    I really wanted to like this place (RIP Witness) but my experience fell short. While the cocktails were fun and flavorful, amazing job on the glassware, and while the restaurant was beautifully decorated, the food was just okay. With the items that were on the menu, there's room for a lot of flavor, but it lacks the punch I was hoping for. Service was slow, and that may have been what led to my disappointment, but this is a newer restaurant so I understand it's important to give newer spots some grace. Oh, but really cool bathroom!

    My paper route on the hill always include First Sundays at Guillotine - where the champagne flows if you're at the right table and good times are to be had. Cocktails by Canon alumni? I'm all in.

    Meh. This little bar looked promising, but their menu and service were both extremely underwhelming. The moody lighting and flowers hanging from the ceiling give a really fun ambiance, but I don't know that the decor quite makes up for the expensive drinks filled to the brim with ice, the nonchalant attitude of the staff, or the small menu. I ordered the "birds of pain" and it was tasty enough, but it consisted mostly of ice. I'll skip this on my next trip to Seattle.

    This is a cool spot! The bartender was really friendly and cool and the drink list was interesting. The kitchen menu was also small but unique, which I liked. They kind of have a spooky but classy vibe which is fun. I'd definitely go again!

    Had great bites and service tonight at Guillotine. Really enjoyed talking to the owner Andrew. He's super passionate and excited for his new spot! Everything we drank and tasted was delicious. Beautiful bar and super fun bathrooms!

    Wow, the Miso French Toast is the most amazing dessert I've had in a very long time. The perfect mix of umami and sweet, it contains crunchy caramelized brioche French toast, wakame ice cream, miso caramel, and hazelnut furikake. The salty touches combined with the sweet turned into a perfectly balanced dessert to go with our cocktails. I HIGHLY recommend it if you visit this establishment. I also enjoyed the Night Queen cocktail which was absolutely delicious. There's clearly a lot of love behind this new venture for the owners. Such wonderful attention to detail and service!

    went in on a saturday night and was able to find a seat at the bar right away. i liked the vibe and interior Guillotine gave. the bartender was really nice, i don't know what to get so he made a drink based on my preference of fruity and sweet cocktails. cocktails around $16-18. cute date night spot or to bar hop with friends on cap hill night

    Guillotine has been on my radar for quite sometime and while looking through my list of places I have been wanting to try I stumbled upon the restaurant during my google search through the neighborhood. Went through the Instagram and website to see what would be the dish I would want to try. Loved the simplicity of the menu and the ingredients of the dishes so I was sold on going. Took a stroll through the hill to get to the restaurant and was told by the owner Andrew that they would be open at 5pm, so I killed sometime walking around and come 5pm I was ready to head on in. The atmosphere and ambiance of the space is very minimalist but in a very good way. Upon sitting down I ordered myself a mocktail that was up to bartenders choice on the 0 proof they have. It was the take on a phony negroni with a mezcal mix with, it was a interesting mix and I liked it. I was ready to look at the menu after getting my drink and was told that they are fixing up the menu so the entree's I saw online was not on the menu anymore. I had been on a pasta kick lately so I was curious if they had anything with pasta and I was greeted by the chef who had been working on a new dish that was beet infused pasta, zucchini, summer squash, broccolini, nuts, a champagne butter sauce, and grilled burrata on top. A very flavorful dish that was so soft but also very filling. Talked with Andrew for a bit after my meal about the story behind the restaurant and his background in the industry and you can tell the passion behind the words that Guillotine will be a staple in the community in due time. I can't wait to try the new menu when it comes time. Give Guillotine a shot if you are on the hill. They also open until 2am on Friday's and Saturday's so this is another place to hop too during your night activities.

    The owner was behind the bar making drinks and chatting up customers. The vibes were chill and welcoming and the cocktails were served in coupe glasses with long stems! They are so cute!!! I felt super fancy sipping my perfectly crafted Gimlet. Next time we'll try some food. It all looked great.

    BEAUTIFUL space, even down to the bathrooms (see pic). The cocktails were incredible, the detail and nuanced flavors were so unique and tasty! We got the oysters (great), jerky (10/10 A MUST), mushroom filet ( the farro rice porridge was amazing), and the trout almondine pasta (my fave).

    I literally never leave reviews but the service was so good that I felt compelled to leave one. Colin was such a delight and the drinks he made were perfect. We tried the beef tartare and then Colin recommended the jerky which did not disappoint! I am already looking forward to coming back again.

    Do not pass on your chance to try Guillotine! The food was incredible, such rich flavors in every bite! The menu goes above and beyond! The cocktails are amazing, unique and delicious! The service is super friendly and the bartenders are top notch. I will come back again and again. Check this spot out for date nighta, celebrations or just to have a good time - they've got it all!

    My friend was visiting from out of town so we came here to have a few cocktails while we catch up. As soon as we walked in the bartender Cody came up to us to give us our drink menu and water. He was very friendly and attentive. He explained the drink specials so we can select our drinks to our likings. He came over several time to check on us. The owner came over to explain how he created the drink specials and showed us videos on his Instagram. I'll definitely be returning here again to try out more drinks and their food.

Another 10-15 mins go by and I had to ask "do you know how long our order will take to which she seemed to get annoyed. It could have my energy because by that time I was annoyed. I'm not sure what happened to our original server but he must have gotten off. About 5-10 mins goes by and here it comes. That confirmed the table next to us got our order because of how long it took. They never apologized for their mistake. Doing all that time they never came back to see if we would like another drink. I had to flag someone down. The clincher was we got our bill and there was 22% service charge. That was on me because if I would have seen it I might not have gone. I'm not a fan of automatically charging a service charge. I'm a great tipper but it must be earned. By than I was really annoyed and thought to have a conversation with the manager but let it go. I would not go back. The craft cocktails are spendy but I had no problem with that because they're creative and they earned it by being creative. But the energy and the environment wasn't like the other speak easy bars I visited. It was boring and to top it off the service charge of 22% and the service that came with it sealed it for me. People walk in, fall in love with the vibe, and walk out talking about the food. The consistency is unreal. They even order food to go. The flavors? Roquette was a surprisingly small space with a wonderful vibe serving up "destination" bar-worthy cocktails. It reminded me of some of the neighborhood gem cocktail bars that I'd frequented on the East Coast. I grabbed a seat at the bar. Roquette's lineup of cocktails were varied in flavor profile using a wide range of spirits. They also served non-alcoholic offerings which looked equally intriguing as their boozy selections. I started off with the 99 Problems ($28), which, unfortunately, I forgot to note what was in the drink. It was boozy, clever, inventive, and most importantly delicious. My second drink was the Imperium Old Fashioned ($24) made with Westland Whiskey "Roquette" Barrel, Clement Cask Strength Rhum, Old Delicious Apple Brandy, Pineapple, and Spice. It was an excellent, boozy, balanced update to the classic Old Fashioned. Although I went with drinks off their menu, I have no doubt that any of their skilled bar professionals could've crafted me a wonderful cocktail if I had simply requested a classic or something on the fly based on my choice of spirit and desired flavor profile. Yes, the prices on the two drinks I ordered were pretty steep, but they were comparable to prices I've paid in Las Vegas. Plus, I don't have a problem with paying a premium for a well-made cocktail made with premium ingredients in a comfortable, welcoming setting (the drunken guy next to me who tried to engage with me in a political discussion excluded). Bottom-line: Roquette was a revelation. It served up two of the best cocktails that I've had this year. I can't recommend it enough and it'll be at the top of my list of places to hit the next time I'm in town.
