    Protein Options

I came here on a whim to order lunch and even though it was a bit of a drive the place is bright, fresh, vibrant, and fresh n a great location. I was quickly greeted and once it got down to brass tax, the menu was abundant and delicious. They have "pre-built" options or "make you own", and either way you cannot go wrong. Check this joint out

The service person making the orders was very nice! Could tell enjoyed their job! Even told Dad jokes! Haha The bowl was yummy and full of protein. I got the Hawaiian Trio with Octopus. I saw another 2 enjoying their lunch who weren't sure what sauce they would like so the employee gave them a taster cup of each one to find their favorite! That was Nice!! Restaurant was small but modern and new!! They even cater large parties! Thought that was pretty cool to keep in mind for future. Unlike most poke places they also have chicken and tofu options to meet all dietary restrictions and needs!! Because I was wearing my work shirt - serving the Chandler-Gilbert community, I was given a small discount. That was much appreciated!! I will definitely come back. It's only 10 minutes drive from my site. Next time I was to try the Mochi and miso! I took mines to go this time.

I just adore Koibito Poke. I love the freshness of the fish and veggies/toppings. I do think Koibito is the best poke spot in the East Valley easily. My favorite fish is the marinated tuna and I usually pair it with salad/brown rice. The toppings and sauces are so good too! They have great customer service on top of that. I tried their miso soup with tofu which was also good, soothing. They have available are mochi and teas/lemonades along with typical soda drinks. The ambiance is nice, clean and brightly lit. I look forward to coming back here always

Spam musubi is less than an inch thick. It should be at least 2 inches. And one of my orders didnt even have spam on it.

Small Poke Bowl w/salmon & Hawaiian tuna

Clean shop and friendly owner! Stopped by here for the first time and got a small poke bowl (includes two scoops of protein). The fish seemed fresh and there were plenty of topping options. Majority of the toppings are similar to other poke places, but I did notice they have shaved brussels sprouts, which is something you don't typically see. My poke bowl breakdown: - Base: Combo (rice + greens) - Protein: 1 scoop salmon, 1 scoop Hawaiian tuna - Sauce: Koibito House + Citrus Ponzu - Toppings: edamame, cucumber, green onion, ginger, masago, cilantro, seaweed salad, crab mix - Dry toppings: furikake, fried onions I got a small bowl, which looked pretty small at first, but once you eat everything, it's actually very filling! Will be back :)

The free one I threw away next to the one I ate half of sadly

I ordered off Uber eats and my sushi was really warm and smelt ate half and saw some stuff on the bottom that you only see with unsafe seafood, got sauce on the side and this is bad, hopefully I don't get sick

    Spicy crab and tuna bowl

The food was amazing, some of the best poke in AZ that I've tried. The staff was even better. Kael and Mari were super nice and made the experience great. Will be coming back! The only thing that wasn't perfect was my avocado in the bowl was stiff so I had to take it out.

    Salmon & Pineapple

I was in the Gilbert area and I was really hungry and really craving pokē, so I chose to go to Koibito since it is the only poke place I could find near this area. Unfortunately, I chose wrong. The bowl I ordered was NOT edible :( I stopped eating the bowl after only a few bites for several different reasons: * The rice was hard and chewy, likely due to it sitting in the cooker all day. * The pale yellow pineapple did not have much of a taste, but the little taste it did have was sour....not sweet and not juicy (like fresh/ripe pineapple should be). * The chopped cilantro had a lot of stems in it, which is honestly to be expected, but there was literally a stalk of the cilantro plant in my bowl (see photo). * I know that it can be difficult getting fresh fish to Arizona, but the texture of their salmon was firm, yet slimy? Not to mention that the color was a dull orange and NOT a bright pink or bright orange -- a big red flag for raw salmon (see photo). It reminded me of cat food so much that I actually offered a cube or 2 to my cat and he loved it (lol), meanwhile I am now dealing with gut rot. I wish I would have read the reviews beforehand and noticed that a majority of the 4 or 5 star reviews either only mention the customer service/the atmosphere, or it is that persons first time trying pokē. On the other hand, the reviews that are actually about the food are mostly 1 or 2 star reviews. So now I am very very hungry, very disappointed, and very sad about throwing away $18, especially because now I will have to spend another $18 getting food somewhere else :'(

    Koibito Bowl and Keto Bowl

My partner and I ordered Koibito poke bowl and a keto bowl. The server offered us extra sauce and extra vegetable toppings at no extra cost. I added some ginger and pineapple. The staff was very kind and the drinks were great. They have these tractor drinks we never saw before. We tried the cucumber and strawberry dragonfruit. I highly recommend the drinks. The bowls were very good too. The place was very clean and the cushioned seats were comfortable. We live like half a mile away and would definitely go back.

Maybe there will be another one that opens up closer to the South Tempe area, nearer to the population center. They are located at the edge of Gilbert. I love poke. There are signature bowls or build-your-own bowls. There were only five options for the signature bowls. They each have their own marinating sauce. There are five marinating sauces. OG sauce, island fin fire, pozu, wicked wahine, and shoyu. Shoyu is your basic soy sauce. The wicked wahine is a little sweet. Ponzu is usually a little citrusy tasting. I believe island fin fire was a little spicy. The OG sauce is probably what people usually get when they build their own bowl if they're not looking for something exotic. This is what is said about their marinating sauces: The OG sauce is a bold and savory flavor. It has fresh jalapeños and fresh sweet onions that marinate in sesame oil, olive oil, rice wine vinegar and a premium gluten free soy sauce. Shoyu is a premium gluten free soy sauce. Ponzu is a citrus based soy sauce. It has fresh orange juice, fresh lemon juice, and fresh lime juice that are mixed with the premium gluten free soy sauce. Island Fin Fire is their spicy sauce. It has fresh habaneros, fresh pineapple, cilantro, honey and rice wine vinegar that are mixed with their premium gluten free soy sauce. Wicked Wahine is their sweet heat. It has fresh lime juice, coconut palm sugar, and chili paste mixed with their premium gluten free soy sauce. The below are their signature bowls: Salmon Poke Bowl - Salmon, Edamame, Corn, Ponzu, Seaweed Salad, Avocado Cream, and Tempura Crisps Ahi Tuna Poke Bowl - Ahi Tuna, Edamame, Corn, OG Sauce, Pineapple Mango Salsa, Spicy Pickled Veggies, Green Onion, Togarashi, Sesame Seeds, and Crispy Onion Chicken Poke Bowl - Chicken, Edamame, Corn, Wicked Wahine, Pineapple, Green Onion, Ono Ono, and Wonton Crisps Korean BBQ Chicken Bowl - Korean BBQ Chicken, Sweet Onions, Corn, Kimchi, Spicy Pickled Veg, Green Onions, Togarashi, and Sesame Seeds Vegetable Poke Bowl With the build-your-own bowl, you can get three scoops of protein. You can also get a mix of either one rice and spring mix, or both rices but no spring mix. You can choose between brown rice or white rice. There are eight different meat options. Ahi Tuna, Salmon, Spicy Tuna, Tofu, Chicken, Octopus, Spam, Korean BBQ Chicken. There are six different options for Mix ins. Furikaki (sesame seeds, dried seaweed and sea salt), Edamame, Corn, Sweet Onion, Jalapenos, OG Veg. I would probably do all of these except for the jalapeños. You can select up to eight of their toppings. Mango, Pineapple, Cucumber, Pickled Ginger, Pickled Veg, Scallions, Seaweed Salad, Extra Seaweed Salad is $2.00 Spicy Pickled Veg You can add on a premium topping for two dollars each. Avocado $2.00 Surimi $2.00 Masago $2.00 Kimchi $2.00 You can get up to two finishing sauces. Avocado Cream - Fresh avocado, fresh lime juice and mexican crema. Wasabi Cream - Wasabi, Togarashi seasoning and mexican cream Togarashi - Their version of Spicy Mayo. Jamaican - Jerk seasoning and mayo. Ono Ono (vegan) - Their vegan finishing sauce. It is Frank's sweet thai chili mixed with cilantro, green onions, chili paste and ginger. You can get up to nine crunchy toppings. Sesame Seeds, Chili Flakes, Sea Salt Crispy Onions, Roasted Garlic, Nori Strips, Tempura Crisps, Wasabi Peas, Wonton Crisps, Chili Oil. Of these, I would probably do the crispy onions, the roasted garlic, the Nori strips, the tempura crisps, the wonton crisps, and maybe the chili oil. Usually quiet inside. Sometimes service is slow. I couldn't pick a favorite. I liked all of their signature bowls. I usually got one of the below: Salmon Poke Bowl, Ahi Tuna Poke Bowl, or the Korean BBQ Chicken Bowl.

Can't go wrong with how you customize your poke as you can always taste the quality and freshness. This is one of my favorite ways to eat healthy and delicious food. My only regret? Not adding more veggies! Because I probably would've enjoyed them! The man taking our order was very fast and efficient and chill. Their bathroom and dining room was clean. My only complaint is that my husband mentioned that the salmon was slimy, which I noticed when we were adding ingredients to our bowl. The salmon had that white film for when it's been sitting out for a little bit. Also, I dislike paying extra for avocado. But all things considered, this place had GREAT food that I was able to split (or nail the whole thing because it's so tasty) for around $16. ...I'll probably be back!

My friend had called the day before to see if there was anything gluten-free on the menu. They were so helpful when we showed up. They had remembered her call and could tell her exactly what was gluten free. This is a very casual order at the counter kind of place. The dining room is simple, but that's okay because the focus is on the yummy food. They have single plates and double plates on the menu. I got a plate that had kalbi and kalua pork. It was served with white rice, macaroni salad, and kimchi. It was amazing! The pork tasted Smoky and delicious, the kalbi beef had just the right amount of sweetness to it. The macaroni salad was also perfect. I got quite a bit of food for my money. I was able to make it into two meals because there was no way I was going to finish it in one sitting. I really like Hawaiian food, and this one is so much better than some of the chain restaurants. It's slightly more in price, but it's 100% worth it. We sat and talked for a couple hours at least. While we were sitting, there was a period when every table was taken. So it does seem like quite a few people know about this place and come. I highly recommend it!
