Surprisingly so good! My friend and I were wandering the UW street fair when it started sprinkling. To avoid getting wet I suggest we grab food since she had her newborn with her. You order from a kiosk when you get inside, grab and table and the staff calls you when food is ready. Minimal interaction with them so I can't speak for service but the noodle soup we order was so comforting! My friend ordered the beef bone noodle soup and I ordered the spiced pickled beef noodle combo because the sides peaked my interest. The broth is so flavorful and has a ton of depth it was nice since it was a bit cold outside due to the rain. I assumed the pickled cabbage that were in the soup were going to taste like pickled mustard green but they did not. They had a funky after taste that I didn't really enjoy. Aside from that, everything else was great. The beef was tender and I absolutely love all kinds of handmade noodles. The side that I chose was a potato salad and again, I assumed it was going to be more of a salad but it was this tangy, spicy potato strings. It was really nice actually. Despite the food being made fresh they get your food to you pretty quickly which is great (although maybe I was lucky because it was pretty dead when I went). My favorite was actually the tomato egg stir noodle. I didn't know what it would be which is why I wanted to try it and I was pleasantly surprised. Essentially it seemed like scrambled eggs in a red tomato sauce (with chunks of tomato) and noodles. Not overly seasoned but enough. The original beef noodle soup was good but maybe I should have ordered a more exciting option. It was a great soup for a cold December night but there wasn't anything about it that stood out. The classic pork sandwich was nice. It's basically just the flaky bread filled with a ton of seasoned shredded pork. I'm sure there were onions or something also in there but I didn't notice any vegetables. Skip the zongzis. I was really let down by that. If you know fufu from West African food it honestly reminded me of that in texture and flavor (aka no flavor). But that's the point of fufu, you are using that as a vessel/serving device, I presume the zongzi is supposed to actually taste like something Ambiance is pretty sterile overall. read more

I was very excited to try this place out with all the raving reviews about the noodle dishes. Came on a Friday afternoon around 1:30 and it was empty with zero wait. Let's start with the positives. I ordered the pickled cabbage beef noodle soup and the portion was very generous. The beef are thin slices and very soft and tender. Now to the areas of improvement. My first sip of the noodle soup was shockingly salty so I mixed all of the noodles and ingredients around to even it all out. At about my 4th bite of this dish I just couldn't bring myself to eat any further because it was so salty. I instead asked them for a bowl of hot water so I can water it down and it tasted at least tolerable. At this point, all the flavorings were off because of the hot water, but the soup was still densely rich and heavy. I don't know what is it that made this bowl so strongly salty, it must be the pickled cabbage was very salty to begin with and then further salt added to the soup and ingredients. What also bothered me was the very small, flimsy plastic, disposable spoons they provided for a large bowl of noodle soup (shown in my photo). I can barely pick anything up with this spoon and it concerns me to put a disposable plastic spoon into a very hot bowl of noodles. The interior of this place is clean and comfortable to eat in, but halfway into my bowl I realize I'm sweating because there's no AC in there or they just didn't want to turn it on. They were out of their vegan noodles which I think would have been much better based on the description, but I was stuck with the tomato egg noodles. It was fine but there's only so much tomatoes and eggs can do to help the noodles along. For what it's worth the noodles were excellent and I mostly ate those. The server was very sweet and double checked that I had meant to order one to go and one for dine in (I did and was bringing one home for my partner). I appreciated that attention to detail to avoid an oops. It's got lots of big tables to eat at and spread out but it's a little loud. I had a phone call I had to take and couldn't really hear them well over the music. Overall I'd like to go back and try the vegan noodles to see if I'd like those better and then I'd probably have more stars to give on the food front. read more

I paid around $20 for a combo meal with noodle soup, side, egg, and drink, and you can customize the noodle shape. The bowl size is HUGE!!! The noodles were super fresh and chewy, however the soup was not as rich and flavorful as I'd like, and the beef was a bit dry. I liked the pickled cabbage, which was crunchy and acidic. We visited Nuodle Express for a weekend lunch, intrigued by their selection of hand made noodles. It's a counter service - ordering is done on the kiosks in the front, and when the food is ready, it's picked up at the counter. Utensils and condiments are at the table. It was only after we ordered that we noticed the waitress was clearly sick, having coughing fits every couple of minutes. Uh oh... Hope for the best I guess? Unfortunately we both got sick a couple of days afterwards... Stewed Beef Rib Noodle Soup, Normal Noodles ($16.99) - I especially love how they have like 7 or 8 different noodle types to choose from. We went with the recommended normal noodles. The chef handpulls them right in the kitchen, very freshly made and cooked to order. Due to the hand pulled nature, the noodles aren't super consistent in width, resulting in some strands that are a bit too firm, while the thinner noodles basically have the perfect chew. Based on the menu pictures, I thought this dish would be more hong shao-type, but this dish more resembles a Lanzhou-style with, I believe, the addition of a bit of soy sauce. The flavor is light, salty, peppery, and quite savory, better than some qingdun soups I've had in Asia. There are some thinly shaved leeks and cilantro leaves/stems for herbalness as well. The beef rib is nice. While the meat isn't exactly fall off the bone, it's easy enough to bite through and chew, while still remaining attached to the bone. It's fatty and has a very nice savory flavor. (4/5) Flavored Beef Slices ($4.99) - Five spice is in the name but not really that flavorful. Instead, it's mostly beefy in flavor, kind of like a roast beef with a tiny bit of extra spice. It's nice and tender and easy to eat, but the flavor is much lighter than I'm used to with this dish. I added it to my noodle soup to give it a little more flavor.(3/5) For condiments, they have vinegar and chili oil. The chili oil is nice and smoky with a small spice level that builds. Be careful with the vinegar. While I've always heard that more flies can be attracted with honey than vinegar, this vinegar must be exceptional, because the bottle at our table had a good 10+ small flies floating on top of the liquid. We did bring this up to the employee, so hopefully they'll start inspecting the bottles in the future. I rate restaurants based on food. This is a 4/5 purely for the food. Surprisingly delicious restaurant tucked away in the University district. The noodles were delicious and what I expected for hand pulled noodles. You walk in and immediately make your order at one of two kiosks. You sit down and they call your number rather quickly. They don't waste time making your food. Then, enjoy some of the best noodles in town. The restaurant itself is okay. It's that kind of concrete, warm wood, modern look to it. There's no signs what you need to do so you end up just guessing. Staff is friendly and helpful but don't do things like bring food to your table unless they are delayed at doing so. I went ahead and heated it up without removing the fat and it wasn't oily at all. Overall the flavors are good, not overwhelming. If you look into their kitchen, you can see fresh noodles being pulled then cooked for every bowl ordered. You can even customize how thick/thin you'd like your noodles when you order. Noodles are perfectly cooked and chewy. We got the beef rib noodle soup- broth was rich but clean and the beef was so tender. For now, this restaurant will be receiving 3 stars but I will be back to order a noodle bowl and I expect that my rating will improve then. Ok, lets get into it. As you can see in the photo of my rice dish (Pork Belly), it may look ok at first glance. However, upon further inspection, you may notice that half of the porks are actually taros. I was already expecting lackluster portions but this really put me in the ground. Now, at this point, I would like you to ask yourself how much you would pay for this dish? If you answered with something above $19, I highly recommend this restaurant. If not, then you understand me. Now, onto the things I enjoyed. First of all, the food came extremely quick and I love how the utensils and napkins are stored in the table. Pretty yummy! I got the red braised beef noodle soup (红烧牛肉面), which was perfect for a rainy day. The best part of the dish were the noodle. As I walked into a restaurant, I saw a few people in the back hand-pulling the noodles, so I knew they would be great! The texture and chewiness reminded me of the hand-pulled noodles that I ate in NYC as well as in China. The broth was a little light for my taste, but adding the spicy chili oil provided on the table really upped the flavor. I also thought the portions of beef were fair, and they were tasty and well-cooked. The restaurant was very clean with ample seating, presumably for the college crowd. In these past few months I've gotten hooked on the soup here. It's a simple dish but very well-made. The broth is excellent, rich and flavorful and holds the whole thing together. The beef is tender, sometimes too fatty for my taste, the noodles chewy and perfectly cooked and I like the radish, cilantro and green onions.
