I'm from the Bay Area and have tasted a lot of good ramen in my time, but even by that standard, this place is at least 95 percentile quality. Good noodles, good chashu, and delicious broth on their "Original" ramen (which is pretty much Tonkotsu, I think). It's lacking in nothing. I also appreciate the way they structure the menu: most toppings are optional (like egg and seaweed) in exchange for a modest base price. Yet even when you add stuff back in, the sum is still reasonable, e.g. with added seaweed and a shot of extra noodles, my bowl came out right around $20 after tax/tip. Service is quick and courteous. This place has only one problem: the wait is damn eternal. I waited 50+ minutes, and the only reason I got in that _fast_ was because I came solo and qualified for counter seating. Can I just start off by saying that I absolutely love this place! I make it a point to visit this place anytime I am in Seattle. We had to wait in the queue for 30 mins to get a table which is supposedly the norm and in my opinion the wait is totally worth it. I am STILL thinking about the ramen and gyoza I had from Ramen Danbo a few weeks ago. Yes, you'll have to stand in line, but it does move along pretty well. Plus, it's just a part of the experience. The restaurant is intimate with both counter seating and tables with chairs. We got a counter seat, but in the corner, so we were able to see the action, but not have all the heat / steam from the action where we were seated. Second time visiting Ramen Danbo. First time I was solo while completing some work in Seattle. Classic Fukuoka-style tonkotsu ramen in which you can fine tune spiciness, richness, firmness and cut of noodles, and add all the usual suspects as optionals! Enjoyed a bowl of "the classic" with extra chashu... extra delicious, good service, and ambiance was that of a small little ramen house....very quaint! My problem with the place occurred during my second and recent visit here...this time with my family. This time no line (1145) so we were immediately offered a table by the host/waiter who pointed to a 4-top in the corner by the window. We made our way there from the host stand and were led by my son, an extremely polite 25 year old young man. My son believed our table "in the corner by the window" was the one just being cleared by the busser (who turned out to be the manager). My son asked if this was the appropriate table and the busser said no it wasn't and ours was the one the one next to it...and then followed that up by calling my son "stupid." Everyone in our group was extremely caught off-guard, most notably my son who confirmed what we all thought she had said... before she fled back into the employee's back room. Our group took a seat at the table as we clarified once again what had just happened. The host/waiter came over to our table and asked if we wanted anything to get started and what we wanted to drink. I explained to him what had just happened and that's when he informed me that the individual that had called my son stupid was the store manager!! I asked to speak with her and he went and asked her to come out to our table to address us. He returned a few minutes later and said, "that didn't interest her!" I immediately stood up and walked over to the kitchen area near where she initially disappeared from sight. The area was clearly marked employee's only and the waiter asked if I please would not go into the back room. I obliged as I certainly didn't want to make a scene. I explained to the waiter that I was not too pleased with her comments to my son and her behavior overall and that I would return to my seat to see if we would remain or elect to go elsewhere. He responded, "that makes absolute sense. I totally understand." His comments were such and his demeanor overall made me feel that this may not have been an unusual experience and that we may not have been the first customers to have such a negative experience with the manager. Tho, if true, I don't believe he was in any position to confirm or deny anything...which made me feel pretty sad for the waitstaff. Anyhow... we elected to stay as we were: 1) really craving ramen; 2) I had talked up Ramen Danbo to my family; and 3) we were on a rare visit into Seattle. So we did end up staying and enjoying some excellent ramen and excellent service - at least by the remainder of the staff! I did keep an eye out for the duration of our visit and the manager never came out onto the floor while we were there. Found this behavior just further evidence of her childish unprofessionalism...sad. SO, I leave this review in hopes the owner of this small chain reads this review, recognizes it's written by someone that puts effort into his Yelp reviews and recommends that you look into the behavior of an employee you hired/promoted into a supervisory/managerial position. You have a VERY unprofessional individual at the helm and I think the behavior my family and I witnessed the other day may only be the tip of the iceberg. Came here 6 PM on a Monday, I had a 5-10 minute wait so guess we got super lucky! I'm not a ramen girl, so it has to be a damn good ramen to convert me. I ordered a miso ramen and my parents ordered the tonkatsu ramen. As someone from the Bay Area, I was so surprised by the richness of the ramen and it definitely beats some of my usual spots. Each bowl was ~$15 and a smaller bowl, so would definitely advise getting an extra batch of noodles. The chashu is melt in your mouth tender. They were both so good that I had to get kaedama - another batch of noodles to add to the broth of both dishes to soak up all of the remaining flavor bomb. The classic ramen broth is rich without being overly unctuous. Of course, if you want more, there's ninniku-dare on the table you for you to add. It's a garlic ramen condiment made from a paste of lard and garlic, cooked until barely golden so the bite of the garlic is tempered. The two slices of Chashu are thin so you're not overloaded with pork fat. They're tender and almost melt in your mouth. The curry ramen has a flavorful curry broth (not roux) that the thin noodles soak up like a wick or a paintbrush. The ramen egg has a just set yolk and tender white.
