With every course, from salmon and tuna to white fish, mackerel, shellfish, and eel, he explained how each piece should be eaten, where the fish was sourced, and even shared personal stories from his career. It felt like he was telling a story through every piece of sushi he prepared, making the experience both captivating and unforgettable. Chef Shiro Kashiba is truly inspiring.
