Stopped by here on the way to Dana Point and it hit the spot. Even on a hot day, the soup was refreshing and comforting. I like that each table has a QR code to order on your phone instead of waiting for a server to come take your order. The food came out super quick. I got the Taiwanese Braised beef noodle (pictured) and my boyfriend got the Guizhou Huaxi Beef Noodle (not pictured). My soup was piping hot and the broth was spicy and savory. The guizhou was slightly less hot, a bit lukewarm, but the flavor was still really good - very onion-y and a refreshing combination of herbs. The guizhou soup says (numbing) in the title and it actually does give a tingly sensation in the mouth that felt soothing. The size of the bowl for the guizhou is gigantic compared to the Taiwanese soup, but the actual portion of food isn't much larger, so I think this is why this soup wasn't as warm. You can add your name to the yelp waitlist which I'd definitely recommend so you don't have to wait as long once you arrive! From when we checked in in-person to being seated was probably only 10 minutes. Service was fast and our server gave us recommendations on the most popular items since we'd never been to Noodology before. I ended up choosing #12 (chengdu braised beef) with noodles. It's definitely spicy, but I thought it was the perfect amount of heat to be flavorful but still tasty. The peanuts are a nice add in the broth, and they give you HUGE portions so I ended up taking a good amount home with me! One of the few places that have integrated the just order on your phone by scanning QR code. Make it easy to just do that once we were seated instead of waiting for a server we just scanned and ordered and waited for our food. Of course the old traditional method isn't gone, so they accommodate everyone. The food portion of the review, the cold wood ear fungi dish was too vinegary, so it was too much to eat on it's own. They could definitely use less vinegar or add a little more sugar. Even when we brought it home and added sugar, it couldn't mellow out the flavor. My noodle dish was pretty decent, but I would've loved to see more of the peanut note to the sauce. My girlfriend's soup noodles were kinda meh because the pieces of beef in her dish were tough so she was only able to eat about 50% of the pieces. I've been here a few times when I'm in the area. They serve mostly spicy noodle soup dishes. There have one non-spicy noodle soup and some dry noodle dishes but it isn't like Noodle Planet or Noodle World where they have noodles around the world. So, don't go by the name to think they'd offer that. Nonetheless, dine-in is the way to go. The dishes are good. And you need to handle your spice as they can get extremely spice. Take-out noodle soup dishes are not as good. All their dishes are pretty much the same but with a different broth. The reason take-out is not as good as dine-in is because the noodle cools down a let, which means the "pores" closes. I had just gotten 4 vaccinations in order to volunteer at the UCI Medical Center but wanted to have some food with my friend. So obviously we came out here for some healthy soup and I got the spicy intestines variation. Unfortunately, I neglected to order without peanuts (to which I am pretty allergic!) so we had to send it back and then they gave me a new bowl. The soup was awesome and convinced me that marrying a Chinese woman is the optimal plan for my future. The broth was great, I loved having a big ladle to eat with, and it felt like a wholesome and balanced meal. Thought I would give Noodology a try. Looked like every noodle soup had spice in it so I tried to order the beef noodle soup and spicy dumplings. The beef noodle soup had pieces of slow cooked braised beef (very beef stew like) that were tender and tasty. It came with some bok choy for greens. But the noodles seemed to be more spaghetti noodles than egg noodles. The worst was the broth... just looked like a chili oil broth and was overwhelming in taste. This is the only 1-star I gave in 2-3 years. My friend and I visited Chase in the same plaza, so we gave Noodology a try. The restaurant had about 15 customers vs. 3 waiters and 3 kitchen staffs, so we expected good service, but it was chaotic. We told the first waiter we wanted to dine in, but he told us to order at the counter. While we were ordering, the second waiter told us to sit down. We sat down and ordered immediately. I ordered the house special beef noodle. It arrived in about 5 minutes, but the soup was lukewarm and unflavorful - missing common herbs and spices expected in a beef noodle. The bowl looked big, but it contained very few beef and noodles, so I was not full. My friend ordered the bone-in rib noodle. After about 15 minutes, a waiter said they forgot what he ordered. We ordered again, and they brought a bowl in about 5 minutes. My friend was hungry, so he dug in. Suddenly, another waiter took his bowl and gave it to another table who ordered the noodles without herbs. Then, they gave my friend another bowl with herbs. This sounded like a sitcom, but my friend was not amused. COVID health tips for the restaurant: If you put a dish down but made a mistake, you shall not give it to another customer. Please apologize, cook a new dish, and offer it for free. Or at least take it back to the kitchen and pretend to change the bowl. Total bill $30 + tax + tips cost about 10% more than other ramen and noodle restaurants which offer better food and service. Sorry, we will not come back. read more

I came her for lunch on a Wednesday and got seated right away. To be honest, I would've given this place a 3/5 stars for the food but the customer service is impeccable. The food to me was just mediocre but they do give you a lot for the price. I'm not exactly sure of the names of the dishes we got but we initially got #1 and #12. Dish #1 was way too sour for our liking and we couldn't eat more than a couple bites. I'm pretty sure it's because we're not used to eating this type of soup. I was pretty sad that they ran out of #25: Taizi ZhaJiang Noodles during noon time, so I decided to order #2: Mixed with Minced Pork Noodles. I asked for this dish to be a mild since I have a low spice tolerance. After 10 minutes of waiting, our food came out. Our noodles were served in a plastic bowl along with disposable chopsticks and spoon. We were also using disposable paper cups to drink our water. My noodles were good, but I felt like the peanut sauce was a bit overpowering. I think if they used less of the sauce, I would've enjoyed my noodles more. I was not a fan of the green beans and had push them aside haha. I also ordered a similar dish to this one but at Taiwanese noodle shop during my 1st day in SoCal. When my food was ready the server kind of just tossed it onto the table. And everything looked incredibly low effort. I ordered the tomato beef rice noodle soup, and the soup was lukewarm at best, the pre-sliced beef and vegetable stalks cold and tossed in a pile atop the noodles. The only good part of this dish was the noodles themselves. I also had the pig ear appetizer, which was overall good but had unevenly distributed seasoning, making some slices inedibly salty while others were fine. You have to get up from your table and serve yourself to napkins, extra utensils, condiments, etc. The whole experience resembles that of a cafeteria, except when you walk up to pay your bill there's the tip section of the receipt and the cashier standing in front of you is staring at what you'll put down. My partner and I are such big fans of this noodle shop in Irvine. Highly recommend to anyone who's looking for a comforting bowl of piping hot soup and perfectly chewing noodles. For appetizers, we ordered the wood ear (aka cold black fungus) in a slight numbing chili and soy sauce. The cold appetizer was a solid choice since it cooled down our palette in between each bite of our hot soup dishes. My partner got the dry noodles with minced pork and it had such a rich flavor from the chili oil sauce (give it a good mix) with a hit of acidity from the pickled vegetables. My Huaxi beef rice noodle had a numbing broth, but it was way lighter in the numb department compared to what I had the night before at Mian at South Coast Plaza (tldr: so numbing to the point it was inedible and will lead to brutal heartburn). The pieces of beef for both the dry and noodle soup dish were so tender and had a great mouthfeel. Although this is not included in the below picture, we also ordered the Chengdu spicy dumplings and this was the absolute highlight of the meal. I'm impressed with how thin the dumpling wrapping was in the midst of holding a large amount of filling. Overall, the meal was not heavy from an oil perspective and it was actually quite light with the balance of the cold appetizer and the hot dishes. Bf and I both ordered #7 (hot and sour beef rice noodle) with the hopes that it would taste like the Guilin noodles we've had in China and at another restaurant in the 626 we loved (that closed down). The bowls of soups are HUGE here, which is great for leftovers. The rice noodles are nice and thick. Unfortunately, the soup was really sour. Way more sour than hot and was missing a lot of that numbing Szechuan spice. We bought a side order of Chinese pickles to add into the soup for $1 and we ended up not needing it. BUT, the pig ears are incredible. We both loved these, and I'm so glad I know where to get good pig ears near my house now. Also got the fermented tofu with edamame and it was great. Very interesting spot. I'm really starting to enjoy taking on these spots that are out of my norm, such as this spot. I usually go for the typical pho or Shabu Shabu spot down the street from my place but decided to switch it up again today. The reviews were pretty mixed here but I have to say if you're looking for some noodle soup, this is the place for it. We started out with the popcorn chicken. We got the non spicy one although it still tasted spicy. Not a problem, I enjoyed the little kick. So if you're not into spicy, just a heads up. We tried the #9 and #11. The clear broth bowl reminded me very much of pho and the other had with the tomato paste I believe, had a special kick to it. Not spicy, but tangy in a good way though. These noodles were unlike any I've ever tried. The rice noodles were soft and dense where you think they're over cooked when in fact that's how they're supposed to be. Very filling! The bowls are huge! So you'll definitely have some to take home. Only thing about this place that sticks out is that no one comes around to see if you need anything else or if you want the check.
