I was a little skeptical about going at first because I looove TexMex and eat it frequently so I find myself often disappointed by newer restaurants. Dilla's left me (and my tummy) very happy! Quesadillas are one of those things that are often just be slapped together on a tortilla then served to you for a ridiculous price that definitely does not correspond with the lack of effort but this place is meticulous about their flavors! The staff was very enthusiastic and helpful! I ordered a beef quesadilla with hatch chile sauce. Meat was very well flavored and the sauce was sooo good I could literally eat it by itself with a fork. We also ordered Gorilla Fries, my new favorite side! Wow - this place blew my mind when I made a visit here. I was running late to work and had to get a quick bite. I saw this place with a drive thru and decided to try it out without really expecting much. With the worker's recommendation, I ordered the Lone Star quesadillas. I was in awe when I had my first bite of it. The Lone Star quesadillas are full of flavor! They are filled with smoked briskets drenched in BBQ sauce, cilantro, and red onions. The jalapeño ranch sauce that comes with the quesadillas is the bomb. It is so freaking good and addicting. Portion size is huge too. You pay $6-$7 and get 4-6 large quesadillas. Not to mention, the owners are UT grads who started this business idea since college. I came into Dilla's with some coworkers for lunch. It was all of our first time to try this place. The building looked a little outdated. Although, the restaurant looked like they tried to give it a face lift. It had the look of modernized inside. The cashier behind the counter was a newby so she had some trouble putting in our order. One of my coworkers can't have dairy, so really all she wanted was a taco with no cheese. Of course it came out with cheese on it. She's not a complainer so she wouldn't take it back. Delicious! We got just a plain ole chicken quesadilla, The Founder and a custom build your own. The first two were great! The last build your own could have had more chicken. Saw a long drive thru line on the way home and decided to give it a try. There were about 8 different quesadilla recipes and I chose the hot hatch with a side of seasoned fries. It took about 8 minutes to get home and sign in and I was truly disappointed. $13 got me a small styrofoam box of cold fries and a mediocre quesadilla. Wow! This place is amazing! So amazing that when we hire new employees we tell them all about Dillas as part of their orientation. You simply can't go wrong here with the quality and taste of food. I always order a quesadilla with steak, cheese, and mushrooms with fries and queso. There are so many options to choose from! I've tried several of the sauces, but have found the Jalapeño ranch to be my absolute favorite. Unless you eat a Gorilla (double quesadilla) I like how you don't feel completely gross after eating here. Definitely recommend trying if you haven't! My only feedback is that the billing is inconsistent every time I go here. It's only $0.50, but if I wanted to pay with exact change its annoying never knowing how much I'm going to get charged. I got to the counter and the young lady must have been having a bad day because she didn't say anything besides how much my meal cost. Then she dang near threw the bag of food at me. I almost asked for my money back because she was so rude but I was hungry and I haven't eaten all day. The Lonestar quesadilla has smoked brisket with BBQ sauce, cheese, cilantro, and it came with a jalapeno ranch. I believe this quesadilla also comes with onions but I requested to not have any. The brisket was moist and for some reason the cilantro was a good contrast with the brisket. I was a little concerned about the BBQ sauce on my quesadilla but it was not overpowering at all. The quesadilla was DELICIOUS!! The chips were a little over cooked and the salsa needed a little more heat but both were still good. I love this concept of offering quesdillas only and the fact that the name of the restaurant was inspired by Napoleon Dynamite. The restaurant itself was clean, service was friendly and the food came quickly. The food itself I'd rate 3-star quality, but because I like the novel concept the overall rating is 4-star. My wife and I ordered the Founder (she got steak, I got chicken). The fries were too seasoned/salty for our tastes and it made my "lips hurt real bad". The citrus corn salad portion was quite small too. We probably wouldn't come back again unless we happened to be in the area and some other people suggested we go there. read more
