Spicy & tangy beef biang noodles
    Lana R.

I went in a couple of days ago for lunch. It did not disappoint. They had self order machines at the front and you would choose what you wanted to order. Then you get to choose where you sit. They brought water and chopsticks if your table didn't have any. There was the self serve sauce bar which was clean and organized. The food was really quick but I did go a little after lunch time. I ordered the spicy and tangy beef biang noodles. I had ordered the regular spice, but for me, I would've chosen the spicer one as I like spice but wanted to be safe. There was lots of really good flavors. The overall space and bathroom was very clean and a great spot for lunch!

Cucumber salad and Dan Dan Noodles

Stopped in for late lunch/early dinner on Saturday, very crowded but did not have to wait for a table. We got cucumber salad, Dan Dan noodles in spicy sauce, Bianca Bianca noodles with minced pork, fried spring rolls, and xio long bao pork. I also got the Chinese beef burger. The noodles were pretty mild, with minimal numbing sensation. Soup dumplings were good. The burger was okay, meat marinated with cumin and other spices. Service was great . Food overall good but not as tasty as I anticipated.

Xi'an Noodles Spicy Cumin Lamb Hand-Ripped Noodles (without soup) are greasy, filling, yummy deliciousness! I recommend ordering it Extra Spicy which is still not that spicy but I think it is more flavorful than the regular spice. I'm also a fan of their Cumin Lamb Burger. Out of the three burger choices, I think it has the best flavor profile and texture. As a warning, these little sandwiches look more like an English Muffin than your traditional American Burger. If you want a cold drink to wash all the greasy goodness down, try their Mango Smoothie. Just don't sip it too fast as you'll easily get brain freeze!!! If you have time, dine at the restaurant to take advantage of their complimentary side dish station and condiments at the table that are only available to guests while they dine in.

Braised Pork Biang Noodles, $13.99 - 3.5 Stars

I first had biang biang noodles at Taste of Xi'an 2019 leaving a positive impression. I was excited to try Xi'an Noodles in Bellevue when they opened in 2022; it was terrible. I swore them off and did not return to that location. Almost 3 years later, I am at the U District location for the first time. Finally, I experienced what everyone else has been saying - really good Xi'an food from Xi'an Noodles. Xi'an Noodles is located at the north end of the Ave in a different, some newer, cluster of commercial shops. Parking is easier in the stretch. The Xi'an's interior is brightly lit and utilitarianly roomy. Ordering is via the tablets at the front. Knowing what you want facilitates the ordering. Their online menu, with photos, is well structured but some prices are not updated. A lady pointed out to the last booth and started the set-up while we were still ordering. Thanks for that. Our food arrived in sequence, not all at the same time, which I prefer. I want to eat the food while it is hot. Our water was refilled regularly. Prices are reasonable. The Food: Spicy Cumin Lamb Biang Noodles, $14.99 - 4.5 Stars This was the best dish of this meal. Chewy al dente and separated noodles are well mixed with the seasoned lamb and shredded vegetables. I highly recommend ordering this signature dish. The spiciness is adjustable for less, regular, or more. I chose the regular not knowing their levels. I would say it is maybe 2.5 stars type of spiciness. It has a kick without the oiliness. It was a good trade-off, though I can handle spicier. Braised Pork Biang Noodles, $13.99 - 3.5 Stars Hubby doesn't eat as much spiciness and chose this version. Alas, it wasn't nearly as flavorful as it can be. He added hot sauce available at the table to kick it up a notch. The pork is sufficient in quantity but fattier. Probably won't order this next time. The noodles are cooked correctly. Cumin Beef Bun, $7.50 - 4.5 Stars Well-seasoned slices of beef fill this toasty bun. You can see the slices of beef in my photo. The preparation, flavor, and quality are all very good. If a college kid is looking for a simpler bite, this bun (burger?) with a piece of fruit could be a meal on the go. Lamb Skewers, $6.99 - 4 Stars 3 skewers of seasoned lamb pieces are grilled and sprinkled with chili pepper flakes. Because of the small size, the lamb pieces are inevitably a bit chewy. The flavor is good, though.

A reliable U-District noodle spot with biang biang noodles. It had solid, thick, chew noodles (think Korean sujebi-level thickness) and prefer the dry noodle dishes more. Quick kiosk service and fair prices, though portions run small. Worth a visit if you're nearby, but not a destination. Orders: - Spicy & Tingly Beef Biang Noodles extra spicy ($13.99) - 4/5. Flavorful meat. Added more spice as we didn't find it spicy enough - Spicy Cumin Lamb Biang Noodles ($13.99) - prefer beef version - Spicy & Tingly Rice Noodle Soup ($11.99) - would skip

Very tasty! The wontons in chili sauce were perfect - fresh and full of flavor. The restaurant is clean and bright. The service is on the slower side. You have to put in the order yourself - the place was not too busy, but it took about 20 minutes to get my food. Next time I'll call ahead and just get it to go.

We came here the other night for dinner with some friends. You order at the kiosk when you enter and then grab a table and they bring out your food as it's ready. The food seemed made to order because everything came out insanely hot. Some things came out quickly and some took a while even though the place wasn't too busy. My husband and I got a few dishes to share, including the cucumber salad, beef bun, pork wontons in chili sauce, chicken Biang Biang noodles, and lamb skewers. Everything was pretty tasty but had too much oil for my liking. I loved the texture of the noodles but some were cut so big that it was really hard to eat. Also the chicken had bones in it so it wasn't the easiest to eat with chopsticks. I loved the texture of the bun itself but wish that it had a more flavorful filling, as the beef was a bit bland. Overall it wasn't bad but I wouldn't go out of my way to come here. If they toned down the amount of oil in everything I think it would be better.

My partner and I were walking around the area and decided to stop by for a snack to share. We ended up getting the lamb cumin noodles (dry), and they were chewy and flavorful. I'm usually a little skeptical about lamb, but I would still recommend anyone to try it here.

Hand-pulled noodles, legit spice, deep savory flavor. Comforting heat without wrecking you.

We visited Xi'an Noodles as a first foray into the hand made noodle scene around Seattle. This seemed like a good start, given that they have three locations, a sign that that the food served at the restaurant should be pretty good. We walked in on a brisk Saturday afternoon and this place was packed full of patrons slurping on noodles. Ordering is easy, done on a kiosk right in front of the entrance. Given how busy it was, we actually had to wait a couple of minutes for a table to open up after we placed our order. I'm not sure how they determine which table to bring food to - it seems like a guessing game for the server! The food does come out pretty fast and our first dish came out within 5 minutes. Hot Oil Biang Noodles ($13.99) - The noodles are very interesting, quite different from biang biang mian I've had in the past. Instead of slapping the noodles to lengthen, I feel like they cheat a bit by cutting the noodles instead. You can see this quite clearly because the noodles aren't straight; instead, there are corners that only exist if you cut the noodle in a zigzag pattern. This creates noodles that exhibit distinct textural contrast between the corners and the centers - the corners are far thicker. Overall still a good chew, just different. I found the hot oil sauce to be delicious - super savory with a nice pungent garlic flavor that sticks to the noodles very well. They also add bean sprouts to give an additional crunchy textural element. (4/5) Spicy & Tingly Beef Biang Noodle Soup ($14.99) - The biang biang noodles again are quite good and are immersed in a bone broth that I found to be a little undersalted. The chili oil seems to all rise to the top, making the base a bit wan and underflavored. The name says the dish will be "spicy and tingly" but I think they exaggerate a little too much. There is no hint of mala at all, and the "spicy" is barely there. Honestly I found this dish to be quite mediocre in flavor. The restaurant supplies sesame paste, chili crisp, and vinegar to adjust the food to preference. Even after adding a bit to the noodle soup, I still felt like was lacking. (3/5) Note: On the kiosk, when a dish is added, the "Optional add-ons" section says to select at least one but it's not actually required. I feel like this is very unclear and customers can get tricked into adding toppings that are already included in the menu item. I don't think the restaurant does this on purpose, but I think it's something that should be fixed. To be honest, I thought the food served here was good enough, but I feel like there's better places in Seattle. The fact that I enjoy the hand pulled noodle places in Detroit/Ann Arbor over here says something, given the Chinese population is way higher and denser here. At any rate, for anyone craving biang biang noodles, Xi'an Noodles isn't a bad choice. Bathrooms: Two unisex rooms

Xian Noodles is the best eat in the Udistrict Area. It is my go to restaurant and has made me obsessed with hand pulled noodles. The dry noodles are more flavorful than the soup option in my opinion. I usually get the lamb, but the beef is also very good as well. I honestly would not recommend getting the pork and would suggest you just eat somewhere else if you do not like spicy food. I like that if you dine in they have the sauces on the side, so you can add more to your meal. There is a self kiosk ordering station, but the workers are still attentive. However, if you do takeout make sure you eat it soon after or your noodles will get stuck together.

Great spot to stop and get some noodles and dumplings. I tried the mouthwatering chicken ($9.99) appetizer with a bun on the side ($3) and BF had the Tingling Beef Hand Pulled Noodles ($14.99). Everything was delicious. The chicken was bone-in so a bit hard to eat, but good flavor and portions. BF commented he wished there was more beef with his noodles but the flavors and noodles were great. The interior is clean, warm, and very cute! Efficient ordering system on to-go pad.

Stopped by after a day near UW and was recommended to come check this place out. I am a sucker for hand pulled noodles and so Xi'an Noodles was a perfect option. The service was friendly and quick after you input your order via a kiosk. The interior is clean and has a very modest mom and pop shop. The spicy cumin lamb noodles were delicious! The noodles were nice and chewy plus the lamb flavor was great. I also enjoyed the green bell peppers and onions which added some additional texture for the dish. For the price and flavor this is definitely worth a stop. I also got a mango smoothie which was really great and very refreshing too. If I lived nearby, this would be my definite go-to for hand pulled noodles; no frills and quick+great food!
