My first experience at Maru Ramen went really well! I got the Tori Ramen so I can only speak for that but I found it to be quite delicious. My initial impression of Japanese ramen was that it was very heavy and that it was hard to eat a lot at once. This ramen felt relatively light in my stomach and I felt like I could actually finish the broth since it wasn't so heavy. Broth of the tofu ramen was excellent!! Really took me by surprise by how flavorful it was. Hint garlic in the shoyu broth which really brought out the other flavors nicely. Kimchi was pretty good for Ithaca too!! Tasted homemade so I'm hoping it was. The ramens come with a side of daikon (Japanese pickle) This has four stars because of the service. Our server was super nice, but got caught up in the rush. The other server working didn't fill up our water and passed by us numerous times. A cute little ramen shop that was completely packed when I came here with a friend on a Saturday evening! Luckily there was one table for two open, and we got seated quickly and service was fast and attentive. Also, I have to give a huge shout-out to the waitress who noticed that my poor glasses had completely fogged up and found a coworker who had a glasses cloth so that I could see properly. Back to the food: I ordered the tori ramen, which was essentially spicy broth with shredded chicken. It was delicious, and a $9 steal, though not that spicy--it was what I would call "white people spicy," meaning it had enough of a kick to be noticeable. Extremely bad food. Would've given 0 Star if I can. I came from Taiwan, in which we got lots of Ramen, tempura, sashimi and sushi. I am not a super criticizing person but this experience was horrible. The Tempura tasted like deep fried onion rings. no freshness was left. Traditional tempura ingredients like egg plants, sweet potatoes, broccoli was not even used. The Ramen's soup is like instant noodle's salt/pepper bag added into a bowl of hot water. No sweetness of bone marrow was present, definitely not made in Ramen way. The pork bun used onion and A1 barbecue sauce, it's like grilled American burger . It has nothing to do with pork bun. Next time please go to Taipei, at Gongguan near Taiwan university, there is a Lan Family Bun- taste that, that is the bun! Overall the only ok stuff is the green tea. Saw the reviews for Maru and I was craving ramen so naturally we made the stop here. The Tonkatsu was great. Full of flavor with everything you can want in a ramen. The broth is where the money is and this broth delivered. It was full of porky goodness and not overly rich. My wife ordered the Tori which is the shredded chicken in chicken broth. Personally I'm not a fan chicken broth, it's a little overpowering, but the wifey enjoyed it so I'm happy. The chicken buns were delicious as well. The owner was very friendly and was very apologetic because we had a reservation, but he was unable to seat us because there was a wait out the door. Quick review - It's not truly authentic Japanese style ramen, but pretty decent especially Tantan noodle. Friendly staff and great service though. I'd say 3.5-star, maybe even 4.0 considering location. If you are desperately have ramen, you'll be satisfied. As far as Shoyu and Tonkotsu ramen go, the soup/broth doesn't have the depth, almost no umami/koku at all. Tonkotsu means pork bone and the soup typically have very good depth but not at Maru Ramen. Shoyu broth tasted as if the broth was made by adding 1 kind of Shoyu (where as the real Shoyu broth would have multiple Shoyu, salt and other ingredients to give your the depth). Tantan noodle was pretty good, but you can taste that a chef has cut corners at several places: (1) pre-cooked Napa cabbage. It was cold inside and gave the sour taste of nappa when it sits around for a while. (2) One of chashu pork was clearly microwaved as you could see the distinct visual sign when a meat is cooked/heated by the microwave. It was so dry and overcooked. (3) the ground meat too was cooked via microwave. Correctly cooked tantan ground pork would be evenly in small pieces (like what you see in taco meat), but because they cooked it with microwave, the ground meat was vet lumpy; some are nice small pieces but some where in big chicks. This gave very inconsistent texture and taste. read more

I was in the mood for good ramen, and was dining with 10 other people whose ages ranged from 11 to 72. I called about an hour or so ahead and they were able to accommodate our large group on a Thursday night. Walking into the restaurant, the smell of the broth cooking in the kitchen enticed us. So all, but one, in our party ordered a bowl of ramen. My family also tried the harata buns, which were oh-so-yummy and way bigger in size than what I was expecting. Each order came with two buns, so I ended up giving my second one away. The staff was attentive and friendly, and the food was prepared in a timely manner. Once everyone started eating their noodles, everyone agreed on how delicious it all was. I especially enjoyed the broth in my Tonkatsu Ramen. Thank you Maru Ramen for a wonderful meal. Maru is my favorite ramen shop in Ithaca. I guess it's not saying much, because there's only a handful of them, but still, it's a great spot with great food and friendly service, and it's one of the spots I like to try to take visitors to Ithaca to. The interior has a really interesting blend of modern decor and a classic Japanese ramen shop feel, which really makes me nostalgic and want to get back to Japan. We weren't blown away by the appetizers when we've had them, but they're certainly good. Stick to the ramen. Chilly, rainy day, perfect for ramen. We stopped in and I got the bibimbop. Dumb, the place has ramen written in big letters right on the front. But I haven't had bibimbop in forever, and they had a few vegetarian options. Well, it sucks. It's just a kidof okay rice-plate thing, not really bibimbop. The #1 thing missing? No crispy edges on the rice! Just steamed rice on a plate with an assortment of vegetables, and little gochujang on top, that's it. My daughter and wife got vegetarian ramen, two kinds, and they were both delicious. Exactly what you want, tasty and satisfying. If we had all gotten ramen, this review would be a four. They had three or four different vegetarian kinds which is greatly appreciated. But that seems normal for Ithaca. We got a coule sides, the veg maki and steamed bun with mushroom. The steamd bun satisfied if you have that craving, but wasn't one of the better ones I've had. The sushi was tasty and my wife loved it, but I was put off by the size, too big around to get in one bite, and too sloppy to eat in two bites. We'd come back, but for ramen only. read more

I have only had the tofu bowl, and have had it a couple times. I took them to-go (and had beers at Liquid State, BYOFood!). The staff is very friendly, place looks great, clean. Food was very tasty! And they give a discount for cash payment! This is so great, it's a little incentive, but it makes me want to keep going there. Other restaurants don't respect the cash customers---we're all subsidizing the corporations extract money from our community, through there credit card fees that hit small businesses hard. When shopping at a small business, privately owned restaurant, be good to your neighbors, USE CASH! read more

Picked up this WONDERFUL meal our forst night in ithaca after a long drive and needing something to warm/fill us up. I am gluten free so it is normally a bit of a challenge. But not here! They actually have two options or gluten free noodles! I honestly can't remember the last time I was able to eat such delicious ramen. We had the seafood ramen (spicy!) which had plenty of fish. So glad we picked this place- we ordered two tonkotsu ramen to go and I loved that they packed the soup separately from the noodles and toppings! Ramen is solid. Broth is delicious, noodles and egg are cooked properly. Highly recommend. Bibimbop comes in a buffet tray, with lettuce and a half ramen egg vs sunny side up, rice is stuck together. A few adjustments and it could be something (ex: sauce should be served on the side). The squid was pretty good, and so was the veggie sushi. Had Dinner at Maru Ramen in downtown Ithaca with my daughter on Sept 21. The vibe was friendly and the servers attentive. We got the pork buns and they were delicious.. only thing was the pork ran out before I got to the end of the bun so I was left with iceberg lettuce and bun for the last 2 bites.. I left it on the plate. Two buns were $9 so one more slice of pork would have been good. The Ramen was delicious. I had the Tori- spicy chicken and it had a good heat. The egg was cooked perfectly and the broth was rich and delicious. They served it with some pickled daikon on the side and the bites of cool crunchy when the heat was building from the ramen was just the relief I needed. My daughter had the traditional Tonkatsu pork ramen. The broth was complex and creamy. The slices of pork were thin but with the noodles and broth was plenty of food. The portion sizes were filling and except for the meat to bun ratio I was happy with the quality and the amount of food we received for the price. I saw all the great reviews so we decided to give it a shot. We started off with the pork bun. Too much teriyaki which over powered the pork. All we got was a sweet bite. We weren't crazy about it. I enjoyed my ramen dish. It was a flavorful dish. However, we've had better. We finished off the meal with green tea mochi. The texture was off. I wouldn't get it again. Everything was delicious. Super fast service and friendly stuff. We came late, probably close to 9:30 with 3 hungry kids. The place was full but we got the food in minutes. The ramen was very good, the shrimp roll excellent and the chicken buns - yammy!! Dumplings sooo good!! Really the kids and us couldn't stop eating.
