The broth was surprisingly light and not overly salty compared to other restaurants, making it especially comforting after a long day of traveling. There wasn't a dedicated parking lot for the restaurant, but it wasn't an issue finding street parking on Sunday for us. We arrived about 30 minutes after they were opened and was seated right away. The restaurant is on the smaller side, but still, lots of seating available. I wouldn't bring groups bigger than 6 people max though. We came on a lazy Sunday around 1pm, seating was easy peasy and ordering was too via paper. Service was fast, the buns took a while to come out. The ambiance was good, but there was a giant fly during our meal trying to get a bite to eat with us. We ordered the beef lamen, sichuan fried green beans and their signature pork fried buns. All in all the food was on the heavier side for us flavor wise, the texture of the noodles were less springy, we did like the green beans. We stopped by Dumpling The Noodle around 5:30 pm on a Friday. You can tell it's a popular spot. It was already two-thirds full with a steady stream of people walking in. Their menu features a lot of spicy dishes, but they are very accommodating if you ask for non-spicy versions. Beef Lamen: We absolutely loved the chewy texture of the noodles. It came with a generous portion of braised beef and a rich sauce. The sauce was a little on the salty side tho. The portion size was great, but the beef itself was a bit tough and dry (you can soak it in the sauce). Dumplings: These were excellent. Very solid Chinese dumpling and noodle spot in Wallingford! The restaurant is tucked away by a residential neighborhood alongside a busier street. Parking was easy to find in residential areas. The interior was casual and clean, on a weekday dinner there was no wait. My friend and I ordered a couple dishes to share: chili the beef lamen, pork buns, green onion pancakes, and pork and cabbage dumplings. My favorite dish is the chili the beef lamen. The noodles are thick and chewy and coated with a savory sauce that has a hint of spice-- kind of resembling braised beef noodle soup type spice. The beef was very tender as well. The pork buns and dumplings were fresh and juicy. The green onion pancakes were crispy and a great way to end the meal. In total with tip, our total came out to around $60, so about $30 per person with lots of food to take home was not bad. If you were to order individual dishes for one person, it is very affordable. This is easily the best place to go for your classic cozy beef noodle soup. I don't think their "spicy" is all that spicy, but it's filling and hearty either way. The restaurant was clean and they tried to bus the tables quickly when diners had finished their meals. I ordered Braised Beef Rice Noodle Soup and sampled a bite of everything pictured. My soup didn't have a super flavorful broth. Don't get me wrong, It was good. When I added vinegar and some other condiments on our table it really boosted the taste and I finished it off easily. Piping hot, tender beef, and the noodles were thicker flat noodles. I enjoyed it very much. The servers drop off food and cross out the item on your receipt at the table. The dumpling filling was not something I'm used to...it was dry and it was almost like shredded meat instead of minced meat usually used in dumplings. I didn't like that texture. The wonton didn't seem fresh at all & were sort of over firm, brittle, & had an overall "hard" texture. They're steamed wonton & shouldn't feel this way. We ended up getting three of the combo specials, totaling 17 dishes, with some being served multiple times. This was over the weekend for lunch, and while the restaurant got pretty full, it never reached capacity. Since there were so many dishes, this is essentially a collection of notes. All Time Favorite ($65) - Includes Pork Onion Buns, Pork Shrimp Siumai, Pork Shrimp Wonton in Chili Sauce, Seasoning Fried Chicken, Sichuan Dry-fried Green Beans, Sweet Sour Cucumber, Chili The Tofu Lamen. Beer Partner ($65) - Includes Bulgogi Beef Dumpling, Cilantro Spicy Beef, Sichuan Dry-fried String Beans, Seasoning Fried Chicken, JaJang Beef Pancake Roll, Sweet Sour Cucumber, Chili The Beef Lamen. Duck Bit ($50) - Includes Peking Duck Half, Pork Shrimp Siumai, Sichuan Dry-fried Green Beans. Note: The waiter told us they ran out of the Sweet Sour Cucumber, so they ended up substituting the Kale in Sesame Dressing. Signature Pork Onion Buns ($10.95) - An order comes with four pieces. The bun I picked up had a giant hole on the bottom, but no juice pooling underneath, indicating the bun was punctured during the cooking process. Like most gelatinized starch buns, the cooked dough is fluffy and warm, pleasing to eat. The inside, due to the hole, lacks some of the juices but is still tasty. (4/5) Pork Shrimp Siu Mai ($6.75) - An order comes with three pieces. According to the menu, these are made by Cheers HK (I believe their sister dimsum restaurant), and steamed to order here. These are steamed way too long. The wrapper is almost like mush and tears very readily when trying to lift a piece up with chopsticks. In terms of the filling - pretty traditional with pork, mushroom, and pieces of shrimp. (3/5) Kale in Sesame Dressing ($6.55) - Quite tasty, dressing that's not too salty, crunchy kale greens. Some of pieces have rather large stems, so either eat around these or be prepared for a jaw work out. I actually liked the substitution - I'm not a huge fan of the soy sauce/vinegar cucumber dish in the first place. (5/5) JaJang Beef Pancake Roll ($9.95) - A scallion pancake is wrapped around beef shank with gelatinous tendon and a smattering of stewed carrot, cucumbers, cilantro and hoisin sauce. The sauce sinks into the pancake and makes it soggy, so this has to be eaten quickly. (3/5) Seasoning Fried Chicken ($10.75) - Not fried particularly long, making the exterior coat more soft than crisp. Seasoned liberally, very fragrant and flavorful. Natural chicken flavor comes out very well, not dry inside. (4/5) Sichaun Dry-Fried String Beans ($10.25) - Good flavor, thick sauce coating the string beans quite evenly and pooling at the bottom. String beans are tender but not overcooked. Blistered skin with no crisp. Good dish overall but not particularly spicy or mala. (5/5) Bulgogi Beef Dumpling ($8.95) - As with the other wrapped items, mine came pre-punctured with a hole on the bottom. I'm not sure I would characterize the filling as bulgogi - I didn't find it particularly sweet or soyful. More like a beef ball in flavor in texture perhaps? I was expecting this to be similar to a Korean mandu, with vermicelli inside as well, but it's more plain. (3/5) Chili The Beef Lamen ($16.75) - Long, chewy noodles, plenty of beef, flavorful, slightly spicy, good. (5/5) Chili The Tofu Lamen ($16.75) - Similar to above except for tofu. Not much else to say. (5/5) Pork Shrimp Wonton in Chili Sauce ($10.75) - Cooked too long, the skins disintegrate and sloughs off while trying to eat. A good spice level and good flavor, just difficult to eat due to the skin. (2/5) Cilantro Spicy Beef ($10.95) - Mixed with tons of cilantro sprigs, thinly shaved beef shank marinated, a little spicy, pleasing texture. (4/5) Half DTN Signature Peking Duck ($37.50) - This dish came out last, well after everything else had arrived. The duck is pretty good - juicy, moist, with a thin crispy skin and plenty of fat to go around. Of course the sweet, tangy, savory sauce to drizzle and spread on the rice paper sheets, and julienned cucumber and green onion, as is traditional. The major weakness here are the wrappers and how they are presented to the customer - all in a pile, stuck together. Lifting what seems to be a single sheet up is more like 3 sheets. Trying to separate them is like trying to separate glued paper - they stick together and start ripping apart. It would be nice if they had an option for table service with the duck, but I guess this restaurant is more casual and less formal. (4/5) There's a common theme to many of the dishes here - good flavor and seasoning, but rough around the edges when it comes to cook time/assembly. I wonder if that was due to it being restaurant week? Given all the great reviews, I assume it's normally better. Still, overall the food is good and I would return. A friend and I came here after we were both craving some good Chinese food; we had heard a lot about this place and wanted to check it out. The restaurant provides an excellent, quiet ambiance for hangouts with friends, and an excellent menu of dumplings, wontons, and noodles to go along with it. We got one of the noodle dishes, one of the wonton dishes, and the lychee drink, and all three were served quickly and hot out of the kitchen. The noodle broth dishes were great and spicy which I enjoyed. The noodles were thick and freshly made in-house, so you know it's good. But the dumplings that we got were very impressive. However I do know that you must always always try their sweet/sour cucumber. And I did that here too - so good. The best cucumber fish I ever tried. The Garlic String Beans were flavorful too. We also got an order of their chili beef rice noodle. Super long and thick hand pulled rice noodles. Be sure to add some chili oil and vinegar to amp up the flavor. The veggies in this soup were super good too! My fav dish of the night was a jajang beef pancake roll, a scallion pancake packed with beef and green onion. The only thing that really fell short for me was the hot tea we ordered, it kinda tasted like dirty water which lowkey the whole restaurant smelled like.
