    Classic ramen with thick noodles

    Ramen DANBO is a machine-they're so busy they have a hyper-efficient way of lining up and ordering. No reservations allowed! It may seem rigid, but I guess they have their reasons given the huge lines for their Fukuoka-style Kyushu Hakata Tonkotsu ramen. You order by taking a slip of paper and marking down your selections with a pencil. I got their classic ramen with the thick noodles and standard selection otherwise. I also got to try the season ramen (curry ramen) with the thin noodles. They were both so good that I had to get kaedama - another batch of noodles to add to the broth of both dishes to soak up all of the remaining flavor bomb. The classic ramen broth is rich without being overly unctuous. Of course, if you want more, there's ninniku-dare on the table you for you to add. It's a garlic ramen condiment made from a paste of lard and garlic, cooked until barely golden so the bite of the garlic is tempered. The two slices of Chashu are thin so you're not overloaded with pork fat. They're tender and almost melt in your mouth. The curry ramen has a flavorful curry broth (not roux) that the thin noodles soak up like a wick or a paintbrush. The ramen egg has a just set yolk and tender white. I actually prefer the thin noodles as it conveys the broth better (at least, my opinion). I'm definitely coming back.

    Ramen Danbo has one of the best ramens in Seattle. The flavor and quality of the ramen is so good and always hits the spot. As a result, unfortunately, the line is usually pretty long. After waiting for about an hour on a Friday evening, I ordered the classic ramen with standard everything. I love how customizable the ramen is. Even though I personally like getting the thin noodles with the standard thickness of broth and flavor of broth, I like having the ability to choose a different option if desired. The service was great and fast. Since the ordering process is pretty straightforward, once you get inside and order your food, there's not much additional waiting needed.

    Great place to eat, decided to come based on reviews from TikTok. Make sure you arrive during non peak time because it can get very busy. We managed to wait for 25 mins for a spot. But when we were leaving there was a line 3x as long to get in.

    Negigoma Ramen

    We waited for about 40 minutes for a table -- there's always a wait. We got the classic and the negi-goma. The classic is a tonkotsu broth and the negi-goma is a sesame and green onion broth. They were good, but nothing extraordinary. It also took a really long time for us to get our food. We probably waited another 30 minutes just to get our ramen. I would still say LA ramen is better, so this place is just ok for me. The gyoza was crispy and tasty though!

    Talk about the line out the door! Well moving right along, you order everything on paper. You get to customize your broth, your noodles from thickness to hardness, and your toppings. It was busy, however, the food and service was efficient.

    Ramen Danbo was overall pretty solid. It was my first time back in years since they first opened, and I really liked that the regular tonkotsu broth had that rich umami flavor without feeling way too heavy. I'll be honest though, it didn't totally give me that "wow factor" everyone talks about. The noodles were good, but not mind-blowing--definitely recommend going for the thicker noodles, though. They aren't actually that much bigger, but they have way more flavor and a better bite to them. Plus, it's nice that you can grab an extra portion for only $2. We also got the pork donburi rice on the side, which was honestly the perfect compliment to the ramen. Definitely a reliable spot if you're in the area.

    The ramen is about 4.5 stars. One thing for sure they can improve on is the basic ramen. I would rather they charge a little more and include all ingredients for the choice instead of add individually. I like the they can customize the broth thickness, noodle style, and more. We got negi goma ramen. This basic dish comes with many green onions and sesame seed. It also comes with two charshu pork. The noodle and charshu pork are very nice. I have added the ramen egg and gyoza.

    Loved it as always, the wait was 45 minutes on a Sunday during lunch. My girlfriend got the classic ramen with standard everything and honestly, that was our favorite! I usually love spicy ramen, so the shio ramen was good with the add ons. In total we spent around 38 to include eggs, nori, and some extra Chasu. Inside you'll find table that are side by side and a long bar table top style layout. We'd come back if we were in the area when they're opening. But personally after not coming back for a couple years, there's some decent ramen restaurants for less wait in the area. Worth trying if you've never been, but expect to wait 45-1 hour during lunch rush hour. Maybe longer during dinner.

    I haven't been to too many ramen spots but I have tasted some that were not so great but I really enjoyed this one. I like how you can customize your own. However I don't think the line and wait times are really worth it and would rather catch it at a less busier time. It's not attentive enough since it gets very busy and loud but the lighting for photos was great.

    If I could give this spot 6 stars I would. Was so good I went twice in one weekend during a recent trip to the city. Absolutely delicious broth, up there with the best I've ever had including in Japan. Thin, snappy noodles. Perfectly marinated egg. Incredible richness. The gyoza were top-tier as well. Service was friendly, but they definitely try to turn over tables quickly because the line can get long. Clean restaurant with a good vibe. I really enjoyed it here. So happy we stumbled into this place. I'll be dreaming of this ramen until the next time I'm back in the area. A must try.

    I was fortunate to try out this restaurant before a long line formed. Once you are inside, you fill out the sheet and specify how you'd like your ramen. There's a line to sit once you are inside. Luckily the service is quick so I feel like you'd get seated fairly quickly. The seating area is quite compact but there's a fair amount of seats. I don't think going with a big group would be ideal as you may wait a bit longer. The non vegetarian menu is all tonkatsu broth based. I tried the shio ramen and it had a pretty mellow flavor. I don't like my ramen too rich. I think the noodles were cooked perfectly and the overall bowl was pretty solid. I had a bite of my husband's negi ramen and I thought the sesame flavor was delicious. I'd probably get that bowl next time. The service was very quick and if you are ever in need of anything the servers were close by. If there's not too long of a line, definitely try this out.

    I would not stand hours in line for this place but I really enjoyed it as someone who walked in on a weekday for lunch when they had plenty of seats open. I find the staff to be very well trained. They know exactly what they are doing and they do it very well. Ramen came out quickly and was delicious and filling. They only offer a few things, and they are all vegan, which I did not know before coming. The thin noodles were delicious. I had the spicy broth which was great as well. They also offer lunch special combinations.

    I tried the Vegan Miso Ramen, thick broth with thick noodles. It was splendid. I wouldn't go as far as to say this is the best Ramen ever but I don't recall any other Ramen place in Seattle area which serves better ramen bowls. Even the Tofu had flavour. This place is popular in Seattle and there's lot of wait time if you go here at busy hours. I came here on Monday evening and easily waited north of 45 minutes. Ambience is good for a Ramen House. Also there spice level means something. If you have ordered spicy, your ramen will be spicy. If you have asked for extra spicy, you will leave crying - that's a guarantee.

    I have been here once before but recently I have had difficulties getting a hold of the restaurant on their phone line. Anyone else having this issue? We called multiple times a couple weeks ago around 6. Are the opening and closing times correct?

    Indoor dining is shut down right now so maybe that's why they aren't answering. Pre shut down: they were open for lunch 11 am- 5 pm. But you can still order from them on Uber Eats from 11 am- 10:45 pm now.

    Is there any other meat based broth than pork?

    Yes - they have chicken and beef as well.

    No, it's street parking.

    Do they have a gluten free noodle option? Looks like the noodles are flour based-is there a rice based noodle?

The atmosphere was lively given its shared space within a brewery. The kiosk ordering system was fairly straightforward. The ramen does already include half an egg so only add an additional if you want 1.5 eggs! They also text you once your order is ready. The ramen itself was delicious- the miso bold was rich and flavorful, and not too spicy. The spice really comes through at the end when just the broth remains. My husband enjoyed the classic shoyu ramen and chicken kaarage, although we weren't able to finish the chicken kaarage because the ramen was just so filling. This is going to be my go-to ramen spot in Fremont/Wallingford.
