every day. Yesterday I stopped back in for a quick bowl of Pho for lunch. Pretty good and what I expected. But what was weird a bit was I saw a server carrying around what was seemingly my bowl of pho as I was the next diner to expect food . He wandered around looking at different dirty tables and clean ones and settled it down across a large double table I was at but at the other end. I figured he was going to have a staff meal right there. But then a woman came over and started eating. She is either the owner or manager and she then began to hold court speaking loudly to employees going by etc and the server kept sitting down right next to her while she ate. As a diner it went from a relatively vibrant restaurant to just annoying. But what was kind of disturbing to me was this fellow had his nitrile gloves on the whole time as he brought out his phone to play around and chat and never took them off. And when he got up he kept them on and continued to serve others. Evidently these gloves are for his protection and not others. I've seen this before while entering a Pho Tai in fed way while an employee wearing gloves went out to their messy car and re arranged the garbage and trash in it and when I was ordering inside they came inside and started handling food with the same gloves on! I left without ordering. Maybe it's a cultural thing but not hygienic in any way!!? I only bring this up after seeing the public health ratings for this restaurant. My friend and I came here for lunch today at around 12:30pm and Pho Ever was packed with people. The parking lot is tight, but thankfully they have extra parking in the back. The first thing I noticed was the "Needs to Improve" food health sign in the front of the window. For reference, that is the lowest health rating a health inspector can give a food establishment. Several of these violations could end in restaurant suspension- feel free to read up on this on the government site or take it from someone who traveled around putting up these signs with a food inspector as part of a college public health food safety course... Anyway, definitely wasn't exactly what I wanted to see before eating something, but I took my chances and walked inside. My friend was already there and so I didn't have to fight for a table, but all tables were taken when I had arrived. The atmosphere is very casual. Lots of families with loud kids were eating there. They have at least a dozen booths and a good number of tables too, but you're likely to have table neighbors sitting close to you. Their menu is about five pages. It's fairly extensive and includes a variety of appetizers (egg rolls, spring rolls, etc.), rice dishes (com), and noodle dishes (pho, bún, and bún bo hue). My friend and I just went with pho this time around- I got #14. Steak with Noodles (pho tai, $14.95 (L)) and my friend got #13. Supreme Pho which had everything in it (tendon, steak, brisket, flank, etc., $15.95 (L)). Service was prompt and we got our food within 10 minutes of ordering. The pho broth was tasty, but I was disappointed at how small the portions were for the price. My dish only had 4-5 pieces of thinly cut rare steak (which I made sure to thoroughly cook in the broth given the establishment's health rating ) and less than cup of vermicelli noodles. It was more broth than anything else. The bean sprouts, jalapeños, basil, and lime on the side were fresh though. I'm not a big eater, but I wasn't fully satisfied after the meal which is unusual. The banh mi was crunchy and had a good amount of mayo to give the sandwich that unique banh mi flavoring. The coffee tasted just right too. Had that bitterness and creaminess that Vietnamese coffee is known for with the condensed milk. Have to emphasize the amount you get here also. With that said, don't let the Food Safety Rating at the door bother you. If you go to Vietnam, you should know how authentic Vietnamese food is prepared, so the poor rating is going to be expected if you want some legit Vietnamese cuisine. We're craving pho for lunch and this was the only spot on our way to Redmond. Fresh spring rolls were yummy. However, we disliked very cold, thicker dipping peanut sauce.
