This is a great and unique vegan spot in Bellevue. Beautiful decor besides the fans spread throughout the restaurant since they don't have AC. This cheapens the experience a bit. Service was excellent and fast though. The food was fantastic and the sesame beef lotus root dish is a standout dish. A must try. Get it with the purple rice as well. The salted egg tofu lives up to the hype too and is such a unique tasting dish. The crispy rolls are standard, nothing special. Everything here is so colorful and I really appreciate the menu having pictures for every drink and dish. This should be a requirement for all restaurants! The purple yam soup was really bad. Pleasantly surprised by Chay Concept. This is a high-end vegetarian spot with an open kitchen that lets you watch the chefs in action, especially if you snag a bar seat. The space is stylish, the service is great, and the food is both beautifully plated and delicious. The garlic and chili tofu was the highlight--well-cooked, flavorful, and nicely balanced with heat. The tofu was crispy on the outside while remaining soft on the inside, making it quite enjoyable. We Tried Happy Hour at this Vietnamese Vegetarian restaurant last Friday. (4pm -6pm). The decor is very nice and tranquil. Seating area is a bit limited. About 6 seats at the bar, but you can enjoy the HH drinks and small plates in the regular seating area too. Went back to Chay Concept for a second time, and again, loved the food. This time, I enjoyed the food even more as I was able to hone in on some of the items that were more of my taste. We ordered a crispy tofu appetizer, which came with a yummy lemon grass dipping sauce -- I'd definitely order this again! They also had a new item, tropical mango rolls, which were also quite good. The place is on the smaller side but because of that, it's pretty chill, making it easy to have conversation during lunch, dinner or happy hour. The service was outstanding. We had such a warm, friendly server, who seemed to really care about our experience. While here for a Yelp experience, I also purchased and entree of Sesame Beef with Lotus Root and a spiciness level of 2 stars. I enjoyed the Sesame Beef entree. This dish had imitation beef which was super similar in texture as real beef and the spiciness was just right for me. Lots of veggies in this meal with broccoli, peppers and lotus root. It is similar to Szechuan Beef but certainly healthier and still full of flavor. This dish came with a choice of rice and I chose the purple rice for variety. I was really excited to try their vegan food, and it turned out to be a great experience. The staff were very welcoming and helped me choose the right appetizer, which I really appreciated. The ambience was also nice and comfortable. I tried the pho rolls, which had egg, mango, salad, and imitation beef. I was a bit skeptical at first because I don't usually like plant-based meats that taste or smell weird (even though I eat chicken and lamb). The staff clearly told me that it wouldn't have that smell, so I decided to go for it. I'm glad I did! The rolls were really good. The "meat" was made from soy, tasted nice, and didn't have any odd smell at all. With the sauces, everything came together really well. It's a small plate, but perfect for sharing between two people and surprisingly filling. Plus, it felt like a good protein option. We tried the salted eggs, tropical roll, bao, Tom yum mushrooms, purple yam soup, pho noodles, and purple rice. Every dish was good and packed with flavors. If I had to re-pick three I would probably go with the tropical roll, bao, and pho noodles. Pretty good! My party and I found out about this place through a yelp elite event and were able to get a couple of appetizers through the event. We got the bao buns and the egg tofu which was SO good! They have plenty of creative tofu options which was very nice. The egg tofu was recommended to us by our server and I would stamp another recommendation on this appetizer, it was super good! The bao buns were just okay as the bao itself was not that soft and the cucumber was cut a little to big so it was kind of hard to eat. We also got the pho beef rolls which had a great flavor. I appreciate that there are more asian vegetarian options! It is nice to taste familiar flavors while also being able to eat less meat. To me, hands down best All vegetarian Vietnamese food spot I've been to in the greater Seattle area that I've tried. Granted my perspective is limited to the 3 items I managed to try, so my overall opinion could change as I try more dishes in the future. Small plates: -Saltes Egg Tofu Aside from the presentation making it look very appetizing. This thing delivered on flavor. The bite I enjoyed was when I purposefully took off the red pepper garnish and coated all sides of the tofu in the sauce. Then placed the garnish back on top and shoveled the whole thing in my mouth. It was savory,it was salty, it had that umami. That slight crunch from the coating, that crisp freshness from the pepper. -Crispy chili garlic fried tofu It had good flavor but I wanted to speak more on the texture and mouth feel. I feel like with tofu dishes you expect a certain texture. Whether it was intended or not. I appreciated that the tofu had 2 distinct textures. Different pieces had that chewy, somewhat shreddy, meaty quality that you had to gnaw on for lack of a better word. The other pieces were that typical firm exterior with a gummable texture that your teeth would cut through easily. Overall good sensory experience. Large Plate/Entree: -Vermicelli Noodle Bowl or Bun Thit nuong First and foremost, how did they make a fish sauce with no fish? I need that recipe. Secondly it's a solid dish with all the elements you'd expect from a typical bun thit nuong, but with meatless alternatives. Portion size was decent but I wanted slightly more. I might be saying that because I'm a glutton. Fried rolls, good crisp/crunchy texture and filling ratio. Seitan had a great chew mimicking that meaty quality. Noodles were al dente and not soggy. Veggies were fresh and brightened up the dish. All in all, yeah if I was vegetarian, this would be a mainstay for me. Even though I'm not, I'd still make it back. What a vegetarian gem hidden in Bellevue. Really enjoyed my experience here (disclaimer- this is part of the Yelp elite review). Lilly the server was very attentive and friendly. I ordered salted egg tofu- crunchy on the outside and savory creamy sauce for dipping. It was quite satisfying. It paired perfectly with the homemade chili sauce. It was not spicy but very flavorful with coconut, lemongrass and other spices. It reminds me of sambal that is vegan. Add more chili flakes if you want it spicier. I was going to get a second app but could not resist trying the purple rice with mango and coconut cream. It was delicious. The sweet mango beautifully arranged around the plate compliments the earthy purple sticky rice and the sweet and salty coconut cream. My simple meal was very satiating. Note that this place I would consider as higher-end Vietnamese vegetarian. App is $12+ and most entre are $20+. They do have a lunch special that is below $20 (see my photos). I would come here for client meetings, or with people that care about the ambiance and not just the food as this place has both plus good service. The place is also perfect for a private party less than 50. Checked out Chay Concept on an early evening for their happy hour dishes. Coming in they asked my group if we had a reservation, which I thought was funny since there were plenty of tables open. But regardless, our hostess was very friendly and attentive during our whole experience. I really liked the way the menu was designed, rather than just showing a repetitive list of items, they showcased a few dishes on every page with high quality photos that show you what it looks like. For small bites we ordered the Tofu Delight, which was well balanced in flavor between the cucumber, shiitake mushrooms, and egg tofu. Only downside was that these bites fell apart easily. For the Pho Rolls, they held well and was a fun and tasty take on bite-sized pho without broth. The main entree I ordered was the Veggie Curry. A simplistic dish, but full of flavour and was comforting on a rainy day. There has been a rise in modern Vietnamese restaurants sprouting about the region, and my friends and I believe Chay Concept takes the crown in best modern Vietnamese restaurant in the whole Seattle area so far! read more

This is a solid 3.5 star but I'm rounding up because there's good parking which is rare in Bellevue. I been to the sister restaurant before in Renton and enjoyed it a lot so was really excited that they open another location in Bellevue. The place is nice, it took over the former fogrose atelier restaurant so it's not super big. We were the only customers there for a while,but it looks like they do a lot of take out too. The weird part for us is that they set the AC right at the entrance so you get a bast of really cold air as you enter and it's like a struggle to get in/out of the restaurant. Foodwise: We got the pho rolls and the salted egg tofu as our apps (roughly $15 each). The salted egg tofu was definitely the better of the two. Love how soft it was and the flavor was spot on. The pho rolls was definitely a misnomer if you're Vietnamese. I was expecting actual pho noodles used but it looks like they use the rice rolls in banh uot instead. There's basically a slight hint of pho but it was mostly a smaller version of banh uot. Kinda disappointed because of the name. Entree: banh mi skillet and the ginger fried fish (both around $25 each). The fish dish was refreshing. It was like mango salad with fish. The fish was a little tough but the flavor was really good. I also like the crackers it came with. The skillet dish was ok. some components worked while others kinda missed. The Cha was a little dry and tough. The mushroom was pretty salty. The banh mi with pate was good and the egg as well. For lunch you also get a complimentary soup. I'm glad it was free because it wasn't that good to be honest. Chay Concept Bellevue is the newest vegetarian spot in town that took over the old Atelier Fogrose. Vietnamese-inspired vegetarian and vegan dishes were not high on my to-eat list before, but chay pushed it up my list! I loved the salted egg yolk tofu ($14), which was perfectly crispy outside and silky on the inside with an umami-filled egg yolk sauce. I scraped off all the sauce haha. We ended up getting the pho rolls and salted egg tofu for starters and the ginger fried fish to share. Loved the flavor of the pho rolls, a nice combo of salty, sweet and spicy. The salted egg tofu was my favorite dish as it had a great lightly fried coating on the tofu in a creamy, rich salted egg yolk flavored sauce. I've had different versions of this but I liked how the one here is a big lighter than usual, making it a nice app to start with. The ginger fried fish was good as well. Loved the mango salad on the side, so fresh and flavorful and the purple rice on the side. The imitation fish was a bit dry especially as it was fried as well but the mango salad really helped lighten it up. Overall a really great vegetarian restaurant. I was skeptical and didn't want to go but my friends twisted my arm and no, didn't regret. Service was sweet and friendly and helpful and not intrusive Location is a bit of a ...pain to find parking and make your way around. Good store front, just where the heck is the parking ... Food, everything is surprisingly really good, only issue: everything is a touch too salty. Yes, we can order rice to eat with them but then not everyone wants to consume THAT much rice, what if we just want food with no rice? Salty! read more

Strolling down the streets of Bellevue, WA, we stumbled upon Chay Concept, a totally vegan restaurant straight out of a butcher's nightmares. Why not? This place had a fun, sleek vibe, and the food was fantastic! We arrived just before happy hour ended, so our waitress told us we had five minutes if we wanted to grab any specials, so we asked for everything on the happy hour menu, including a few mocktails. She was happy to oblige, and after the drinks, the dishes came out, one-by-one. Each one had a different flavor, a different perspective. My favorite was the purple yam soup - soft and gentle, thick and filling. Best of all, the waitress offered an order of Bao Buns which weren't on the menu yet, but the chef was experimenting with them, so we said yes and they did NOT disappoint at all. Kudos for letting us try a new dish! If we didn't know this place was vegan, we probably wouldn't have noticed since the food was so good on its own. If you're in the Seattle area, make a bee-line to Chay Concept - it's definitely worth a visit! read more

I've tried good vegetarian places and recall the pop in flavors. This place had no pop. Things tasted good but wasn't great. The imitation beef tastes like beef if no one told you it wasn't beef. Everything else missed a bit. Perhaps it didn't have enough seasoning. You can park in the nearby garage and they will validate your parking. Good to try but not likely going to come back. read more

Very nice place. The food is creative and beautifully prepared. Many things on the menu I wanted to try! I ordered the Pandan float, salted egg tofu and purple yam soup. The drink was very unique.
