I was recovering from a cold and soup sounded great, so we walked right in. ​The last time we were here was a year ago during our annual Seattle trip. The tomato soup is our favorite, but we decided to have that along with the gold chicken and fish maw soup this time. We came in on a Thursday evening and had no wait! It was our first Haidilao, but we've typically had hot pot at many different places. The appeal of Haidilao is that you can make it as lavish or affordable as you'd like. We went for the affordable route and got the cheaper all you can eat combo for 2. In total (including tip), it was about 100$ for 2. I also don't like the fact that they charge extra for sauce bar, but at least you can get a free dessert! Overall, the meat quality was average, but the soups were very light. We got pork bone and mushroom, and they weren't the most flavorful. I don't want to judge the place too harshly since they have a pretty high upper ceiling, but I'd probably choose a cheaper AYCE place to get more selections and likely a more flavorful soup. read more

As part of our annual Lunar New Year tradition, my close friends and I returned to Haidilao for hot pot and it reminded me exactly why this chain is so beloved in the states and China. Definitely make a reservation. Walk-ins were quoted around a three-hour wait when we arrived. Once seated, the staff were incredibly welcoming, walking us through the menu and promotions. Ordering by tablet was seamless. We did a half-and-half with the golden chicken broth and traditional spicy broth which was the perfect balance. I love that you can even opt for four broths for more variety. The sauce bar was fully stocked with complimentary snacks and impressively well-maintained (shoutout to the staff member constantly tidying esp since hot pot sauce bars can get chaotic!). The sweet bun appetizer was fresh, warm, and absolutely delicious. To top it off, they gave out Year of the Horse red envelopes with motivational quotes for Lunar New Year, plus little snacks to grab on the way out, such thoughtful touches! Disclaimer: our visit to Haidilao was on Thanksgiving Day at 8pm. Knowing how popular Haidilao can get and due to it being the holidays, we made a reservation for 8PM online a couple of days in advance. When we arrived, there was a waiting area outside where there was a tablet to join the waitlist. We checked in with the host and let them know we had a reservation and they notified us that if a spot opened early they would let us know. In the waiting area there was even some mint candy (shaped like life savers!), some popcorn snacks, and both hot tea and cold water. The restaurant may not look like much from the front but the back is massive. It looked extremely clean and there was ample amount of tables. Each table has a number on the corner/side which is what the robot screens will show if they're delivering the food to your table. Under the table you're also able to change the heat of the boiling pot. Logistics aside, we ordered Combo A and my partner opted in for the All you can Drink as well. We got to select which items we wanted from Combo A and the items get added to the cart. It may show that you're only able to order one serving of short plate at a time but just check out and start a new order within the Combo A ;). For the All you can Drink, my partner got the mango drink which tasted like the mango syrup on shaved ice. They were out of the other drinks and only had the mango and soda options available. We also had to ask for the status of the drink because it never arrived even after placing the order for about 45 minutes. The protein also didn't come out till about 45 minutes into placing the order so I'm grateful we weren't limited to placing one order at a time. Beef Short Plate - extremely tender and even if we accidentally left it in the pot for a while it never got tough. French Fries - nothing to write home about, they tasted like typical frozen then fried fries. Chinese Fried Dough - loved it! Haidilao Hotpot was such a cool experience! I had never heard of this chain, but my coworker was a huge fan. Now I can see why! We made a same-day reservation for our party of 4. The restaurant was located inside a shopping mall and was very spacious. We ordered two soup bases - the Tomato Soup Base and Tom Yum Soup Base. For proteins, I chose the Kobe Beef Belly, but got to try a wide variety which included Australian Lamb Shoulder, Wagyu Beef, and two different types of fish. We also had Udon Noodles and Fried Beancurd Rolls. Everything came out quickly and was so delicious! The Tomato Soup Base was definitely the classic, but the Tom Yum Soup Base was easily my favorite. I also loved going up to the sauce bar and making my own sauces. I made one by following a posted recipe, but I also made a tasty peanut sauce of my own. The most memorable part of the meal was the Haidilao Dancing Noodle, where a staff member came out and danced with some long noodles before dropping them in the hot pot. With combo A, you only get 3 types of meat to choose from. When we were going through the iPad, there wasn't an option for New York steak slice, we asked the waiter and he apologized and mentioned that they are currently out of that product. I've been to Haidilao about 7 times, and unfortunately the service and quality (which they're most known for) has declined recently. I know it's common to have a lot of rules around AYCE, but Haidilao really took things to extremes that I haven't seen before. We didn't get our meat until about 35 minutes after we initially ordered, while everything else was delivered right away. We were only going to place one meat order to begin with, so this money saving tactic was a bit inconvenient. I'm also pretty sure the 1.5 hour timer on the iPad was moving at a faster speed, like 25-50% faster than a normal clock, which was wild! The broth options are also really limited and the spicy broth had basically no flavor, which was surprising because usually their broths are really flavorful. This was my first time doing AYCE at Haidilao, and honestly the experience rubbed me the wrong way so much that I might not even come back here for regular hotpot anymore. There are plenty of authentic, delicious hotpot restaurants (both a la carte and AYCE) in the area! I am still giving the restaurant three stars because I think the food was good, other than the flavorless broth. read more

I like the food but there's a HUGE issue with their all-you-can-eat. The AYCE comes with a 90-minute time limit, and the timer starts as soon as they activate the AYCE menu and hand you the iPad. Unfortunately, this is when the "all-you-can-WAIT" experience begins. You can order as much as you want within the 90 minutes, once time's up, ordering is cut off. Both times I did AYCE here, the broth took forever to boil, and I overheard other tables complaining about the same issue. During my most recent visit, it took a full 30 minutes for the broth to boil with nothing in it. When I brought it up with our waiter, he admitted that this has been an ongoing problem lately and they're unsure why. Well, we had the same problem last year. All we could do was watch the timer on the iPad tick away. That said, I have to give a huge shoutout to our waiter, Anthony. He provided the best customer service I've ever experienced at Haidilao. He understood our frustration and went above and beyond to compensate us for the time lost waiting for the broth to boil. Thanks to him, we left satisfied and full. They shouldn't enforce a 90-minute limit if their stoves underperform. Pre-boiling the broths before bringing them to the table might be a simple fix to respect customers' time. Online waitlist and reservation availability are not accurate for this location. The AYCE menu is somewhat limited but it's still solid. You can choose up to four broths, and my favorite is the pork stomach & chicken soup. The Wagyu beef is also a standout and noticeably better than the other beef options. Parking is convenient with multiple garages nearby, including one under the same building. Interestingly, parking is cheaper on weekends for that garage. However, they no longer validate parking as of today. You can get coins for the claw machines on your way out. read more

My friends and I went to Haidilao Hotpot for Happy Hour last week to get their $4 beef plates and $2 Sapporo and Asahi draft beer deals (from 9pm-closing). I've since heard that they've discontinued the $4 beef plates though and so I'm not entirely sure what they have on their HH menu now. This was my first time at Haidilao, but everyone else had been before. The six of us ordered 19 plates of sliced beef (each plate comes with 7 slices of beef), 7 beers, and 4 types of broth (Chong Qing Spicy Broth, Spicy Broth, Pork with Chicken Broth, and Tom Yum Broth). Note that the broths are not included in Happy Hour and the broth cost $40 in total, which was the most expensive part of the meal. We also got the sauce, snack, and dessert bar ($6 per person) which had all your sauce needs, crispy packaged snacks, honeydew, oranges, bean curd, spicy seaweed, almond tofu, lychee jelly, fruit jelly, brown sugar jelly, salted peanuts, and sesame seeds. Even without the hot pot, the snack and dessert bar could be a filling enough meal on its own! In total, our bill came out to about $250 plus tax and tip. The SLICED BEEF was tender and marbled; you can definitely tell that the meat quality is a step up from Happy Lamb. Of the broths, my favorite was the TOM YUM BROTH- it was super creamy and had strong lemon grass flavor. The PORK BROTH I found somewhat bland, but I liked the fish cakes. It also had pieces of chicken in it, which were overly tenderized in my opinion. The CHONG QING BROTH was not too spicy at first, but leaves a spicy aftertaste in your mouth and can definitely build up. The regular SPICY BROTH we thought was actually spicier than the Chong Qing broth as you could immediately taste the heat. Both were quite oily from the chili oil. As far as the snack and dessert bar, I really enjoyed the BEAN CURD, ALMOND TOFU and the BROWN SUGAR JELLY, and LYCHEE JELLY. The bean curd was flavored with sesame oil and was quite filling. The almond tofu was super smooth with strong notes of almond. The brown sugar jelly was nice and sweet and complemented the almond tofu well. Lastly, the lychee jelly was soaked in a sweet ginger sauce which was super yummy. The interior is quite fancy and modern, although not quite as fancy as Dolar Shop in Bellevue. It's clean as well. They give you aprons while you eat and are prompt to serve you. While pricey outside of HH, someday in the future, I hope to try their AYCE option and also their noodles as I would love to see them perform the noodle dance. Loved this place!!!! For a person who has never been to a hot pot before, this is a pretty cool experience. The food is on the spicy side - so I would suggest checking with the folks before deciding on which curry to get. Our waiter was very helpful.. Note: worth it to pay extra for the food bar where you get the different toppings and desserts and snacks. As a vegetarian there are a lot of options though it feels a bit pricey. If you eat meat, there is an all you can eat option which seemed less expensive. Love the fact that they provide aprons for eating - I am a clumsy eater so that was super helpful..
