We recently heard from a friend about the opening of a new restaurant in downtown Paso Robles. During a visit to the town for a potential winery acquisition, we decided to make a reservation for the evening. Upon arrival, we were greeted and seated by a wonderful hostess, Dawn. Shortly after, our waitress Natalie introduced herself. The entire staff was fantastic and attentive. Given that it was only day three since the restaurant's opening, we were fully understanding of the typical teething issues. I ordered the peach salad as a starter, which intrigued me, but instead, I received a mixed salad with Parmesan shavings. For the main course, I ordered a medium-rare New York steak, which was seared wonderfully but cooked closer to medium than medium-rare. Unfortunately, everyone at our table experienced similar issues with their orders. Despite this, we were happy to overlook these minor hiccups, recognizing the challenges of a new opening. What really stood out during our evening was when the owner-manager came over to ask about our experience. We were more than forthcoming, expressing our love for the food and the staff. However, it was evident that she was not genuinely interested in our feedback. She seemed distracted, glancing at other tables, and then walked away in the middle of our conversation. Overall, while the staff and the food were delightful, the lack of genuine engagement from the management was quite noticeable and disappointing. The service was slow and inattentive, with our server seemingly more interested in chatting with colleagues than attending to our table. When our food finally arrived, it was a major disappointment. The steak I ordered was severely overcooked, despite requesting it medium-rare, and was dry and tough as a result. The calamari, which I was looking forward to, was underwhelming--bland, rubbery, and lacked any real flavor. Overall, the experience at Parquetto left much to be desired. Parchetto in Paso Robles is a true standout. From the stunning bar to the historic roof from the 1900s, the ambiance is effortlessly charming and elegant. The food is phenomenal. The beet salad was bright and flavorful, the pork chop tender and perfectly seasoned, and the duck croquettes crisp and addictive. The octopus was a highlight, beautifully charred and tender.
