In all my years of eating pho, I've never heard of a white guy owning a pho spot -- but that's exactly how this started. The owner is married to a Latina, and the menu reflects the foods they love. That evolution turned into Dilla Libre #1, and now there are multiple locations. I love a good glow-up story. The space itself is packed with lucha libre memorabilia -- belts, masks, merch, artwork -- it's everywhere in the best way. It's playful but not cheesy. Bar vibe, colorful tables, cool energy. Very hang-with-friends, Taco Tuesday, happy-hour type of place. Now the food. They have an entire regular menu AND a completely separate vegan menu (including dessert ). Not just one sad option -- a whole menu. That always earns points with me. I had the vegan banh mi tacos and they were delicious. Fresh, flavorful, balanced -- nothing over-portioned or sloppy. I'd heard of Dilla Libre before eating at the Northern location the first time. It sounded like something I wanted to try out, so I met my wife there for lunch. Then I brought a co-worker along because it's the closest taco shop to my office. Which means I will be frequenting this place a lot. Normally, I snap a photo of my meal to share, but for some reason, it keeps disappearing before I remember to grab my phone. Next time. He ordered the Chipotle Chicken Dilla with vegan cheese, and he claimed it was so good, he was convinced they used normal cheese. Our order was vegan California burrito, vegan, papa Verde, taco, vegan chickpea chorizo taco, and the vegan beyond y Papa's taco. Looking for something light so we went to check out their happy hour. This place was recommended by the owner of the Airbnb we were staying at. He had mentioned that they had really good salsa. Super delicious Mexican food with a TON of vegan options! My dad and I came here for lunch and had the most amazing time. First off the free chips and salsa were spectacular. Then for our mains my dad got the california burrito and i got the vegan hot chick quesadilla. I walked in five minutes to close, and the cashier greeted me in such a friendly manner and assured me that they could still do a takeout order. He even offered me chips, salsa, and water while I waited and told me to sit down and he'd bring it to the table. He even put the water in a to-go cup. It's playful, chaotic, and loud in the best way possible. I ordered a quesadilla that was so big, it asked me for its own seat at the table. It was stuffed to capacity. I'm pretty sure the cheese-to-tortilla ratio is illegal in three states, but I'm not complaining. Apparently, they have a whole vegan menu that makes people question their reality. We ordered guac -- we ordered a small portion and it was just enough for three, especially since the entrees were very very large. I ended up having the vegan hot chick burrito (made with beer battered cauliflower) -- which is kind of like BBQ chicken, my friend's had a black bean burrito and the vegan California (which has french fries inside!!). My hot chick burrito was very flavorful and very spicy for this white girl, and did I mention incredibly large? I immediately ordered a to go box since I knew I wouldn't be able to eat it all. The primary vegan "proteins" are Beyond carne asade, fried potatoes, house made chickpea chorizo (this sounds good and need to go back and try) and beer battered cauliflower so quite a good selection -- still no mushrooms though!! We visited around 7 PM on a Wednesday, and the place was surprisingly empty, especially considering all the great things we'd heard. When we walked in, the waitress was cleaning and didn't greet us right away, which felt a bit unwelcoming. That said, the décor was impressive, every corner had something interesting to look at. After a few minutes, the waitress brought us menus, followed shortly by water and our drinks: two margaritas and a lemonade. Once the drinks arrived, we placed our food order: Carne Asada Tacos ($17 for three, plus $4.50 for a fourth), the Steak and Bleu Burrito, and a kid's quesadilla with fries. Unfortunately, the food didn't live up to the expectations or the price. The tacos were some of the smallest I've ever had, and definitely not worth $21.50. I visited Dilla Libre Uno on Tuesday, 03/31, at 7:10 p.m. Although there were only three tables occupied and one person at the bar, the experience was a complete disaster. My partner and I waited at the entrance to be seated, but the bartender merely told us they were "trying to clean some tables." We moved to the bar to be more convenient for the staff, but the service only got worse from there. Lack of Professionalism and Service Despite sitting directly at the bar, we were never greeted. The bartender continued making drinks without acknowledging us or explaining that it might be a wait due to being short-staffed. We sat next to dirty dishes while waiting over five minutes without anyone offering a menu or even a glass of water. I eventually had to get up and grab a menu myself. Inequitable Treatment The frustration peaked when a new group of four arrived after us; they were immediately provided with drinks, menus, and chips and salsa while we were still being ignored. The other server appeared lost and avoided us entirely. Even after the bartender specifically instructed the server to attend to us at the bar, she still failed to approach us. We waited ten minutes without a single word of service. Management and Staffing Concerns As someone with years of experience in the service industry, it was clear that the staff was overwhelmed and frustrated by our presence because it was "Taco Tuesday." This establishment desperately needs a host to manage seating and a busser to clear tables so the servers can actually attend to guests. A simple greeting, water, and chips would have easily maintained our patience while food was being ran. Conclusion We ultimately left hungry to spend our money elsewhere. To add insult to injury, the bartender said "thanks for coming in" as we walked out, to which I replied, "thanks for what?" The decor is fun - a blend of luchadores and great black snd white photos of people and places in Mexico. The food was great. They're famous for their quesadillas, but we got tacos and a burrito. Both truly excellent. The tacos were generously full and the meat wasn't wet, so they held together. The burrito was also chock full of all sorts of tasty things. The only so-so thing was the red salsa that came with the basket of chips. It just wasn't very flavorful or interesting. Looove this place for a quick dinner! The dank herb shrimp quesadilla is my favorite. I've had this spot bookmarked for a while and finally visited recently. It's located in a strip mall with other businesses, and depending on time of day parking can be limited. I walked in and there's a sign to seat yourself. I wanted to place a to-go order so I went to the bar/cashier. I was greeted by a staff member who said he'd be with me shortly, no problem since I still needed to look at the menu. I saw that it was happy hour from 2-6, so I ordered two tacos and their cauliflower bites. I heard this restaurant has great vegan options, so I wanted to try those out. I took my food home and started on the tacos. The papa verde has potatoes, green chiles, pico de gallo, and cotija cheese. They were good; I just realized I don't like green chiles all that much lol. The hot chick had grilled citrus chicken breast, serranos, bleu cheese crumbles, pico de gallo, Buffalo Sauce, jack cheese, and a side of ranch. This was their secret taco from the menu, which the server told me when I asked him. I liked this one quite a bit! Good mix of flavors. The tempura fried cauliflower with buffalo sauce came with ranch as well. They were okay, not my favorite I've had. I came back the next day because I was overcharged for the cauliflower, and the server was kind and offered me a discount on my order. So I chose the All Thai'd Up quesadilla which includes citrus marinated chicken breast, serranos, grilled onions, sweet thai chili sauce, Thai Basil, Mint, jack cheese, topped with sesame seeds. This was delicious! Definitely on the sweet side with the sauce but I loved it. Great flavors and I enjoyed it. It also came with some chips and salsa. This is a casual spot for some good eats, so I'd be back in the future.
