    For catering service, they were slightly late to deliver. Can't say the food or cooking is Hong Kong style as the name indicated, but overall not too bad. -Kung Pao Chicken w peanut on side: not as spicy as the other mainland Chinese restaurants serve. Chicken is not overcooked, tasted ok. -Honey Walnut Prawns: our favorite, enough stickiness from the mayo. Walnuts are toasted. -Curry Beef: some beef seem not well mixed with the curry. The curry is thick but not spicy. -Tofu with Mixed Mushrooms: It's egg tofu; this is my second favorite. -Veggie Chow Fun: not much wok heat, so we had a lot of leftover.

    The rice noodle was very good. The area looked OK but may not be completely safe. Lock your cars. The restaurant is nit small, brught, nice, clean. I got take out. Really like how the rice noodle was cooked: very fresh and delicious. Take out was quick. Service was accurate. Will come again to try other items.

    1st time back since they closed across the street a few years ago, and they reopen here in the plaza with more parking's which is a plus. But the biggest for me was they took away the dim sum, which was pretty good and thats why it took me this long to ordered food from here, until I found them on the TGTG app, where you get food for faction of the price. I have ordered 2 different dishes to go, the Bittermelon with Beef & Presevered Egg & Pork Congee (Jook). Both were good, the beef was tender. Congee is good but is lil expensive. They just been voted one of the Best Asian food in the US 2025, so prices might be going up!!!

    Mother's Day Dinner with MIL. We ordered the usual...Sweet & Sour Pork and Salted Fish with Pork Patty. Steamed Chicken (half). Served cold with minced ginger/oil sauce. First time having it here. It was pretty good.

    The food at HK Chef is truly traditional and DELICIOUS. We ordered salted fish hash that is a rare dish to find in a Chinese restaurant. Yummy! 99% like Mom used to make. Their salt and pepper pork chops are so tender. You didn't need a knife to cut it. Honey walnut shrimp was made with large shrimp pieces, not your tiny nickel size pieces. The portions are extremely generous. Wonderful service. It is not your typical Asian decorated restaurant. It is a bit more modern, very clean and background music is very enjoyable. It is definitely my go to place for delicious authentic Chinese cuisine.

    I came here to meet my in-laws for the first time for a big family dinner, and it wasn't too busy. It seemed like they were a bit understaffed because the staff forgot some of things we asked for and were rushing around everywhere. The food was pretty good overall! We got a good variety of different dishes and they were flavorful and great texturally. I'm not sure the English name of the veggies I had but they were crunchy and tasted fresh and delicious. The interior of the restaurant is beautiful and modern. I'm not used to seeing that with these types of restaurants so that was refreshing. I did have an issue with the bathroom though. It was dirty and lacked toilet paper in all the stalls. Hopefully they can maintain this better in the future.

    My personal favorite dish is their House special pan fried noodles. The portion of this was insane, this itself can feed 4 people. Love the vegetables, squid, shrimp,.... on top of the noodles. The toppings are cooked with this slightly thick sauce which drenches the fried noodle making it some parts of it crunchy and some of it soft/soggy. I grew up eating this dish and so I'm almost always ordering this dish. My second favorite dish is their honey walnut shrimp. This is always a hit at every family dinner I have and so I just had to order it. Their shrimp had a bite to it and a bouncy texture. It was cooked perfectly.     Came in for a belated CNY dinner and was pleasantly surprised by the cleanliness, spaciousness, and decor of the restaurant! Much more modern than the outside would suggest. We got the full Peking duck, crab meat and fish maw soup, rock cod in the clay pot, walnut prawns, eggplant and salted fish clay pot, salt n pepper squid, and salt n pepper tofu. Peking duck - duck itself was delicious but the buns left something to be desired. They weren't very fluffy and tasted like the frozen buns. Things I'd recommend - eggplant clay pot, walnut prawns, and salt n pepper squid. Everything else wasn't flavorful enough for me so I'd go for other things. Came back a few days later when I wasn't feeling well and got the shrimp won ton noodle soup which is another skip for me.

    What a great surprise in the east bay!!! From the front the restaurant looks hole in the wall ish then you go inside and the ambience is great. The service food and vide was awesome. We went here to celebrate my dad's fave dish the pork in brown sauce and they made exactly how he liked it.

    Very solid food here. Saturday night, only two other parties were in this pretty large restaurant, so we were seated right away. Not at all unfriendly service, but pretty transactional. The waitresses only came by to bring food and clear plates, never to check in throughout the meal. I was also mildly annoyed when they seated a family right next to us, despite the wide open space, who had a poorly-mannered kid who the parents allowed to roam around the restaurant, yell, and treat multiple pairs of plastic chopsticks like drumsticks on the tabletop. It seemed like at one point, after he dropped chopsticks on the floor, that a waitress finally came over and said something to them under her breath, but I don't know for sure that she told them anything about his behavior. He did seem to instantly calm down and stop the chopstick slamming, so I suspect she may have intervened, but the behavior picked up again after he ate a minimal amount of food. It negatively impacted the experience of eating here. The menu is very extensive. We went with the potstickers (6), half a Peking duck, string beans with chicken, and the beef chow fun. The Peking duck was served with 6 steamed buns, sliced cucumber, and hoisin sauce. Admittedly, I've never been a big fan of duck so this wasn't a dish for me anyway (my husband really wanted to try it), but I didn't care for how hard the skin was. One of the allures of Peking duck is supposed to be the crispy skin, but I felt like this was just hard and difficult to cut with my teeth. I had one bun and let my husband (happily) eat the rest himself. I focused on the rest of the food and was very happy with the meal. The potstickers were stuffed with juicy meat and served with a genuinely spicy chili oil with a great kick. The string beans were still crispy, not mushy, and the chow fun had a generous amount of beef and the noodles weren't overly greasy. Portions are generous here, so we went home with leftovers. With the tip, our total came out to $98. That's a bit pricey, but if we'd stuck with the other dishes and didn't get the Peking duck, it would've been about $25 less. Still a little on the expensive side for two people, but a lot of good food for the price. With so much on the menu still left to try, we'll likely come back.

    Charsiu, I ordered takeout and took 30 min waiting for it and another 30 min before I took my first bite. It was a lil too thick and dry for my liking. I did find some thin pieces but harder to find. Flavor and aroma is still good. 4/5

    The store is having a promotion on DoorDash that you could get buy one get one free for the same item. I understand it is buy one get one free the SAME item, so I asked if they could switch to something that is same price and I was assuming there should not be a extra charge, even so, it should be just a few dollars extra. However, they added more than $10 on my order. And, they didn't make the right order. They did not give chow fun, instead, they gave rice. I am willing to pay some extra to change the items, but, $10? And you didn't even make the order right? And I did not get any phone calls to be notified. Tried to contact the store and they said there was no customer phone # on doordash which is a big lie. I work at restaurant myself and we use doordash, I always give customer a call when there is an extra charge or if we run out of something that we have to exchange something for them.

The giant lotus chandeliers, the deep violet lighting, the old-school banquet hall atmosphere - it immediately reminded me of the large Cantonese restaurants that used to define family dining in the Bay Area years ago. But after eating here during a packed weekend dinner service, I realized the real attraction is not the decor. It is the operational consistency. The dining room was completely full, with a long line of people still waiting outside. Under that kind of pressure, many large Chinese restaurants start losing control somewhere: fried dishes soften, stir-fries lose wok hei, food arrives unevenly, service becomes rushed. Fusion Delight somehow keeps the system together. And what impressed me even more was that the staff never became impatient. Even with the restaurant running at full capacity, the servers stayed friendly, patient, and organized. No chaos, no attitude - just steady service under pressure. That is not easy in a restaurant this size. The Mongolian beef was the first thing that stood out. Instead of thin slices hidden under sauce, the beef here is cut unusually thick and long - some pieces nearly two inches. Thick-cut beef is risky because once overcooked it immediately turns tough, but here the meat stayed tender while still carrying proper wok sear and caramelization. That tells me the kitchen understands heat control and timing. The crispy pork intestines were even more impressive. These were clearly braised first, then fried before the final stir-fry. The outside kept its gelatin-rich texture while the inside still carried fat and aroma, but without the unpleasant odor that ruins this dish at weaker restaurants. Even people who normally avoid intestine dishes could probably eat this version comfortably. That level of cleaning and pre-processing matters. The braised lamb with skin was another old-school banquet dish done correctly. The lamb was soft without collapsing, while the skin still retained structure. More importantly, the prep work was meticulous -- no gamey smell, no rough trimming, no shortcuts. The sea cucumber and pork tendon dish also showed strong banquet-kitchen fundamentals. The pork tendon had clearly been oil-expanded beforehand, giving it that proper soft and elastic texture instead of rubbery chewiness. The sea cucumber still retained bite and structure. The Singapore-style rice noodles and scallop egg white fried rice were textbook Cantonese banquet staples. The rice noodles stayed dry and separated while still carrying wok aroma and oil fragrance. The scallop egg white fried rice looked simple, but every grain remained distinct and lightly coated without clumping together. That level of consistency under volume is difficult. Even the red bean dessert soup at the end was handled carefully. The red beans still held their shape instead of dissolving into paste, while the sago remained fully intact and translucent. Most restaurants stop caring once dessert leaves the kitchen. Fusion Delight clearly does not. And honestly, that may be the best way to describe this restaurant overall. Fusion Delight is not trying to be trendy. It is not trying to become minimalist fine dining. It is not trying to be social-media bait. This is a high-volume Chinese banquet restaurant operating with old-school Cantonese production discipline. Hot food arrives hot. Fried dishes stay crisp. Wok hei survives peak hours. Plating still looks intentional during a packed dinner service. That kind of consistency is harder than people think. And somehow, inside a giant purple dining room filled wall-to-wall with families, they make it work. - Dr. C Purple room approved. Wok heat calibrated. Banquet discipline detected. Consistency at scale = correct.

However, within about an hour, the restaurant was almost full. Even though it wasn't the weekend, it was still very busy. This is one of my favorite dim sum spots because the food is consistently delicious, especially the siu mai--it's a must-try! The service is fast and friendly, which makes the experience even better. There is also plenty of parking, which is a big plus. The restaurant is spacious, with beautiful purple lighting that really catches the eye. The high ceiling also makes the space feel very open and comfortable. Although this place doesn't have the highest ratings on Yelp, it's definitely still very popular and worth visiting.

There's usually a pretty good line right by the register, so this place is pretty well known by the Asian locals. Shrimp Wonton Noodle Soup ($16/2*) First outing here I sat for lunch and tried this. Surprisingly disappointing seeing how busy and popular this place is. The wontons were okay, decent flavor with a strong sesame oil presence. But they weren't that plump and luxurious, just seemed like homemade/amateur versions. Which is fine, except given the nicer restaurant feel, I just expected something more elevated. The noodles were fine, super thin egg noodles that had a nice QQ. BUT their broth was so bland and unremarkable that it kinda ruined the whole experience. I couldn't even taste/detect the protein that made up the stock, just tasted like murky liquid to me. And zero condiments on the table, so I just ate the wontons and the plain tasting noodles cuz the broth couldn't offer anything to the noodles. Womp womp. And their bowl of choice is very weird to eat from. Super tall bowl that if you leave a spoon in there it will sink and be submerged for you to fish out...in piping hot liquid. If I would have reviewed this place just on this one visit, then it surely would have been a sub 3* rating. But I knew I couldn't leave my impression with that one lone visit. Their ducks here are slightly more expensive than most others for the area. But it is still worth it imo. They cut it with good skill and even for a take-out box they present it nicely, with the shape of duck still somewhat intact. The skin is not crisp at all but it is very well rendered. Some pieces were not that salty at all but some other pieces are well seasoned, which I thought was strange. But overall a very solid roast duck is to be found here. There's also a big scoop of these tiny beans that are slightly sweet almost like baked beans just not as gloopy. But the bean texture is very al dente, almost crunchy, which I found very strange. Macao Roast Pork w/ Rice ($19/4.5*) This is crazy good...I'll even say special. Super seasoned pork belly is roasted til the skin gets crisp...like chicharon status, except it is just a very thin layer of crispness. So the balance between the sturdy crunch and juicy flavorful meat was practically perfect. It is definitely on the salty side, almost the same intenseness as eating Spam with white rice, but white rice offsets those salty components beautifully. And they garnish this massive plate with perfectly blanched gai lan (Chinese Broccoli) and some other pickled greens that add a nice sweet and tangy component. So between the decadent pork, white rice and diverse greens offerings just made this a complete one stop shop that could make a regular out of me. They don't treat in-house customers as a priority. I'll go back to this place whenever I have a chance. Order ahead if you're in a rush--this is not a fast place. But you can always count on their quality.

I gave four stars though, because service was slow, unorganized, and if we hadn't called attention to the manager and servers, we might have needed to wait even longer for our food orders to go in and be served. Our combination rice noodles plate took over one hour and it took us asking one of the managers what happened to our noodle dish, as it had been over one hour, and was the last item to be crossed off our orders list,l. We told the manager we could just cancel it since we were full from dim sum. The manager hurried to the kitchen, then back to our table with the rice noodles dish in hand. We have dined in this Pearl Bay location for years, especially because of the dim sum and regular dinner and lunch menus, so we hope that with more staffing and organization, service will improve over time.

We ordered: Green Beans, Salt and pepper chicken wings, shrimp fried rice (Everyone's least favorite dish), Chow Fun, duck, and probably some other dishes. The green beans were the best dish. The chicken wings were good, but not as flavorful as people hoped, they probably won't be ordered again. The fired rice was a big disappointed, it had shrimp in it, but it lacked flavor. We didn't get a soup. We also had a steamed fish which was really good, coming from a not big fish fan. It was seasoned with soy sauce and was a big hit with the table. Even my picky nephew ate some. We also had calamari, it wasn't a big hit, we didn't even take it home with the leftovers. We all got tea and we asked for ice water for everyone which was drank along with the tea. If you request it they will bring out forks, my brother in law made the request. I was impressed even the kids used chopsticks. I definitely reccomend this restaurant. Especially for large groups. It's set up for banquets. I can't comment on the bathroom, because we didn't use it.

The staff told her we wouldn't be seated unless our entire party was present. About 4 people were late, but they still seated us. The restaurant kind of felt old and somewhat dirty. But hey, it was my dad's birthday. I wasn't paying for lunch. We occupied three tables and ordered from both the lunch and dim sum menus. I enjoyed dishes like shiu mai, pork buns, walnut shrimp, fried rice, fish, and fried noodles. The sesame balls were tasty, but the service was slow, and I had to follow up on our order. I didn't care for the bun with the hot dog or the other noodle dish. Later that day, my daughter mentioned she had found hair in a pork bun and that her cousin had eaten it. She also said every item he picked up had hair on it, which was disappointing. I didn't confirm this with my cousin, but it would have been helpful to have someone inform the staff. Fortunately, no one at our table found hair in their food, which was a relief. Overall, the food that I ate was fine, but I wouldn't make a special trip from San Jose to visit again...unless it's a fambam family treat.
