On Monday, April 20, the four of us went to dinner while visiting Paso Robles. Since we were all from out of town--and one member of our group is vegan--we were looking for a nice restaurant that could accommodate everyone. This restaurant came highly recommended, and it absolutely lived up to the praise. When we arrived, the setting was lovely, and we were warmly welcomed by Michelle. She was gracious, attentive, and made us feel right at home. We especially appreciated the personalized place card waiting for us with our reservation. At first, my wife and her friend were a bit unsure as they reviewed the menu, as they didn't immediately see options that appealed to them. However, that quickly changed. Our friend ordered the asparagus salad and croquettes, while my wife chose the rosemary garlic grilled prawns and roasted heirloom carrots. Both dishes completely exceeded expectations--they were blown away by how flavorful and well-prepared everything was. Over the course of our trip, we visited many wineries and enjoyed several excellent meals throughout the Central Coast. Yet by the end of it, both my wife and her friend agreed that this dinner stood out as the most memorable--truly the highlight among many great experiences. If you haven't been to The Alchemist Garden in Paso Robles yet, you're missing out! I've had the pleasure of dining here twice. Once for lunch and once for dinner and both experiences were absolutely outstanding. The food is farm-to-table at its finest. We tried the tomato and burrata, the mushroom appetizer, halibut, lasagna, and the pork chop, and every single dish was top notch. Fresh, flavorful, and beautifully prepared. My mother has a sensitive stomach and she remarked how the food was of high quality given how she felt that night and next day. Don't skip the drinks either, Fifth Heaven is a must-order. What also sets this place apart is the staff.. from entrance to exit, everyone was warm, friendly, and genuinely accommodating. A special shoutout to Danny, who went above and beyond to make our visits memorable. And if you're a dog owner, you'll love The Alchemist Garden because it is very dog friendly, with a lovely patio with a view of the square where your fur baby is welcome to join you. Their server added dried mushrooms and another liquid that intensify the smoke it was really cool to see but I didn't get that experience but pay the same price. - food. We ordered fries, bone marrow and pan seared halibut. The fries are skinny steak fries and was the best tasting of my order. Bone marrow prepared with cherry onion jam and chocolate sea salt, I only taste of the cherries which was abundant and tasted like raisins. The bone was shallow so there wasn't a whole lot of marrow and it was gelatinous. At the price of $36 it was a huge disappointment the halibut was nicely cooked but it wasn't seared, it was just OK. At $44 I wouldn't order it again The Taurus and the bone marrow were suggested by the server. I always expect those suggestions to be a highlight item on their menu but I felt underwhelmed and then later disappointed when we met up with our friends. We still tipped well because our server, Michelle, was delightful and I like talking with her. She tried to make up for the bone marrow. I might come back just for drinks but have it at the bar so we can get the real experience, and their fries. But definitely not coming back here for a Saturday night dinner read more

Update: Removing a star because they do not refund the table free, even for the patrons who show up. Typically, this fee is a safeguard against no-shows, but we were charged $100 to have the privilege of spending money at their restaurant. I've never experienced this before - very disappointing. Great for cocktails, but less so for dinner. My friend booked The Alchemists' Garden for her birthday dinner. She had originally made the reservation for 9 people, but 2 of our friends were unable to make it on the trip. We contacted the restaurant as soon as they opened for the day, but they were unwilling to refund the deposit for those 2 people and offered to send over prosecco and popcorn instead. Personally, I found that to be inflexible, considering we were still planning to dine as a large party and spend a significant amount of money. When we arrived, we were seated on the (dog-friendly) patio. The ambiance was a bit cooler inside, but it had a nice calm vibe. I was the designated driver, but my friends all ordered cocktails. This was the best part of our experience! The best ones I tasted were the Aires and Theory of Forms, but my friends absolutely loved the Nicolas Flamel and Alchemists Gold. For food, we got an order of the Deviled Eggs to start with, but these were not my favorite. However, the Hamachi Sashimi was phenomenal. I wish the portion size was a bit more substantial, but the flavor and texture were perfect. I also really liked the Bone Marrow appetizer. Opinions were extremely mixed on our other food items. The Waygu New York Strip, Skirt Steak, and Truffled Cacio e Pepe were the winners, but the Croquettes, Pesto Vegetable Lasagna, and Pan Seared Halibut were not. Service was friendly but slow-paced, and the meal really dragged on for me. We also expressed that we were celebrating a birthday both in the booking and during the dinner, but they did not send over a birthday dessert. All my friend got was a postcard with the check. I've been to Alchemists Garden a few times with mixed reactions each time. It is a great cocktail bar with a lot of unique mixes & all the standards (albeit pricey, $16-20). It's is beautifully done, and great for a special gathering for drinks. What is suspect is the menu and the food -- a bit odd and overpriced. Charred Cabbage is an entree. Great to have vegan options, but come on. They do have (and they beefed it up in recent months), a fish ($44), a steak ($65), a pork chop ($48), and a couple of pastas ($32-34). Those are good options, for sure, but for a tourists and special occasions -- for locals, it's not for everyday. I recently went for Taco Tuesday...$6 street tacos. They don't have carnitas or any pork (my fav), but they do have shrimp, steak, and a couple of unique ones -- duck, mushroom. They were high quality for the price, and 2-3 will do ya. My party of 6 all ordered, and all were lukewarm or cold. Tony (great guy, manager) re-ordered all and had them made somewhat pronto. So, I don't quite know. Having gone a few times, I shouldn't still wonder what to say about a place. Overpriced? Good for cocktails? Nice ambience? Great vibe in the bar and streetside patio? Yes, all true. Cute place! Dessert was good . The customer service was ok. My first experience of a drink not being absolutely great and it not offered to be remade. One sip was taken and the drink was left. The waiter even asked if the drink was good as he noticed it had been left basically untouched. My friend said no and he said, "oh sorry." That's it. There was no offer to remake the drink. First time visiting Paso Robles and while I was excited for the vineyards, I definitely needed a break from wine - and The Alchemist's Garden was exactly what I was looking for. This place was recommended by the group I was with (they've done this trip a few times), and it absolutely lived up to the hype. The vibe is perfect - cozy, speakeasy-ish, and the kind of place you can just post up belly-up at the bar and stay awhile. Great energy without being over the top. From the moment we walked in, the service stood out. Aubrey set the tone right away - super welcoming and made us feel like regulars from the start. Behind the bar, Matt and Justice were incredible. You can tell they take pride in what they're doing, and it shows in every drink. Honestly, the entire crew is a big reason we kept coming back. Came over Valentine's Day weekend and thankful we booked a reservation. The space is beautiful with live plants and a tall dining area. The staff were super friendly, from the hosts, our server, the food runner, and even the manager (well, actually one of the co-founders Tony). My husband ordered an off-menu Arnold Palmer and I had a glass of red wine. We started the meal with a Bunch of Fries - wide and crispy, perfect for dipping in their yummy homemade sauces (goat cheese ranch and a well-worth-it up charge side of chimichurri). We split the Fall Pasta (so good!) - al dente tubular pasta (rigatoni?) with delicious roasted squash, zucchini, kale, and sage. We also ordered the Mushroom Medley - earthy mushrooms over peppery arugula and tossed in a sweet chili garlic sauce. You can taste the farm-to-table freshness and ripeness. Regrettably, we didn't leave room for dessert as we had a few cocktails around the corner before coming...but they looked scrumptious. Co-Founder Tony was managing the front of house and he was amazing! He shared the restaurant's origins. Their passion for farm-to-table, supporting local farmers that they grew up with as neighbors and community members. They truly love Paso Robles and the larger SLO region. A unique restaurant, my wife and I had a great dinner and great experience here. To start, we had a couple cocktails: the Nicolas Flamel and the Theory of Forms. The Nicolas Flamel was good, a slightly spicy margarita. The Theory of Forms was great, with sugary foam, it was like a dessert. Liked it so much, I got it as my second drink. For dinner I had the pork chops and my wife had the Buratta plate. I think she liked hers, but there wasn't much to it. My pork chops were really good. Panko crusted with two big pork chops. Not something I would normally get, but they said it was one of the favorites there and they were right. Finally for dessert, we had the Bruleed Banana Split. The Alchemists' Garden is a restaurant and bar located in the heart of downtown Paso Robles. It was founded in 2020 by five local hospitality veterans and has become a staple in the area. We made reservations online and I recommend you do too because there was a long line waiting for a table as we made our way to check in. CROQUETTES ($16) - the moment I took a bite my eyes lit up. Every bite was delicious and I loved the truffle parmesan aioli on top. It smelled great coming to our table and it was amazing all the way through. This was my favorite! 5/5 DEVILED EGGS ($16) - these were good in their own right but they came out with the croquettes and were a bit overshadowed. I liked the taste of the curry and turmeric in the filling and these were still yummy. 4/5 18OZ PORK CHOP MILANESE ($50) - we didn't realize how big the portions were but it was massive and we had to take some home. It was crispy on the exterior and had tons of flavor. I also liked the arugula and the lemon to balance out the pork. I'm a beef person by default and I couldn't really decide whether I preferred the pork or steak more which I think speaks to just how delicious the pork was. 5/5 8OZ SKIRT STEAK ($48) - the steak was also flavorful and I really liked the chimichurri on top. I didn't care for the sweet potato puree and the portion size could be bigger but it was still really good. 4.5/5 For drinks I ordered the esoteric mood ($19) and the alchemists gold ($22). The esoteric mood was clarified, easy to drink, and had lots of spice notes from the cloves and cinnamon. The alchemists gold was a riff off the old fashioned and had a cool presentation to boot. If you have to wait for a table they have a bar area and there are other bars on the street to pass the time. I'm giving 4 stars for the drinks; this was my second visit, and the cocktails are consistently solid and well made. However, I specifically want to comment on their NYE party. I was visiting Paso Robles for a few days and needed a place to ring in the New Year, so we decided to check out Alchemists. Unfortunately, the tables were sold out, but we were offered general admission for $21 each. We thought that would be fine, but for the price there were no seats, no party favors, no champagne toast, and the waitstaff wasn't particularly friendly. The staff checking guests in mostly stood at the entrance watching people rather than engaging with guests or helping create a fun atmosphere, which made the experience feel awkward and unwelcoming. If this is an annual event, a coat check would also be a huge improvement, especially since it was raining and cold on New Year's Eve. Overall, I didn't feel welcomed and wouldn't recommend this event to others. The price of drinks was also quite high; some deals would have been nice for NYE. This is definitely one of the better restaurants I think in Paso based on reviews and research I had done prior to visiting. Not sure I loved my very vermouth heavy dirty martini, but it was a nice combo with the fries and truffle aioli. Just wish the olive inside wasn't a pitted one. The Burrata Plate with Tomatoes and Strawberries was delicious, but thought it could have had a better ratio of strawberries and tomatoes to the burrata. I ended up going with the Pan Seared Halibut for my entree which was deliciously cooked. Unfortunately my friends got the Cacio de Pepe which tasted extremely bland and had a strange aftertaste. Another friend got the pork chop which looked good but could have easily fed 2-3 people as it was massive. Our server was lovely and did a nice job making sure all of our food was coursed out and took really good care of us. We had a bar area high top table which was perfect to see outside, but the table got almost a bit too full with all the plates so that was awkward at times. We visited here on 02/15/2026 as a party of two, with a reservation at 8:15pm. What a beautiful restaurant. It was pretty busy when we arrived, and all throughout our meal; however, the staff handled everything with precision, thoughtfulness and a great attitude. We arrived and were seated right away. Our server tonight was Jessica, who was an absolute pleasure and so friendly. We also had Matthew, who was assisting Jessica and also was primarily in charge of drinks. He was also very kind. We shared a few things for our table. We started out with "a bunch of fries" and it really is a bunch. It comes with an absolutely delicious goat cheese ranch, and another side of your choice. We chose the Chimichurri, and it was also equally as good. We also shared the Mushroom Medley, which was so yummy and it had a delicious sweet sauce/glaze accompanying the mushrooms. Finally, we shared the Fall pasta. This is a hearty dish, and it was also a 10 out of 10. It had squash, zucchini, ricotta and a rose sauce. So yummy. We tried to save room for dessert; however, failed! The owner Tony is a pleasure to speak with as well. He came over and checked in on us during our meal, and we really had a great conversation. So much so, that after our meal he gave us a tour of "the Remedy" in the back (which is open some other days of the week; however, not on our night), and he just shared so much information with us about his restaurant, other restaurants, the city and the region in general. His passion for that restaurant and for Paso Robles is evident, and I wish him and his restaurant and other possible ventures the best in the future. We were looking for a place to have an early dinner in Paso Robles, and the menu looked interesting. Also, I remember seeing the name when I was looking for restaurants in Paso Robles. Since we got there around 4 pm, they were still serving the lunch menu, but mentioned that they would be switching to dinner. There were plenty of interesting selections on the lunch menu. The deviled eggs were outstanding. I really enjoyed the vegetarian banh mi as well. The waiter did mention that it was a bit light and you could add a protein if you wanted, but I was looking for a light meal, so it was perfect. I really liked the cocktail I had - the Hugo spritz. It was light and refreshing. We ate on the covered patio, which was really nice. I did notice they even have some seating that faces out to the square, which is kind of cool if you want to people watch. Service was great. We stopped by Alchemist after dinner since we were staying nearby and decided to walk over -- so glad we did! Our waiter, Danny (or Dan), was super friendly and had great drink recommendations. I started with a tequila-based cocktail (the one with the picture -- so good!), and my boyfriend got the lemon drop-style drink that came in a teacup and saucer with a hibiscus infusion -- it looked like cranberry tea and was such a fun presentation. On a delightful trip to the central coast, my girlfriend and I happened upon this magical and charming spot in beautiful Paso Robles. Danny was an exceptional host with an attentive, personable, easy-going, grounded energy. The gorgeous menu is full of unique and delicious drinks and food including a fun nootropic, non-alcoholic coconutty drink Danny served with fiery fanfare as he charred the cinnamon sprinkled on top. My family and I went here for lunch, and were 1 of 6 tables. It took nearly 45 minutes to get waters, and even longer to get our food. There were at least as many employees as tables that we could see, so the service was a bit disappointing. The food was alright, not super flavorful and very expensive. The banh mi was not on the right kind of bread, which I can get past, but for $20 I would expect something of more substance than just greens on bread. For $10, you can add duck - again, I'd expect more meat for such a steep price. The duck chalupa didn't have much flavor either, and the avocado toast was a single slice of bread with a single egg for $18. It was an okay lunch but I don't think I'll be back again for that price point with poor to mid service. read more

While we've come here a number of times for a dinner, this visit was at the bar just for a cocktail. Jessica took great care of us, described the drinks in detail, and served us promptly.
