Deep in Bushwick, you can get one of the city's best pizzas, or so the story goes. Two friends accompanied me on a journey to Ops, a restaurant known for its sourdough crust and organic wine selection. Our reservation was honored and we were seated at a small circular table. We drew straws to determine who would sit on the tiny stool as opposed to the curving banquette; the losing party was none too happy and grumbled occasionally throughout the meal. A bottle of wine seemed fitting, though after receiving the list we suffered from paroxysms of indecision. My first choice was shot down for sounding too sweet, though no one had a better suggestion, just not the one I wanted. We solicited suggestions from our server but she had no recommendations and went to consult an associate. Eventually we were recommended two bottles, but our delegate froze up, unable to choose, and we were forced to continue debating internally as the server drifted away. By the time we ordered a bottle of wine and a few pies (I was outvoted on the antipasti as well), topics of conversation had become sparse, the conversation itself grew terse and spare. We sipped water until the wine arrived. It was dry. The margherita pizza was a saucy delight and the sourdough crust deserves its praise. Lighter than the crust at F&F, fluffier than the crust at Lucali. The Pops pizza, which I'd been excited about, didn't have as much guanciale as I'd expected and instead was almost offensively covered in fragrant pecorino cheese. This was the same day that the onion-linked salmonella outbreak was all over the news, so the thick slices of onion caused some anxiety. The Rojo, a simple pie with pickled peppers and mortadella, drew a mixed response, though I personally enjoyed it. That said, it's perhaps the least pizza-y of any of the three pies we tried. With the food and wine gone, we requested the check, then jockeyed for turns at the bathroom. It had been an adequate meal, perhaps not as illustrious as I'd expected, with some murmurs that we should have gotten a square pie instead of the Pops or the Rojo. I'm glad to have finally made it here and there is plenty to interest me if I ever make it back. read more

Explained the specials and brought over wines to taste. We ordered the antipasti combo which were butter beans, marinated feta and pickled beets. The butter beans were actually cannellini beans from a can. Butter beans are much larger. The feta was delicious with crunchy, yummy peppercorns. The pickled beets were on the vinegar side. But tasted OK. Then we had a margarita pie with sausage. Not too much sausage. Was just OK. Not super flavorful. We heard about this restaurant several years ago and never got around to checking it out, I'm glad we came. However, amazing pizza is very plentiful in the city and we will go elsewhere next time. read more

My fiancée and I came here for dinner and dined outdoors. They have a pretty comfortable and spacious setup. They probably have the most distant spacing that we've seen so far. We had a few glasses of red wine including a Syrah / Grenache blend, a Cabernet / merlot blend, and another blended red which I suspect might be an infinity blends of sorts as the waitress named a few grapes and I couldn't keep track. I guess the bottom line is That they have a lot of options and these folks are passionate about wine. We started with one of their pies. These folks are also pretty serious about their oven. It looked like the wood burning brick oven variety imported from Italy. The pizza is Neapolitan style and came out with perfect char. The dough is aged perfectly and comes out light, airy, yet sturdy. Some of the best pizza dough that I've had. It was a red pie topped with fresh mozzarella, guanciale (which is a sort of cured bacon), and basil. We also had one of their daily specials - a calzone with kale, mozzarella, ricotta, and other goodies. It was one of the best calzones I've ever had. It reminded both me and my fiancée of a fantastic calzone that we had in Naples. I'd say this calzone and the calzone at pizzeria Franco are the two best in the world. Do not leave this establishment without trying the calzone! For dessert, we shared the chocolate and amaro cake. It was flourless so it was quite fudgey. The staff here is fantastic! Very attentive and accommodating. Our waitress was very knowledgeable. Ops is amongst NYC's best pizza experiences. read more

This place isn't on Eater 38 for nothing! Their Neapolitan-styled pizza is top tier! We came here on a Saturday evening and they were able to fit us into one of the two-seater outdoor dining tables for a quick bite without a reservation. (there is currently no indoor dining) Although it was chilly, the experience was not entirely uncomfortable because there were heating lamps even tho the one closest to us wasn't working. We ordered two pies to split - the special (Gorda, Salami, Dandelion Greens, Cherry Tomatoes, Green Garlic & Parm) and the Pops (Tomatoes, House Mozzarella, Guanciale , Onion, Pecorino.) Amazing flavors! The special had a subtle sweetness to it and the Pops was tasty! The dough was soft and chewy. The chili oil that accompanies every pizza really adds a great kick and flavor to the pizza. This is really one of the best Neapolitan pizzas that I have had. The service was fast and efficient. I use to live 4 blocks from Ops and visited quite often. I haven't been back for about a year so decided to go back last night with my husband. The hostess was very nice and squeezed us in between reservations. I was very happy to say the least. She took our orders and checked in on us, and got our order to us fast. The olives were $7 but they were delicious and tasted different from most olives I eat. We got our usual margarita pizza, one with pepperoni and one without. They also don't carry Coca Cola products but had their version "Fiz soda" and it was so tasty. The pizza was excellent as always so no complaints here. They had great music playing and even though it's a small place I love it (makes it feel more intimate). Never have I ever had a bad experience with ops even when I ordered pick up. The little things they do like holding the door open for you when you leave and take the time to explain things on the menu makes me love them! It's definitely my FAVORITE brick oven place in nyc. read more

I've been wanting to try Ops ever since I found out about it a few months ago and finally got to eat here for dinner on a Friday night. Holy hell, did it live up to the hype. We started off with the pickled beets. They came with this delicious bread on the side. Doesn't matter if you're eating pizza too...you're gonna scarf that -ish DOWN. We then moved on to the square pie with pepperoni. The sauce combined with olives, basil, and cheese brought this insane umami flavor. It was smaller than I'd thought it would be from Yelp photos I'd seen previously, but it was just the right amount of food. A pizza will be enough for two to split. A side bar, it's not exactly the place for large groups so keep that in mind if you're gonna go with a lot of people. Ideal for a date night or catch up with friends. 6,000 (or more) pizza parlors to choose from in the greater NYC area, how did we land at OPS in the Bushwick section of Brooklyn? Simple, we are here in NY visiting some dear friends who are REAL foodies and insisted we go with them to OPS. Like, Holy Moley were the pizza's we ordered very very good! We had their famous Square Pizza, a Red Sauce Pepperoni a couple of "Specialty" Pies with no name but were equally as good. One of these pies was topped with this beautiful white mortadella Italian pork sausage. It was one of the best pizza's I've ever eaten!!!! A wonderful green salad with sort of a burnt onion dressing and this terrific dinner was now in one of my select few memorable pizza experiences. The wine selections were good and the full bar makes a great negroni. I loved OPS, and will definitely come back. read more

The calzone alone is worth coming here. The fillings rotate but when I went, it was sausage and kale. The dough is the real standout - it's sourdough based and I think they use whole wheat flour, making it tangy and hearty yet crisp and airy. So I may have oversold this idea of NYC pizza to some of my West Coast fam on our most recent trip out here. And I found myself trying to find a neighborhood pizzeria that had something close to what NYC pizza embodied. Enter Ops. It's in New York. They serve pizza. And it's in the neighborhood. Problem solved, right? You would think. In some strange reversal of fortune, We ended up having CA style pizza in NY (no offense in anyway and could be even construed as a compliment to Ops, I hope). We ordered the square pie - beautiful. there's this satisfaction in its simplicity. and pops - love this combo. I swear I've had it before. both the texture and flavor of the guanciale juxtaposed to the pecorino and onions were nice. Don't get me wrong, the pizza was real good - great crust, fine quality ingredients, and obviously fresh. It just wasn't exactly we were hoping for but would totally be back for more. Maybe I was thinking more along the lines of over (that may border on novelty) sized slices dripping with just enough of that requisite amount of oil from melted mozzarella. Anyways. Salad was equally good - fresh, crisp, nice mix of greens, and balanced dressing. My only dig would be that the red wine was at the wrong temp and suffered because of it. I'm use to red at room temp - opens up the flavor and you get a true sense of the depth of the wine. Oh well. Overall, I look forward to going back. read more

We came around 8PM on a Saturday and waited about 10 minutes for 2 seats at the "pizza bar." For a starter we ordered just the bread and butter. Simple but it was delicious. It comes with chili infused olive oil and it was so so so so soooo good! I asked for more for pizza crust dipping later on as well. We kept on theme and ordered a simple Margherita Pizza with pepperoni. Pizzas take about 45 minutes to bake but it's worth it! We also had a front row seat to the oven and pizza making action so it was very fun to watch while we waited for our pie. A great new pizza spot with a super minimalist menu and a very Bushwick/Ridgewood we're-the-next-cool-neighborhood vibe going on. All they have is Salad ($10 for a small, $16 for a large), a Cheese Plate ($12 or $20), Antipasti ($13 or $24), and five pizzas to choose from, ranging from $14 - $19. If that all sounds a little expensive for this area, it's because they're doing the no gratuity thing. We tried the small Salad to start, which was indeed very small. Next up we got the Margherita ($16) with added Pepperoni (+ $2) and the Pops ($18), which consists of tomatoes, mozzarella, guanciale, onions and pecorino. The salad was fine, but both pies were incredible. The dough was super chewy and and the crust had just enough crunch to make you actually want to finish the entirety of each slice from the pretty small pies. Given the lack of options and the short menu, you might expect them to be able to churn out the pies out a bit faster, but service was pretty slow. I would like to see some more options and this could definitely become a great spot to return to more often for a satisfying meal. read more

Simple is best, this Brooklyn neighborhood Pizza cafe has the freshest simplest ingredients in very thing they make. We had a classic Margherita and a special squash pizza with arugula. Both ropes with a pinch of Maldon salt and a drizzle of Olive oil. Delicious. Little gem lettuce salad with carrot dressing also beautifully constructed. 4.5 It takes a lot to pull me this far down the L, but Ops is definitely worth it! For starters, it's one of my favorite NYC restaurants that's easy to get a last-minute reservation at. There's some indoor seating, mostly at small tables for groups of 2-3, and a bunch of outdoor tables. The pizzas are mostly pretty traditional, as far as ingredients go--nothing super 'out of the box' a la Emily--but far from underwhelming, as they deliver excellent renditions of even the classics like a solid margherita. Each time we've been, the specials have also always been excellent. On our most recent visit, it was a white pizza with cherry tomatoes, arugula, and prosciutto, which was amazing. The ingredients taste incredibly fresh, like 'straight out the garden' good, and the crust is one of my favorites in the city. The calzone also varies from visit to visit, but whatever it is, it's bound to be great and 100% worth getting. The only issue is that the food can sometimes be slow; the last time, it took about 45 minutes from ordering to get our pizzas. The restaurant was upfront about this, and the wait-staff were attentive with starters and drinks during that time. But if you factor that into your dinner plans and budget the time for it, this food is certainly worth the wait. A bonus rec: there are a bunch of great breweries in Williamsburg and Bushwick along the L, so our go-to move is to pair a visit here with a trip to one (or a few!) of them! read more

I've been here on a few occasions and the food is always excellent. However, tonight after our meal, I went to pay (via Apple Pay since I left my wallet in my car) the bartender asked me very rudely to step back behind the bar (when I was following my waiter to go pay at the counter). I found this quite shocking, as a customer who was trying to pay for dinner and tip for service, and this quite frankly ruined my meal.
