Communal is as quality of dining as you'll find in Provo and takes upon itself a farm-to-table, new American cuisine most popular in California. The ingredients are as locally-sourced as possible, the fare fresh, and the ambiance rustic and homey. While it is relatively expensive, I certainly wouldn't call it out of reach for most people.
Three of us came for dinner and shared two starters, two mains, three sides, and two desserts. We were stuffed and had a serving of leftovers to bring home, but we thought it was a great amount to order. We had:
- Roasted beets, Zürsen farms green lentils, Snuck farms arugula, spiced yogurt, avocado: 4 stars. This was a good Middle-Eastern style take on beets, and it worked well when all of the components were combined. Both golden and red beets were expertly roasted (although I would have loved a slightly bit of a char), and the flavors of the spiced yogurt, dressed arugula, and avocado went very well with the vegetable.
- SPECIAL: Sauteed hicken hearts, celery root puree, maitake mushrooms: 2 stars. This is one we left unfinished. While two of us love chicken hearts and order them whenever we see them, we agreed that these were the gamiest we've ever had and that they were perhaps slightly undercooked.
- Christiansen's farm pork shoulder, salsa verde, pork jus: 4 stars: The pork shoulder was cooked confit and so was incredibly tender and flavorful. The "salsa" was more of an herb pistou. We thought this one would have been great if it had come out hot; it seemed to have been prepared first and waited while the other dishes were finishing.
- Prime NY strip steak, mole negra, golden raisins: 4 stars. This was cooked perfectly to order and the mole sauce (brighter and more acidic than most people associate with "mole") was a great complement to the steak.
- Mashed potatoes: 3 stars. This one seems to be commonly ranted and raved about, but there was nothing unique about it in flavor. Just a very creamy and buttery mash. I wouldn't order it again.
- Local corn, cayenne, lime zest, cotija cheese: 5 stars all the way. This was the best dish of the night: a PERFECT Mexican street corn but off the cob.
- Grilled asparagus, preserved lemon vinaigrette, toasted almonds: 4 stars. These guys know how to cook their vegetables, but I would have liked more ingenuity with the flavors. In retrospect, I think we would have preferred the asparagus on their starter section of the menu, which comes with burrata, speck, and housemade croutons.
- Chocolate chess pie, whipped creme fraiche, candied pistachio, chocolate crumb: 5 stars. This was the smallest dish of the night but was a huge hit with all three of us. For those unfamiliar with chess pie, it was like a perfectly gooey fudge brownie with a great crust. Excellent all around.
- Butterscotch pudding, chocolate cookie crumb, whipped cream, salted caramel sauce: 4.5 stars. This was gigantic compared to the chess pie. I'd recommend sharing it between three or four people. It was good, but not great. The butterscotch wasn't overwhelming, but I didn't get any salted caramel notes. Make sure to mix the dessert up before eating it so you get all of the elements together.
I certainly will be coming back to Communal. It was by far the best meal I've had in Provo. As the menu changes frequently according to what is fresh and locally available, I would highly recommend ordering the items that seem most unique in flavor combinations. read more
