We went here for our anniversary and loved the ambience and coziness of this restaurant. The food was excellent, I tried the Lemon Buttered Pacific Cod, and my wife had the Wagyu beef. To be amazed rather than simply amused is an interesting part of a dining experience. I had a memorable meal at Franck's a couple of nights ago and I can honestly say that in our more casual world, fine dining has its place and Franck's is a proper destination. First thing to note about my visit was because it was the holiday season (the night before New Year's Eve), the menu was prix fix, so other than cocktails or wine, all choices were made for me. The meal was six courses and featured a caramelized rosemary sourdough topped with English peas, feta and Utah trout caviar to truffle-caramel apple emulsion soup to a roasted Iberico pork cheek with house made saffron pasta and a few pieces of crispy pig ear. Have you ever had a Bluefin Tuna meatball that was dry aged for 16 days? Nor had I until the other night and frankly, when I read the description on the menu, wasn't sure I wanted to. However, I trusted the chef and when it arrived, resplendent with Wasatch mushrooms, a prune umeboshi with ginger, nori oil, katsubushi and miso-Champagne sauce, I took a bite and became a believer! Earthy, umami flavor cut with ginger and a hint of deliciously salty soy. After doubting the premise, my only thought after eating it was to wonder why there was only one. I'd never considered aging fish like a steak, especially for such a long period of time, but to say it worked is an understatement. While the meal began light, it became progressively heavier, but never too much to overwhelm the next dish. The finishing service was a Prime Niman Ranch beef tenderloin with a charred cauliflower bagna cauda, red crab green curry, A5 Wagyu beef fried jasmine rice, cauliflower chip, peanut-chili crunch and coriander. Amazing. So truly excellent and surprising to see arrive on the plate. All of these things, through five courses, were unexpected, imaginative and thankfully, delicious. It was an experience rather than just a meal. I waited until the heavier offerings were coming to pair them with a Gautreau Pinot Noir, which was a nice enhancement. Topping it all off was a final course, number six for those of you counting, of chilled pistachio tart featuring vanilla bean curd and a side of frozen absinthe meringue. Just say that out loud. Frozen absinthe meringue. Where will you ever have that again? I've dined in restaurants all over the world and this was a new one for me. In case you're wondering, it was delicious and now Franck's is my benchmark should I see it again on a menu and I'll be able to compare going forward. It was really kind of cool to see something on the plate you've never had, not ever before contemplated eating. I added a glass of Royal Tokaji (hats off to our Hungarian vintners - delicious) l, pondered the meringue again and let it all sink in as I polished off the final gem, a Mignardise root beer float choux. First thoughts went to the service, which was impeccable. Our server seemed to really be pleased at our enthusiasm for our food and that was infectious and truly made it fun. As I continued to sit there among the holiday lights and roaring fireplace, I came to the conclusion that once in a while, you need to really let go and be taken to a meal. We spend most of our time going to a place where we can get what we crave, but when it comes to fine dining, I think it might be smart to simply let the chef take us where he or she wants us to go. Let go of the wheel and leave the driving to the experts. In fact, I think that might be the key to more satisfying dining experiences. Let the chef be the chef and be surprised and possibly amazed at what is put in front of you. I think that was the key element on this night at Franck's and I'd be more inclined to spend top dollar for a high-end experience via chef selection. In fact, I look forward to another chef-driven experience at Franck's and I think you should too. Bring your trust, imagination and of course, your wallet. Traveling is expensive these days, even when it's only a local culinary tour! read more

Francks has made me like 2 things that I've disliked my whole life. Their Brussels sprouts appetizer is a must, even if you don't enjoy them on a day to day like myself. The pb & jelly donut was soooo good, the donut is house made and was very soft. I wouldn't typically order pb&j anything anywhere but I would definitely order it again here. The miso pot de crème and banana jalapeño were also amazing desserts, I love the uniqueness they have at this restaurant. I heard great things about the carrot cake so I'll have to get that next time. The entrees were good, although, the amount of wasabi on the wagyu was just a bit too much for me. The building and patio area are comfortable and pretty and they spend a lot of effort on presentation of each dish but most have so many flavors on the dish you get lost. It is a noisy restaurant, too. We were there when maybe of the restaurant was full and conversations from other tables echoed in the dining room. The cheese fondue was watery and I don't think it was from too much kirsch. As the pot cooked over the flame on our table, the cheeses tightened up to a consistency of pizza cheese and no amount of vigorous stirring would blend the cheese into a smooth mixture like it should be. The bright spot of the night was the braised pork shank, flavorful, tender and not terribly over sauced. The Wagyu steak itself was good but the wasabi overwhelmed it. For fine dining standards, the pomme purée were over whipped so they formed too much gluten and were dense and gummy. They said there was as white chocolate in them (not sure why) but you couldn't taste it or it was lost to the wasabi and steak juices on top of them. The carrot cake was a masterpiece in over presentation. Two circles of cake that was underbaked covered with an equal amount of goat cheese frosting then wrapped with a chocolate shell that wasn't tempered so it was a poor contrast to the soft cake and frosting. The caramel, boysenberry yogurt, walnuts and additional boysenberries were good but felt out of place with carrot cake and the abundance of flavors didn't let any shine through. Most of the desserts were boysenberry, cocoanut, or pineapple or some combination of those. Not very seasonal or French, but fancy. A decent wine list and small cocktail menu. It's not accurate to call Francks French food, none of the dishes dare to have the simplicity of French cuisine and most seem to have an Asian spin. The components of the dishes were mostly quality but the piling on of different components lost the impact of the individual ingredients and the marriage of flavors didn't blend well. Disappointing for French food and fine dining in general, but the atmosphere and service helped rescue it. read more

The Brussels sprouts appetizer was way over fried and tasted of just salt sadly. Our entrees were amazing. We both shared the waygu steak and the lamb shank. Perfectly cooked, seasoned and garnished. We had a cocktail and also a bottle of Cabernet. The only thing we absolutely hated was our server. He was an arrogant jerk who was rude, entitled and unprofessional. The younger boy who I believed was the busser, filled our water and was the one who got us moved outside like we wanted from the beginning. He was a very sweet and hardworking man and honestly, he should be the one who is serving tables and making that money, not the one who sadly served us. If I go back, I will make sure that same man will not be my server. read more

Came here for my birthday. This place was fantastic! Drinks were amazing and we ordered several! The food- sooo good. We ordered the rolls and beets as an appetizer. So delicious and the beets were fresh and so light but the depth of flavor was amazing. My husband ordered the fried chicken which he said was the crunchiest chicken he has had. I ordered the pork ramen. Now I am a ramen fiend-eat it several times a week and this was by far the best I've had. Noodles we're delicious and cheesy, the pork melted in my mouth, and the broth was so rich and savory with sweet notes. We got the carrot cake for dessert. Tonight we celebrated my sister's 60th birthday. It was our first time at Franck's but it was recommended highly. I was impressed by the warm ambiance and friendly staff. We were early for our reservation but seated immediately which was nice. Our party of 8 was neatly positioned 2 on each side which seems trivial but it was ideal. The menu was a lovely variety though a bit pretentious and descriptions unnecessarily complicated. So unless you know what they all are, you'd better ask unless you're a bit adventurous. Also, the entrees were brought out a bit slowly, so half our party waited for a few awkward minutes without anything in front of them. Alas, the food quality, portions, temperature and presentation were absolutely outstanding. The serving staff was attentive and gracious. Definitely go and enjoy Franck's! read more

An absolute gem in SLC area. Portions are large, service is always phenomenal, and the fact that the menu changes weekly means you will never be bored coming back again and again. Some of the iconic dishes stay, such as the crispy brussels sprouts - everyone is always skeptical of how good it is (I was too!) until they try their first bite of it. Mind blowing. I have never tried anything I didn't like, nor has anyone I've gone with. They always have soups that sound strange and experimental, but in our experience, they always taste yummy. A steak is always on the menu as well, but the cut and pairings change, so keep that in mind when looking through photos. Pro-tip: the mains come in generous portions, make sure you save some space for dessert! read more

Franck's. Not pronounced Fraynks, but pronounced Fronks, similar to the "foncy" evening we had. Wonderful experience. I made reservations online for two, for 5:45pm. We arrived right at 5:45pm and dropped our car off at the front valet service where the young gentleman was quite nice and respectful. We felt safe leaving our car with him. The building is beautiful, surrounded by trees in a nice quaint part of Holladay. The town reminds me of parts of my home in the Bay Area. They have nice outdoor seating with water fountains nearby. The tables have umbrellas to shade the sun. Inside is nice and cozy with a fireplace and big dining room of a house type feel, rather than an actual restaurant. We were sat next to a window which overlooked the outdoor seating. Even though we were surrounded by people, we felt like we had a private area. The service is great! Our waitress, Tracy, really took good care of us. She knew this was our first time here and she took the time to really educate us on the chefs seasonal dishes. Wonderful customer service. NOTE: Our food took a little longer than expected but explained that the chef is a perfectionist and will not allow food to be released if it's not perfect. She even gave us complimentary desert for our wait! Appetizer (First) We ordered the famous "Crispy Brussel Sprouts." Get out of your head anything you've heard or tasted regarding Brussel Sprouts and get this! You won't be sorry. The Apple cider vinegar reduction along with the crispiness of the sprouts compliment each other so well. One of the best appetizers I've ever had, and I'm not crazy about this vegetable. Entree (Then) I ordered the amazing "Mishima Ranch Reserve Wagyu sirloin" - a pretty penny but worth every cent. It'll set you back about $45. The sirloin itself was so buttery/tender that a knife was not required. I've never had Wagyu, and I never want anything else again. Once you try it, you won't want any other cut of meat. The flavors from the carrots and lemon purée, to the crunchiness of the Brioche crumbs and the spiciness of the strawberries (YES! The strawberries were sweet and spicy) were out of this world. The combinations of flavors and textures worked so perfectly. I highly recommend this dish. If you're torn between the meatloaf and this, GO WITH THIS everyday. Desert The desert was very good. Who would have thought you could have taken a donut and made it "foncy?" Franck's did! Two medium size donuts with a side of ice cream. Yum. See pics for more info. Great experience. Brussels sprouts are amazing. They are served differently then I have had before and we had really good service.

There is a noted difference between a place you go for dinner and a place that provides a dining experience. Francks is notably the latter. The ambiance, friendly, knowledgeable servers, and food timing and quality are all exceptional and provided us with our best dining experience in SLC. The small quiet atmosphere is perfect for conversation--no fighting over cover music and shoulder to shoulder diners (nothing personal, White Horse). We tried several dishes and recommend them all. Can't miss with the Brussel sprouts, fondue or tomatoes pie for starters. The fish was cooked perfectly and the meatloaf was savory and filling enough for two people. Every dish offered a rare combination of simple ingredients with layers of complex taste. The amazing thing was the price was high, but not mortgage your house high like most restaurants of this caliber. It's rare I'd call any restaurant a "must-do", but if you're in SLC you'll regret not spending an evening at Francks. read more

The only reason I gave this place 2 stars was because our server was nice and the cocktails were good. When we first walked in there is a view to the kitchen where a man was preparing salads. I watched him slap another man's butt as the guy walked by and went back with the same ungloved hands to preparing salad and eating off of the EA plates with his fingers. I will admit that I am pretty adverse to germs, so that immediately turned me off, but I decided that I just wouldn't get a salad. We were seated and the dining room which was pretty empty for a Saturday night (I should have seen the second red flag and ran). We are from out of town thought and the ratings seemed good so we stuck around. When we looked over the menu I told my husband " there is a lot going on with this menu which means they are either really good with balancing flavors or they are trying to cover up the fact that they don't know how to cook things well." I was disappointed to find out that it was the latter. We ordered the Brussels sprouts which were touted to be amazing...they were ok. My husband got the lamb shank, which was tender, but the couscous with it was too acidic and threw off the flavors of the lamb. I ordered the wagyu and was told that it would be medium rare (if you know wagyu, you know it should never be cooked above that) it came out and it was VERY well done. The server then told me that they sous vide it, THEN they sear it on the griddle. It was grainy, but edible enough. It just wasn't what you would expect for one of the top tier meats in the world. All of the extras on the plate were just a distraction. My philosophy is, if you can cook something to perfection, you don't need to dress it up with distractions. I don't know what else there is a the salt lake area, but I don't recommend this. read more

FOOD: Multiple 10/10 must-try dishes. Would come back and try other others. It was definitely difficult to narrow down which ones to order, hence, bring friends to try multiple dishes out. If you want the bang for your buck and happen to love fried chicken, then definitely try the Mary's Nashville Fried Chicken. Wagyu is super soft and flavorful. Ocean Trout had wonderful flavor pairings and it wasnt over cooked. I'm not usually a fan of lamb, but the Lamb Shank was so delicious. The plating of all the dishes is very esthetically pleasing as well. AMBIANCE: Spacious dining areas with lots of tables. It's well lit and great for family, groups, couples, singles. Loved the balsamic vinegar but also had like an Asian twist to it. For dinner I had pork dish with cacio e pepe. On top they put cotton candy and then poured a broth on top. The fondue was delicious, honestly more enjoyable than the one I had in Switzerland. That's where the good ends here though. A few of the other starters were fine, average. The meatloaf was disgusting, it tasted like old socks. Plus the mash was super salty and the plum sauce was too sweet and strange and just didn't work. The fish was shockingly over cooked, literally crusty it was so dry. The sauce was weird, bad tasting, too sweet and overwhelmed any subtlety of the ingredients. The desert left much to be desired too. The servers while friendly seemed uneducated and uncouth, they seemed more appropriate to serve at a burger bar. If you're charging high prices like they are here you expect a high class service. Not the case. The experience was underwhelming and the food was really poor. A regrettable meal. read more

I am a huge fan of Francks and have been for over a decade. I truly can't think of a cozier, more romantic restaurant in Utah. Nestled in the base of the canyon, this tiny little cottage is perfect for a special night out. I always start by getting the cheese fondue. Immediately, I feel transported to a quaint restaurant in the Swiss alps. The meatloaf is a must try. Trust me, this is not your mama's meatloaf. The blueberry sauce gives it so much flavor. Disappointed in Francks to be quite frank. We chose this looking for a high end business dinner. Upon arrival 1.5 hours after they opened, we find they are out of bread as we hungrily watched the table next to us enjoy their fondue appetizer and the last of the evenings bread. We ordered a couple other appetizers which were very good albeit slow and awkward to arrive tableside. We then asked our server for a wine suggestion which was a mistake. Our wine was less than appealing especially knowing what we had ordered. The house salad was very good but for an ala carte menu, it was ridiculously overpriced. All four of us had varied entrees which arrived after a long awkward wait. The proteins were all cooked beautifully but all were heavily laden with sweet background sauces which took away from the savory flavor of the lamb, fish, and beef. Obviously there is a local palate for these flavors it just was not ours. As for service, our server was decent but her personality was quite dry and unapproachable and wine knowledge lacking. A restaurant at this price point should have a staff sommelier. Lastly the wait back up staff was outstanding, used utensils promptly removed, water filled, very top notch attentiveness in a discreet manner kudos to these folks. I can't give half stars so I'm backing this to a three based on slow, very uneven food delivery, no bread, and lead server not delivering a great experience. A smile goes a long way! read more

An amazing place! We went for a special occasion and the care and service they provided was awesome. Our server Callie described their weekly menu so well to help us decide the best dishes to get. The emulsion was so interesting and we're glad to have tried it. The chef has a lot of Asian inspired type dishes it seems and we recommend any of those! They were amazing. The fried chicken was good too but more of a kids meal made gourmet (I have more adventurous tastebuds though). The kitchen takes their time plating each dish to be visually appealing with attention to detail. We had the crispy brussel sprouts as an appetizer, they were so crunchy and slightly sweet, probably my favorite item. Next up was the mushroom sope, there was a lot of things going on in this dish that worked, the freshness of the watermelon and radish helped balance the brown butter sope masa, etc. If this seasonal item is on the menu, I'd recommend giving it a try. Finally the fried chicken!, what a presentation, the chicken was fried very crispy with a generous portion. The batter was a bit salty for my taste, but that didn't stop me from killin it. Franckly my dear, I do love this food! It's nature-encased location is a little piece of tranquility just a hop, skip, and jump from the freeways and business parks of Holladay. The tables are cosy, and the view of the woodsy surroundings make for an intimate experience. To summarize their food, the word that comes to mind is "sweet." There's an underlying sweetness to their food in places you wouldn't expect to find it. The first place I found the sweetness was their Three-Cheese Fondue, a dish rivaling my fave at Melting Pot. Franck's fondue is a rich, sweet, savory blend of Gruyere, Emmental, Swiss. It's "secret ingredient" for the sweetness may be the Kirsch Liquor brandy, which is made from fermented black morello cherries. Their bread is perfectly fresh ... but hard on the outside so you can scrape up every morsel of the cheese, even that encrusted on the inside of the pot. YUM! The first place was in their starter, the Smoked Heirloom Tomato and Strawberry Emulsion, a warm soup with strawberry carpaccio, goat cheese pine nuts, and tomato. Sweet and savory greatness. We also shared the Artisanal Iceberg Salad. It gets its sweetness from balsamic watermelon and apple gremolata, and brings the savory with pistachios, red onions, feta cheese, and apple cider dressing. For my entree, it was Mary's Southern Fried Chicken. A perfect blend of Chipotle-Carrot Puree, Carrot Top & Avocado Chimichurri, Radish, Micro Cilantro, Variations of Heritage Carrot, and Cotija Cheese. This stuff is so good, it makes me want to mosey on down to Cave Hill Cemetery in Louisville, exhume the body of Colonel Sanders, and punch that SOB in the face. This is so much better. So rich, so crispy, and works perfectly with the Chipotle-Carrot Puree. My wife very charitably shared her Franck's Meatloaf: Butternut Squash, Whipped Potatoes, Berry Compote, along with Lavender & Blueberry Sauce. As you would guess, the compote and blueberry sauce bring the sweetness. This, along the high-quality meat, makes for one of the best meatloaf dishes I've ever had. We were celebrating my wife's birthday, so they brought forth a small, tasty, first covered olive oil cake ... topped wit ha candle and free of charge. Did this stop us from ordering dessert? Of course not! We got the Chocolate Black Magic Cake: Peanut Butter Meringue, Sweetened Creme Fraiche, Ganache, Fried Peanut, and Whisky Caramel. All of the the meal was great.
