What a pleasant surprise! We found this little Xi'an restaurant while shopping and ended up having one of the most satisfying meals we've had in a while. The lamb skewers were juicy and perfectly seasoned with cumin, and the grilled beef tendon skewers had an amazing crispy, chewy texture. The soup dumplings were full of flavorful broth, and the braised beef knife-cut noodles were chewy with large, tender chunks of beef. We also tried the beef paomo for the first time--it was warm, comforting, and packed with rich flavor. The portions were generous, the prices were very reasonable, and after chatting with the staff we learned the owner is from Xi'an, which explains how authentic everything tasted. What happened to EverSpring? Things were so different on our last visit that my mom asked if they changed ownership, which the staff said happened a few months ago. This spot used to have amazing fresh, delicious food and compostable tableware. Now there are ceramic plates which appeared scratched and dirty, all the food came in different plates/bowls, beverage fountain doesn't work, and worst of all, food was not good. We all ordered things we always do that we love and everything was a miss. My fried rice was SO dry with just a few tofu pieces. I added so much hot sauce, chili, and soy sauce and it still wasn't good. Cucumber salad was completely different and actually off putting. No one said their food was good which is the exact opposite of all of our other experiences. To top it off, everyone felt sort of sick after because of the amount of salt in the food. The prices were a little bit more expensive than I would have preferred but they do give generous servings. We ordered stir fried string beans, orange chicken, crispy beef, and salt and pepper fish filet. My least favorite was the crispy beef, mostly because it didn't even taste like I was eating much. I probably should have gotten a different beef dish, otherwise everything else was pretty good. They have a robot delivering food to the tables. We had really high hopes for this restaurant after seeing the variety on the menu. Came here for dinner one night and it seemed like the staff could care less about taking our order and redirected us to the kisok. The menu is only on the kiosk or on their website so look ahead. The restaurant was practically empty when we arrived so we didn't mind since we had kids. However, there were wet signs on the floor and buckets everywhere to catch a leak. It was very chaotic. Well, this place went downhill really quick compared to when it first opened. First off, their "highly recommended" crispy beef is now basically just fried batter with beef flavoring. There was literally no meat in any of it. Cutting corners and cheaping out seems to be their new strategy. Their fountain drink machine was also partially out of order, so the drink options were limited. Then, right next to the fountain drinks, there was a nice puddle of water from the ceiling leaking. They had a bucket there, but water was still all over the floor and clearly wasn't being properly attended to. Seems like a pretty obvious liability waiting to happen. When we asked for the refund for the noodle, they quickly gave us the pho noodle which was undercooked. See below. We have eaten at EverSpring many times ever since they opened and my family loved it because it tasted like authentic cantonese dishes. It had been a couple of months since we were last there and my parents and my daughter had been asking to go back and were really looking forward to eating there. However, we were so disappointed when we went back 2 weeks ago! The menu changed a bit, which was fine, and all our usual dishes were still there. We did notice that the cooks have changed and the original Cantonese chef was not there. I think the kitchen staff really changed how the flavors of the dishes for the worst. My 7yo daughter used to love their shrimp fried rice, but as soon as the fried rice came out, the first thing she said was "how come it looks so different from before." Not only did it look different, it was BURNT. It was like they fried the rice in a burnt wok so every grain of rice was coated in tiny black burnt bits. It was essentially inedible. They also just topped the rice with some tastless blanched shrimp instead of actually stir frying the shrimp into the rice. The green onion pancake used to be flakey with layers and expectedly oily for this dish, but the pancake we got this time was essentially a tasteless tortilla. It literally looked and tasted like a tortilla. No layers, flakes or oil at all and was the worst green onion pancake I've ever had anywhere. The fish with black bean sauce was acceptable, but it was definitely not the same. It tasted more like American Chinese flavors instead of the previous authentic Cantonese flavors. The only dish that I thought was still good was the stir fried eggplants, although my parents said it also tasted more Americanized. We are so sad that the food here has changed so much and it was one of the rare places my Cantonese dad actually said tasted authentically Cantonese in the area. The restaurant was full during our latest vist but we did notice that 90% of the diners and people ordering take-out were non-Asians. When we came previously, there was a good mix of Asian and non-Asian diners, so it seems like the clientele have shifted, which might explain the flavor changes or vice versa. The staff is still very nice and friendly, but it seems like the robot server has been laid off. The best Chinese restaurant in Tustin by far! The prices are very fair and the food is very good! We have ordered a lot from the menu over the past visits and have been happy with all the dishes. We usually order the signature crispy beef dish, chicken chow mein, honey walnut shrimp, and we go back and fourthe between the sweet n sour chicken and the orange chicken. We usually call our order ahead of time and it is always ready in the time that they quote us. The food is so freshly made it still tastes very fresh even when we take it to go and eat it at home. I've been curious about this place for a while since the pictures and reviews seemed good but was apprehensive about the prices for the quantity and quality of food. I finally tried it because I had a coupon for a free veggie spring roll appetizer with a purchase of $20 or more. The fast casual ambiance was very contemporary, and you can tell they lean into this with their self order kiosks and robot delivery. But to use the coupon, I ended up ordering with the cashier, which was nice to ask questions about the portion size. The rest of the experience was unfortunately downhill. They forgot to give us a number, so the robot delivered our free spring rolls to the wrong table, which the other customers did not report. It took a while for the workers to notice and eventually send a new order our way. Having the time to observe this for a while, it generally seemed like the robot has more of a gimmick than a tool to increase their efficiency. Food-wise, we were also not impressed. While the flavor was acceptable, the texture of the orange chicken was pretty abysmal. A large proportion of the dish was just the batter, so despite the outer appearance, the slim niblets of dry chicken breast were overpowered by the stale and extremely tough exterior. Moreover, the portion size was not as large as we were led to believe, especially given the price. The steamed white rice that it came with was also extremely dry and looked like it might have been old. (0/5) The veggie spring rolls were underwhelming and rather starchy, especially because the filling was on the sparse side. This was a let down because the photos of the shrimp egg roll looked much more promising, but maybe I ordered wrong. (2/5) But! The pork soup dumplings saved the meal. Came out fresh enough to burn our mouths, with a welcoming curl of steam when you open the basket. Surprisingly, they were not in individual tins and actually looked plump and supple, with a delicate wrap that held its own and wasn't sweet (a personal preference over more fragrant dough). Filling flavor is nothing to write home about, your standard morsel of slightly tough salty pork, but the quality of this XLB was leagues above the rest of the meal. But what I know is we came here for the first time dining in for lunch, the place was pretty open with not many people inside. The noodles came out, the picture on the ordering menu shows egg, the Chinese description said with eggs, there was no eggs in our noodle? But since it's basically self service there was no server around so we figured just eat it. Oh my god, it's sooooo salty, the pork is poorly marinated with way too much salt, I had to eat a lot of noodle and some white rice to chuck it down. Then the crispy beef which a lot of people recommended, it was way overly fried, completely battered and barely any beef in there. This is worse than the noodles. We basically left the whole entire plate untouched, and not sure what we could do taking it home coz it's so bad. I was craving Chinese food today and missing my good old days living in Alhambra,CA. I now live in Irvine tried a nearby spot, Everspring Modern Chinese, through DoorDash. DoorDash was great delivering in a timely manner. The entree flavors were good overall, the orange spicy chicken had a nice citrus kick, and the mixed vegetables with tofu were really tasty. The noodles had a variety of shrimp, chicken and beef great flavor too. The beef and broccoli was good but the beef was a little tough, and the wor wonton soup was decent but I would have loved more vegetables and shrimp. I had never received Chinese food bad to this level. Unfortunately, had to throw it all away. I'm always up for trying new Chinese food places that have good food but fast service. I'm happy to have found that in EverSpring. It's located in the shopping center The Market Place so there is plenty of parking. You can either order with the cashier up front or use the giant touch screens in the front. However, if you want to take advantage of the buy one get 50% off daily special, you'll need to order with the cashier. We ended up ordering the sweet chili eggplant to get the Mongolian beef for 50% off. So it was only $24 for two dishes (tip and tax extra). Where are you going to find a good lunch for that price these days? The food came out quickly and portion sizes were good. Rice comes with the dish unlike at other restaurants. The eggplant was sweet and savory with a slight hint of spice. The beef also had pretty good flavor and lots of green onions which I like. Had the crispy beef and sweet and sour pork, both are normally spicy but we asked for them not to be spicy. Both were delicious! Perfect bite-size pieces. Love that the robot brought out our food. Lots of seating inside and outside. Staff was very friendly and helpful. read more

Wow! This place is great! It's a modern concept: you order and pay at the counter and take a number to your table. Get your drinks and condiments on your own. By the way, the water includes water with lemon and water with cucumber! And pretty soon a robot arrives with your food. Don't take too long taking your food but the robot runs out of patience and leaves!!! We ordered broccoli beef, shrimp lo mein, and vegetables with tofu. It was all very good. Maybe not gourmet, but way better than you might expect from what looks like a fast food place. Prices were all very reasonable. This place is definitely on our list. I knew it was too good to be true. When I first discovered the place with 50% lunch specials with full entrees that were delicious and very filling, better than anything else out there, I thought I had struck gold, and clearly I did. I only came a few times, but not even a week or two after, I see that they have removed the deal and it only applies if you order another full price appetizer or entree, which, considering it's a lunch special deal, makes it pretty unfriendly for the exact profile of diner I am, which is usually a single diner and it really is disappointing to feel like I've been singled out as the type of customer that's not wanted, even if I doubt me coming a couple of times was what led to this promotion being stealthily changed though I couldn't count it out. It's kind of disappointing to discover this after going out of my way to try to come here for lunch and suddenly have to change plans with a limited schedule, so I don't see myself coming back here for a long time even though the food is excellent. TIP: Go anywhere else for a decent affordable Chinese lunch, there are plenty in the area even if not as good. read more

Food is more consistent than it was a couple months ago. However, their ordering system is weird. Whenever we call to place a pick-up order, they always say 15minutes, but it always turns into 1hr 40min to get it....... Like they purposely inform you it will take 15min so you will pay when you arrive, but they don't even start cooking your order until an hour later... don't think I will return for pick-up ever again.
