We had a 5:30 reservation on a Friday night. Parking was tough. It took maybe 15 minutes to find a walkable spot about three blocks away. Plan ahead. Upon arrival, the host outside was pleasant and checked us in right away. We were seated right by the front which worked out great. The restaurant was pretty empty when we arrived, but completely filled up within the next 30 minutes. Our server was lovely and very prompt. The music was great and was a reasonable volume for conversation. We decided to have share a meatball appetizer and pizza. I enjoyed the sauce on the meatballs. My partner thought the meatballs were on the dry side. For $17, it was just okay. The flavors on the all choked up pizza were good. I enjoyed the crust. The pizza was a little soggy in the middle. After our pizza was brought to the table, our food runner (not server) asked if we wanted Parmesan, red pepper flakes and ranch. I was surprised to be charged for Parmesan. The cocktails, vibes and service were excellent. Our food was just okay.

We had a really nice experience here on a quiet Wednesday evening. We made a last-minute res ~20 minutes prior for an early-ish dinner. On past visits, it's been too loud to enjoy good company- but the ambiance was great this time. It was significantly less busy, but I also wonder if they've worked on noise-dampening measures. Paolo helped us, and he was wonderful. Personable, funny, attentive, and just exceptional. We loved the service. Great recommendations. The Caesar salad was very good- a big, frizzy head of curly lettuce with lots of garlic-forward dressing and a finely dusted crouton. I might've liked a little more... something? Maybe lemon, not sure. I'm picky with Caesar, so it's probably me. The presentation was very fun. Like a chia pet. I'm a pasta girl and my husband is into pizza, so we parted ways here- my husband had a Girl Crush pizza, and I had the chicken vodka parm. My pasta was really excellent- solid portion, perfectly cooked chicken, and I really enjoyed the vodka sauce. Love that they're using local Etto pasta. My husband really enjoyed his pizza, although it was imbalanced- the cheese was so heavy on it that it could only be eaten with a knife and fork. Not a horrible problem as cheese-lovers and with him taking home leftovers, but I'd expect a pizza joint to have their ratios on lock. The flavors were very good, to give them credit where due. Great gin & tonic. Again, service was spectacular- we will visit again just given that and the ambiance.

I love coming to Della's. The ambiance is cozy and casual, and everyone who works there is incredibly friendly and helpful. The Caesar salad is a perfect 5/5, We also tried the Chicago Fire pizza. I really enjoyed the unique flavor combination, especially with the added spicy marinara which is delicious. It earned a 4/5 from me because it was a bit heavy on the cheese overall, and the amount of ricotta made the flavor profile a little too sweet for my liking. To top it off, I loved my cocktail. It was unique and very tasty. This is a great spot that I highly recommend

Unexpected overnight stay in Paso Robles started with exceptional pizzas and incredible warmth, courtesy of Paulo! He's an absolute gem! Watching him craft the exquisite smoked libation was entertainment, and his exuberance and charm enhanced our experience Cordial atmosphere, delicious pizza and potent G &T.

I ordered a pizza for takeout. I don't want to judge too harshly because I think it would have been a lot better to eat it immediately out the oven. It just got slightly cold on the way back home and the cheese was stiff. I wouldn't recommend take out for that reason. Also would have liked to see more jalapeños. We only got about 2 per slice and only a few slices with a healthy amount.

We were greeted and seated immediately. The hostess honored my request that I made while booking my reservation to sit towards the rear of the restaurant at a high top table. There were few diners there at 5pm. Music was playing loud enough to hear but not to impede conversation. We had the wings, meatballs and the Girl Crush pizza. We've had this pizza on previous visits and it's def crush worthy. The meatballs were moist and the sauce delicious. The wings were a it different from standard wings, but also tasty, especially with the accompanying giardiniera. Our server was great. He was friendly and prompt, plus he always came by with a big smile.

We were early for our reservation at The Hatch, so we decided to grab a quick drink here instead. Love the vibe at Della's. They got a fun, easygoing energy! After a full day of wine tasting, it was refreshing to switch things up with something stronger. Sorry I didn't catch our bartender's name, but she was fantastic, super friendly and attentive! Funny enough, I actually bumped into her the next day at the Garagiste Festival, which made the whole experience even more special. She also mentioned that Della's and The Hatch share the same owner, no wonder both spots have that same welcoming charm. This place is an easy favorite. We'll definitely be back next time we're in town!

Came here on a Friday night with a friend and from the moment we walked in the atmosphere felt welcoming. We decided to sit at the bar as me and my friend had tons to catch up on. We started with the fried artichokes with Meyer lemon aioli and we were very impressed! Recommend times two! Then we ended up sharing the Chicago Fire pizza and it's wild to say this but it's the best pizza I've had in a while. Never would I thought amazing pizza in paso. I'm about two hours away from here and I still can't stop thinking how delicious it tasted. I know there are other restaurants in the area but if I ever come back this place is for sure my go to. Great experience, great pricing and great atmosphere. Highly recommend this place and can't wait to come back when I'm in the area!

Straight up - Excellent pizza, salad and drinks. Sat at the bar and enjoyed Paolo our bartender. We had the pepperoni and margarita pizza. Both delicious. The crust is thin and the crust ends are fluffy. A very good amount of cheese on the pizzas. My favorite Old style small pepperonis are used where the ends curl up and get crunchy. All ingredients tasted very fresh and high quality. We also had the fall salad which was delicious. The espresso martini - amazing flavor. We went on a Tuesday night and had a short wait for seats at the bar. We will be back.

We visited on a weeknight and we were warmly greeted by the host and server. We ordered the Girl Crush Pizza (mozzarella, tomato sauce, pepperoni, jalapeño, hot honey) and the Vodka Parm (Crispy parmesan chicken, buffalo mozz, vodka sauce, Etto pappardelle pasta). The pizza had an amazing crispy chewy crust and the toppings were amazing. There was maybe too much cheese but a little extra cheese never hurt anyone. The pasta was delicious and decadent. They even get their pasta fresh from a local store called Etto. I would definitely return.

Where The Hatch leans cozy and sultry, Della's shines bright and contemporary, with a glow that feels both fresh and familiar. I came here with a friend, and from the moment we settled into the corner banquette, I knew we'd found something special. The room hums with relaxed energy--trendy without being try-hard, sophisticated without pretense. The kind of place where you could just as easily toast a big business deal as you could sink into a lingering afternoon lunch with someone you love. But let's talk about the prawns. The wood-roasted prawns--flash-fired in a 900-degree oven--were the kind of culinary surprise that rewrites your palate. We had a reservation but got there 15 minutes early, so we decided to sit at the bar, and it was comfy and fun! We tried the El Scorcho drink--it was good, nothing out of this world, but definitely enjoyable. The fried chicken with mushrooms was super interesting! If you love mushrooms and fried chicken, you've got to give it a go. The Girl Crush pizza is DELICIOUS! It has a nice kick, but you can easily remove the jalapeños if you want it less spicy. The hot honey on top takes it to a whole new level! We ended up finishing the whole pizza! Staff are friendly and nice, great service. Can't wait to go back here!

We have a part of 8 for a birthday. We made a reservation, but it would only allow 6. Then I tried to make a separate reservation for 2, but it said I already had a reservation. How can we seat 8 of us together? I don't want a cancellation fee!!

I had my eye on the lamb shank ahead of time, and it turned out to be perfection--easily the standout dish of the night. I've dined at many great restaurants, and they truly executed it beautifully. Everything else we ordered was just as impressive: well-balanced, flavorful, and clearly crafted with care. When you're in Paso Robles, do what the locals and visitors alike do: head over to Hatch Rotisserie & Bar for a nice, down-to-earth upscale vibe.
