    Our burrito and enchilada were not good. The yucca was fried too hard. We will stick with their chicken.

Instead, the workers continued with their tasks as though the Famous Chef Thomas was not standing there. No greeting. No "We'll be right with you." No direction. No sign that anyone was prepared to take an order. So the Famous Chef Thomas waited. Then waited a little longer. Finally, after standing there without being acknowledged, the Famous Chef Thomas asked whether anyone was taking orders. The response was not service. It was blank stares and confusion. That is when the Famous Chef Thomas rule applies: Do not stay where you are not wanted. The owner later responded by saying their food is not simple to make, that it requires flame management and attention from the staff, and that the Famous Chef Thomas waited only "1 minute and 6 seconds" before leaving. That response misses the entire point. This was never about rushing the food. It was never about expecting labor-intensive cooking to stop. It was never about demanding special treatment because of the Famous Chef Thomas name. It was about basic hospitality. A customer should not have to stand in silence wondering whether orders are being taken. A restaurant can manage fire and still manage manners. A staff member can be busy and still say, "We'll be right with you." That simple sentence would have prevented the entire issue. Instead, the owner chose to defend poor service by measuring the customer experience with a stopwatch. But hospitality is not just about time. It is about acknowledgment, attitude, and whether the customer feels welcome. There is a difference between waiting and being ignored. The owner also suggested there are other places that will fulfill the need for basic acknowledgment. On that point, the Famous Chef Thomas agrees completely. There are other places that understand customers are not an inconvenience. There are other places that know service begins before the food reaches the plate. The Famous Chef Thomas respects difficult cooking. The Famous Chef Thomas respects labor, preparation, and skill. But none of that excuses acting as if a customer does not exist. The Famous Chef Thomas does not recommend staying anywhere that makes you feel unwanted before you even place an order.

I was kind of disappointed because he said they no longer served fried crab legs and should be taken off the menu, but that's OK. I was ready to order something else. I had Chef Mo's Shrimp & Grits and when I say it's the best shrimp and grits I've ever had in my life. It was amazing. The grits were three cheese grits with crawfish, étouffée, and large perfectly shrimp with some BOMB jalapeño beef sausage, which I would have removed, but I said let's do it. Best decision I've ever made. I cannot stop thinking about the grits. My friend ordered the Cajun fried fish and grits with a side of eggs (no pic). We both raved the entire time about how creamy and delicious the grits were. I didn't need to add anything, no butter, no salt, no sugar. This most recent visit was with a friend who was trying it for the first time, and he loved it. The food was delicious as always. He had the arroz con pollo (which I recommended), and I had the camarones al ajillo -- shrimp in garlic sauce with rice, salad, and plantains. Everything was flavorful and perfectly cooked. The bartenders were so pleasant and attentive. We sat at the bar, and even though it was crowded (which it usually is -- a good sign!), the service was still great. Now let's talk about the drinks because they were the real stars:    *   My friend had three mango margaritas and couldn't stop talking about how good they were.    *   I tried the cucumber jalapeño margarita -- you could literally smell the fresh cucumber as they made it.
