I don't have big enough balls for that yet so I opted for a guava sour and was so delighted at what I got. They use a Pea foam instead of egg whites and I could not tell the difference. The guava flavor was so strong and present, perfectly balanced for the drink. I also tried the infante -- or at least a version of it, I asked if there was any way to make it the same as the sour with the foam, and our server told us the bartender would whip me up a unique concoction that was similar to that.
